Soul Food
There’s something about food that always pulls me back home. I grew up in a house where meals weren’t just about feeding us—they were about gathering us. We raised much of our own meat, eggs and produce, and when we didn’t, we turned to friends and local resources as often as possible. My mom, who catered for 18 years of my life, made food feel like an occasion every single day. From the clatter of dishes to the smell of baking biscuits in the oven, those early experiences taught me that a good meal is really about connection and community.

That’s why I’m so excited to bring you our Food Issue . This month is brimming with stories that celebrate the joy of sharing meals, the people who craft them, and the community that gathers around the table. I’m especially thrilled to announce our new partnership with Aubrey’s Restaurant—a place that shares my same love for hospitality, community, and creating memories over a delicious spread.
You’ll also get to hear the story behind Bay’s Bread—a name with deep roots for me, since my mom used their bread in her catering company all throughout the 80’s and 90’s. Add in some incredible recipes (including a nod to fall bourbon favorites from Borchetta Bourbon), a spotlight on Hushpiggies (have you tried them yet?), and a showcase of some of our wonderful local vendors at the Market at 109—and this issue is truly a feast.
I hope these pages inspire you to slow down, set the table, and savor the flavors of fall with those you love most. Because at the end of the day, food isn’t just about what’s on the plate—it’s about who’s sitting around it with you.

When Randy Burleson opened the first Aubrey’s in Knoxville more than 30 years ago, he wasn’t just thinking about food—he was thinking about hospitality. A restaurant veteran who cut his teeth at the iconic Grady’s Good Times while studying at the University of Tennessee, Burleson learned early that great dining is about more than excellent service and well-prepared dishes. It’s about the feeling a guest carries with them when they leave.
“Hospitality is everything,” Burleson says. “It’s not just the things you have to do well to survive, like provide great service and serve excellent food, but also the way a guest feels while they are there and the things they say after they leave.”
That ethos has helped Aubrey’s grow into a beloved family of restaurants across East Tennessee, with the newest chapter now unfolding in Lebanon. For Burleson, the decision to open here was simple: it was the people.

“We’ve been looking to add restaurants in and around Nashville for quite some time,” Burleson explains. “We opened in Spring Hill earlier this year, but honestly, it was your mayor that convinced us to come to Lebanon. His enthusiasm and bullish attitude about the future of Lebanon was hard to pass up. Without a doubt, he was the best goodwill ambassador for this community.”
Since opening, Burleson and his team have discovered firsthand what makes Lebanon so special. “Even when we’ve had a bad night—because things go wrong in a brand-new restaurant— we’ve felt something very unique here. Instead of anger we’ve felt
kindness, people saying, ‘It’s ok, we understand! You have no idea how grateful we are that you are here.’ Never in my lifetime have I experienced the kindness of a community like Lebanon.”

The Lebanon Aubrey’s features a refreshed interior designed specifically with the community in mind: modern, comfortable, and stylish while still warm and welcoming. satisfied by keeping things simple, friendly, and real,” Burleson says.
The menu offers something for everyone: hearty steaks, fresh seafood, sandwiches, burgers, crisp salads, and shareable appetizers. A full bar and expansive wine list round out the experience, making Aubrey’s a go-to for both family dinners and business lunches.
This fall, guests can expect the classics they love alongside new ideas Burleson is exploring, like a veggie burger and—one day—the perfect coconut shrimp. “We’ve always been proud of the consistency of our menu, but I’m always looking for ways to keep people coming back,” he says.
ROOTED IN TENNESSEE
While Aubrey’s has built its reputation in Knoxville, Burleson is committed to deepening ties in Middle Tennessee. That means forging relationships with local growers and suppliers whenever possible. “Local sources only make sense if they help us deliver the best plate of food every time,” he notes. “But this will happen—it just takes time. We’re actively recruiting local food producers throughout Middle Tennessee right now.”
For Burleson, the future of Aubrey’s isn’t just about expansion—it’s about embedding the restaurant into the fabric of each community it serves. “In every community we’ve had the pleasure of serving, we’ve always made it a priority to become a part of that community. The managers who are in the restaurant every day are the people who can make this happen. Just give us a call, or stop by and ask for a manager. If we can help, we’ll certainly try to find a way.”
After three decades in the business, Aubrey’s continues to prove that great restaurants are about more than menus. They’re about people and the connections formed around the table. In Lebanon, that philosophy has found a community ready to embrace it.

From Ma’s kitchen to tables nationwide, Bay’s Southern Bread proves good things rise with time

Here in Lebanon, tradition has a taste. It rises warm from the oven, fills a room with comfort, and gathers people around tables. For more than forty years, Bay’s Southern Bread has been baking more than just loaves—it has been weaving family, community, and heritage into every slice. What began with a grandmother’s recipes has grown into a local legacy, proof that good bread—and the love that goes into it—has the power to last for generations. Their story begins with Bertha “Ma” Nixon of Sykes, remembered as much for her humor as for her gift in the kitchen. Of all her dishes, it was her sourdough that became legendary— and the very same starter she began nurturing more than 140 years ago remains the heart and soul of Bay’s bread today. Carefully passed through four generations, that starter and Ma’s treasured recipes eventually reached her great-granddaughter Peggy, who, alongside her husband Charlie Bay, carried them beyond the family table. More than 40 years ago, the couple introduced Ma’s bread to Cracker Barrel, turning a cherished family tradition into a community favorite.

Now, brothers Kerry and Kevin Bay carry the family torch, working side by side as the fourth generation of breadmakers, their children and even grandchildren begin to step into the bakery. Bay’s Southern Bread isn’t just a business—it’s a family story in motion. Each loaf connects the past to the present, honoring Ma while preparing the next generation to keep her spirit alive.
Though machinery has helped streamline production, the fundamentals haven’t changed. “It starts with passion,” Kerry explains. “Our starter is still handled the same way our great-grandmother did a hundred-plus years ago, before the first automobile was even on the road.”
“Our key ingredients come from right here in middle Tennessee,” he continues, “We are blessed to be based in Lebanon where the quality of life matters and fortunate to have amazing workers, plant management and leadership that have devoted themselves to raise the bar for the quality of our standards.” This commitment to tradition ensures that every loaf carries with it the same care that once came from Ma’s own hands.
Bay’s Southern Bread, lovingly known as the Home Of Ma’s Kitchen , has something for everyone. Their sourdough croutons have become a grandchild’s delight, especially when turned into cinnamon toast bits at Grandma’s house. The yeast rolls are a holiday staple, while sourdough slices are perfect for a quick breakfast or sandwich. BBQ enthusiasts swear by the signature cylinder bread. No matter the taste or occasion, there’s a Bay’s bread that feels like it belongs on the table.
For Kerry and Kevin, Lebanon has given as much to Bay’s as Bay’s has given to Lebanon. Their retail store on Hartmann Drive is more than a shop—it’s a gathering place. From moms picking up rolls for after-school games to neighbors gifting loaves at Christmas, the community’s support is the bakery’s backbone. “Support your community, and your community will support you,” Kerry says—a lesson baked into every day of their work.

When it comes to beauty, most of us think of serums, treatments, or facials. But Niki Green, owner of The Skin Lab in Lebanon, sees beauty much like a perfectly crafted meal—it starts with nourishment. “What we put into our bodies shows up on our skin,” she says. For her, glowing skin has just as much to do with antioxidants, omega-3s, and clean, purposeful supplements as it does with cutting-edge aesthetics.
It’s this philosophy—blending the science of skincare with the soul of nourishment—that has set The Skin Lab apart since its opening in 2020. Now, as the boutique medical aesthetic practice celebrates its five-year anniversary, Green reflects on the journey that transformed her passion into one of Lebanon’s most trusted wellness destinations.
“Opening The Skin Lab was equal parts passion, prayer, and purpose,” Green says. “Lebanon felt like the perfect fit, a small town full of heart and a community I wanted to serve long term.” Five years later, that community has become family, and the milestone feels both surreal and affirming. “Personally, it is a reflection of love and support. Professionally, it is proof that staying true to values like integrity, education, and patient-centered care can build something really special.”

Part of what keeps patients returning is the balance between results and connection. And like any good meal, The Skin Lab continues to evolve its menu. This year, clients can look forward to new technologies, an expanded retail shelf with curated skincare products, and innovative
regenerative treatments. Among the latest offerings are cellular renewal therapies using electroporation with stem cells, growth factors, and exosomes—next-level science designed to support healing, collagen production, and natural radiance.
Still, Green keeps one eye on the inside-out connection, frequently guiding patients toward nutritional choices that support skin health. She swears by vibrant, whole foods—especially antioxidant-rich berries and omega-3s— while recommending that clients limit gluten if they’re struggling with inflammation or acne. From Diamonds to Drumsticks
How Shawn Smith turned a weekend hobby into Hush Piggies, Lebanon’s go-to barbecue brand

For Shawn Smith, owner of The Jewelers by day and pitmaster by night, cooking has always been more than a pastime—it’s therapy. Growing up, food was at the center of family gatherings, especially the big annual barbecue that always fell on his birthday weekend. That’s where his very first sauce recipe was tasted, a tangy vinegar-based blend that years later became his signature Smitty’s Small Batch.
What started in Mason jars and recycled containers soon became too popular to keep as just a hobby. Friends and family raved, and by 2007 Shawn was selling barbecue on the side of the road. The response was overwhelming. “That’s when I knew I was on to something bigger,” he recalls.
Today, Hush Piggies has grown into a go-to brand for serious grillers. The lineup includes bold sauces and rubs, but Shawn still favors the original. “Smitty’s Small Batch is my favorite. It’s no-sweet, vinegar-based, and I


use it for everything—marinades, baste, seasoning, even in spaghetti or on tacos.”
The brand’s cult favorite, Meat Candy, has taken on a life of its own. Parents report their kids are trying new foods just because of the name. Shawn laughs, “It’s not just for meat—try it on corn on the cob or potatoes.”
Balancing jewelry design with barbecue might seem unlikely, but for Shawn, both are fueled by creativity and passion. “They harness different sides of me,” he says. “Having both helps me stay grounded.”
For backyard cooks looking to up their game, Shawn’s advice is simple: brine your chicken. “Use chicken stock and cola—or even pickle juice—with Meat Candy. It’s the best, juiciest chicken you’ll ever make.”

Taste of Wilson County is an annual celebration that brings together the very best of our local restaurants, food trucks, caterers, and businesses for one unforgettable evening. It started as a way to showcase Wilson County’s culinary talent and quickly grew into one of the most anticipated events of the year. This year marks the 16th annual celebration.
Each fall, the streets of downtown Lebanon come alive with live music, the smell of delicious food, and
the buzz of families, friends, and visitors exploring more than 50 vendors. Guests have the chance to sample a variety of dishes—everything from hometown comfort foods to creative, chef-inspired flavors—while enjoying the warm and welcoming atmosphere our community is known for.
The event also features a vendor marketplace with local boutiques, artists, and specialty products, making it a wonderful way to discover new favorites and shop local. Add in live entertainment, a mascot danceoff, and a fun-filled kid zone with games, inflatables, and a petting zoo, and you’ve got something for all ages.

TASTE OF WILSON COUNTY IS KNOWN FOR GIVING BACK. HOW DOES IT BENEFIT THE COMMUNITY?
The heart of Taste of Wilson County is its commitment to supporting education. The event is hosted by the Lebanon Wilson County Chamber of Commerce, with all proceeds benefiting the Chamber’s Business & Education Coalition.
This coalition provides teacher grants that fund classroom projects, educational materials, and hands-on learning opportunities for students. Since the program began, more than 736 grants have been awarded, totaling over $308,000. That means more resources for art, music, science, and literacy programs that might otherwise go unfunded.

There’s no better way to welcome fall than with a road trip through the Ozarks, and from Lebanon, this eight hour road trip is well worth the trek to reach one of the region’s most dazzling seasonal celebrations. Silver Dollar City in Branson, Missouri, hosts its annual Harvest Festival from September 12 through October 26, 2025, and it’s a feast for the senses in every way. The festival combines crisp autumn air, stunning scenery, and the heartwarming traditions of Ozark culture with modern-day excitement and flair.
Food is at the center of the celebration, with irresistible flavors like pumpkin-infused ribs, skillet feasts loaded with fall vegetables, steaming apple dumplings, and mugs of hot cider that warm the hands and heart. Guests can pick up a “Tasting Passport” to sample their way through the park and discover new seasonal favorites.
But the Harvest Festival isn’t just about food—it’s about artistry, family, and pure autumn magic. How To Stay Festive And Healthy? Sure Thing
Halloween is typically filled to the brim with salt, sugar and carbs. It can be hard to stay on the nutrition wagon during spooky season, but there are plenty of fun ways to add a festive spin to favorite healthy dishes.

pumpkin FRUIT BOWL
With luck finding a melon or watermelon at the store, simply carve it like a jack-o-lantern and make the mouth large enough to have other sliced fruit emerging, such as cut pineapple, sliced grapes and apple chunks. Along the side, peel mini oranges and add a green stem to mimic pumpkins.
spooky CHARCUTERIE
These fan favorite boards can easily be kept healthy with some additions. Make any treat spooky with edible eyeballs. Adding them to a small snack such as mini bell peppers or grapes and strawberries is a fun way to stay on theme without sacrificing a healthy streak. Eyeball salami rolls also can be added, starting first with a green olive in the center, surrounded by a roll of mozzarella cheese and then surrounded by salami or even prosciutto.

This fall staple easily can be incorporated into a fall gathering or Halloween night by carving jacko-lantern faces in orange peppers, and resuming a favorite recipe from there. Serving bread on the side? Use a skull or pumpkin shaped cookie cutter to re-shape it.

Hummus and pitas can be made scary in no time. Use a ghost shaped cookie cutter to shape pita bread, lightly toast and serve with red pepper hummus, which is usually orange in color.
jack-o-lantern VEGGIE TRAY
The easiest bet for a quick and healthy Halloween treat? You can’t go wrong with a veggie tray shaped like a jack-o-lantern. Use baby carrots as the base, and cucumber or celery to shape the mouth and stem. The eyes? Two round bowls of veggie dip.
