FIESTA PINWHEELS

This is nacho ordinary taco! Celebrate Cinco de Mayo with this fun twist on a Mexican favorite. Kids will have a blast topping and rolling up these colorful fiesta pinwheels.

INGREDIENTS:

4 ounces cream cheese, softened 1 teaspoon ground cumin ½ teaspoon chili powder ½ teaspoon garlic powder 1 puff pastry sheet, thawed ¾ cup black beans ¼ cup diced tomato 2 green onions, sliced ½ cup shredded cheddar cheese 1 egg beaten, for egg wash SERVES 4

DIRECTIONS:

1. Preheat oven to 375°F and line a baking sheet with parchment paper.

2. In a small mixing bowl, stir together the cream cheese, cumin, chili powder, and garlic powder until smooth.

3. Lightly dust your work surface with flour. Using a rolling pin, roll out the pastry slightly into a rectangular shape.

4. Spread an even layer of cream cheese onto the entire pastry sheet.

5. Sprinkle on the black beans, tomatoes, green onions, and cheddar. Press down on toppings slightly to adhere to the cream cheese.

6. Starting on the long end, tightly roll the pastry into a log.

7. Using a serrated knife, slice log into ½-inch slices. Arrange the pinwheels onto prepared baking sheet 1-inch apart.

8. Brush egg wash onto each pinwheel. Bake until pastry is flaky and golden, about 15-18 minutes. Enjoy!
