A Seat at the Table

Food has always been more than just nourishment—it’s connection, creativity, and community. Nowhere is that more evident than right here in our own backyard, where our local restaurants, chefs, volunteers, and food lovers continue to make dining not just a meal, but an experience.

In this issue, we celebrate the flavors that bring us together. From the playful, bold brunch creations at  EAT! Food & Drink to the warm inclusivity at  Matsumotto Sushi & Grill, every story highlights not only delicious food but also the people behind it—the ones who pour their passion into every plate and every guest experience.

We also step into the community garden, where volunteers from  Broomfield FISH and the Salvation Army are proving that food can be a powerful tool for connection and care. What grows in those garden beds doesn’t just feed families—it nourishes hope and strengthens relationships across our city.

And of course, no food issue would be complete without a spotlight on Bites & Brews, an annual tradition where local businesses share their flavors and neighbors gather to celebrate what makes Broomfield unique. It’s a reminder that food is more than what’s on the table—it’s about who’s around it.

There’s something deeply meaningful about gathering at a table. It’s where stories are told, friendships are deepened, and blessings are shared. In many ways, every table in our community is a reflection of something greater—an invitation to belong, to be nourished, and to be reminded that we are never meant to do life alone.

So as you flip through these pages, I encourage you to savor the stories as much as the meals. Every bite you take and every business you support helps sustain the vibrant food culture that makes our community thrive.

Here’s to good food, good company, and a seat for everyone at the table.

With Gratitude and Grace,

October 2025

FROM FIRST BITE to Forever Favorite

The Matsumotto Sushi & Grill Experience
ARTICLE BY JULIE WALKER | PHOTOGRAPHY BY SARAH DAWN PHOTOGRAPHY

The space hums with warmth and inclusivity: first-timers are guided with care, regulars are greeted like old friends, and every meal is crafted to create a memory. “It’s not just about the food,” said Amy Long, owner of Matsumotto Sushi & Grill. “It’s also about how you made them feel.” That philosophy shapes everything at Matsumotto.

Walk through the doors of Matsumotto Sushi & Grill in Westminster, and you’re not just stepping into a restaurant—you’re being welcomed into a home. Amy and her team have built an atmosphere where guests feel like family, whether it’s their first or fiftieth sushi roll.

Matsumotto specializes primarily in premium sushi-grade fish and offers an impressive selection of creative, baked rolls and vegetarian dishes. The name itself carries deep meaning. “In Japanese, it’s Matsumoto, a city known for its divine history of arts, wood elements, crafts and beauty, which signifies and aligns with everything we offer at Matsumotto Sushi & Grill,” Amy explained. “Matsumotto Sushi & Grill to me is my palace and my castle,” Amy says. “To have the ability to share this with our community is a dream come true.”

If you have ever felt intimidated about sushi, Matsumotto is the perfect place to begin. Amy remembers her own first sushi experience as a teenager. Unsure about raw fish, Amy tried cooked rolls— rice, fish and seaweed—something familiar enough to help make the leap into Japanese cuisine more approachable.

That same philosophy guides Amy and her team today: start guests where they’re comfortable, then let them branch out at their own pace with friendly recommendations along the way. While sushi may be the first thing that comes to mind, the menu goes far beyond rolls and sashimi, with plenty of cooked favorites—think shrimp tempura, salmon teriyaki, fried rice, and gyoza—that deliver big flavor without straying too far from comfort.

“Each dish arrives with brilliant presentation, stopping me in my tracks before I even take a bite.”  — John Tayer

Vegetarians can enjoy options like vegetable tempura, vegetable udon, sweet potato rolls, and more, while the kids’ menu keeps little ones happy with simple options like an avocado roll or chicken dishes. Whatever your tastes, Amy and her staff want to make Japanese food approachable, varied and fun.

For adventurous diners, the menu unfolds—Seared Tuna Tataki, a bright Ceviche Roll, the popular Colorado Roll, and a spark of surprise with the Firecracker Roll—igniting the table with flavor and discovery.

The quality of the food speaks for itself: Matsumotto sources only premium-grade fish, flown in fresh from Japan, Alaska, New Zealand, Scotland, and Hawaii, with creamy uni from Santa Barbara arriving seasonally. Each order is carefully prepared with respect for tradition while balancing touches of modern creativity.

Matsumotto offers a wide selection of sake, brewed from fermented rice, water and yeast—with profiles spanning filtered and unfiltered, floral and light, and rich and gently sweet. Sake can be enjoyed chilled or warm. It complements sushi and amplifies umami, the quiet magic that makes simple Japanese dishes extraordinary. Crafted cocktails and mocktails, as well as matcha green tea, are also popular. Servers happily guide guests on a perfect pairing.

Regular customer John Tayer describes his visits this way: “At Matsumotto, I always feel welcome like family, while they feed you like royalty. Every dish arrives with a brilliant presentation, stopping me in my tracks, before digging my chopsticks into the delicious flavor pairing and fresh fish in each Matsumotto sushi creation.”

AMY LONG

Matsumotto Sushi & Grill is a family endeavor. Amy’s brother Vinh serves as one of the sushi chefs, carefully sourcing the fish and sharing his expertise as a sake enthusiast. Their father, Senh, oversees quality in the kitchen—where even the sushi rice receives meticulous care, taking three hours to prepare. Many of the staff have been with the restaurant since its previous ownership and chose to stay on with Amy, a testament to the supportive, family-like atmosphere that Amy has created. Together, Amy and her team bring both skill and heart, creating an experience defined by dedication and care.

“I love the stories and the memories that we get to build. Matsumotto is my home. We want everyone to feel at home here,” says Amy. Chances are, when you walk through the door, you’ll find Amy there to greet you warmly and invite you into her “palace.”

Lari Abraham, a frequent diner at Matsumotto, lived in Japan for four years. She shared, “What I love is how Matsumotto blends the refined tradition I remember from Japan with an elevated, welcoming vibe. In Japan, sushi is about trusting the chef and allowing yourself to be surprised. Matsumotto captures that spirit in a welcoming, modern way.”

At its heart, dining at Matsumotto Sushi & Grill is about a high-quality, elevated dining experience served with care and connection. Whether you’re easing in with cooked appetizers or indulging in the highest-quality sashimi, you’ll find that the experience is tailored to your tastes— welcoming, inclusive and unforgettable.

Amy’s family immigrated from Hong Kong in 1986, opening their first Boulder restaurant in 1992. By 12, Amy was learning every aspect of the business, instilling perseverance, hard work, and hospitality. This shaped her into the visionary entrepreneur she is today, skilled at identifying and elevating consumer needs. A Las Vegas birthday trip inspired her dream to share sushi and sake, a vision she now lives, honoring tradition while making Matsumotto her own.

“Oh

Bites & Brews

An annual tradition that feeds both appetites and community spirit.

What do you get when you mix sizzling bacon, craft mocktails, and a crowd of hungry neighbors? The recipe for one of Broomfield’s most beloved traditions—Bites & Brews. This annual celebration isn’t just about tasty bites and sips; it’s about creating connections that last long after the plates are cleared.

What started as “Taste It Broomfield” has grown into a can’t-miss event where restaurants, breweries, and food innovators put their best flavors forward. Chamber President & CEO Pat Monacelli says the mission is simple: “We want to showcase area businesses, give them exposure to new customers, and create a space where the whole community can come together.”

That exposure is real. Just ask this year’s People’s Choice winners. Eat! Food & Drink snagged Best Rise & Shine Bite for the third year in a row with their housecured maple bacon and thick-cut applewood smoked bacon—crowd favorites since they opened in 2019. Owner David Frieder says events like Bites & Brews fuel growth: “Every time we participate, we meet new guests who later come through our doors. It’s one of the best ways to put

our food in front of people who may not have found us otherwise.”

On the beverage side, Cool as a Cucumber captured Best Non-Alcoholic Drink with three handcrafted mocktails that had the crowd buzzing. Their cucumber & juniper blend was especially refreshing, but guests also lined up for blueberry & lavender and watermelon & pineapple. Owner Chris Rice, who’s been perfecting mocktails for over 15 years, loves seeing the shift. “Last year, folks thought we were just ‘juice.’ This year, people knew exactly what a mocktail was and couldn’t wait to try one,” he says. And his dream? Serving mocktails at the Super Bowl. “That excitement is how we grow.”

At its core, Bites & Brews is about more than who takes home the trophy. It’s about businesses gaining visibility, nonprofits making new connections, and neighbors discovering new favorites together.

For business owners, the takeaway is clear: if you want thousands of new eyes (and appetites) on your brand, Bites & Brews is the place to be. For the community, it’s the ultimate chance to sip, savor, and celebrate everything that makes Broomfield delicious.

PHOTOGRAPHY & BROOMFIELD FISH

The Salvation Army and Broomfield FISH sow seeds of compassion, collaboration, and care.

It was a warm Saturday morning, and people were out in full force at the Salvation Army Broomfield Corps community garden at 1080 Birch Street in Broomfield. The expansive garden needed a lot of work, and the new volunteers from Broomfield FISH were on their hands and knees pulling weeds, yet they each had a smile on their face.

The Salvation Army Broomfield Corps moved into the property and established the Broomfield Corps in 1998. True to their mission, “To preach the gospel of Jesus Christ and to meet human needs in His name without discrimination,” they turned a section of the oversized lot into a garden in 2009, as feeding the hungry is a vital part of their mission. But with all the other demands of running a church, including a recent renovation of the gym and community center, Captain Miguel Morales, Corps Officer, realized that the garden wasn’t getting the attention it needed. Fortunately, last summer, Captain Morales was introduced to the great people at Broomfield FISH, and a garden-to-pantry relationship was born. Their similar mission, “To meet our neighbors’ basic human needs and provide them with hope and tools to rise out of poverty,” made the partnership a natural fit.

“It started small, with FISH offering to manage a third of the garden last fall. They have done a great job, with some of the crops already distributed to the community through their food bank,” says Captain Morales, who was ordained nine years ago in California and transferred to Broomfield in 2023. “It’s been wonderful to see the garden so productive. Our garden coordinator, Butter Wylde, has done an impressive job.”

Butter has fully embraced the gardens at FISH headquarters, at 6 Garden Center, and at the Salvation Army. “After years working as a forager and food writer, I wanted to make a difference closer to home, which led me to the very different world of community gardening,” explains Butter, who got the gardening bug from her father who grew up on a farm. As a master gardener in her own right, her green thumb is evident when you tour the sites, thanks in no small part to the small army of volunteers on her team.

June, a long-time volunteer, has personally experienced food scarcity, so when she found out about the garden nearby, she didn’t hesitate to get her hands dirty. “Working the soil and seeing the plants grow is rewarding. I especially like coming here early in the morning when I have the garden to myself. It’s very peaceful.”

“I moved to Broomfield from Virginia. I figured I could meet some people with similar interests if I volunteered,” explains Julia

Franklin. “Then I heard about FISH and the garden at the Salvation Army. My sister is a single mother back in Virginia, and she relies on a local foodbank to make ends meet. By working in the garden, maybe I can help somebody’s sister here in Broomfield.”

Dayna Scott is the executive director of Broomfield FISH, and she is excited about their partnership with the Salvation Army. “Last year

we put in thirteen raised beds at our facility and then started farming some of the beds at the Salvation Army location. It has been such a good experience that we were happy to take on another fifteen when Captain Morales asked us,” she beams. “We greatly appreciate the garden space that the Salvation Army has provided for us to farm.”

Can sixty garden beds really make an impact on the hunger needs of a community as large as Broomfield? Most definitely. The fresh locally grown produce adds to the available food in their pantry. Younger volunteers, many of whom have never worked in a garden, learn firsthand how food is grown. Plus, the wide variety of plants benefits our bees, butterflies, and moths, whose habitats are being diminished by development.

“The community building part of the garden is invaluable,” Dayna adds. “Working towards a common goal alongside people of all ages, ethnicities, and income levels enables volunteers to see each other as neighbors, not just, ‘those people who need free food.’”

Butter agrees. “The garden has so much potential as a community hub, but we need to expand sustainably, with care for our soil, water, and volunteers, keeping everything in balance.”

One creative way to welcome more volunteers, and generate solutions to those challenges, is the AdoptA-Bed program that FISH and the Salvation Army put together. “Businesses, groups, or families can sign up to nurture a 4’ x 6’ garden plot. It’s a fun and satisfying way to make an impact. We’d love to have 32 of the plots adopted before the spring planting

season so we can boost the amount of high-quality fresh produce we can provide for our neighbors,” says Butter.

Besides volunteering, what are some other ways people can help?

“People can bring in excess bounty from their own gardens or fruit trees,” says Dayna. “And just becoming more aware of the needs of the community is a great start.”

The Salvation Army Broomfield Corps and Broomfield FISH are dedicated to their missions of meeting the needs of the community. In fact, FISH helped more than 15,000 unduplicated neighbors with food needs last year, double what they did just five years ago. The gardens help to feed the most vulnerable in the city, yet they are more than that.

“Everyone who shares in the garden has something to give, and also something to gain,” Butter concludes. “In the garden, it’s clear that we only accomplish our goals as a team.”

“So glad that I tried this spot with a friend today! Eat! Food & Drink is an adorable spot tucked away in Broomfield just west of Flatirons Mall. It’s a great corner location with a pretty patio and tons of parking. We chose this spot because it had wonderful vegan options. We were greeted by the friendliest staff and seated immediately. The ambiance is SO cute and our entire experience was fantastic.”

“Great place to eat and have a good time from the drinks to the food, especially the service! I’m new to Broomfield. I’ve been there several times now and never disappointed. The food is great, their sparkling margarita is the best and the staff made me feel right at home.”

“My friends and I went to get some brunch one day. I ordered the French toast and it was the greatest I ever had. My friend ordered the chicken and waffles and the chicken was so crispy and tasty. The waffle was made to perfection. As was every order that I saw come out of the kitchen. Anytime I need to go to breakfast, lunch, or brunch I would not think about going anywhere else. 10/10.”

INGREDIENTS

• 1 1/2 oz- Cucumber & dragon fruit gin

• 3/4oz- Toasted black sesame Velvet Falernum

• 1/2oz- Lime juice

• Topped with ginger beer

• Hawaiian black lava salt & black sesame

GARNISH

• Small paint brush

• Simple syrup

• Hawaiian black lava salt mixed with a pinch of black sesame

INSTRUCTIONS

Infused Gin: Infuse 1 whole peeled and cut cucumber in gin for a week. Strain the cucumbers out. Add 1 tablespoon of organic dragonfruit powder and mix very well with a whisk. To make the syrup, toast 1/2 cup of black sesame at 350 for 10 minutes. Take it out and let it cool. In a mortar and pestle, grind the toasted black sesame, but not too fine. Add the sesame into one bottle of John D. Taylor’s Velvet Falernum. Let that set for about 2 to 3 days and use cheese cloth to strain out the fine bits of sesame. Juice one fresh lime and strain to remove the pulp.

Cocktail: Paint a strip of simple syrup down a Collins glass. Take a spoon full of Hawaiian black lava salt mixed with black sesame and layer that down where the painted simple syrup was placed. In a shaker tin combine: 1 1/2oz cucumber dragon fruit gin, 3/4oz toasted black sesame Velvet Falernum, and 1/2oz lime juice and shake that up!  Fill the painted glass with ice (I use crushed ice) and strain over the ice. Top with your favorite ginger beer (my choice is Fever Tree ginger beer).

THE PERFECT FALL TREAT

ACORN DONUT HOLES

As the vibrant colors of summer slowly yield to the warm and earthy hues of autumn, there’s a distinct charm in the air at the arrival of fall. It’s a season filled with the crisp rustling of leaves, cozy sweaters, and the promise of pumpkin-spiced everything. What better way to embrace the changing seasons than by indulging in a delightful treat that captures the essence of both summer’s sweetness and fall’s rich flavors?

My recipe for “Acorn Donut Holes” combines the light, airy sweetness of summer donuts with the warm, comforting tones of fall. Grab your ingredients and let’s get started!

Ingredients:

• Donut holes

• Melting chocolates

• Fall sprinkles

• Pretzels

Instructions:

1. Pour your fall sprinkles into a small bowl for dipping. Lay wax paper down.

2. In a small microwave-safe bowl, melt the melting chocolates in the microwave, about 15-20 seconds. Carefully watch to ensure they don’t burn.

3. Dip the top of each donut hole into the melted chocolate, covering about halfway down the donut.

4. After dipping, immediately dip the chocolate-covered portion of the donut hole into the bowl of sprinkles, coating it with the fall sprinkles.

5. Insert a pretzel into the top of the “acorn” to create the acorn stem.

6. Carefully place the decorated acorn donut holes on the wax paper to let them cool and allow the chocolate to set.

7. Once the chocolate has hardened, your acorn donut holes are ready to enjoy!

These delightful treats are perfect for fall and make for a fun and tasty dessert or snack. Enjoy!
