FRANKLIN FIRE DEPARTMENT BATTALION CHIEF JOE POLENZANI RETIRES AFTER 27 YEARS OF DEDICATED SERVICE TO THE FRANKLIN COMMUNITY

There are people who work for the City of Franklin, and then there’s Joe Polenzani, who has devoted his career to protecting and serving its residents. After 27 years at the Franklin Fire Department, Joe will retire on December 18, 2025.

Chief Polenzani’s passion for firefighting runs in the family. His father, Al, served as a volunteer firefighter in Knollwood, Illinois, where his dedication to helping others inspired two of his four children, Joe and his sister Maria, to pursue careers in the fire service. That legacy of service, safety, and dedication became the foundation for Joe’s own 33-year career.

Throughout his career, Chief Polenzani has earned numerous honors, including a Meritorious Award in 2018 for helping save a pedestrian who was critically injured, six Phoenix Awards for lifesaving efforts, and two Deployment Awards.

Joe’s fire-service career began as a volunteer in Ashland City, later joining the Franklin Fire Department while also serving with the Williamson County Rescue Squad on his off days. A published author for Fire Engineering and other industry journals, Joe has spent the past 14 years teaching at the Fire Department Instructors Conference (FDIC) in Indianapolis. There, his passion for leadership and education took shape as he began traveling the country to teach classes on safety, teamwork, and his signature course, Band of Brothers: The Leadership Principles of Dick Winters, one of FDIC’s most requested sessions.

Franklin Fire Department Chief Glenn Johnson says, “It’s difficult to fully convey the level of influence and outstanding contributions that Battalion Chief Joe Polenzani has made to the Franklin Fire Department. Joe has been dedicated, professional, and deeply caring, someone you can always count on. His steady leadership and commitment to continuous improvement have made our department stronger and better.”

Joe’s leadership has left a lasting mark on everyone who has served alongside him. Retired Captain Greg Wild, who worked with Joe for much of his career, describes his leadership style as transformational. “Joe is always sharing the department’s vision and setting clear expectations for others to excel,” Wild says. “Service before self is his mantra.”

Among Joe’s many contributions are his leadership in the Company Officer Academy and his mentorship of countless recruits. “He’s often the first friendly face new hires meet and the kind of instructor who continues shaping them years later,” Wild adds. Retired Lieutenant Richard Hasley agrees: “When Joe first made lieutenant, I was his driver. From the beginning, he made sure you knew you were appreciated for doing the job. He sees everyone as an asset and focuses on their strengths. That’s above and beyond.”

Deputy Chief Walter Lewis of Orlando International Fire Rescue describes Joe’s leadership as selfless. “Anytime Joe speaks about the fire service, his personnel, or his family, he shares good news and checks in on everyone else. He’s genuine about others’ wellbeing. He’s a caring gentleman-scholar, and it shows.”

For most of us, firefighting is something we only see from the outside, the flashing lights, the smoke, the chaos. But firefighters encounter far more than burning buildings. They’re often first on the scene, witnessing moments both inspiring and heartbreaking. You can’t help but wonder: how do they stay calm? How do they not carry every scene home with them?

For Joe, that steady presence is what sets him apart. “He manages the scene without emotion,” says Wild, a skill honed through years of training and instinct.

Firefighting demands more than long shifts and safety training. It calls for deep commitment to the community, to your team, and to a calling that doesn’t pause for weekends or holidays. While many spend Thanksgiving or Christmas gathered at home, firefighters often spend those days at the station, ready to respond when they’re needed most.

“Having your dad be an inspirational figure that many in the community look up to is a surreal feeling,” says Joe’s daughter Katie. “I’m often overwhelmed with pride for my dad, but of course, I always worry about his safety. Thanks to his commitment to knowledge and extreme safety measures, I’m confident in his safety but like anyone, there’s always an underlying sense of worry.”

Joe’s wife, Carolyn, recalls one of her favorite moments in his career seeing him play drums with a bagpipe band made up of firefighters from across Western Europe during the 75th and 80th anniversaries of D-Day. “I was so incredibly proud to see my husband play on the beaches of Normandy as they honored the surviving veterans of World War II,” she says. “That experience deepened Joe’s lifelong respect for service and sacrifice.  Themes that continue to shape his approach to teaching and leadership today.”

As Joe Polenzani’s career with the Franklin Fire Department draws to a close, his dedication to leadership, education, and firefighter safety remains unwavering. He looks forward to new endeavors and to returning to the hobbies that have always brought him joy: music, travel, and time with family.

“Joe’s impact on this department will be felt for decades,” says Greg Wild. “He’s the kind of leader who doesn’t just teach skills. He changes the way people see themselves and what they’re capable of.”

Though his chapter at Franklin Fire is ending, the lessons he’s shared, the people he’s mentored, and the legacy he’s built will continue to burn brightly in the hearts of those who served beside him.

The end of the year will be here before we know it, but there is still time to accomplish some major estate planning goals.

HOW THE MISSION REDEFINES THE CIGAR LOUNGE

From Smoke to Soul

In a restored historic home just steps from Main Street, a soft hum of conversation drifts across a wooden deck lit by warm lanterns. Smoke curls into cool evening air as glasses clink and strangers become friends. At first glance, The Mission Cigar and Social in downtown Franklin may look like a refined cigar lounge, but to owner William Horton, it is something more. It is a place where community has been revived and connection still matters.

“We really wanted to create a space that feels like you are just hanging out at home with friends, enjoying a good cigar,” Horton said. “The kind of place where the conversation can jump from last night’s game to what’s really going on in life.”

Located inside a converted house, The Mission offers an atmosphere unlike the typical leather-anddark-wood cigar lounges found in major cities. Each room is different, each gathering space intentional. Color, character, and conversation matter here. Horton said that was the goal from the beginning.

“Our Franklin location being in an old house gave us something different than most cigar lounges,” he said. “We have created a handful of cozy rooms that make the place feel a lot more personal and relaxed. It also let us give each room its own vibe with unique colors, furniture, and atmosphere, all while keeping that classic Franklin charm.”

That charm extends well beyond decor. From the moment guests walk inside, they are greeted by name. Regulars call it their second living room. Travelers find unexpected hospitality. Locals drop by to sit on the back deck and watch football, listen to live music, or take part in long talks about life, work, and purpose.

But what truly sets The Mission apart is not its cigars, atmosphere, or curated bourbons. It is people. The Mission operates under a simple philosophy that drives every decision.

“It is that timeless truth, people love going somewhere they are known,” Horton said. “Our staff does an awesome job making everyone feel like family, whether it is their first visit or they are here every day. Tourist or local, it does not matter; our goal is to make the place feel warm, welcoming, and easy to relax in. Before we opened the first shop in Spring Hill, we decided our primary goal was not to make money, it was about the people and this has paid off.”

That foundation shapes the culture that has quickly made The Mission more than a business. Yes, there are humidors stocked with premium cigars, knowledgeable tobacconists ready to guide new smokers, and private lockers for members. Yes, there are bourbon tastings, brand launches and exclusive events. But beneath the surface, something deeper is happening.

The Mission describes its faith-based roots as subtle but intentional. Horton and his co-owners do not push beliefs on anyone, but they do not hide what drives their values either.

“Culture means a lot to us,” Horton said. “We are all about creating an environment built on respect and good, genuine conversation. However, we believe the best way to show our faith in business is not by just sharing our faith in daily conversations, it is by living it out through how we treat people. Our owners and staff set that tone every day by leading by example.”

That tone has created space for meaningful relationships and deeper conversations. Many guests stop in simply to relax. Others come looking for community. The Mission recognizes both needs.

Isolation has become one of the most significant social issues of this era, especially among men. Horton and his team see it every day. They built The Mission to combat it.

“Seats that face each other in small groups,” Horton said. “Our technology-driven, remote world has left people starving for real connection. Especially men.”

That belief inspired Mission’s men’s groups, which meet weekly in both Spring Hill and Franklin.

In Spring Hill, it is Tavern Talks. In Franklin, it is called The Builder’s Table.

“This is one of the ways we intentionally show that we care about the spiritual well-being of our community,” Horton said. “We get that going to church is important, but we also know it can be tough for some guys. It is simply a place where men can talk openly about the real challenges they face every day and find some solid, biblical wisdom on how to handle and overcome them. Sharing their stories, struggles and successes brings them closer to one another and creates a brotherhood of support that you see in the shop throughout the week.”

Behind every cigar and every conversation, real lives are being changed. Horton does not hesitate when asked whether The Mission has had an impact on the people who gather there.

“There are so many great stories that have come out of this place,” he said. “We have had a couple get married right out on the deck, guys who have found real friendships, and couples who have made us part of their date nights. We have even had tourists fall in love with Franklin and a few have said our staff’s friendliness sealed their decision to move here.”

Then his voice quiets a bit.

“Last year, a beloved customer passed away,” he said. “His widow asked us to hold his only memorial service. All these people growing together has been an awesome thing to be part of.”

The Mission’s story begins nowhere near Franklin or Spring Hill. In fact, it began 20 years ago on a rooftop in Mexico.

“Mission Cigar was born from conversations held on the mission field in Mexico where three of the four founders met,” Horton said. “Sitting on the rooftop of a hotel enjoying premium cigars, a community center called Oasis was imagined and created in 2004 and still serves 250 children in Mexico today.”

Years later, those same men discovered a small cigar lounge for sale in Spring Hill. They bought it. They built a community. They never imagined it would grow the way it has.

Today, two Mission locations thrive in Williamson County, but Horton is in no rush to franchise the idea.

“Our future success really depends on the community and culture we continue to build,” he said. “As long as we keep listening to our customers and serving them well, we believe success will take care of itself.”

From curated cigar and bourbon pairings to local music nights and album debuts, The Mission continues to evolve. Horton said they are just getting started.

“We are still figuring this part out, but it has been a lot of fun along the way,” he said. “What really makes these gatherings special, though, is the mix of our staff’s friendliness and knowledge. They make every event feel fun, relaxed, and memorable.”

In a world of noise, The Mission offers space to slow down. In a culture of isolation, it prioritizes connection. Cigars may be the product, but the soul of the business is unmistakably personal.

Giving Machine Returns For 5th Year

Loving Our Neighbors In Need This Christmas

The Light the World Giving Machine, the popular vending machine that serves our neighbors in need, returns to Downtown Franklin this month for another season of giving. The annual Christmastime initiative, which invites all to serve in small and simple ways, is a global phenomenon.

The Giving Machine is a simple and memorable way to donate much-needed items to those in need, whether they live around the world or down the street. In the time it takes to swipe a credit card, anyone can donate clothing, food, hygiene products, school supplies, and even chickens through local and global non-profits.

The Giving Machine opens December 5 and daily through December 21 from 10:00 a.m. to 8:00 p.m. in the lobby of 231 Public Square. Items in the machines range in price from $5 - $250, making donations accessible to all ages. A ribbon-cutting event will take place December 5 at 10:00am where government officials, nonprofits, media and the public are welcome to attend.

The local and international charities that will be featured are:

• Feed America First - supplies food to area food pantries, shelters, etc with a focus on small towns, helping feed 40,000 families per month

The Actress And Creator Shares Heart, Humor, And Her Hometown Spirit

Leigh-Allyn Baker just knew her life's path would take her into the entertainment business. “I always grew up knowing exactly what I was meant to do and much to my parents’ horror, that was being an actress," says Baker. And now, years into a prolific career, she says what drives her has evolved. “What keeps me interested now is that my role has moved beyond just acting. It’s in writing, producing, and directing.”

Born in Murray, Kentucky, Baker’s first acting role was in Alice in Wonderland at the young age of six. She auditioned for her first TV pilot at 21 and went on to earn her acting chops with roles in many films and TV shows, including Will & Grace and Charmed before stepping into a defining role as the loving but somewhat self-centered mother, Amy Duncan, on Good Luck Charlie from 2010-2014.

Her taste in roles is eclectic. Reflecting on a favorite, Baker says,“I really liked the role of Liz in Bad Hair Day that I did. She was similar to both sides of me, one that’s really rough and tumble and one that’s really feminine and girly.”

But the move from actor to creator was intentional. With production credits and writing in her portfolio, she says her standards have changed.“I have higher standards now. I have a family. I’m not going to waste my time on the crap that fills television these days. If it doesn’t have a moral compass, if it isn’t family-forward where everyone in the family can watch, the odds of me doing it are pretty small."

Her latest project, A Week Away: The Series, a seven-episode series based on the feature film by the same name, is a definitive move in that direction. Distributed by Angel Studios, a company that champions value-based stories, Baker was a natural fit. “I play Karla, whose father owned the camp," she says. "Her father has recently passed away, and so now she’s there to make sure that the money is allocated properly and that the camp is successful. What drew me to this role was the fact that she’s not the good guy. And how do you make someone who really does some things that are not very nice - how do you make her likable? You have to make her human.”

She adds, “You find the humanity of their story and you make sure that every action that you take comes from that place."

Away from the bright lights of acting, Baker’s life is beautifully rooted in Franklin, having moved her nearly five years ago. “I love everything about here. My new theme song that I play for myself in my head all the time is faith, family, Franklin. I just love the heart of Franklin and everyone in it who is so gracious and kind. I’m so grateful for friends and family

and the support that I’ve gotten from the entire Franklin community. I’ll never forget when I first moved here. A woman at the grocery store said, ‘Do you mind if I pray for you?’ And I was astounded that she was going to actually pray for me and take time out of her day to wish me and my family well. So the whole spirit behind Franklin, the community, the quaint aspects of the downtown, the coffee shops, the churches on every corner, and the people are what make Franklin so special.”

The mother of two also leans into fashion as part of her creative self. "My go-to looks are a suit," Baker says. "I rock a suit. I love a good tailored suit. And honestly, the more manly the suit looks, the more I rock it. I think because I’m so feminine, the juxtaposition between the feminine and masculine is what I’m drawn to.”

But she also likes to indulge her glam side. “And then I love a good red carpet glam look," she adds. "I love formal gowns. But at the end of the day, I’m rocking jeans and a sweatshirt with platform fuzzy shoes most of the time.”

What's next for Baker? While her life is quieter and more grounded, she still continues to pursue her passion and has a few projects lined up.“Currently, I’m writing a comedy for Angel that is about my life story, or let’s just say loosely based on my life story of giving up the red carpets of Hollywood in exchange for potluck dinners in Franklin, Tennessee.”

When asked if she hosts the potlucks, she laughs, “I just bring a dish and hope for the best and hope everybody else’s is better than mine, to be honest.”

When pressed on whether she's a good cook, Baker confesses, “I try to be, but alas, at the end of the day, when all else fails, I order Burger Up."

Leigh-Allyn Baker’s story is one of evolution. PRESERVING THE GREAT AMERICAN STORY

When Tom Hand sold his successful Wisconsin cheese company at age 58, he could have easily settled into a comfortable retirement. Instead, this West Point graduate found himself with plenty of drive and a burning passion that would reshape his golden years into something far more meaningful than quiet leisure.

Rather than fade into an easy retirement, Hand threw himself into his lifelong love of American history. He began by writing newspaper articles to counter revisionist interpretations of the American Founding. Soon, his historical research grew into Americana Corner, a multimedia platform dedicated to preserving and sharing the Great American Story.

From his home in Franklin, Hand researches and writes short articles on episodes in American history. To date, he has written hundreds of accessible, rigorously researched articles on the Founding and Early Republic eras. From the Whiskey Rebellion and the Barbary Wars to Lewis and Clark’s famous expedition, Hand’s articles will give you a crash course in everything you’ve forgotten from high school history. Those articles are also condensed and turned into engaging three-minute videos that Hand introduces and narrates while dressed in period costume. Each week’s video will go on to garner hundreds of thousands of views on YouTube.

Hand is also the author of two books. An American Triumph, released in 2023, blends the captivating biographies of Ben Franklin, George Washington, and John Adams into a cohesive narrative. Earlier this fall, Hand published its sequel, America Victorious, which tells the story of lesser-known men who fought in the revolution. In the coming years, he intends to publish several more volumes to tell the century-long story of America’s founding through the Reconstruction era that followed the Civil War.

SUPPORTING HISTORY THROUGH PHILANTHROPY

But Hand isn’t just keeping history alive in books and videos. He’s also an active philanthropist supporting historical sites with his Preserving America grants program. “I can't do the preservation,” Hand says. “But I can give money to people that have the time and the energy, the boots on the ground, if you will, to do that work.” Through the program, Hand offers grants to museums, battlefield trusts, and other historical sites that are telling the story of America’s first century.

Every grant application is personally reviewed by Hand, who corresponds with each applicant and requires progress reports on how funds are being used. His donations fund everything from roof repairs on historic houses to new signage at historic battlefields. “It’s a lot of fun to talk to these organizations. I correspond with every single organization that sends us an application because I want to know more about them.

And it takes time. It takes effort. But I know what they're about,” Hand explains. “The whole idea is to develop relationships and foster these organizations over time.”

Americana Corner's work represents more than historical preservation. It's about maintaining the values and principles that built America. His videos, books, and grants all serve a larger mission: reminding Americans of their incredible heritage and the sacrifices made to secure their freedoms.

Antiques & Garden Show of Nashville, a benefit for Cheekwood Estate & Gardens and Economic Club of Nashville (ECON) Charities, announced  “American Elegance”  is the theme for the 2026 Show, returning to Music City Center January. 9 – 11.

The 2025 Show, which marked 35 years, drew more than 17,000 attendees for the 150 antiques, art and horticulture dealers, immersive garden

showcases, live music and special events. Chairing the forthcoming event are Paula Kinard and Phyllis Vandewater, close friends and creative collaborators who have years of joint community involvement. Additionally, renowned designer, author, entrepreneur and philanthropist Bunny Williams and her business partner Elizabeth Lawrence will return as Honorary Co-Chairs.

The look of the show will be guided by fabric partner Kravet, along with a talented team of designers, landscape architects and volunteers who transform the Music City Center each year in a matter of days. The Friday morning Keynote Lecture will kick off the series with David Lauren and Lauren Bush Lauren discussing the legacy of Ralph Lauren’s classic American interiors, moderated by Alfredo Paredes.

• A design panel on the sophisticated translation of American elegance on Friday afternoon includes renowned designers Will Meyer and Gray Davis of Meyer Davis and John and Christine Gachot of GACHOT.

• Globally celebrated designer, author and public speaker  Preston Bailey will lead the Saturday morning floral lecture on the art of designing an elegant celebration.

• Saturday afternoon’s landscape design lecture will wrap up the series with a presentation from lauded landscape architect Charles Stick on designing timeless American gardens.

The show floor’s three spectacular garden showcases are presented by accomplished landscape designers in which attendees are invited to walk through and experience interactively. Cheekwood will once again greet attendees with the Entry Exhibition designed by Cheekwood’s talented team of gardeners. The East Garden lead landscape designer is Gavin Duke of Duke Design Group while Nature’s Best, an award-winning garden center in Middle Tennessee, will design the West Garden, incorporating a Hartley Botanic Greenhouse into the showcase.

From candlelight to community, generosity to joy, December’s global celebrations remind us that the spirit of the season shines brightest when we share with others. December becomes a tapestry of traditions that span cultures, continents, and faiths. While each holiday tells its own story, they all share the common threads of history and heritage. Whether lighting candles for Hanukkah, gathering for Kwanzaa, exchanging gifts on Boxing Day, or counting down to the new year, people everywhere find ways to rejoice.

Hanukkah: The Festival of Lights

For Jewish families around the world, Hanukkah, also known as the Festival of Lights, is a time of joy, resilience, and remembrance. The eight-day celebration commemorates the miracle that occurred over 2,000 years ago when a single vial of oil, enough for one night, kept the menorah burning for eight days in Jerusalem’s Holy Temple.

Beginning on the 25th day of Kislev on the Hebrew calendar, usually falling in December, Hanukkah traditions include lighting the menorah each night, saying blessings, and singing festive songs. Families gather around tables filled with challah and delicious fried foods like

Across Europe, Christmas markets fill historic town squares with handmade ornaments, mulled wine, and the scent of roasted chestnuts. In the Philippines, festivities begin as early as September, with vibrant parades, midnight masses, and the famous parol,  a star-shaped lantern symbolizing hope and faith.

From snowy Christmas mornings in Canada to sun-soaked beach barbecues in Australia, the essence remains the same. Whether through carols, candlelight services, or acts of kindness, the message of goodwill transcends borders.

Boxing Day: A Spirit of Giving

Observed on December 26 in countries such as the United Kingdom, Canada, and Australia, Boxing Day traces its roots to Victorian England. Traditionally, it was the day when employers gave “Christmas boxes” containing gifts or food to their household staff and tradespeople as a gesture of appreciation and charity.

Today, Boxing Day remains a day of giving and gratitude, but it has also become known for another kind of tradition: shopping. Major sales and sporting events mark the day in many countries, blending philanthropy with festivity. In South Africa, it’s called the Day of Goodwill, emphasizing community service and generosity toward those in need.

MARK MACKAY Strikes A Festive Chord

Country-rock musician Mark Mackay is celebrating the season with his new Christmas EP, a mix of festive originals and reimagined classics. Listeners can hear Mackay's love of the season in his voice as he captures the warmth, nostalgia, and joy that make this time of year so special. It’s a holiday soundtrack made for cozy nights and merry memories.

What inspired you to create a holiday record?

That’s actually a funny story. Everyone who knows me knows that I love the holiday season. So one day we were playing a show in Utah at a ski resort in the middle of the summer. After the show, the promoter came to my green room and said he wanted to book me for some more shows and he wanted me to do some Christmas shows. I was ecstatic and I said I would love to. Then he said, 'You do have a Christmas record, right?' And of course, me being me, I said 'oh yeah, of course we do.' We definitely did not, but I came home to Nashville and we recorded one right away, and we are very proud of it.

Did you approach writing and recording these holiday songs differently than your other work?

Absolutely. I think that’s what I love the most about making a holiday record and touring around the holidays. It feels like it’s a completely separate project. Christmas songs have been done so many different ways that you get such creative freedom to do them your own way. I almost feel like it takes the pressure off of making the record. You feel very free and creative putting your own spin on Christmas songs.

What’s your favorite Christmas song of all time and did it influence any of the tracks on your record?

"Last Christmas" is my favorite Christmas song of all time. It did influence all of the tracks because I cut my own version of that song, and I feel like I had to make all of them sort of fit in the same vibe. I love how up-tempo my version of "Last Christmas" is. And every year as we approach the holidays, it puts me in a good mood so I guess I just wanted to try to share that enthusiasm with my listeners.

Were there any unexpected challenges or memorable moments during the making of this five song EP?

Yes! "O Holy Night" is so hard to sing in the studio. It’s a song that I have played live for years ever since we started doing a Christmas tour. But for some reason, it took me a lot of takes and overthinking to finally get that song to a place that I was happy with it. Other than that, I remember hearing the guitar solo come off the speakers on "Last Christmas" for the first time, and I just remember thinking to myself, 'Wow this is exactly what I was going for.' Surprisingly, you don’t have that feeling as often as you would think. There was definitely some Christmas magic happening there.

Outside of the studio, what are some of your favorite holiday traditions or memories?

I feel like my love for Christmas really grew as I got older. When I was a kid, we did all the standard things you do as a kid. We waited patiently for Santa Claus. We opened our presents. We went out and showed all of our friends all the cool stuff we got, etc. Now I just love the tradition of going to my girlfriend‘s family in Santa Cruz and seeing everybody and getting a chance to slow down. Later that evening, I head up to my family‘s house, which is up in the snow and we always have a white Christmas together. I’m very traditional about things and the holidays are my favorite time of the year. Some of my friends make fun of me because I actually listen to some Christmas music year-round.

Looking beyond the holidays, what’s next for you musically? Any new projects or tours on the horizon?

2026 is going to be our biggest year yet. We have a huge record ready to drop and we have been so lucky to tour all over the country with all of my heroes. And I mean that. We have spent so much time on the road with our friend Gary Allan this past year, and we have toured with REO Speedwagon and Night Ranger, Blake Shelton, Tim McGraw...I could go on forever. We’re now making repeat visits to a lot of these markets and we just can’t wait to see what happens. Touring is my life, I would spend every day on the road if I could and I hope that’s exactly what we do in 2026.

SAY MERRY CHRISTMAS AS ITALIANS DO WITH A PARTY PERFECT ANTIPASTO AND COCKTAIL PAIRING

In this season of giving, we can probably all agree that giving and receiving the gift of hospitality is one of our most treasured experiences of the holidays. If we take a little time to pause December’s long to-do lists, priceless memories are made when we spend time with family and friends.

In most Italian households, a spirit of warmth and hospitality is a part of daily life. During the holidays, tables are piled high with food. Music, storytelling, and laughter are guaranteed. The bigger the crowd, the better. Can I have what they’re having? And make it a double.

I can’t make it to Italy, but I can bring a little Italy to my table —and yours. Arancini is an appetizer common to the culture. Balls of slow-cooked creamy rice (risotto) are filled with cheese and/or meat, coated in breadcrumbs, and deep-fried. The traditional filling is mozzarella and meat sauce. I’m sharing a holiday version that is a fun twist on the original. An herbaceous sauce and a peppery cocktail with American roots pair perfectly with the arancini for a delicious blending of cultures. Try this spirited combo that offers a warm “Benvenuto” or “Welcome” to the people you care about this holiday season.

Cranberry Brie Stuffed Arancini (Makes 12)

Ingredients

• 1 Tablespoon olive oil

• ½ cup finely chopped onion

• ½ teaspoon salt

• 1 cup Arborio rice

• 3 cups chicken broth

• 1 cup finely grated Parmigiano Reggiano

• 1 egg

• 1 egg yolk

• ½ teaspoon salt

• Vegetable oil for frying

• 1 cup plain Panko breadcrumbs

• 2-3 tablespoons jellied cranberry sauce

• 2-3 tablespoons warm Brie

• Green Goddess Sauce

Directions

1. Heat the olive oil in a medium saucepan over medium-high heat. Add onion and salt, cooking 2 minutes or until translucent. Add the rice and toast 1 minute.

2. Reduce heat to medium. Add ½ cup of the chicken broth. Stir occasionally until almost absorbed. Repeat process, ½ cup at a time, waiting until almost absorbed before adding more. When adding the final ½ cup, cook just until a creamy consistency is achieved and rice is tender. Transfer to a bowl and refrigerate at least 4 hours.

CRANBERRY BRIE STUFFED ARANCINI

3. Heat 3” of vegetable oil in a heavy saucepan to 350º. Line a sheet pan with parchment paper. Place Panko crumbs in a bowl.

4. Stir parm, egg, egg yolk, and salt into cooled risotto. Scoop out 2 ½ tablespoons. Make an indentation in the center and add ¼ teaspoon each of cranberry sauce and Brie. Form a ball around the filling. Roll the arancini in the Panko crumbs. Set on the parchment-lined pan.

5.Lower 3-4 balls at a time into the hot oil. Cook for about 2 minutes or until dark golden brown. Transfer to a serving platter. Garnish and serve immediately with Green Goddess Sauce.

Green Goddess Sauce

Ingredients

• ½ cup mayonnaise

• ½ cup sour cream

• 1 clove garlic, minced

• 1 teaspoon dried tarragon

• 1 tablespoon fresh lemon juice

• 1 teaspoon white balsamic vinegar

• 2 teaspoons honey

• 1 teaspoon salt

• 1 cup Italian Parsley

• ¼ cup chopped chives

• 3 tablespoons chopped fresh dill

Directions

1. Combine all ingredients in a food processor or blender. Pulse until blended.

Pink Peppercorn Christmas Cosmo

This cocktail just screams Christmas. Its peppery tart notes pair perfectly with the sweetness and tanginess of the Cranberry Brie Arancini.

Ingredients

• 1 ½ ounces Pink Peppercorn Vodka

• 1 ½ ounces white cranberry juice

• 1 ounce Cointreau

• ½ ounce lime juice

• ½ ounce Rosemary Simple Syrup

• Rosemary sprig

Directions

1. Combine all ingredients in a cocktail shaker with ice. Shake 30 seconds. Strain into a glass. Garnish with a sprig of rosemary and a few peppercorns from the vodka.

EGGNOG BASE

(BATCH FOR 6–8 SERVINGS)

• 6 large eggs (separated)

• ¾ cup dark brown sugar (Dark Muscovado)

• 2 cups whole milk

• 1 cup heavy cream

• 1 cup Belle Meade Bourbon

• 1/4 cup Louisa’s Coffee, Caramel & Pecan Liqueur

• 4 ounces Brown Butter Pecan Syrup (see below)

• 1 tsp vanilla extract

• ½ tsp ground nutmeg

• ¼ tsp smoked sea salt

BROWN BUTTER PECAN SYRUP

1. In a large saucepan melt ½ cup butter until lightly browned.

2. Add 1 cup chopped pecans and toast them in the butter for 2-3 minutes.

3. Add ½ cup dark muscovado sugar,½ cup water, and a pinch smoked salt and stir until the sugar has dissolved into the solution.

4. Reduce the heat and allow the syrup to simmer for 5 minutes to reduce and thicken it slightly.

5. Strain the syrup through cheesecloth and then allow it to cool.

6. Note: the pecans you left in the cheesecloth after straining the syrup make a tasty treat if you toast them off in the oven on a low heat.

ASSEMBLY

1. In a stand mixer whisk the 6 egg yolks (save the 6 whites for later) until they are creamy and then add muscovado brown sugar gradually while you continue to whisk until you get a smooth consistency and beautiful golden brown color.

2. Put the egg yolk and sugar mix into a mixing bowl and stir in by hand the milk, heavy cream, vanilla extract, nutmeg, smoked salt, and the brown butter pecan syrup, as well as both spirits (Belle Meade + Louisa’s).

3. Chill this eggnog base mixture for at least 2 hours, but ideally overnight, to allow for the flavors to come together.

Creating stovetop potpourri is a delightful way to indulge in the scents of the festive season. This Cranberry Orange Potpourri combines sparkling notes of fresh citrus and cranberries with nostalgic spices and woodsy herbs to create a welcoming atmosphere.

INGREDIENTS:

• 1 cup fresh cranberries

• 1 orange, sliced

• 2 cinnamon sticks

• 1 teaspoon whole cloves

• 3 star anise

• 2 sprigs fresh rosemary

• 2-3 cups water (plus more as needed)

INSTRUCTIONS:

Combine cranberries, sliced orange, cinnamon sticks, cloves, star anise, and rosemary in a pot. Add 2-3 cups of water, ensuring the ingredients are submerged. Simmer on low heat, allowing the aromas to release. Check the water level, adding more as needed to prevent drying out. Simmer for several hours to fill your home with the scents of the season.

PAINT LIKE A

TIPS FOR CREATING BEAUTIFULLY REFRESHED ROOMS

A fresh coat of paint is a great way to update any room, but it’s not always as easy as people think. Specific steps need to be followed to get that professional finish.

Here, Dylan Ritter, owner, along with his wife, Scout Turner, of CertaPro Painters of Nashville and Middle TN, provides some expert tips to achieve that perfect look.

TOOLS

Determine the right rollers and brushes needed. If you have textured drywall, you'll need a heavier nap roller to fill in the paint and achieve a uniform finish in the texture. If it's a smooth wall, you’ll want a very low nap roller.

Brushes can be synthetic or horse hair, and if there are a lot of angles in the trim, you’re going to need an angled brush.

Other tools include a ladder, putty knives, a level, drop clothes, paint stirrers, roller pans, and a pencil. Lasers are great for trimming out lines.

PREPARATION

First, inspect the room to see what items need to be removed. Items that cannot be removed need to be adequately covered.

Then, determine which floor covering will be best. Carpet would need a drop cloth, while hardwood would need a thicker type of board covering.

Next, to make sure the paint will adhere properly, clean any debris on the walls or trim. For cobwebs, a simple towel will do, but if you have any greasy stains, you’re going to need an effective cleaner, such as TSP.

Once that’s done, sand areas with failing paint, and caulk any exposed or failing joints in baseboards, crown molding, or windows. Use drywall mud to fill in any nail holes and skim coat uneven walls.

While that’s drying, use painter’s tape to tape off the trim.

PAINTING

Even though many paints now include primer, you should still prime raw wood areas, high-traffic areas, water stains, mildew, and anything else that could potentially bleed through the newly applied paint.

There are many different types and brands of paints. It’s essential to determine whether the room you’re painting is a high or low traffic area, and to also know the aesthetic you’re looking for. For example, do you want a high sheen or a low sheen? As far as brands, we use Sherwin-Williams®.

Before pouring the paint into the roller pan, attach a spout to the can, preferably one with a filter. We also use a bucket grid. It captures any debris that you may have picked up from transferring paint to the pan, then from the pan to the roller. While professionals typically don’t use them, pan liners make clean-up a lot easier.

Before pouring, also make sure the paint is thoroughly mixed. If you bought the paint that day or the day before, you can just stir it with a wooden stick. But if you bought it, say, a month ago, I would recommend bringing it back to the store and having it shaken in the machine.

The order in which to paint would be ceilings first, then walls, and lastly, trim. If you cannot finish a room in one day, ensure you complete one wall corner to corner so there’s no visible transition.

Also, be sure to put the paint back into the original can and hammer down the lid. Clean all of the brushes so you can reuse them, and wrap the rollers in plastic.

CLEAN UP

When finished with the entire job, thoroughly clean the brushes and rollers.

Remove floor coverings and wait at least four to six hours before moving furniture back in. Before hanging anything on the walls, wait 24 to 48 hours.

Then, sit back and enjoy your beautifully refreshed room.

Since the homeowners were devoted coffee enthusiasts, the team designed a dedicated coffee bar as part of the new layout, complete with a built-in pot filler to make brewing the perfect cup even easier.
