The Holiday and Giving Back Issue

As the year draws to a close and the twinkling lights begin to fill the streets of our already sparkling county, we're reminded of what makes our area shine -- the kindness, generosity, and sense of connection within our community. In our second issue, we have aimed to shine a spotlight on all of those things.

WHAT WAS THE INSPIRATION FOR STARTING SCREAMING BEAN CAFE?

Everyone has a dream. Mine was to open a coffee shop — a dream that brewed for seven years before becoming reality. But I didn’t just want a place that served coffee; I wanted to create a third place. You know — if you’re not at home and you’re not at work, where do you go to feel grounded? For me,

it was always those little mom-and-pop cafés where you could sit with a book, check your emails, and lose track of time over a warm cup and good conversation.

So I spent years researching, saving, and investing to build not just a coffee shop, but a community coffee shop. Because I’ve always believed profits should be a gauge, not a goal. From the very beginning, it was never about owning a café; it was about discovering what we could do with one to make a difference. The espresso machines and bagels are just the tools. The real product is hope, connection, and community.

That’s why our mission statement is simple but profound: to make the world a better place than it was when we woke up this morning. That statement is etched on the wall in our store. Some people chase success; we chase significance. The world doesn’t need another coffee shop — it needs more places where kindness is brewed daily. That’s the blend we’ve been perfecting ever since.

IN WHAT WAY WAS GIVING BACK TO THE COMMUNITY PART OF THE VISION FROM THE BEGINNING?

For us, community isn’t a buzzword; it’s our DNA. It means giving back. It means showing up. It means asking, “What can we do for others today?” instead of “What can others do for us?” At first, giving back was as simple as donating to a local fundraiser or providing coffee for a school event. At least, that was how the first seven or eight months went along. Then the café grew in popularity, and I guess that was because we didn’t just claim to be a community hub — we proved it day after day, month after month. One year after we opened doors, we were getting our second location open and discovering how [much] busier we were compared to the year prior. We realized that the real success of a coffee shop isn’t measured by profit margins — it’s measured by the lives it touches. The more lives we touched, the busier we got.

CAN YOU SHARE A STORY OF HOW YOUR CONTRIBUTIONS MADE A TANGIBLE DIFFERENCE FOR SOMEONE OR A GROUP IN HARFORD COUNTY?

One of the most powerful examples of what “community” truly means came during the fundraiser we held for Kevin Peters back in July. One of our customers told us about [him being] seriously injured in an accident. When we learned the details of what had happened, there wasn’t a moment of hesitation. We publicly announced that 100% of the profits from that entire day’s worth of sales would go directly to help Kevin and his family. We even donated $1,000 out of our own pocket on top, so we knew (and publicized) that we were going to take a loss that day. There were no conditions, no fine print — just neighbors helping neighbors.

The response was overwhelming. The line went out the door and at times wrapped around the building. People came from all over Harford County — some who knew Kevin, most who didn’t — all united by compassion. They bought drinks, left donations that far exceeded their orders, and filled the shop with words of encouragement and hope. By the end of the day, we had raised far more than anyone expected, but the true success wasn’t measured in dollars — it was written in the faces of everyone who showed up.

HAVE THERE BEEN UNEXPECTED OUTCOMES FROM YOUR COMMUNITY INVOLVEMENT THAT YOU DIDN’T ANTICIPATE?

What I didn’t expect was transformation. Some of our biggest hearts started as customers who came in for coffee and ended up doing the same themselves by launching their own charitable endeavors. It’s funny — you set out to make the world better, and somewhere along the way, the world makes you better too.

If there’s any success tied to The Screaming Bean, it doesn’t belong to me — it belongs to the employees who show up every morning before sunrise, who pour their hearts into every cup, and who treat every customer like a neighbor. They’re the ones who make this place what it is. I might have started the idea, but they’re the reason it works. The truth is, a business doesn’t succeed because of one person — it succeeds because of a team that believes in something bigger than themselves.

Wine Wisdom for the Holidays

Inside the award-winning Vineyard Wine Bar's approach to pairing, passion, and the joy of discovery.

From distribution and retail to harvesting and pruning, Joe Lertch has spent most of his career in the wine industry, both in the United States and internationally. As the proud owner of the award-winning Vineyard Wine Bar in Havre de Grace for 16 years, he shares his vast knowledge and unique, curated collection of wines with customers, and in the fall of 2025, his book “The Art of Wine & Spice Pairing” (co-authored with Mark Robinson) became available for purchase. As the holidays approach, Lertch has some solid suggestions for wines that will pair with the wide range of foods that often grace the tables of seasonal gatherings, from familiar varietals to lesser-known options that are sure to please guests’ palates.

“One of the things I like [for holiday pairings], generally, are white wines,” Lertch said. “I think dry Rieslings from Germany, Alsace, and the Finger Lakes are versatile, have a good acid backbone, and go really well with a lot of holiday foods.”

For reds, Lertch’s personal favorite is from Priorat, but he also suggests choosing a red Zinfandel from California, Tempranillo from Spain, or a Primitivo from Italy, all of which he says are reliable complements to dishes like dark turkey meat, beef, and stuffing.

When it comes to the classic marriage of wine and cheese, Lertch is literally writing the book on it now that his debut guide has

been published. His primary recommendation is to source both the cheese and the wine from the same region, leaning into the concept of what grows together goes together. “I like to keep the themes together. The cheeses that are made in France are made to go with French wine. The same with Italy and Spain,” he said. “I happen to love Manchego from Spain, and I love that with a Grand Reserva Rioja from Spain. Italian Asiago and Valpolicella Ripasso are also fun to serve together.”

If you’re looking to pour wine that will complement myriad meals and hors d’oeuvres, Champagne is a top-notch choice. In fact, it’s the one that Lertch would pick if he could choose only one wine to sip for the rest of his life -- and he says it’s a must for midnight toasts. However, in a pinch, you can turn to other bubbles. “If you’re not drinking Champagne, then drink sparkling wine that’s not Champagne,” he said. “You should be toasting with sparkling, and you should probably start with breakfast.” He is also quick to remind that Champagne can only bear that name if it comes from the Champagne region of France.

When it comes to price, Lertch says it’s not necessary to spend a fortune to find a quality red, white, rosé, or even bubbly. “You don’t need to break the bank,” he said. “You can find really good, reasonably priced wines.”

If you’re looking for an opportunity to try wines to potentially serve at your festive fêtes this season, you can stop into the Vineyard Wine Bar and sample varietals that Lertch has sourced from across the globe while learning from the wine bar’s knowledgeable staff. “We offer 80 wines by the glass. These are wines that, in some cases, people have never heard of. We also offer 70 of them in half-glasses, and we do flights so that people can try them,” he said. “We have a big, full focus on education [and] want to give everyone an opportunity to try grapes from all around the world. We love to see smiles on faces as they’re trying something they haven’t before. That’s our reward -- that's what keeps us going.”

CHANGING LIVES, One Home at a Time

PASSION MEETS PURPOSE THROUGH PERSONALIZED CARE FOR LOCAL SENIORS.

From 2012 to 2024, Jarrettsville native Justin Kress built a career in medical device sales, often traveling around the country and successfully climbing the ladder in corporate America. However, after years in the industry, Kress began to question his trajectory. “I had a desirable job, I made good money -- it’s a great sales job,” he said. “But I thought: maybe this isn’t what I want.” At the same time, Kress was taking the advice of a business coach, reading increasingly more news related to the medical industry, when he found a staggering statistic about the thousands of seniors turning 65 every day through 2033. It was then that he turned his attention to the needs of seniors and ultimately founded Just-In Home Care, an organization dedicated to helping individuals remain in their homes as they age.  Kress’s goal to open Just-In Home Care was twofold. Not only did he want to provide a much-needed service, but he also wanted to dedicate his work to serving people where he lives. “I wanted to make a relationship with people in the community where I am from,” he said. “I thought about what private home care could do for my community.”

The transition from sales to the start of Just-In Home Care was measured, with Kress taking the time to achieve licensure while continuing to work in the role that he had been in for years. But in March of 2023, he earned his license, and by May of the same year, he brought on his first client. Since then, the organization has employed a multitude of caregivers, assisted over 250 individuals, and provided upwards of 100,000 hours of service in the capacity of both live-in care and shifts that may be two, four, or more hours long. And while the first client was in Monkton and the business continues to serve residents of Baltimore County, it has also grown to serve several areas, including Baltimore City, Western Cecil County, and its home base of Harford County, which is where the largest concentration of clients resides.

Kress says that the caregivers at Just-In Home Care are central to the success of the business and that he has worked tirelessly to ensure that he has created an environment that supports them. “We’re very protective of our caregivers. If we don’t have great caregivers, then we can’t take care of anyone,” he said. He also strives to find and hire the best professional caregivers -- those for whom it's clearly their calling and who embrace work in healthcare as a means of making a difference in individuals’ lives.

As seniors age, many prefer to stay in their homes, and Kress’s mission is to make that happen by providing personal care and companion care. Services range from bathing, dressing, and ambulation to laundry, light housekeeping, meal-making, cognitive engagement, and more. These services help seniors to fulfill their goal of staying in the comfort of their residence while also giving families peace of mind. “Maybe Mom can get by for eight hours, but families like that oversight -- that there’s someone there,” Kress said.

Impeccable customer service is also at the heart of Kress’s business model.

“Customer service is so broken in 2025. Before COVID-19, if you had a bad customer service experience, it stood out. Now, a good customer service experience stands out,” he said.

“We are always driven by customer service.”

For Kress, that means focusing on what he calls “conscientious care” and “caring with initiative.” His team regularly seeks out feedback from clients and their families, manages expectations, and takes a proactive approach, all of which have earned him reviews that never clock in at less than five stars.

It is in situations that could be stressful to some that Kress finds his “why.” When families reach out and describe the crises that a relative may be facing, he’s able to provide resources and solutions. “I get a lot of joy and excitement when I receive a call

and can tell [a family] this is what we can do, these are the steps, and this is what we’re going to do to make it happen,” he said. “We don’t rush them, we communicate. We tell them: You can trust us, we’re going to make it happen.”

While the foundation of Kress’s business model is, of itself, a service to the community, he is involved in other ways as well. One of his proudest affiliations is with Geriatric Assistance Information Network (GAIN), an organization that gathers together professionals whose work affects the senior community. While he initially attended monthly meetings as a member, within a year of participating, he stepped into the role of President, a position he still holds today. Not only does GAIN provide the opportunity for like-minded professionals to connect in meaningful ways that benefit seniors, its yearly conference also raises funds that are donated to non-profits.

As for the future, Kress has his sights set on continued growth and excellence. “We’ve just scratched the surface,” he said. “We’re focused on caring for our community. I’m really proud of what we’ve done for these families.”

Sip the Season

A HOLIDAY COCKTAIL FROM LIB'S GRILL TO YOUR HOME BAR.

Each year, Lib’s Grill goes all out, celebrating the holiday season with its Cocktails & Candy Canes event. With festive floor-to-ceiling decor and creative seasonal libations, the restaurant turns into a wintry wonderland.  While stopping into the local spot from late November through December is a must for any holiday enthusiast, you can also bring some of the joy of the season into your own home with this recipe for one of the many cocktails the restaurant will be shaking or stirring.

INGREDIENTS

• 1.5 oz Cocoa nib infused Tito's vodka (1.5oz)

• .75 oz Grind Espresso liqueur

• .75 oz Peppermint Schnapps

• .75 oz Cold brew coffee

• 2 oz Soft Whip Foam

• Garnishes: Cocoa powder and "Rumple Minze mist"

INSTRUCTIONS

1. Pour the Dirty Snowman batch into a cocktail shaker with ice.

2. Shake for 3-5 seconds.

3. Strain into a coupe glass.

4. Top with Soft Whip foam.

5. Garnish with "Rumple Minze" mist and cocoa powder.

BREAKFAST HOLIDAY

The holidays are filled with family gatherings. Enjoy this easy, make-ahead recipe to simplify your holiday breakfast; it is sure to impress your guests.

CROISSANT LEMON BERRY DELIGHT

Casserole Ingredients:

• 6 large croissants (from the bakery) sliced into cubes

• 3 cups mixed berries

• 1 package cream cheese, softened

• 1 cup  sugar

• 5 eggs at room temperature

• 2 cups half and half at room temperature

• ¾ tablespoon vanilla extract

• ¾ tablespoon lemon juice

Lemon Glaze Ingredients:

• 2 ounces cream cheese, softened

• 1 tablespoon butter, softened

• 1 cup powdered sugar

• 1 ½ tablespoons lemon juice

• 1 ½ teaspoons vanilla extract

Instructions:

Preheat oven to 350 degrees and toast the cubed croissants on a baking dish for 10 minutes. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs, half and half, lemon juice and vanilla and mix until smooth. Place the toasted croissants into a greased 9 x 13 pan and layer with 1 ½ cups berries. Pour custard mix on top and then add the remaining berries on top. Cover with foil and refrigerate overnight.  Preheat the oven to 350 degrees and bake, covered, for 30 minutes. Remove foil and bake for another 15 minutes. Set aside and make glaze by adding all ingredients to a bowl and mixing until smooth. Drizzle over the casserole and sprinkle with powdered sugar if desired.

Just like that, it’s officially the most wonderful time of the year. And while you may still be stuffed from all the turkey, it’s time to start planning the ultimate holiday party. I’ve included some tips and tricks to make sure it is the absolute best time for your guests.

SETTING THE ATMOSPHERE IS CRUCIAL.

The mood is subjective to the type of party you’re having, though. This could include a tree in the corner, an advent wreath on the table, a menorah on the counter, or other decor aligning with your celebration. Either way, I personally recommend lighting a fire in the fireplace or playing a looping video of one on your television to create a festive and cozy ambiance.

HOLIDAY GAMES ACT AS ENGAGING ENTERTAINMENT.

I once played a game where little trinkets from the Dollar Tree were wrapped in a massive ball of plastic wrap, and guests had 30 seconds to unwrap as much as possible before passing it to the next guest, claiming the unwrapped trinkets as their prize. It definitely gets the adrenaline up and provokes quite a few laughs at the random items wrapped inside.

Whether a simple apple dip (8 oz cream cheese, 1/2 cup brown sugar, 1/4 cup granulated sugar, 1 tsp vanilla extract, and 1/2 cup toffee bits served with apple slices) or a festive drink, such as a cranberry Moscow Mule (2 oz vodka, 1 oz cranberry juice, 1/2 oz fresh lime juice, ginger beer, and fresh cranberries with a sprig of rosemary for garnish), serving holiday-themed food and drinks amplifies the atmosphere.
