Troytown Farm, St. Agnes
As the British Isles give their final glorious gasp, a fitting ritual unfolds at Troytown Farm on St. Agnes — England’s last hurrah before the Atlantic. Here, rose geranium ice cream is savoured against a backdrop of jagged Western Rocks and a sinking sun. Eleven cherished cows provide rich milk, hand-milked by Sam Hicks and his father Tim, who run the family farm and campsite.
Once flower growers, they shifted focus to dairy — producing clotted cream, butter, and over 40 flavours of ice cream, including local rose geranium. As many say, “Troytown farms happiness” — and it’s easy to see why.

Star Castle Hotel Lands Coveted Tuna
Fishing Permit
There’s something irresistible about the Star Castle Hotel on St. Mary’s. Perched in a 16thcentury fortress with sweeping views over the Atlantic, it already promises a stay steeped in history, charm, and superb seafood. But now, the Star Castle has just landed something even rarer than its famed lobster: a licence to fish the mighty Eastern Atlantic Bluefin Tuna.
One of only thirteen permits granted in the UK, this prestigious ICCAT licence allows co-owners Robert and James Francis - a father-son duo with serious big game fishing credentials - to legally catch these legendary fish between July and December. Once absent from UK waters for decades, Bluefin Tuna have made a dramatic return to the Southwest, and the Francis family is making the most of this sea change.
On board their perfectly outfitted vessel, Sterenn Gwynn, the pair use sustainable catch-and-land techniques to bring these ocean giants ashore. The result? Some of the freshest sashimi, tartare, and grilled tuna steaks you’ll ever taste - often served mere hours after the catch in the hotel’s two acclaimed restaurants.
Add in the hotel’s micro-batch vineyard wines (produced in collaboration with Austria’s Willi Opitz) and you’ve got one of Britain’s most deliciously hyperlocal food and wine experiences.
Not to mention, the castle itself – built in 1593 and once a garrison to defend Elizabethan England –this eight-pointed star structure is now a four-star sanctuary with sea views, garden rooms, and a dungeon turned cosy bar.
Whether you’re here for history, fine dining, or the thrill of tasting tuna so fresh it’s practically still glistening, the Star Castle offers a stay that’s as rich in flavour as it is in heritage.

The Island Bakery, St. Martin’s
Running a bakery on St. Martin’s in the Isles of Scilly takes more than baking skill — it demands weatherwatching, supply juggling, and a cool head. Barney McLachlan has led Island Bakery for over a decade, rising at 4:30am to predict demand based on tides and tourist boats. His freshly baked breads, pasties (from a 1945 WI recipe), and inventive guest loaves are island favourites. Despite a
tiny kitchen and unpredictable deliveries, everything is made fresh daily. With queues often out the door, Island Bakery is a must-visit — combining great food with the charm of island life and community spirit.

Since taking over in 2020, Holly Robbins and James Faulconbridge have embraced lowintervention, regenerative practices which involve nurturing grapes without pesticides or herbicides and encouraging the rare flora and fauna that thrive there. Visitors can

Island Fish, Bryher
Three generations of the Pender family fish for crab and lobster off tiny Bryher in the Isles of Scilly. Mike, Mark, and Shamus each head out early to haul pots from Scilly’s clear waters, supplying Island Fish — the family’s shop, deli, and café run by Amanda and Mark. Shellfish is picked fresh daily and sold direct, often for less than mainland prices. From Monday lobster takeaways to paella
Thursdays, their catch features in simple, delicious dishes. Passion, sustainability, and tradition shape every part of their work — a true taste of island life, where the world really is your lobster. islandfish.co.uk
Scilly Cow, St. Martin’s
Many know Churchtown Farm on St. Martin’s for its winter narcissi, posted nationwide as fragrant midwinter cheer. But since 2010, the farm has also raised native Red Ruby Devon cattle, producing grass-fed beef under the Scilly Cow brand. Ben and Zoe Julian say the cows and flowers work symbiotically: the cows graze fields and wild heathland, improving biodiversity, soil, and flower crops.
Slow-grown and grass-fed, the beef is prized for its rich flavour. Though the cattle must currently travel to the mainland for slaughter, plans for a local abattoir are underway — a vital step for Scilly’s growing sustainable farming revival.

Walk past Carron Farm on St. Martin’s and you might spot sugarcane — a rare sight in Britain. Farmer and former seafarer
Andrew Walder hopes to use it in SC Dogs, his distillery crafting rum from scratch using Caribbean molasses and pure island water. His dream: Britain’s first fieldto-bottle rum. Inside his microdistillery, Andrew creates white, golden, and honey-spiced rums
— the latter using Tresco honey and island botanicals. Inspired by a visit to a Scottish distillery while at sea, Andrew’s venture has revived the family farm and allowed him to stay home with his family while keeping his island roots strong.

After the family’s narcissus flower business declined, the Hicks – Grace, Aiden, Mike & Christine - launched the small-batch distillery, producing just 28 bottles per run.

Tresco Honey
“Try this,” says Jilly Halliday, handing over a spoonful of golden honey. It’s velvety, spicy, with a whisper of eucalyptus — a taste of Tresco Abbey Garden, where subtropical plants from 80 countries bloom. Jilly, a passionate beekeeper, calls it “bonkers honey.” With just a few hives, the honey is rare, commanding £15 a jar. But it’s about more than honey — Jilly founded the Scillonian Honey Bee Project to protect
Scilly’s pure, varroa-free bees and promote balance with other pollinators. “Honey’s wonderful,” she says, “but we mustn’t produce it at the expense of nature.” It truly is liquid gold.

Veronica Farm Fudge, Bryher
When the narcissus flower lost its market to European growers, 11-year-old Issy Taylor at Veronica Farm on Bryher found a solution: make fudge. Issy’s parents, Kris and Geoff, who had grown flowers for 15 years, embraced fudgemaking, which has since become a Bryher staple. Using a greatgrandmother’s recipe, Issy started small, funding dance classes, but the business grew.
Kris later expanded and branded the fudge, sourcing local ingredients like Troytown Farm’s dairy and St. Martin’s sea salt. Today, Veronica Farm Fudge remains a beloved Scillonian treat, treasured for its local flavours and family legacy.
