Parmesan-Salami Stuffed Mushrooms
Ingredients
• 24 medium cremini or white mushrooms
• 2 tbsp olive oil
• 2 shallots, finely minced
• 2 cloves garlic, minced
• 3 oz salami, finely diced (choose a flavorful variety like soppressata or genoa)
• ½ cup fresh breadcrumbs (panko works well for crispiness)
• ½ cup Sartori grated Parmesan
• 2 tbsp chopped fresh parsley
• 1 tsp fresh thyme leaves or ½ tsp dried thyme
• 2 tbsp unsalted butter
• Salt & freshly cracked black pepper, to taste
Directions
1. Clean mushrooms with a damp paper towel. Remove stems, chop finely, and set aside. Arrange caps on a parchment-lined baking sheet.
2. Heat olive oil in a skillet over medium heat.
3. Add chopped stems, shallots, and garlic. Cook until softened, ~3–4 minutes.
4. Stir in salami and cook 2 more minutes, letting it crisp slightly.
5. Add breadcrumbs, butter, thyme, salt, and pepper. Stir until breadcrumbs are golden.
6. Remove from heat and stir in Sartori Parmesan and parsley. Taste filling and adjust salt/pepper if needed.
7. Spoon mixture into caps, mounding slightly. Drizzle lightly with olive oil.
8. Bake: Roast at 375°F (190°C) for 18–20 minutes, until caps are tender and tops are golden.
9. Garnish with a dusting of Sartori Parmesan and herbs. Enjoy warm or room temp.
Smashed Potatoes Tart
Ingredients
Potato crust
• 2.2 lbs potatoes
• 3 tbsp flour
• 2 tbsp olive oil
• 1 oz butter
• Salt / Pepper Toppings
• 2 oz grated Parmesan cheese
• 3.5 oz Fromager d’Affinois Le Fromager
• 4-5 oz smoked salmon (5 to 6 slices)
• 1 handful arugula
• Thyme
• Zest of 1 lemon
• 1-2 tbsp balsamic vinegar
• 2 tbsp chives or fresh dill, chopped
Directions
1. Preheat oven to 350°F (180°C).
2. Peel and coarsely grate the potatoes. Place them in a clean kitchen towel and squeeze out as much moisture as possible.
3. In a large bowl, combine the grated potatoes with flour, olive oil, salt, and pepper. Mix well.
4. In a skillet, add the butter and the potato mixture. Press it down firmly with the back of a spoon to form an even disk.
5. Cook for 10 minutes, then carefully flip the potato disk and cook the other side for another 10 minutes.
6. Transfer the potato tart onto a baking sheet. Sprinkle with Parmesan and thyme.
7. Bake for 30 minutes, or until the top is golden and crispy.
8. Remove from the oven and top with : pieces of Fromager d’Affinois Le Fromager, slices of smoked salmon, a handful of arugula, lemon zest, pepper, a drizzle of balsamic vinegar, chopped chives or dill.
Fried Stuffing Balls
Ingredients
For the stuffing balls
• 3 cups leftover stuffing
• ½ cup parmesan cheese, grated
• ½ cup Vermont Creamery Classic Goat Cheese, crumbled
• 1 teaspoon garlic powder
• 1 large egg, slightly beaten
For the breading
• ½ cup all-purpose flour
• 2 eggs slightly beaten
• 1 cup panko breadcrumbs
• ½ teaspoon salt
• Oil for frying
For the garnish
• ½ cup cranberry sauce
• Sage for garnish
• ½ cup Vermont Creamery Classic Goat Cheese, crumbled
Directions
1. Line baking sheet with parchment paper and set aside.
2. In medium bowl, combine stuffing, parmesan, ½ cup goat cheese, garlic powder, and egg until mixture sticks together.
3. Lightly wet hands and spoon about 2 tablespoons of stuffing and roll into ball. Place formed balls onto baking sheet. Repeat until about 24 balls have been formed.
4. Use shallow bowl for flour, another for eggs, and third for panko and salt.
5. Dredge each ball into flour, then roll onto eggs, and then onto breadcrumbs and return back to the baking sheet. Repeat.
6. Heat medium pot with 2-inches of oil on medium-high heat.
7. Once oil temperature reaches 350°F, place 3 balls at a time into hot oil. Cook for 1-2 minutes on each side or until golden brown.
8. Drain balls on paper towel-lined baking sheet.
9. Serve stuffing balls topped with cranberry sauce, remaining goat cheese, and sage.
