Welcome to the Premiere Issue of Elkhorn City Lifestyle!

Hello and welcome to the premiere issue of Elkhorn City Lifestyle!

The Elkhorn and West Omaha community is such an amazing place to live, work, play, and raise a family. In the months following the spring torna does that devastated much of our beloved community, we've witnessed Nebraskans do what we do best: Show up in the hard times, lift up those in need, and provide support in all the ways... financially, emotionally, and physically.

Over the last few months, I've had the opportunity to meet so many people and businesses who work daily to enrich this community we call home. I'm beyond thrilled to share them with you on the pages of this magazine. As you scroll through, you'll see businesses that are just getting started to businesses that planted their roots here generations ago. It's our honor to tell their stories and share in a small part of the legacy they are building.

The goal of Elkhorn City Lifestyle is to connect our community by connecting you, our reader, to the brands, the stories, and the people that make up our great community. We'll share events, photos, and experiences that make our community the extraordinary place it is.

CHANGING LIVES ONE WELLTRAINED POOCH AT A TIME

A little over two years ago, Bob Wiegand took a giant leap of faith. After 40 years of working in automobile sales and advertising sales, he decided he was ready to be his own boss and began the search for the next chapter of his story. Never did he imagine where he’d land, nor how much joy and fulfillment it would bring him.

Fast forward to the present and Wiegand now owns and operates Dog Training Elite Omaha, a thriving dog training business offering obedience, therapy dog, and service dog training to the Omaha metro area, serving clients within an hour radius of the city. The best part, he comes to you!

“We are in-home dog trainers, so we actually go to the client’s house. It’s better for the dog to be in the comforts of their own home,” said Wiegand. And he not only trains dogs but also their owners, equally

teaching them as he passes along his pointers, tips, and tricks on a weekly basis.

Likening the first training session to the foundation of a house, Wiegand builds on that foundation each week, and once a dog has completed obedience training, he builds further still through outdoor continuing education classes offered in a group setting.

“We have group classes outside so we’re working with higher distractions, other clients, and other dogs. We have

reactive dogs. We have aggressive dogs. They all need to work on their problems in that environment.”

In fact, Wiegand is one of few dog trainers in the area willing to take on aggressive dogs. By the time clients come to him, Wiegand is often their last hope — their only other alternatives being to euthanize their pet or rehome it.

“Seeing the change in the dog and watching the expression on the client’s face as we modify the behaviors on a week-to-week basis…” Wiegand stopped

to smile. “It’s so meaningful to me. Yeah, there’s difficult dogs out there. There are very reactive dogs and very aggressive dogs. We do a lot of aggressive dog training. But we see the progress being made — the client and myself — and that satisfaction kicks in that I changed somebody’s life.”

With a wide-ranging clientele base of dog owners in their early 20s to their late 70s, Wiegand’s clients come from all walks of life and their dogs come in all breeds, sizes, and ages. Best yet, his expertise

ranges further than just basic obedience training, also training dogs to help their owners with mobility support (think dogs trained to pull owners in wheelchairs or pick up dropped items on command), psychiatric support for autistic clients or those struggling with depression or self-harming, and veterans suffering from night terrors and other PTSD symptoms (who Wiegand admittedly has a soft spot for and offers discounts to).

Asked to reflect on his journey, Wiegand said, “I sell you a brand new car, that new car smell is gone in 30 days and your first payment is due, so you’re no longer happy anymore. With advertising, sure I cashed paychecks, but I’m not changing the world. I’m not changing somebody’s life. I have a sense that I was put on this earth to do greater than just selling cars or advertisements. Training these dogs to be service dogs... Knowing that I’m helping that [hurting] individual... I get goosebumps. You’ve heard the old expression it’s not a job if you love it and that’s how I feel. I get to change people's lives.”

Born and raised in Nebraska, I bleed Husker Red! A recovering medical device sales rep, I made my way back to my collegiate roots in journalism, print media, and advertising.

Wife of One:

My husband Marc and I have been married almost 10 years and have mastered the art of taking a leap of faith. We’re pretty pleased this latest one brought us to Elkhorn City Lifestyle.

Fur Mom:

To Winnie the Wonder Dog — a Golden Retriever and Australian Shepherd mix — and Josie, a sweet-spirited, geriatric cat who has gracefully allowed our children to trample on her sunset years.

Mother of Two:

We’ve been blessed with a son, Rhett, who is six years old, and a daughter, Monroe, who is four years old.

Favorite Pastime:

We love the outdoors and exploring new vacation spots with our young kids. We travel to Okoboji each summer and pepper in warm weather vacations throughout the winter months. Our favorite spots have been Florida beaches and Mining Ghost towns in sunny Arizona.

Nebraska Balloon & Wine Festival Returns to Ta-Ha-Zouka Park

IN ITS 18TH YEAR, THE FESTIVAL OFFERS FUN FOR ALL AGES

The 18th Annual Nebraska Balloon & Wine Festival will return to Elkhorn's Ta-Ha-Zouka Park on Friday, August 16, and Saturday, August 17. The Festival is a showcase featuring award-winning food and wine, shopping, and hot balloon fun for all ages.

Are you a lover of wine? A large selection of wines will be available to taste by the glass or to purchase by bottle. Not a wine connoisseur? Never fear. With something for everyone, beer, seltzer, and non-alcoholic options will also be available.

The Balloon Glow is an entertaining celebration of ballooning.
The skies come alive with the glow of hot air balloons at Ta-Ha-Zouka Park.

After filling your glass, make your way to the Marketplace Village. Featuring local vendors and makers as well as nonprofit partners, even the most discriminating of shoppers will be sure to find something to pique their fancy. For those with kids in tow, enjoy family-friendly activities like face painting, bungee jumping, inflatable bounce houses, and obstacle courses in the KidZone. And dance the night away with live music from the Personics on Friday night and High Heel on Saturday night, following opening act, The 70's Band.

While all of that is entertaining, the real show stopper is the hot air balloon launch and nightly Balloon Glow that occur daily, weather permitting. The RE/ MAX Skydiving team will also be making a return appearance —  jumping from thousands of feet above event goers — along with paragliders hovering above.

Has all the fun made you hungry? Head to the Food Pavilion, featuring delicious foods from Omaha’s best restaurants, food trucks, and caterers including Kebobs, Gyros & Brats, Pim's Thai, Prairie Fire Pizza, Haven Express, Smoking Jay’s BBQ, Big Red Barn, Greek To Me!, Uncle Earnie’s BBQ, Heavenly Body Catering, Chef Amore Italian, and Javi's Tacos.

If finer fare is more your taste, for an additional fee, enjoy the ever-popular Food and Wine Experience —  but be sure to secure your spot fast as sessions sell out each year. Set up classroom style, these interactive sessions feature three courses of expertly paired food and wine prepared and presented by local culinary chefs, vintners, and wine experts.

Said Festival Director Mike Mancuso, “Whether you are a wine connoisseur, wine lover, or simply interested in trying something new, the Food and Wine Experience offers a special interaction with wine tastings by chefs from Carrabba's Italian Grill and Outback Steakhouse. It represents the culinary aspect of enjoying great wine and a fun way to discover life’s simplest indulgences.”

Festival tickets can be purchased at the event entrance for $15.00 or $21.00 per person (depending on ticket type). Tickets for children ages five to 12 are $8.00. Children ages five and under are admitted for free.

Spending time outdoors and enjoying friends and family over good food and drinks is a great way to enjoy the season’s beautiful weather. From the fresh flower arrangements, produce, and herbs, this earthy spread is brimming with character and flavor. The earthy ceramic and clay vases give the perfect vessel to fill with organic cut herbs and handpicked wildflowers. We arranged a beautiful medley of Queen Anne’s lace, mint, sage, rosemary, lavender, lamb’s ear, nigella, buddleia, oregano, dill, feverfew, and geranium to name just a few of these beautiful blooms.

We love a good home-cooked menu mixed with a signature drink, so we paired our meal with a delicious craft cocktail. Buttermilk-brined fried chicken was a must for this outdoor party. A delicious peach bread pudding with salted vanilla caramel cream rounded out our meal for the perfect sweet treat. We wanted to share a few of our favorite recipes for you to try at home. Enjoy!

FARM-TO-TABLE ENTERTAINING

Buttermilk-Brined Fried Chicken

INGREDIENTS:

Dried spice mix

• 2 tablespoons white pepper

• 1 teaspoon ground mustard

• 5 teaspoons paprika

• 2 teaspoons fresh black pepper

• 2 tablespoons garlic powder

• 2 teaspoons dried oregano

• 2 teaspoons cayenne

• 1 teaspoon celery salt

• 1/2 teaspoon dried thyme

• 4 teaspoons onion powder

• Palm kosher salt

Buttermilk Brine

• 4 cups buttermilk

• 1 bunch fresh sage

• 1/2 of spice mixture

Dredge

• 2 cups flour

• 1/2 cup cornstarch

• 1 tablespoon baking powder

• Whole cut up chicken or 2 bone-in breasts, 2 thighs and 2 drumsticks

To cook

• 4 cups shortening

INSTRUCTIONS:

Marinate chicken in brine for up to 24 hours. Place chicken in large Ziploc bag and pour marinade over top. Add fresh sage and store in fridge. Preheat oven to 350 degrees. Prepare a baking rack with a sheet pan for raw chicken and one for cooked chicken. Add remaining spice mixture to flour mixture. Whisk together well. Heat shortening to 350 degrees. (Preference is cast iron Dutch oven.) Pull chicken out of buttermilk mixture and let drip. Coat firmly in flour mixture and set on raw chicken rack. Complete each piece of chicken. Heat oil to 350 degrees. Place 2 or 3 pieces of chicken in oil and cook 3-5 minutes per side.  Place on cooked chicken rack. Put cooked chicken in oven to complete cooking for 15 minutes. Let chicken rest for 5-10 minutes before serving!

Peach Bread Pudding

INGREDIENTS:

• 1 loaf brioche

• 5 fresh peaches

• 2 tablespoons sugar

• 2 tablespoons butter

• 2 cups milk

• 1 cup heavy cream

• 5 eggs

• 2 teaspoons cinnamon

• 2 tablespoons brown sugar

• 2 teaspoons vanilla

INSTRUCTIONS:

Preheat oven to 350 degrees. Cut bread into 1-inch cubes. Dice peaches into medium dice. Place peaches, white sugar, and butter in saucepan. Cook until sugar is dissolved and peaches are soft. Mix all other ingredients together. Spray a 9x13-inch baking pan and add peach mixture with brioche pieces and then add milk mixture. Bake for 45 minutes. Let cool for 20 minutes before cutting.

El Ahumado

Spanish for “Smoky”

INGREDIENTS:

• 1 1/2 ounces Reposado tequila

• 1/2 ounce aperol

• 3/4 ounce lime juice

• 1/2 ounce agave nectar

• 1/4 ounces luxardo cherry syrup

• 1 spritz of Mezcal

INSTRUCTIONS:

Lightly sweet, pleasantly bitter. The Mezcal adds just a hint of smoke to make a beautifully balanced, interesting cocktail.

DIY Your Way To a Bug-Free Summer

Adult- and Kid-Friendly Natural Bug Repellents from A Beautiful Mess

Adult Blend Kids Blend

(age 15 and over)

MATERIALS:

• 10 drops lemon essential oil

• 10 drops lemongrass essential oil

• 8 drops lavender essential oil

• 8 drops eucalyptus essential oil

• 1.5 ounces distilled water (minus 1 teaspoon to make room for the essential oils in the bottle)

• .5 ounce 95% proof grain alcohol*

INSTRUCTIONS:

In a 2-ounce spray bottle, add the grain alcohol (or Solubol) and drop in essential oils. Swirl to combine. Place the cap back on the bottle. Allow the oils to disperse in the alcohol for about 1 hour, then add distilled water, swirling again to combine.

*The grain alcohol is used as a preservative as well as a carrier for the oils, but you can also use a product like this instead of grain alcohol at a 1:4 ratio (1 drop essential oil to 4 drops Solubol) if you’d rather and then just fill the rest with water to fill the 2-ounce spray bottle.

While there can be concern about citrus oils on the skin when exposed to sunlight, lemongrass isn’t a photosensitive oil, and if lemon essential oil is steam-distilled rather than cold-pressed (Oui Fresh essential oils are cold-pressed) it can be used on the skin. So just make sure to note which one your lemon oil is and only spray on clothes if you don’t have a skin-safe lemon oil (which is an application method a lot of people prefer anyway if they are more sensitive to oils).

As temperatures rise, children race to the freezer for this frosty treat or wait anxiously for the approach of the musical ice cream truck. Making homemade popsicles is a fun, kidfriendly activity. These recipes feature kid-favorite flavors with an added taste twist. The only tricky part is waiting for them to freeze.

SPICED GRAPE POPSICLES

ingredients:

Makes 18 to 24

• 2 quarts Concord grape juice

• 1/2 cup sugar

• 12 whole cloves

• 4 cinnamon sticks

• 3 tablespoons whole allspice

directions:

Put all of the ingredients into a large saucepan. Bring the mixture to barely a simmer and let it cook for 30 minutes. Remove from the heat and pour the juice through a cheesecloth-lined strainer into a bowl or pitcher to remove the spices. Allow the juice to cool to room temperature, and then refrigerate until well chilled. Pour mixture into popsicle molds. Freeze until firm.

CHERRY LIMEADE POPSICLES ingredients:

Makes 18 to 24

• 2 cups sugar

• 2 cups water

• 1 cup lime juice

• 2 cups tart cherry juice

directions:

In a saucepan, combine the sugar and water over medium heat, stirring until the sugar dissolves. Remove from the heat. Add the cherry juice and taste. Add additional sugar or water if needed. Let come to room temperature and then refrigerate until well chilled. Pour mixture into popsicle molds. Freeze until firm.

INGREDIENTS

• 1 1/2 oz- Cucumber & dragon fruit gin

• 3/4oz- Toasted black sesame Velvet Falernum

• 1/2oz- Lime juice

• Topped with ginger beer

• Hawaiian black lava salt & black sesame

GARNISH

• Small paint brush

• Simple syrup

• Hawaiian black lava salt mixed with a pinch of black sesame

INSTRUCTIONS

Infused Gin: Infuse 1 whole peeled and cut cucumber in gin for a week. Strain the cucumbers out. Add 1 tablespoon of organic dragonfruit powder and mix very well with a whisk. To make the syrup, toast 1/2 cup of black sesame at 350 for 10 minutes. Take it out and let it cool. In a mortar and pestle, grind the toasted black sesame, but not too fine. Add the sesame into one bottle of John D. Taylor’s Velvet Falernum. Let that set for about 2 to 3 days and use cheese cloth to strain out the fine bits of sesame. Juice one fresh lime and strain to remove the pulp.

Cocktail: Paint a strip of simple syrup down a Collins glass. Take a spoon full of Hawaiian black lava salt mixed with black sesame and layer that down where the painted simple syrup was placed. In a shaker tin combine: 1 1/2oz cucumber dragon fruit gin, 3/4oz toasted black sesame Velvet Falernum, and 1/2oz lime juice and shake that up!  Fill the painted glass with ice (I use crushed ice) and strain over the ice. Top with your favorite ginger beer (my choice is fever tree ginger beer).
