As February rolls around, I always find myself in a familiar tug-of-war. On one hand, I want to resist the pull of another commercialized holiday, yet on the other, I can’t help but savor the sweet moments it brings—a fun excuse to celebrate the people I hold dear.

“WHEN YOU THINK ABOUT MORNING IN PARIS, YOU THINK ABOUT A CROISSANT.”

A native of France, Julien Hervet brought a love of his home country with him when he came to the United States more than twenty years ago. After moving to the west coast and launching a successful career with Microsoft, Julien noted that accessing his favorite French wines proved more difficult than he wanted. So he began exploring importing the wine himself.

“I initially started to import wine just for fun because I couldn’t find the wine I wanted in the market,” explains Julien. “When I did find it, it was a lot more expensive than it should have been due to the structure of the wine market in the U.S. and the intermediaries.”

His hobby grew into a niche business and Julien founded Cépaé in 2015 to meet local demand for French wines. As the time went on, he realized locals desired more than just French wine; they longed for a true taste of French lifestyle and cuisine. In 2018, Julien opened the first location of L’Experience Paris in Bellevue.

“IT’S NOT PRETENTIOUS. WE’RE NOT LOOKING FOR A MICHELIN STAR EXPERIENCE; WE’RE LOOKING FOR SOMETHING WHERE PEOPLE WILL FEEL COMFORTABLE.”

“We are in a very international area with people who have traveled a lot and there was interest in authenticity,” says Julien. “So we have built a full authentic French food experience. Everything we make is according to tradition, with the best ingredients. We use 100% French flour and butter and chocolate from Valrhona, which is the higher end chocolate maker from a patisserie in France.”

Over the last seven years, L’Experience Paris has expanded to five locations, four of which are open from breakfast through midafternoon, with the Bellevue location serving dinner each evening. Each location also includes a retail space for customers to find their favorite French wine, tasty treats, and unique gifts.

A perfect way to begin each day is with coffee and a classic Parisian breakfast menu item, the croissant, presented with a variety of flavor pairings sure to please any palette. “When you think about morning in Paris, you think about a croissant,” says Julien. “We use only traditional techniques and no shortcuts in making our croissants, which I think are the best croissants west of Paris. It’s a three-day process using only French ingredients and we never freeze our dough.”

Breakfast and brunch also offer other classic French favorites such as eggs benedict and an assortment of savory quiches. Rounding out the café experience are the many freshly made patisseries, or sweet cakes, which highlight seasonal flavors and ingredients.

The dinner experience at the Bellevue location captures the essence of a French bistro. “It’s not pretentious. We’re not looking for a Michelin star experience; we’re looking for something where people will feel comfortable,” explains Julien. “It’s really all about having a good time, putting a smile on people’s face, and making sure after a long day of work,  you’re able to enjoy good food and wine with friends.”

Central to the entire experience are the exquisite wines Julien imports specially for his customers. “Our wines are very popular. All of the wines are from small winemakers and are exclusive to us because we bring them directly from France,” says Julien. “Our sparkling wines are very popular for breakfast, whether it’s a sparkling wine from the Loire Valley or Champagne.”

as well as off-site in other locations. “We love to create custom events for people when they have something that comes to mind that resonates with French themes,” he shares. “Recently, we did a birthday party where someone wanted it to be Parisian chic and we designed a special party for them.”

The team also recently welcomed a group of students from a French-American school who came to learn the art and tradition behind making croissants. Whether through the atmosphere, food, wine, or relationships, for Julien it is all about sharing something he is passionate about, his homeland. “The French brand, as we’ll call it, is very powerful for people who have traveled to Paris and want to get a little escape from the daily routine,” says Julien. “For me, it’s all about transmitting our cultural heritage and traditions and sharing France as it should be at a broader level.”

L'Experience patisseries change throughout the year based on what fruits or flavors are in season

Brownie Bites SWEETHEART

A fun twist on the classic Valentine's Day treat

Serves 10–12

A freshly baked pan of rich, chocolatey brownies may be the perfect Valentine’s Day treat. When baked on a large baking sheet, this recipe delivers a relatively thin bite, perfect for cut-out hearts and cutesy shapes for all the sweethearts in your life. Box them up in pink pastry boxes for thoughtful gifting or serve on a platter with whipped cream and berries or sprinkles for a little festive decorating. The little ones in your life will especially love these.

INGREDIENTS

• 8 ounces or 226 grams semisweet chocolate chips

• 1 cup or 2 sticks unsalted butter

• ¼ cup Dutch processed cocoa powder

• 3 teaspoons pure vanilla extract

• 4 large eggs

• 2 cups or 400 grams granulated sugar

• 1 cup or 120 grams all purpose flour

• ½ teaspoon kosher salt

KITCHEN TOOLS

• 2 medium glass or stainless steel mixing bowls

• Small sauce pan

• Small bowl

• Measuring cups and spoons

• Whisk

• Rubber spatula

• Parchment paper

• Large baking sheet (18x13)

• Cookie cutters or a sharp knife

INSTRUCTIONS

1. Preheat the oven to 350°F. Lightly grease the baking sheet with a dab of neutral oil or butter along the base and the sides, and line with parchment paper. Set aside.

2. Prep a double boiler. Fill a small sauce pan about 1/3 full with water and bring to a simmer over low-medium heat. Place a medium-sized mixing bowl on top of the sauce pan, making sure the water isn’t touching the bottom of the bowl. This creates a double boiler effect, perfect for melting chocolate without the risk of burning.

3. Add the chocolate chips and butter to the bowl, stirring often to help with the melting process. When the chocolate has melted and the butter is well incorporated, add the vanilla and cocoa powder and stir to combine. Carefully remove the bowl from the double boiler and set aside.

4. In a small bowl, gently whisk the eggs and set aside.

5. In another medium mixing bowl, add the sugar, flour, and kosher salt. Use a dry whisk to combine. If there are lumps, put through a sieve or sifter to break them up. Often enough, whisking does the trick and saves some time! Set aside.

6. Temper the eggs: To avoid scrambling, be sure the chocolate is warm, but not hot. Slowly whisk about ¼ cup of the warm chocolate mixture into the eggs. Repeat once more. Then pour the egg mixture into the remaining chocolate mixture and stir to combine.

7. Gradually add the dry ingredients to the chocolate-egg mixture. Stir minimally, just until incorporated and there aren’t any visible dry ingredients. A few lumps and bumps are okay and will

bake out nicely, but be sure to break down any larger lumps. The less you stir, the more tender your brownie crumb will be.

8. Pour the batter into the prepared baking sheet. Gently drop the pan onto the counter from about three inches high to release any air bubbles (a great technique for cookies and cakes, too!). Repeat this once or twice.

9. Place the pan in the top third of the oven and bake for twelve minutes . Because you’re baking in a thin layer, the bake time is quite short. Remove the brownies to test for doneness. A toothpick should come out mostly clean and the center of the pan shouldn’t jiggle. If they need more time, place back in the oven for two additional minutes, and check again. Repeat as needed until completely baked through.

10. Allow to cool completely, about an hour, before cutting into shapes or squares for serving. Try dusting them with a bit more cocoa powder or confectioner’s sugar or serving with decorative toppings as you might with sugar cookie cut outs. Enjoy!

Note: If your pan is slightly larger or smaller than a standard 18x13 half sheet, adjust baking time by 1-2 minutes - more time if the pan is smaller, brownies will be thicker or less time if the pan is larger, brownies will be thinner.

Behind every powerful performance is a story unfolding quietly, often far from the spotlight. The Backstage Foundation exists in that space, where movement becomes meaning and dance becomes a pathway to confidence, belonging, and opportunity for young people who might not otherwise have access to the arts.

Founded by longtime dance educator Kari Hovde, the Backstage Foundation is a nonprofit dedicated to supporting underserved youth ages 6 to 19 through dance and performing arts education. But this work goes far beyond technique and choreography. At its core, the foundation uses dance as a tool for youth development, self-expression, and character building within a safe, inclusive community.

Hovde’s belief is simple and deeply lived: dance is not just an art form or a sport. It is a teacher of life. Through teamwork, discipline, creativity, and problem-solving, young dancers learn skills that serve them far beyond the studio. For many, the dance community becomes a place of stability, healing, and connection. Sometimes, it is the safest space they know.

The Backstage Foundation is guided by three clear values that shape everything it does: experience, community, and opportunity. These values act as a compass, influencing how programs are designed,

how partnerships are formed, and how youth are supported at every level.

Experience means meeting young people where they are, honoring their unique stories and circumstances, and responding with empathy and intention. Community reflects the foundation’s commitment to inclusivity, transparency, and shared voices, creating environments where young people feel seen, heard, and supported. Opportunity is about building sustainable pathways that empower youth to grow, dream, and lead, not just for today, but for their future.

Through scholarship programs, the foundation supports dancers locally, nationally, and internationally who face financial barriers but show passion and potential. It also partners with community centers and Boys & Girls Clubs to provide free dance classes for youth who have never had access to professional instruction. These programs run in sessions, giving students not only training, but performance opportunities at festivals, fairs, and the foundation’s annual showcase.

with a career-focused lens. Youth learn choreography for camera, leadership skills, and how creativity can translate into real-world opportunities. One of the most meaningful initiatives is the Backstage Pass program, a youth volunteer and service pathway open to dancers and non-dancers alike. Participants earn accredited volunteer hours while learning the value of giving back. Youth serve through event support, creative roles like photography and social media, administrative projects, and community outreach. Many go on to apply for Community Service Award Scholarships, reinforcing the idea that service and leadership matter.

Inclusion is not an afterthought at the Backstage Foundation. Adaptive dance programs, partnerships with organizations like Youth for Freedom, and service projects designed for hearing-impaired children reflect a commitment to ensuring that everyone gets to dance. These experiences teach empathy, communication, and leadership, while reminding youth that creativity can bring people together across differences.

All of this work comes together on stage at the In the Spotlight Annual Showcase, happening Saturday, May 2, 2026, at the Kirkland Performance Center. This evening is more than a performance. It is a celebration of resilience, artistry, and the future of dance. Audiences will experience breathtaking choreography by renowned artists, performed by pre-professional dancers whose passion and energy fill the room.

The showcase is also an invitation. An invitation to support the arts. To invest in youth. To witness what happens when talent is met with opportunity and community. Every ticket supports programs that open doors, build confidence, and create safe spaces where young people can thrive.

The Backstage Foundation believes today’s youth are not disconnected or unmotivated. They are creative, driven, and full of ideas, waiting to be nurtured and trusted. Through dance, they learn to show up, work together, express emotion, and lead with heart.

On May 2, the curtain will rise, but the real impact of Backstage Foundation will be found long after the final bow, in the lives of young people who now believe they belong, they matter, and their dreams are worth pursuing.

AN ALPINE ESCAPE

In Switzerland’s Valais region, wellness and adventure are always part of the same itinerary. Morning could bring a high-alpine hike, afternoon a soak in mineral-rich springs, and evening a table set with traditional cuisine, always including delicious wine and cheese. For travelers, the best part will be finding the perfect balance between exploring the outdoors and relaxing with wellness-infused activities in the heart of the Swiss Alps.

A CAR-FREE ALPINE ADVENTURE IN ALETSCH ARENA

An easy train ride from Zurich lands visitors in the Aletsch Arena, a high-alpine region on the south side of the Bernese Alps, home to three villages: Riederalp, Bettmeralp, and Fiescheralp. Known for its ski slopes in winter and hiking in summer, the area is entirely car-free, making walking and local buses the main modes of transportation through its quaint chalet-lined streets.

One of the main attractions of the ski-in/ski-out area is the Aletsch Glacier, the longest glacier in the Alps. A UNESCO World Heritage Site, the 12-mile glacier is visible from several vantage points, shaping every experience in the area.

WHERE TO STAY

Located in the heart of Bettmeralp, Hotel Panorama provides no-fuss accommodations steps away from the picturesque Chapel Maria Zum Schnee. The hotel’s restaurant offers delicious regional cuisine, including raclette paired with Swiss wine. A good bottle of Pinot Noir or Gamay is also easy to come by because the Valais region of Switzerland is one of the largest wine-producing areas in the country, with vineyards dotting the steep slopes of the Rhône Valley. In addition to wine and cheese, eating cholera, a covered vegetable pie invented in the region during the cholera epidemic, is a must.

WHAT TO DO

Begin at Viewpoint Moosfluh, the closest and lowest vantage point of the Aletsch Glacier. From there, trailheads lead to Villa Cassel, once the home of a British financier and now a museum focused on history and conservation. The hike passes through a thousand-year-old forest with views of both the glacier and the Matterhorn.

Walk over Goms Bridge, a nearly 1,000-foot-long suspension bridge that connects two hiking areas over the Rhône River. For a final look at the majestic glacier, take the cable car to Viewpoint Eggishorn. At nearly 10,000 feet above sea level, it offers panoramic views of the Matterhorn, Mont Blanc, Jungfraujoch, or the “Top of Europe,” and the most compre hensive view of the Aletsch Glacier.

HISTORY AND ALPS MEET IN MARTIGNY

A short train ride takes visitors to one of the largest cities in the Valais region of Switzerland. The city is a crossroads between Italy and France, with a history dating back to Roman times. Visitors can tour Roman ruins, including a well-pre served amphitheater, ancient settlements, and Roman baths.

WHERE TO STAY

Martigny Boutique Hotel is minutes from the train station and is one of the few establishments in the city employing people with disabilities. The light and bright hotel provides a comfortable base for exploring the city.

WHAT TO DO

Take the steepest funicular in the world, the Mont-Blanc Express, on a scenic ascent through the Alps. The funicular connects to a smaller train that leads to the Trient Valley on the French-Swiss border, where, at the top, a full day of activity begins. Hiking, biking, zip-lining, or traversing the Emosson Dam, which straddles France and Switzerland, are all options. The crystal clear blue waters of Emosson Lake are perfect for a picnic or a break between adventures.

Back in Martigny, Barryland, the only theme park in the world dedicated to St. Bernard dogs, offers a look at the history of the dog, bred by monks in the 17th century for alpine rescue work. The Barry Foundation, founded in 2005, continues to preserve the breed and educate visitors about it. Guests can watch the dogs train, play, and interact as they learn about their role in the region.

Roman influence remains visible across the city, including at Les Bains Publics at Hotel Borsari, where visitors can soak in cement wine barrels located in the hotel’s spa. The baths sit on the site of a former wine tank factory and offer a circuit of hot and cold pools in a historically inspired, wine-colored setting.
