The holiday season is upon us, and with it comes a surge of that magical spirit that we often seek to recreate from our youthful memories. Whether it's the scents, sounds, lights, holiday festivities, or a combination of all, we tend to infuse our own family traditions with echoes of our own childhood experiences.

In our household, Christmas morning carries a special tradition. We prepare reindeer-shaped pancakes for the kids, drenched in organic maple syrup, all while donning matching holiday pajamas. Even our two canine companions, Lucky and Max, get in on the festive attire. Following this heartwarming breakfast, we convene in our family room, adorned with a Christmas tree that the children helped select and decorate. It's here that we exchange our thoughtful Christmas presents. As our children grow, we discover that Christmas holds an even deeper significance, and it becomes a cherished opportunity to create lasting, love-filled holiday memories as a family. In the words of one of our favorite family movie classics, the Grinch from "How the Grinch Stole Christmas," think about that "maybe Christmas doesn't come in a box"; it's so much more!

Chef Covas, two time winner of the Food Network challenges and cookbook author

After winning two Food Network competitions, Chopped & Supermarket Stakeout, garnering other awards, and owning a couple of restaurants, Chef Lauren Covas is now a full-time in-demand caterer who recently published her first cookbook, Little Portugal.

WHAT WAS YOUR INSPIRATION TO BECOME A CHEF?

I grew up in a very vibrant old school Portuguese family. I’m first generation and, as with a lot of European families, food is the centerpiece of our lives.

My mom and my grandmother are my biggest inspirations. They were always in the kitchen, so that’s where I got my first taste of it. I found such peace in the kitchen, so it just built that momentum for my future.

HOW DO YOUR DISHES STAND OUT?

A lot of times food can taste wonderful, but the presentation isn’t so great. I love art and working with my hands, and as a chef, you need both of those skills. You eat with your eyes first.

Everything’s homemade, and I love taking real ingredients and using those in multiple ways. Something as simple as cooking down white beans for a sofrito, or pureeing them for a creamy component of a dish.

Also, for holiday dishes, you don’t need to reinvent the wheel, but you can spruce them up. Everyone’s going to have the traditional sides or the things that they love, but I give them a new little flair.

For example, we can put the butternut squash soup in little shooters and garnish with pomegranate seeds. Or take that baked brie, and make it with a little bit of fresh raspberry compote, using it as a dip for crostini.

WHAT ARE THE ADVANTAGES OF HAVING AN EVENT CATERED?

I take something off your plate and you get to enjoy your own party. We have full service as well as just delivery. We talk about what’s important to you before your event and I make sure that those notes are hit on.

I also give you tips and tricks. You don’t have to spend a fortune to do a great table setting. Use mason jars as your vessel for flowers to give it that rustic vibe, or place a piece of lace on your table as a runner. Different accent pieces pull the table together and give you that all around total magazine feel.

TELL US ABOUT YOUR NEW COOKBOOK, LITTLE PORTUGAL, THAT WAS RELEASED IN JULY.

Little Portugal is a real homage to my grandmother and my mother and how I was raised. It features family stories and traditional dishes that I grew up with that I’ve added a more modern twist to.

White Chocolate Martini

This drink blends the silky taste of white chocolate with a hint of peppermint, making them the perfect holiday cocktail to share with your friends and family!

ingredients:

• 4 ounces white chocolate liquor such as Godiva

• 2 ½ ounces of vanilla vodka

• 1 ½ ounces of peppermint schnapps

• Crushed candy canes or peppermint candies for garnishing the glass rim (optional)

• Crushed ice

instructions:

Cocktail

Fill your cocktail shaker half-way full of crushed ice.

Pour in your white chocolate liquor, vanilla vodka, and peppermint schnapps.

Shake until well mixed.

Candy Cane Rim

Spread the crushed candy canes or peppermint candies evenly onto a large plate.

Wet the rim of a martini glass with water. Dip your martini glass rim into the crushed candy canes and spin the glass to coat the rim.

Then pour the contents of your shaker into your martini glass and enjoy!

The holidays are filled with family gatherings. Enjoy these easy, make-ahead recipes to simplify your holiday breakfast; they are sure to impress your guests.

MONKEY BREAD

Ingredients:

• 18-20 Rhodes white frozen rolls

• 1 regular box of cook and serve butterscotch pudding

• ½ cup chopped pecans

• 6 tablespoons butter, melted

• ¾ teaspoons cinnamon

• ½ cup brown sugar

Instructions:

Grease a bundt pan with non-stick cooking spray. Sprinkle chopped pecans around the bottom of the bundt pan. Next, place frozen rolls in the pan, evenly spreading them out. Sprinkle the rolls with the dry pudding mix. Melt butter in a separate container, and add cinnamon and brown sugar and stir. Pour butter and sugar mixture over the rolls. Cover with saran wrap that is sprayed with nonstick cooking spray. Place in a cool oven overnight with the light off. Bake the next morning at 350 degrees for 30 minutes. Let stand for 5 minutes and then turn the bundt pan over onto a serving plate and gently pry out of the pan, allowing time for the pecans and toppings to drip on top. Enjoy!

HEARTY BREAKFAST CASSEROLE

Ingredients:

• 8 eggs

• 2-3 cups torn bread pieces

• 3 ½ cups heavy whipping cream

• 1 pound breakfast sausage, browned

• 1 pound bacon, cooked and crumbled

• 2 cups shredded cheese of choice

• 1 teaspoon red pepper flakes

• 1 teaspoon rosemary

• 1 teaspoon thyme

• Salt and pepper

Instructions:

Spray 9 x 13 pan with cooking spray. Layer torn bread pieces on the bottom of the pan to cover completely. Sprinkle 1 cup cheese over the bread. Whisk eggs and heavy whipping cream and red pepper flakes salt and pepper. Pour mixture into the baking dish. Add bacon and sausage on top of egg mixture. Top with remaining cheese and sprinkle with rosemary and thyme. Bake at 350 for 35 minutes or until the center is done.

CROISSANT LEMON BERRY DELIGHT

Casserole Ingredients:

• 6 large croissants (from the bakery) sliced into cubes

• 3 cups mixed berries

• 1 package cream cheese, softened

• 1 cup  sugar

• 5 eggs at room temperature

• 2 cups half and half at room temperature

• ¾ tablespoon vanilla extract

• ¾ tablespoon lemon juice

Lemon Glaze Ingredients:

• 2 ounces cream cheese, softened

• 1 tablespoon butter, softened

• 1 cup powdered sugar

• 1 ½ tablespoons lemon juice

• 1 ½ teaspoons vanilla extract

Instructions:

Preheat oven to 350 degrees and toast the cubed croissants on a baking dish for 10 minutes. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs, half and half, lemon juice and vanilla and mix until smooth. Place the toasted croissants into a greased 9 x 13 pan and layer with 1 ½ cups berries. Pour custard mix on top and then add the remaining berries on top. Cover with foil and refrigerate overnight.  Preheat the oven to 350 degrees and bake, covered, for 30 minutes. Remove foil and bake for another 15 minutes. Set aside and make glaze by adding all ingredients to a bowl and mixing until smooth. Drizzle over the casserole and sprinkle with powdered sugar if desired.

HASHBROWN BITES

Ingredients:

• 20-ounce bag refrigerated hash brown potatoes

• ¾ cup green onions, sliced

• ½ cup  grated parmesan cheese

• 1 teaspoon sea salt

• ½ teaspoon pepper

• ½ teaspoon red pepper flakes, optional

• 2 tablespoons olive oil

• ¼ cup pepper jack cheese, optional

Instructions:

Spray muffin tins with non-stick cooking spray. Combine all ingredients in a bowl and stir. Evenly add mixture to each muffin tin and lightly press down. Bake at 400 degrees for 45 minutes. These can be made in advance and reheated for convenience.

• ½ teaspoon pure vanilla extract

Directions

Heat all ingredients (except vanilla extract) in a 2-quart saucepan over medium-low heat until almost boiling. Remove from heat and stir in vanilla extract.
