The Wisconsin Master Cheesemaker Program is a major reason that Wisconsin makes over 600 different kinds of cheese. Wisconsin is actually the only state in the U.S. with this level of certification. Skilled cheesemakers with over a decade of experience enter this three-year program to perfect making specific varieties of cheese. When the Master Cheesemaker program was created, Wisconsin dairy farmers had no idea the impact that all of that mastery would have. They couldn't foresee the dominance at award shows around the world, or that Wisconsin cheesemakers would go on to make more kinds of cheese than anywhere else on the planet! Ingredients
• 12 slider buns (Hawaiian or potato rolls)
• 1½ lb ground beef (80/20 works best)
• Salt & black pepper
• 8–10 slices Gouda Melkbus Truffles (raw milk)
• 1 small onion, very thinly sliced
• 1 tbsp butter
• Optional: arugula or baby spinach (lightly dressed)
Simple Truffle Butter
• 2 tbsp softened butter
• 1 small clove garlic, finely grated
• Tiny pinch of black pepper
Directions
1. To make the truffle butter mix softened butter, grated garlic, and a pinch of black pepper together. Set aside.
2. Melt 1 tbsp butter in a pan over medium-low heat. Add onions and a pinch of salt; cook until soft and golden, about 15–20 minutes.
3. Heat a skillet or griddle until very hot. Form beef into loose golf-ball-size portions, place in pan, smash thin, season with salt and pepper, and cook 1–2 minutes per side.
4. Top patties with truffle Gouda, lower heat, and cover briefly until melted.
5. Lightly toast slider buns. Spread with truffle butter, add patties, onions, and greens if using. Enjoy!

Ingredients
• 8–10 jalapeños
• ½ lb spicy pork sausage
• 1 cup coarsely grated Parrano cheese
• 2 tbsp cream cheese (just enough to bind)
• ¼ cup toasted breadcrumbs
• Buffalo sauce or hot sauce (to taste)
• Olive oil
• Black pepper
Directions
1. Cook sausage until fully done. Drain well and let it cool slightly.
2. Combine sausage, Parrano, cream cheese, black pepper, and a small splash of buffalo sauce. This should be chunky, not smooth.
3. Cut jalapeños lengthwise and scrape out seeds. Brush lightly with olive oil and roast cut-side up at 425°F for 8–10 minutes to soften them.
4. Spoon the filling into each pepper. Sprinkle the breadcrumbs on top for crunch.
5. Return to oven for 10–12 minutes, until cheese is melted and the topping is golden. Serve hot but let cool slightly.
Ingredients
• 1 package of cream cheese (8 oz)
• 1 cup (or more, depending on your heat preference) of buffalo or hot sauce
• 1 ½ cups of Tillamook Sharp Cheddar Yellow shredded
• 2 cups shredded cooked chicken or 12.5 oz of canned chicken
• 1 jalapeno sliced
Directions
1. Preheat the oven to 350°F (175°C).
2. Place the cream cheese in a medium microwave-safe bowl and microwave for 15–30 seconds, until softened.
3. Add the buffalo (or hot) sauce, chicken, and ½ cup of the Tillamook cheddar cheese to the cream cheese. Mix until fully combined and semi-smooth, leaving small lumps but no large chunks.
4. Transfer the mixture to an oven-safe dish and spread evenly.
5. Bake for 10 minutes.
6. Top with the remaining 1 cup of Tillamook cheddar cheese and spread the sliced jalapeño evenly over the cheese.
7. Bake for another 10 minutes, or until the cheese is mostly melted.
8. Switch the oven to high broil and broil just until the top is lightly browned, watching closely.
9. Let the dip rest for 5–7 minutes before serving. Enjoy!

• 1 Bag of frozen tater tots
• 1/2 Cup cherry tomatoes
• 1/2 Cup green onions
• Hot sauce, for drizzling
• Sour cream, for drizzling
Directions
1. Preheat your oven and cook the tater tots on a baking sheet according to the package instructions until golden and crispy.
2. While the tots are baking, cut The Big Moo Cheese into bite-sized cubes.
3. Once the tots are done, transfer them to a cast iron skillet, layering them with the cheese cubes. Return to the oven and bake for about 10 minutes at 450 °, or until the cheese is crispy on the outside and gooey on the inside.
4. Remove from the oven and top with chopped cherry tomatoes and green onions. Drizzle with sour cream and your favorite hot sauce for an extra kick.
5. Serve immediately and enjoy the cheesy, crispy goodness!
