As I write this letter during the waning days of summer, people are abuzz—squeezing in that last holiday, making back-to-school supply lists, and planning backyard BBQ gatherings with friends and family before life gets serious again. Thoughts turn to the changing season and the shorter days ahead.
Fall is a favorite for many with its vibrant beauty and a comforting return to the quiet rhythm of daily routines. Fall holds fewer expectations—just sit back and appreciate those sun-filled autumn days before the chill of winter sets in.
Accompanying this change of season is a shift in the food we crave—as New Englanders, our palates are seasonal, too, and there is much to harvest right here in our backyard. Just ask local mushroom connoisseur William Dunkley about foraging for wild mushrooms.
In the following pages, we whet your appetite with tales of grilling and charring perfectly juicy wild game and maybe seasoning it with a little homemade “special salt” blend or locally grown garlic with a simple twist. We introduce you to a couple who “come from away” to preserve one of our most precious and beloved landmarks and celebrate a longtime local boutique owner who helps breast cancer survivors feel whole again. Then there is the curious fisherman who brings us a new way to enjoy our Gulf of Maine delicacies and a local Jaws fanatic on a mission to create the best spicy sauces around and save sharks along the way. They are all in this issue.
As we batten down the hatches and hunker down in prep for colder temps, we hope these stories feed and comfort your soul in some small way and, at the very least, offer up some ideas of goodies to add to your pantry or wrap under the tree and stuff into stockings this season.

BELLA INTIMATES’ SHELLY MANOUGIAN EMPOWERS BREAST CANCER SURVIVORS WITH CONFIDENCE

Lingerie maven Shelly Manougian is fearless. So proclaims photographer Mary Ann Halpin's 2012 book Fearless Women, Visions of a New World , which features the gutsy Rye business owner. Hers is a courage born of cancer survival, something she says made her “a different kind of strong” and inspired her to help women battling breast cancer not only to survive but thrive.
Manougian’s store, Bella Intimates, a Rye fixture since 2003, is far more than an elegant lingerie boutique. Breast cancer survivors find custom-fit bras, prostheses, and a boost of self-confidence inside these walls. The atmosphere is welcoming. “It’s a comfortable shop,” Manougian says proudly. “Customers leave their inhibitions at the door.”
Manougian chose her store’s Italian moniker, wanting the name to convey what she does here. And there is indeed beauty in her mission to uplift women traumatized by mastectomies and lumpectomies and those suffering from lymphedema. “They feel like they have lost a piece of themselves,” she says. “But they leave here happy, feeling like they have balance and symmetry again. I want to help them regain their life.”
Her journey as an entrepreneur and a woman has not been easy. After getting her start at a Portsmouth lingerie store, she boldly decided to open her shop. But she could not foresee the obstacles to come, or the devastating cancer diagnosis looming on her horizon.
Portsmouth Hospital’s Director of Oncology at the time, Sue Gosselin, became the catalyst for Manougian’s colon cancer diagnosis. Noticing Manougian’s painwracked face at an open house event in 2005, Gosselin strongly suggested her friend have a colonoscopy. Although her doctor had dismissed her complaints for years, the procedure revealed stage three colorectal cancer with a 20% survival rate. Forty-two at the time, her cancer had likely been growing since her early thirties. “Sue saved my life,” she says. “It took a woman to listen to me.”
Manougian endured surgery and eight months of chemotherapy that left her sick and exhausted, but she
persevered, working at the store as much as she was physically able. While her “calling” was always to help women feel good about themselves, her arduous journey through recovery transformed this calling into her true passion: to give women the ability to “feel whole and beautiful from within.”
She resolved to offer women mastectomy products and services, but area doctors discouraged her, citing insurance challenges. Undaunted, the intrepid Manougian forged ahead. Once certified as a fitter, she became an approved provider with Medicare, Martin’s Point, Anthem, and Harvard Pilgrim. Physicians and plastic surgeons began sending her clients, and her passion came to fruition. “The paperwork is complex and difficult,” she says, “but it’s all worth it.”
Bella’s mastectomy boutique occupies a separate space with an intimate, feminine ambiance. “Women feel safe coming here,” Manougian says. Special equipment scans a woman’s chest wall at the surgery site to create a custom breast form that fits like a perfectly matched puzzle piece. These breast forms are unique to a woman’s size, shape, and color and are 45% lighter than traditional forms.
Not all of Bella Intimates’ clients are cancer survivors. Everyday lingerie shoppers also appreciate Manougian’s expertise and personal approach. She is thankful to have “great clients” and many long-time regulars. During the holidays, husbands come in to help her choose the holiday pajamas to order and to buy sets for their wives and daughters. “I know my clients,” she says.
A silken thread of kismet seems to have woven itself through Manougian’s life. This fearless survivor firmly believes that along her path, people came into her life for a reason—even Oprah. While undergoing cancer treatment, a colleague appeared on an Oprah episode about finding the right bra and mentioned Manougian and her shop, calling her one of the best in the business. The next day, there was a long line outside the store. Now that’s kismet.

Flickering flames, the sizzle of something good, a smoky aroma, a cold drink in your grip, the reward of biting into the perfect balance of char and juicy. Gathering with family and friends for outdoor grilling engages all five senses in a way few other experiences can.

Long a summer activity, grilling has graduated to become a year-round passion for many. With advancements that keep raising the bar on better control and bigger flavor, today’s grill game is not your father’s hobby. And with state-of-the-art outdoor kitchen solutions that can withstand all weather and 365-day use, it’s not surprising that luxury grilling is enjoying its well-deserved heyday.
Lakes Region Luxury Outdoor in Tilton specializes in premium outdoor cooking appliances and accessories, featuring top-end grills from Alfresco and Artisan, outdoor pizza ovens from Alfa, charcoal smokers from Primo, and refrigeration solutions from Perlick. With the largest live demonstration showroom in the state, Lakes Region Luxury Outdoor owner Brian Neil is happy to fire up one of his grills or pizza ovens to show visitors the difference between his appliances and those from big box stores.
“It’s like learning to drive stick in a Honda Civic and then stepping up into a Porsche,” Neil says. “Technically,
you’re driving stick with both, but the experience with a premium grill—the way it handles, the end result, the joy along the way—it’s night and day.”
Neil says the turbo charge in heat output on luxury grills means learning to cook differently. “A typical grill might max out at 24,000 BTUs,” he continues. “The Alfresco? That’s the output from just one burner. Now, factor in that you’ve got three burners and a 42-inch footprint.”
Those accustomed to grilling on lower-end models will find that meat burns more quickly on the models he carries. Neil explains it comes down to timing. Ceramic sear burners, for example, utilize a forced air system that reaches 1,800 degrees in under 60 seconds. “You’ve got maybe 30 seconds to flip your meat before it turns into shoe leather,” he points out. Luxury grills also offer precise control for low and slow cooking, like rotisserie or preparing fish on cedar planks.
And while many of us cook with lids closed because we’re using our grills like an indoor oven, it’s better to leave lids open on top brands to take advantage of higher temperatures that cook food in half the time.
Neil and his team seek to understand how a customer plans to use a grill before selling someone more than is needed. Grilling hamburgers, hot dogs, chicken breast? One doesn’t necessarily need a luxury model. Wild game, on the other hand, or premium dry-aged steaks? That’s where advanced features like the sear burner that provides restaurant-quality crust while locking in juices and flavor or the independent smoker that precisely controls smoke and heat is going to be a game changer and a deciding factor.
Neil loves grilling bear tenderloin, venison, pheasant, turkey, fish—catching all of it himself. An avid outdoorsman, he moved his family to New Hampshire from New Jersey in 2015. “I love camping, hiking, fishing, hunting,” he says, “and New Hampshire has it all.” He demonstrates wild game preparation in his outdoor showroom, in online videos, and at the Northern New England Outfitters hunting camp in Errol, New Hampshire, where he equipped them with a custom outdoor kitchen.

Backyard Garlic
Rebecca Hennessy and Margaret Witham harvest over 1500 pounds of garlic in Hennessy’s Eliot backyard every July, the first step in a highly labor-intensive process to produce their organic, locally grown Backyard Garlic. The idea sprouted in 2017 when the pair met “garlic guy” Don Womack at a farm and food conference, leading to their “eureka” moment. Securing Womack as a mentor and backyard space from friends, they dug into their garlic venture. After selling out at a Button Factory event that same year, they pivoted to a wholesale model—landing coveted shelf space in local markets. Eight years later, 7,000 units (bottles and refill packages) are hand-produced annually and sold at over 45 markets across the Northeast.

Cass Caps
Frustrated with the tedious measuring process while making bread one day, Mark Lacasse designed a spice jar cap that, with a simple twist, dispatches the exact portion needed—no measuring spoons. The innovation would sit on the shelf for years as Lacasse worked his day job in global business. However, an earlier experience designing a pineapple slicer ensured his idea would not gather dust—just tucked away for a rainy day. In 2020, after retiring, that day came. Lacasse patented his cap and, with his daughter, Erika, launched CassCaps on Kickstarter, becoming the #1 food category campaign. On the heels of this success, Lacasse fine-tuned the product and relaunched CassCaps this summer.

Gulf of Maine Conservas
On a trip to Spain, Keper Connell of Rye experienced the delicacy of seafood “conservas,” a Spanish tradition of preserving food in cans or jars— not the bunker food we associate with tinned products. Growing up in the restaurant business and as a commercial fisherman, Connell understands the source-to-table chain of custody. With conservas, he saw an opportunity to elevate and extend the life of his product, line-caught Gulf of Maine fish. So, in 2019, Connell started playing around with flavors and ways to produce small-batch domestic conservas sustainably. Thanks to his perseverance, consumers can now enjoy locally harvested bluefin tuna straight from their pantry anytime, or how about an ELT prepared with Connell’s smoked eel conservas? Delish.

The Spicy Shark
Gabe DiSaverio, The Spicy Shark hot sauce founder and confessed Jaws fanatic, developed an appetite for spicy cuisine growing up in an ethnically diverse neighborhood. The fanatic became an active conservationist in 2012 after learning about the shark plight at Jaws Fest. Then, in 2017, after leaving the beer industry to help run a family business, DiSaverio began experimenting with hot sauce recipes. After months of family taste testing, everything culminated in 2019 when The Spicy Shark launched, blending his two passions—hot sauce and sharks. Now, with 13 sauces, numerous industry awards, and a customized Chief Brody-inspired 1975 Chevy Blazer, there is no stopping DiSaverio. Let the feeding frenzy begin.

Dunk’s Mushrooms
William Dunkley (Dunk) started his Brentwood-based mushroom emporium selling wild mushrooms to chefs and specialty markets. While he foraged as a kid in Errol, NH, he started wild mushrooming as an adult. The short season made scaling a challenge, so after a successful cloning experiment, Dunk began growing his own varieties. Then Covid hit, restaurants shuttered, and Dunk had 2000 pounds of mushrooms growing weekly with no stopping. The ever-resilient entrepreneur capitalized on his culinary background to expand his mushroom-based products. Today, Dunk offers nutritious energy bars, coffee, pot pies, chili, and his favorite and most recent addition, a Chaga Chai dark chocolate bar made in collaboration with Manchester-based Loon Chocolate.

Years ago, Sara Hamilton of Portsmouth seeded a cheery holiday gift idea, concocting a salt/spice blend with herbs from her garden and packing it in a fancy jar with festive string for gifting. Word spread and her recipient list grew as she continued the tradition. People started bringing her herbs and spices from their travels so Hamilton could experiment with them in her ongoing quest to perfect her “special salt” recipe. Finally, in 2016, with her proprietary blend perfected, Hamilton started renting commercial kitchen space from Terra Cotta Pasta Co. to produce her original Beach & Farm “special salt” mix and the “special spice” rub she added at the behest of local fans.

Roaring into a “New” Generation

Adrienne and Paul Waterman never envisioned themselves as restaurateurs. Still, when the owners of The Library restaurant, located within the historic Rockingham building at 401 State Street in Portsmouth, decided to retire, the Watermans heard their plea: “We need someone to take over who loves the history of this place and will keep it going,” And the rest, as they say, is history. In February of 2023, the Watermans became the stewards of this Portsmouth gem and haven’t looked back. Sitting in the historic bar, surrounded by walls of books, Adrienne talks about this passion project.

TELL US ABOUT YOUR JOURNEY TO PORTSMOUTH AND COMING TO OWN A LANDMARK RESTAURANT.
In 2020, we embarked on a New England tour from our home in New Jersey. Almost instantly, I fell in love with Portsmouth and its rich history, and shortly after, we were lucky to buy a condominium in The Rockingham. We frequented the downstairs restaurant and got to know the owners and staff. I’m an industrial engineer, and my husband is an international businessman, so we never considered buying a restaurant, but everything about it spoke to us. We feel this is our time to preserve the legacy, and then it will go on to someone else who will do the same.
OF ALL THE HISTORIC FEATURES, WHAT DO YOUR GUESTS CHERISH THE MOST?
Everyone fancies the lions, of course. For centuries, people have posed with them on the front steps—a
symbol of the legendary Frank Jones, who owned The Rockingham when it was a hotel in the 1800s. Our Lion Project is a display of visitors posing with the iconic lions. Guests also delight in the dining room’s mahogany paneled walls, colorful stained-glass windows, and perfectly preserved fresco ceilings—still breathtaking after all these years.
WHAT PART OF THE ROCKINGHAM HISTORY DO YOU FIND MOST INTERESTING?
It has been the center of Portsmouth’s social and business life for centuries, which I find fascinating.
The building is on the National Register of Historic Places, and seven U.S. Presidents have visited, including George Washington, Theodore Roosevelt, and John F. Kennedy. Politicians and celebrities, including Mark Twain, have stayed here. The legendary Frank Jones built a labyrinth of tunnels under the building, wide

enough for his horse and carriage to travel to and from the beach or his famed brewing company in the West End.
HOW DID THE LIBRARY GET ITS NAME?
Ladies entered through the right-side entrance, while men used the main entrance on the left to enjoy a whisky and a smoke while talking around the grand fireplace in their separate lobby. The ladies rested and read in what was called the Gold Room, which is now the bar. Newly repainted, it’s believed that’s where the idea of The Library originated. We name cocktails after great literary works, like The Great Gatsby. Our bookshelves hold thousands of old books, and we encourage guests to “borrow” from the collection. We go through about 2000 books a year, but an antique dealer keeps our shelves full. Recently, a man donated his family’s Charles Dickens collection.
WHAT CHANGES HAVE YOU MADE TO THE LIBRARY SINCE TAKING OWNERSHIP?
In the 1960s, Tommy Gallant performed here, making The Library a destination for jazz enthusiasts. We added a Wednesday Jazz Night as a nod to this rich jazz history. We also expanded our staff, bringing on a mixologist and a new Chef de Cuisine, Cody Finch, from the Food Network’s Chef Boot Camp, along with in-house florist Paula Davies, who makes our guest’s special evening even more memorable with a custom centerpiece.
