Live, Laugh, Love and EAT!

Food….what can I say? Without it, we wouldn’t be here.  I was born at about 12:15pm and have always used that as a prime excuse for my healthy appetite!

Beyond human sustenance, food is something that brings families and friends together. My favorite times growing up were on Sunday evenings, when our family would make time to be at Sunday night dinner which included catching up, sharing stories, laughing and appreciating one another’s company. Our family dinner was a regular, weekly occurrence and although I may have complained about it as a teenager – it is something I really miss.

With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, so we have included a fabulous flatbread recipe that you can enjoy at home.

The beloved neighborhood Red Cow has gotten a refresh, and VP Michael Giacomini shares what’s new in addition to their tried and true staples.

For dining out and more of an entertainment spot, the Boardroom restaurant inside Office Golf boasts a fun menu for the whole family and you don’t have to be a golfer to enjoy the atmosphere and great selection of bites. The pizzas are my personal favorite and the golf simulators and games are an added bonus.

We also found some fun foodie destinations if you plan on traveling this season. In follow up to our August Kids + Pets Issue, we wanted to congratulate and showcase our photo contest winner! It’s always so fun when our community takes pride in what Edina has to offer. Many thanks to all who submitted.

Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.

21st Century Tavern with Flair

A FAMILY SHARING THEIR LOVE AND KNOWLEDGE IN CULINARY AND COCKTAILS

What started out as a family discussion around the kitchen table has grown into a succession of successful restaurants through the Minneapolis-St. Paul area. It’s no wonder – Red Cow has won multiple awards for its burgers, bars and cocktails.

Experienced restaurateurs Luke Shimp and wife Tracy Bachul have passed down their knowledge and love for the industry to their sons Michael and Peter Giacomini. (Luke has twice been named Restaurateur of the Year by the Minnesota Restaurant Association and has also been voted Best Restaurateur with the Charlie Awards, a local peer based award.)

The family of four opened their first Red Cow at 50th & France in 2013, and this past October, just opened their sixth in Wayzata. “It's been an up and coming market, and there's other really good restaurants that have opened up in that area,” says Michael. “There always seems to be a ton of foot traffic down there, which is one of the criteria we have for choosing a restaurant location.” Other locations include Saint Paul, Uptown, North Loop, and Rochester.

The secrets to their success? “We're able to use really high quality ingredients while keeping it affordable,” explains Michael. “We also have a great variety of food while maintaining our core competency of burgers.”

One of these, the Barcelona burger, includes thinly sliced prosciutto de Parma, Manchego cheese, piquillo peppers and smoked pepper aioli. The family created a proprietary burger blend and seasoning mixture to create the most flavorful meat. It’s just mouthwatering, and like their other burgers, keeps people coming back again and again.

“Additionally, to set ourselves apart, we say, we are a 21st century tavern,” he says. “To us, that means that we serve elevated west coast inspired fare, but it also means that we have a fantastic beverage program.”

So, in addition to the burgers, sandwiches, salads and shareables, Red Cow focuses on 30 fine wines by-the-glass, curated cocktails, a wide variety of craft beer and spirit-free beverages. “A lot of times you'll go to restaurants and they'll do two really good, or one really good, but we do them all great,” says Michael. “Our beverage director is constantly enhancing our drink menu – at least four times a year.”

Red Cow restaurants also have a wine preservation system. “This preservation system allows us to have 30 wines by-theglass, properly preserved (not oxidized), so they are fresh and served at proper cellar temperature.” When it comes to beer, there are 36 craft beers on tap alone.

While the demand for their burgers has never waned (80% of their customers still order a burger), they like to change up or enhance their other offerings from time to time to keep things new and exciting. “We’re focusing on providing fresh, light, west coast/southern California fare,” says Michael. “We brought lettuce wraps back into popularity, along with coconut shrimp, tempura veggies and a delicious Baja chicken bowl – they are all really, really great and align with our culinary vision.”

The taverns are also fun gathering places for Happy Hour. Customers can find a variety of appetizers such as Truffle Fries, Wisconsin Cheese Curds, Sliders, Ahi Tuna Crisps, and Chips and Dip. “The most popular cocktails we offer during Happy Hour are our trio of margaritas – a Strawberry Fresno, a Hibiscus and an Original,” he says.

Every decision is a family affair. “Luke does a ton of research on what the trends are and what people are eating, specifically on the west and east coasts, because it typically takes a couple of years for those trends to come to us,” says Michael. “Of course, we always need my mom's input to make sure it's light, bright, and fresh. My brother and I are viewed as your typical diners. So you've got the researcher, you've got the very experienced mother and then you have us, the diners, so we try to make sure it fits all four branches.”

In addition to Red Cow, the family also launched Red Rabbit, an Italian restaurant, in 2016, which has been named one of the top 50 independent restaurants in America. It has two locations – one in Minneapolis and one in St. Paul.

Giving back to the community is a core principle of both restaurants. Their InspiRED Giving program supports local charities and youth sports teams, and is very important to the family and their staff.

THE BOARDROOM

I’m in Bloomington, just off 494, watching deer taking turns sipping from Nine Mile Creek. They look discontent on this dour, drizzly autumn evening. I’m sure it would comfort them to know how cozy The Boardroom is keeping me.

You seldom associate warmth with the phrase “30,000 square foot facility,” yet The Boardroom glows in its own hospitality. It is Office Golf’s full-service restaurant, which serves elevated American fare and restorative beverages in a bright, airy environment. It is a perfect spot for a date, which I am currently on with my beautiful wife, who does not play golf, and who loves it here. She says she loves being anywhere with me, but I know the truth. She specifically loves going to The Boardroom.

Why? Many reasons. The truffle tots, which we firmly believe to be the pinnacle of tot cuisine. The supreme pizza, which is only slightly more supreme than the Hawaiian pizza. The Jack Daniel’s bacon mac n’ cheese, which comprises all four of the loveliest ingredients known to man. The pretzel-crusted salted caramel brownie, which I am determined to find a way to live inside of someday. There are even salads. It’s all a far cry from the sort of food you would normally eat off of green checkerboard paper.

“Mmm-hmm, that's good booze!” Jackie Gleason said it often, and I’m sure he’d have said it here. There are cans, bottles and drafts, the last of which includes Office Golf’s exclusive OG Amber Lager. Divine. There are both primary colors of wine, as well as rosé for the true renegades. There are signature cocktails as well. I’m drinking a Fairway Fizz, which may have negated my ability to appreciate a greyhound unless it has elderflower liqueur in it.

itself: a large one for raucous gatherings and televised sports, and a tucked-away speakeasy for intimate tête-à-têtes. The third makes the 19th hole perpetually available to indoor golfers.

I tried my hand at one of Office Golf’s 18 Trackman iO golf simulators before (during an earlier, wifeless visit). Within seconds I was transported to first tee at Bethesda Country Club, where I was blown away by how faithfully the machine interpreted my golf skills. I was exactly as bad at virtual golf as I am at the real thing.

I could practically feel the sand in my shoes by the 18th hole, which I somehow managed to reach in just under an hour. (A party of four can play a full round in about as many hours.)

Such state-of-the-art yet accessible technology really opens golf’s applications. If you’re accustomed to closing big deals on the green or just palling around with your friends there, Office Golf makes it possible to be yourself all winter long.

Office Golf also makes it easy to host gatherings of all sizes. The Boardroom comfortably accommodates up to 300 guests, and has two adjacent simulator rooms to entertain them. Just let the dedicated event specialist know what the ultimate rehearsal dinner, family reunion, corporate get-together or other private party must include. You’ll find it all waiting for you on your arrival.

The date is now nearing its conclusion. I don’t dread the 10-minute drive back to Eden Prairie, and I expect to return soon. It’s hard to believe my new favorite hangout features a sport I’m so dreadful at, but that’s the beauty of Office Golf. You can ignore its signature attraction entirely and still love it here.

The Winners of Our Family Foodie Contest is a Local Mom and Daughter Duo

And the winner is…

In August, Edina Lifestyle teamed up with Andrew Vick of Vick Studios to offer a contest where families could submit a photo of themselves at their favorite dining spot around town and they would be entered to win a $100 gift card to that restaurant.

After much consideration, Sloane Leary and mom, Nicole, have been crowned winners of the best photo.

The duo, who love spending time together, stopped by Yumi Sushi for some yummy bites and good vibes.

“Yumi Sushi is delicious with large, beautiful specialty rolls and a ton of variety,” Nicole says. “This is our special spot for mom and daughter dates, and was Sloane’s first restaurant experience with sushi, which is now her fav food.”

Fabulous Flatbread

This dish is from Chef Evon Profitt, the director of culinary operations for all of Westside Concepts in Arizona. This flatbread with grilled peaches, house-made rosemary paneer cheese, soppressata, fresh mint, and pistachios with a balsamic drizzle is to die for.

Grilled Peach Flatbread with House-Made Rosemary Paneer Cheese

Yield: 4 flatbreads

INGREDIENTS:

• 2 peaches cut into 8 pieces each

• 12 slices soppressata or any salami

• Fresh mint

• 1 tbsp. olive oil

• ¼ cup pistachios, chopped

• Balsamic reduction

• 4 baked naan bread

FOR THE PANEER CHEESE:

• 6 cups whole milk

• 2 tbsp. rice wine vinegar

• ½ tbsp. fresh rosemary, chopped

• 1 tsp. kosher salt

HOW TO MAKE PANEER CHEESE:

Paneer cheese is made by curdling milk using an acidic additive such as lemon juice or vinegar. Paneer cheese does not use any kind of rennet, nor fermentation or aging.

In a pot, bring 6 cups of whole milk to 200 degrees. Once milk has reached temp., stir in the 2 tbsp. of vinegar and turn off heat; milk will begin to separate. Allow milk to curd for 5 minutes, strain whey and curds into a cheesecloth-lined colander. Transfer curds to a mixing bowl and add chopped rosemary and 1 tsp. kosher salt, mix ingredients together, reserve the cheesecloth for the next step. Place the curds back into the cheesecloth, pull the corners of the cloth together, ring out excess whey from the curds, and hang for 30 minutes to continue draining. Once the curds have drained, place cheesecloth-wrapped curds back into the colander and place a heavy item on top, in order to press the curds into shape and press more of the whey from the cheese, for 3-4 hours. Use cheese fresh or keep refrigerated up to 4 days.

FLATBREAD:

Brush olive oil onto both sides of naan flatbread, and place in oven on rack for 10 minutes at 400 degrees, or grill for 2 minutes each side. Grill peach slices for 2 minutes each side, or place in oiled sauté pan till each side begins to caramelize. On a cutting board, lay flatbread down, and place grilled peach slices around flatbread. Take small pieces of Paneer cheese and place throughout over the peaches. Be creative and find place for the soppressata or salami of your choice. Garnish with crushed pistachios and torn fresh mint. Cut flatbread, transfer to serving plates, and drizzle with balsamic reduction.
