There can be no doubt that Al Roker loves a parade.
The weekday “Today” personality is a staple of two such events during the holidays: He’ll again help NBC cover the Tournament of Roses Parade on New Year’s Day, but first comes NBC’s telecast of the Macy’s Thanksgiving Day Parade, marking its 93rd annual edition of filling Manhattan with season-starting joy – shared by many households across the countr y – on Thursday, Nov. 28.
“Every year, it’s different in a sense,” the evergenial Roker reflects, “whether it’s the weather or different balloons or different floats. It’s still one of those things where you come to it and you’re amazed that you’re a part of people’s holiday and people’s tradition. It’s kind of mind-boggling. I grew up with this, and it never even entered my imagination that someday, I would be part of it.
“Over the last several years, more often than not, the weather has been fairly warm for it,” notes Roker “I’ve probably just done it in a sport coat, a muffler, gloves and a hat. Last year, I bundled up only because I was on a motorcycle. Each year, it’s like, ‘How can we kill Al on Thanksgiving Day?’ It would make it a little more memorable.”
As usual, Roker will start his Macy’s Parade duties uptown, then follow the lively and colorful procession that also includes celebrities and
marching bands. He’ll eventually join his “Today” colleagues Savannah Guthrie and Hoda Kotb at their perch in front of Macy’s flagship store in New York’s Herald Square, where – before he gets there – the casts of several Broadway shows will perform numbers from their respective productions.
It’s a bit ironic that Roker has to miss those, since he’s been back on Broadway himself for much of November, reprising his part as diner owner Joe in the musical “Waitress.” Still, he says, “I’ve talked with some of the folks who perform at the parade, and depending on the weather, it can be a little bit of hardship but they don’t mind. They love it. They’re probably performing that scene from their show in front of the biggest audience they’ll ever have. The number of people watching the parade probably rivals, if not beats, the Super Bowl.”
Adding that he’s progressing well after recent hip-replacement surger y, Roker also will have his regular role on NBC’s “Christmas in Rockefeller Center” tree-lighting special the following week, but Thanksgiving is the immediate holiday in his (and countless others’) sights. “It really isn’t work,” he maintains of covering the Macy’s Parade with his “Today” cronies. “You’re just hanging out with a couple of pals, then Santa hits the square and it’s Christmas!”

Thanksgiving dinner, the Rachael Ray way
For any newbie intimidated by the thought of cooking a Thanksgiving turkey, Rachael Ray has this piece of advice.
“Order one,” she says. “I always say order two small birds instead of one large one. You can sleep later and you can platter one whole. And I’m not joking, if you’re nervous about cooking a turkey, don’t. There’s plenty of butchers or specialty stores that can do the whole thing for you. ”
With that said, the host of Food Network’s Saturday morning series “30 Minute Meals” and author of the recently released cookbook/memoir “Rachael Ray 50: Memories and Meals From a Sweet and Savory Life,” does adhere to a strategy, starting with what may seem like heresy to some traditionalists – don’t cook a whole bird.
“If you grew up working in restaurants, you rarely make a whole turkey – at least, I never did,” she says. “I always cook pieces of turkey I also think if you’re going to do a whole bird, it’s very smart to make a spatchcock bird by removing the spine and having it flattened. And that’s pretty hard to do with a large turkey so I would ask your butcher to do that for you. The turkey cooks more evenly and a whole lot faster than it would cook with the spine still in. That’s the point of spatchcocking – even cooking and faster cooking time.”
For her own turkey, Ray does it two ways: ciderbrined pieces and breasts smoked outside and another more traditional bird baked inside with butter, salt and pepper on the skin, white wine in the pan and herbs under the skin. Complementing that is her mother’s apple, celery and onion stuffing – which instead of being cooked in the cavity or

For sides, Ray does the same thing every year: green beans with lots of shallots, butter and broth; brussels sprouts with panchetta or bacon, mashed potatoes, cracked cranberries and roasted butternut and/or acorn squash. For cocktails, she leaves that to her husband, singer/actor John Cusimano
“He may make something with cranberries or something with apple,” Rays says. “Sometimes he does a hot thing, sometimes he does a cold thing. He does a lot of Negronis on Thanksgiving because they go with everything from any country. They are bittersweet, which is appropriate for Thanksgiving.”
Above all, Ray says it’s important to keep in mind that Thanksgiving dinner is a relatively simple meal and therefore nothing to get stressed out about. So breathe.

This third installment in the “Christmas in Evergreen” yuletide movie franchise stars Maggie Lawson (“Psych”) as Katie, a novelist and freelance writer who is assigned to write a magazine piece on the idyllic holiday hamlet of the title. Initially, the place sounds just too good to be true, but as Katie spends time there doing interviews for her article, she falls under the spell of Evergreen and its residents, especially handsome Ben (Paul Greene).
