A Farewell to Leadership, and a Season of Connection

Dear Neighbors,

As I look back on this past year, I feel a mix of gratitude and awe. It’s been one of the hardest— and yet most expansive—years of my life. Growth is rarely comfortable, but what a gift it is to recognize how far you’ve come. Through it all, I’ve been grateful for this community—building connections with business owners, friends, and neighbors who value heart, purpose, and social impact.

December has always been one of my favorite times of year. I love the first snowfall on the mountains, the start of ski season, and cozy evenings. While Christmas will look different this year, I love reflecting on the special memories I've made with my kids and I'm looking forward to new traditions we're creating as they live in Seattle. Sharing laughter with friends old and new. It’s a season that reminds us to slow down and savor the moments that truly matter.

This month, we also pause to honor the outgoing mayors of Millcreek and Holladay, whose vision, integrity, and dedication have shaped our cities in meaningful ways. Their leadership leaves a lasting foundation of connection, pride, and community spirit that will continue long after their terms end.

Of course, the holidays sparkle brightest when we celebrate local talent. Our Local Shopping Guide highlights boutiques, artisans, and makers whose passion brings beauty and meaning to every gift. In Culinary Creations, local chefs share cherished recipes that invite us to gather around the table and create memories. Utah Symphony, the Hale Centre Theatre (HCT) is one of many organizations that have helped creatives develop their craft for over 40 years. It all began with Nathan and Ruth Hale.

“Early on in their marriage, Mark’s [Dietlein] grandparents were writing and producing plays in Utah,” says Sally Dietlein, Hale Centre Theatre's artistic director and co-founder.

Hale Centre Theatre is a 501(C)3) nonprofit organization founded in 1985. Alongside her husband, Mark and his grandparents, Ruth and Nathan Hale, the family turned an old South Salt Lake factory into a 220-seat immersive theater in those early days.

“We opened the theater in Sandy in the fall of 2017, and it's been remarkable to see the growth that has happened," Sally said.

Sally has written, directed, and choreographed seven musical performances, all produced by HCT. Under her joint leadership, numerous honors, including the Utah Pioneer of Progress award and a prestigious Utah Business award, have been given. Currently, Hale Centre Theatre is composed of two, (soon to be three) center stages.

Hale Centre Theatre currently has three resident directors, a resident choreographer, and a resident musical director. “The building of these shows, whether set design or costumes, are so technical, we start ten months ahead of production," Sally explained.

With over 500 actors auditioning and starring in productions each year, the theatre's performances showcase a remarkable range of talent. To help kick off the holiday season, Hale Centre Theatre is celebrating its 40th annual production of a “Christmas Carol".

With performances starting in November, it has become a cherished tradition for families across the Wasatch Front. This timeless story reminds us that generosity isn't about wealth but about warmth. DISCOVER Franck’s DINING

In spring 2006, the owners of Tuscany transformed a charming brick house on their Holladay property into "Franck's House."

Executive Chef Rob Perkins has been crafting culinary magic at Franck's for 19 years. He and chef Franck Peissel opened the restaurant together in 2006. Peissel left to explore other culinary adventures seven years ago, leaving Chef Perkins at the helm, with a vision that exceeds his Western Culinary Institute training.

In fact, Chef Perkins operates the restaurant without a single written recipe. This approach allows him to reinvent his offerings daily, responding to fresh seasonal ingredients.

"Food naturally changes and evolves, I try to use a lot of local farms and growers, and that is what evolves us," Chef Perkins explained. "We move with seasons and focus on highlighting ingredients. We have pulled back from the French influence somewhat."

Every Tuesday, Franck's showcases a Tuesday Tasting Menu —a four-course culinary experience highlighting the very best seasonal ingredients. This curated menu changes weekly, reflecting Chef Perkins' creative flair and commitment to fresh, local produce. The Tuesday Tasting Menu is a must-try opportunity to explore Chef Perkins' imaginative take on modern dining.

A Culinary Journey that Redefines Flavor

For burger lovers, Thursday is the day to head to the restaurant, as it features the special Wagyu Sirloin Burger. Crafted from leftover Wagyu beef trimmed throughout the week, the Wagyu is ground fresh and transformed into an extraordinary burger experience. Each week, the burger is reinvented with unique toppings and garnishes.

The restaurant also hosts special dining events throughout the year, where the chef's creativity truly shines. One of the most anticipated events is the fivecourse menu crafted specifically for Christmas Eve. This exclusive dining experience features seasonal ingredients, artfully prepared dishes, and elegant presentations. Each course is thoughtfully designed to celebrate the flavors of the season, making it a memorable culinary experience for all who attend.

OUTGOING CITY MAYORS REFLECT ON THEIR LEGACY AND FUTURE PLANS

As their terms come to a close, Millcreek Mayor Jeff Silvestrini and Holladay Mayor Rob Dahle prepare to pass the torch to new leadership. Both mayors have left an indelible mark on their communities, championing growth, sustainability, and a strong sense of local identity. In this article, we reflect on their accomplishments, challenges, and what lies ahead for these dedicated public servants as they bid farewell to their roles.

Q. LOOKING BACK ON YOUR TIME IN OFFICE, WHAT ACCOMPLISHMENTS ARE YOU MOST PROUD OF, AND WHY?

Mayor Jeff—Setting up a new city and, within 9 years, seeing it achieve a Triple A bond rating, and running this city with compassion through our after-school programming that has helped build connections in our city.

Mayor Rob—In 2019, we went for a tax increase, and with that revenue, we did some bonding, and over the last six years, we have been able to invest over $20 million in our road and storm drain infrastructure.

Q.WHAT WAS ONE OF THE BIGGEST CHALLENGES YOU FACED AS MAYOR?

Mayor Jeff—Convincing folks who were against incorporation that it was a good idea. Our city offers better

services, and we have repaired more roads and built more sidewalks. We maintained other essential services, like snowplowing and police and fire, without drastic tax increases.

Mayor Rob— The budget, trying to do something with nothing. That tax increase was a three-year process; we wanted to make sure the citizens knew why and what we were going to invest that money in.

Q.HOW DO YOU FEEL THE CITY HAS CHANGED DURING YOUR TENURE, AND WHAT LEGACY DO YOU HOPE TO LEAVE BEHIND?

Mayor Jeff—This city has matured really fast. We have put Millcreek on the map and made it a strong player in state politics. That has helped us get a greater share in grant funding. Getting the city started and on the right track is my legacy, if I have one.

Mayor Rob—We put a tree preservation ordinance in place that was tough to get through the public process because it involved the private property rights of people. We felt strongly that we needed something that looked out into the future when people were clearing lots. We require them to replant the trees so they regenerate in Holladay. I think I leave behind a strong, respectful culture.

Q.WHAT ADVICE WOULD YOU GIVE TO THE NEXT MAYOR STEPPING INTO THIS ROLE?

Mayor Jeff—Be bold, seize opportunities. One of the advantages of being in a new city is not having to do things the way they've always been done. I hope that type of philosophy will not confine the next Mayor who follows me. Play to win.

“My favorite holiday tradition is the ‘odes’ or smart alecky poems or letters our family members write to each other which we open when we gather, usually on Christmas Eve over egg nog. They reflect events which we experienced that year, usually embarrassing moments.” —Mayor Jeff

Mayor Rob — Really value the role that the volunteers play and the work they do in their various committees to support the mission of the city. Understand your role as an elected official and your interactions with city staff, and ensure they are properly respected. Continue to appreciate and protect the little open space we have, and acquire more when the opportunity arises.

Q.AS YOU RETIRE, WHAT ARE YOUR PERSONAL PLANS, AND HOW DO YOU HOPE TO STAY CONNECTED WITH THE COMMUNITY?

Mayor Jeff — I really hope to travel more with my wife; we have put that off because of the time I have devoted to this job, which I felt was necessary to do a good job. I am really looking forward to not having to think about going to work or school.

Mayor Rob — My wife, Joni, has said I can't volunteer for anything for the next 6 months. I have a couple of trips planned, and I will help out more with my five grandkids. I think I will just wait to see when something I am passionate about comes along, and then get involved with that and the community somehow.

Find True Connection This Holiday Season

AS A YOGA AND MINDFULNESS TEACHER, I’VE LEARNED THAT OFTEN, THE GREATEST GIFT WE CAN GIVE ISN’T WRAPPED IN PAPER—IT’S OUR FULL, UNDIVIDED PRESENCE.

The holidays promise joy and togetherness, yet many of us finish the season feeling surprisingly empty. Sure, we attend the parties, exchange gifts, check all the boxes—but somehow miss the connection we were seeking. The culprit is often overscheduled calendars, mounting expectations, and constant distractions that prevent us from actually being present with the people we love most.

Maybe this year, consider a different approach to the holidays. Instead of adding more to your plate, try creating space for genuine moments that matter.

“We seek connection during the holidays, yet ironically schedule ourselves so full that genuine presence becomes impossible. Space, not stuff, creates real togetherness.”

Here are five mindful ways to reclaim meaningful connection this holiday season:

Leave Phones at Home for a Walk. I know—radical! Choose a trail or neighborhood route and walk together without devices. Share favorite family stories, memories, or simply enjoy comfortable silence. The absence of digital interruption creates space for real conversation.

Create "Special Days" for Each Family Member. Leading up to the holidays, set aside one day to celebrate each person individually. Instead of material gifts, offer memories, compliments, make their favorite food and offer genuine appreciation. This practice honors each person's unique presence in the family.

Interview Your Elders. Sit down with parents, grandparents, or older family members and ask about their lives. Record these conversations or write them down. These stories become precious heirlooms, and the act of deep listening itself is a profound gift of presence.

Build Space into Your Calendar. The irony of the holidays is that we often schedule ourselves so full that connection becomes impossible. Intentionally block out unstructured family time—two to four hours where nothing is planned except being together.

Volunteer as a Family. Serve together at a shelter, food bank, or community organization. Shared service creates meaning and shifts focus from getting to giving, often sparking the most memorable conversations.

On the Table

LOCAL CHEFS SHARE THEIR FAVORITE HOLIDAY DISHES

Holidays and Christmas to me are the time for mince pies, warm by themselves with a glass of sherry or Madeira, Brandy Butter, or Custard, a little slice of childhood home comfort. My mum always made the mincemeat a year before so it would age, not meat but dried fruits and apple or quince in some cases. I do mine in the style of Nigella Lawson with a pastry cut star and lashings of powdered sugar, plus we always put one out on Christmas Eve for Father Christmas with a carrot and a glass of something.

Pastry ingredients -

• 280 g flour, all-purpose

• 170g butter, salted, cold into cubes

• 1 tbs sugar

• Zest of 1/2 orange or clementine

• 6-8 tbs ice cold water as a guide may need a little more

Filling ingredients:

• 1 jar of homemade or Robertson Mincemeat

• 2 tbs brandy

• 1/2 apple grated

• Zest of 1/2 orange or clementine

• Egg for glazing

• Powdered sugar

directions

1. Butter a 12-cupcake pan. Oven at 375 °F convection.

2. Have ice water on hand and in a large bowl, rub in butter to flour and sugar.

3. Add zest and drizzle in water and bring dough together lightly.

4. Roll and fold on itself to create a few layers, wrap in cling, refrigerate.

5. Meanwhile, mix mincemeat with brandy, apple and zest.

6. Cut dough in 1/2 and roll out to 3-4 mm and cut rounds, line in pan.

7. Place a heaped tbsp of filling.

8. Roll out 2nd pastry slightly thicker and cut stars to fit the top of the pies, or a slightly smaller round with a snipped hole with scissors to let the air escape.

9. Brush with egg and bake for 20 mins, until golden brown.

10. Let cool, dust with powdered sugar. Makes 12.

GREENS WITH PROSCIUTTO AND PANKO

This dish has been a staple at my family’s Thanksgiving dinner for the past ten years. My family begs me to make it, and it’s always a highlight of the meal. For me, Thanksgiving is the “Super Bowl” of holidays, and this dish is a real standout. It’s also perfect for making ahead of the big day, which is a huge bonus. --Jennifer Martello, corporate chef, Sevillo Fine Foods (@chefjennmartello)

For the Crispy Toppings:

•  4 oz prosciutto

• ½ cup panko breadcrumbs

•  3 Tbsp olive oil, divided

• 1 tsp chopped fresh thyme

• 1 cup finely grated Parmesan cheese, divided

• Kosher salt and black pepper

For the Gratin:

• 2 bunches collard greens (about 1 lb.), center ribs and stems removed

• 1 large onion, thinly sliced

• 2 garlic cloves, finely chopped

• 2 Tbsp unsalted butter

• 2 Tbsp all-purpose flour 2 cups whole milk

•  ⅛ tsp ground nutmeg

1. Prep the Prosciutto and Panko Topping Preheat your oven to 325°F. Lay the prosciutto on a parchment-lined baking sheet and bake for 20-25 minutes, until crisp. Cool, then crumble it into small pieces. Next, heat a medium skillet over medium heat. Add the panko breadcrumbs and 1 tablespoon of the olive oil. Toast for 10-15 minutes, stirring occasionally, until golden brown and crunchy. Remove from the heat and stir in the crumbled prosciutto, thyme, and 1/4 cup of the Parmesan cheese. Season with salt and pepper to taste, then set the mixture aside.

2. Collard Greens. Bring a large pot of salted water to a boil. Add the collard greens and cook for about 4 minutes, until tender and a vibrant green color. Drain the greens and immediately transfer them to a bowl of ice water to stop the cooking. Once cool, drain them well and squeeze out any excess water using paper towels. Coarsely chop the greens and place them in a large bowl.

3. Make the Creamy Béchamel

Heat the remaining 2 tablespoons of olive oil in a medium saucepan over medium heat. Add the sliced onion and chopped garlic. Cook for 15-20 minutes, stirring often, until they are soft and golden. Transfer the onion and garlic to the bowl with the collard greens. In the same saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 4 minutes, whisking constantly, until the mixture is smooth and a very pale brown. Gradually whisk in

the whole milk, 1/2 cup at a time. Add the nutmeg. Bring the sauce to a boil, then reduce the heat and let it simmer for 5-8 minutes, whisking often, until it has thickened. Finally, whisk in the remaining 3/4 cup of Parmesan cheese.

4. Assemble and Bake

Pour the creamy béchamel sauce over the collard greens and onion mixture and stir until everything is well combined. Season with salt and pepper as needed. Increase the oven temperature to 400°F. Transfer the collard green mixture to a 9-inch pie dish. Top with the prosciutto and panko mixture, spreading it evenly. Place the pie dish on a rimmed baking sheet. Bake for 15-20 minutes, until the gratin is bubbling and the topping is golden and crisp. Cool slightly before serving.

PORCHETTA

Porchetta has always been one of my favorite dishes to prepare around the holidays. The balance of crispy skin, tender meat, and aromatic herbs captures everything I love about Italian cooking—simple ingredients, perfected through time and technique. Step 1 - the Cure

• Pork belly - 2 pounds

• Salt - 40 grams

• Sugar 20 grams

Mix the salt and sugar together and sprinkle all over the meat. Place in a gallon-sized ziplock. Refrigerate overnight or up to 3 days. Remove the meat from the bag, rinse with cold water to remove excess salt, and pat dry.

Step 2 - the Roast

• 5 oranges zested

• 2 sprigs of sage

• 2 sprigs of rosemary

• 1 teaspoon of chili flakes

• Pinch of fennel seeds

• Mix together

Sprinkle the orange zest mixture all over the meat. Roll the belly and tie to make a roast. Cook in a low oven or immersion circulator at 175°F for 4 to 5 hours until internal temperature of 170°F.  Then broil in the oven or on a grill until golden and delicious.

HOLIDAY COCKTAILS & COZY CREATIONS

SPICED CINNAMON RUM FLIP

A luscious holiday cocktail with warming spices, rich texture, and a beautiful cinnamon garnish.

INGREDIENTS:

• 2 oz dark or spiced rum

• 3/4 oz cinnamon simple syrup

• 1 oz heavy cream

• 1 whole egg

• Dash of ground nutmeg

• Dash of vanilla extract

Garnish: cinnamon stick and a light dusting of nutmeg or cinnamon

Make Cinnamon Simple Syrup:

Combine 1/2 cup sugar, 1/2 cup water, and 2 cinnamon sticks in a saucepan. Simmer for 10 mins, let cool, and strain. Store in the fridge.

Add rum, cinnamon syrup, cream, egg, vanilla, and a pinch of nutmeg to a shaker. Shake vigorously for 15–20 seconds to emulsify the egg. Strain into a coupe or stemmed glass like the one in your photo. Top with a cinnamon stick across the rim and a dusting of nutmeg or cinnamon. Optional: Add 1/2 oz chilled espresso for a coffee kick.

FESTIVE CRANBERRY GIN FIZZ

A bright, elegant cocktail with a foamy top and a hint of holiday spirit.

INSTRUCTIONS:

INGREDIENTS:

• 2 oz gin

• 1 oz cranberry juice

• 3/4 oz lemon juice

• 1/2 oz simple syrup

• 1 egg white

Optional: splash of sparkling water or club soda

Garnish: fresh rosemary or thyme sprig

INSTRUCTIONS:

In a cocktail shaker, combine gin, cranberry juice, lemon juice, simple syrup, and egg white. Shake vigorously for about 20 seconds to create the frothy top. Double strain into a chilled coupe glass to get that smooth, foamy top. Add a small splash of sparkling water if you’d like a bit of fizz. Gently place a sprig of rosemary or thyme on top of the foam.

Whether you’re hosting a gathering or simply treating yourself, these holiday drinks are guaranteed to bring a little extra cheer to your cup.
