AMERICAN’S BISCUIT HISTORY

In 1606, three ships named the Susan Constant, Godspeed, and Discovery departed from England carrying 144 men and boys sponsored by The Virginia Company of London. Their intended destination was the New World. Upon arriving at Jamestown, Virginia, in the spring of 1607, they brought ashore various items that served as precursors to modern American biscuits. These included hard-tack biscuits (also known as ships' biscuits), pigs, and cattle. However, the hard-tack biscuits of that time bore little resemblance to the iconic Southern biscuits we know today. They were thin, hard, tasteless, and highly durable. Made from flour, water, and occasionally salt, these biscuits had an almost indefinite

shelf life if kept dry. As a result, they proved to be a practical and long-lasting food source for extended journeys.

The entire timeline, starting with the establishment of the first permanent English colony at Jamestown in 1607 and leading to our struggle for independence, is filled with significant events and remarkable individuals who deserve the utmost respect and admiration. The purpose of this narrative is merely to demonstrate the historical evolution of American biscuits. Once Jamestown was established and the settlers began cultivating crops, they discovered that Virginia's warm climate was ideal for growing various types of wheat that yielded more tender baked goods.

During the 1830s, bakers introduced sodium bicarbonate (baking soda) as an ingredient in the dough to generate bubbles that would be captured within, resulting in lighter bread. It was soon realized that the bread became even lighter when sodium bicarbonate interacted with a mild acid. However, achieving consistent results required an exact ratio of sodium bicarbonate to acid, posing a challenge for home kitchens. In response, biscuit bakers who couldn't obtain sodium bicarbonate began employing a technique called beaten biscuits. The biscuit dough was vigorously beaten with a hard object for approximately twenty to thirty minutes until the dough formed blisters and released trapped air. This method produced softer, albeit flat, biscuits that resembled a tender cracker.

In 1856, chemist Eben Horsford, trained in Germany and associated with Harvard, patented a powder combining sodium bicarbonate and cream of tartar, a mild acid. Horsford and partner George Wilson established Rumsford Chemical Works to produce calcium acid

phosphate, a replacement for imported cream of tartar. The resulting product, Horsford's Bread Preparation, required separate storage of its chemicals to prevent water formation. However, by adding cornstarch to absorb moisture, the chemicals could be stored together as Rumsford Baking Powder. This invention revolutionized baking, including biscuits, eliminating the need for laborious biscuit beating and providing a quick alternative to yeast bread. Baking powder biscuit recipes have been prevalent in American cookbooks for 150 years, offering biscuits with a higher rise. The popularity of flat biscuits shifted towards a preference for light, lofty, and fluffy ones.

The modern American biscuit is now widely beloved nationwide. Until recently, this iconic treat didn't receive much attention beyond the southern United States.
