TERIYAKI MEATLOAF MUFFINS
Makes 6 servings
Ingredients
• 6 Tbsp reduced sodium teriyaki marinade and sauce, divided
• 3 cups cauliflower, riced*
• 1 lb lean ground beef
• 2 large egg whites
• ½ cup whole wheat panko breadcrumbs
Directions
Preheat oven to 375°F.
Coat a jumbo 6-cup muffin pan with nonstick cooking spray.
In a large bowl, combine 4 Tbsp teriyaki sauce with all other ingredients.
Lightly press 6 equal portions into the muffin pan.
Bake for 35 minutes or until the internal temperature reaches 160°F.
Drizzle the muffins with the remaining 2 Tbsp teriyaki sauce.
