Rosé Wine Vinegar from Italy
La Vecchia Dispensa has been the acetaia, or balsamic vinegar maker, behind our house balsamic for nearly three decades (find their balsamics at zingermans.com). My guess is, if you’re reading this, you’ve probably got a bottle of their vinegar in your kitchen. Nearly all our
I’m writing today with what counts as breaking news in the ultra slow moving balsamic world: Simone, the 4th generation leading Vecchia, is making the family's first vinegar that’s not balsamic. When he described his decision to me it felt almost existential. I guess that’s the kind of thing you experience when your family has made one kind of vinegar for 120 years.
If you think a company that has done one thing and one thing only for over a century would knock it out of the park when the decide to try something new, you’d be right. I tried the rosé vinegar last summer for the first time. It’s a stunner: soft and sweet in a way that hints of balsamic, but with a gentle tickle of acidity that gives it a more classic vinegar structure. The base is the Lambrusco Grasparossa wine grape, farmed around the village of Castelvetro where Vecchia’s aging house is located. The wine is converted naturally to vinegar, then a bit of cooked grape juice, called "must" in the balsamic world, is added to sweeten it up. (Simone likes to note that he calls it a condiment, not vinegar, due to this step.) The added must also lowers the acidity, giving it a gentle flavor that I think you’ll become very fond of. Last but not least, for me, Simone ages it in stainless steel, which preserves its gorgeous, pale pink color. He bottles it in clear glass to show it off. Frankly, I find it a bit mesmerizing.
I’ll go out on a limb and predict you’ll love this vinegar and find a million ways to plow through a bottle. Salads, naturally, but try a spritz in soups, in stews, deglazing pans. Simone mixes a cup with shallots, olive oil, salt and white pepper for a simple chicken marinade. V-RSE 250 ml bottle $25

Irwin Mango Jam from Taiwan
Irwin mangoes are the most popular mango in Taiwan, renowned for being sweet and fra grant with a soft, creamy texture. For this jam, mangoes grown in coastal southern Taiwan travel to Taipei where jam makers Dolly and Chin hand-peel the fruit and stew them whole or in large pieces. This is small, artisan production of stockpot-sized amounts, cooked on a butane burner rather than in large, industrial vats. The only additions are sugar and lemon juice. With no added pectin, they rely on cooking the mangoes slowly to coax out the natural pectin to gently thicken the jam. But since mango is naturally low in pectin, the resulting jam doesn’t have a gelled texture. Instead, it becomes a spoonable, pulpy, vibrantly floral fruit sauce astonishingly close to eating a fresh mango. A truly indulgent taste of tropical fruit captured in a jar.

Calissons d’Aix-en-Provence Almond Candies
Stroll through the central square in any town in Provence and you’re sure to pass a candy shop or two. Step inside, and you can’t help but notice the calissons. This local specialty is a candy made from almond flour and melon, molded into a rounded diamond shape. With a texture like chewy marzipan and a flavor that’s distinctly fruity and notably almond-y but not too sweet, they’re a real treat. We’ve searched for years to find calissons we love, and we finally found them from Maison Léonard Parli, where they’ve been making these traditional candies in the town of Aix-en-Provence since 1874. They use granite millstones to grind the almonds with a mix of candied melon and orange, preserv ing all the flavor while creating a satisfyingly toothsome texture. Pineapple Soy Sauce from Taiwan
Yu Ding Xing in Xi Luo, Taiwan, makes traditional Taiwanese soy sauces. For this one, ripe local pineapple is added to the soybeans and salt, then set to ferment for six months in terracotta vats in the sun. The fermentation breaks down the sugars in the fruit so they meld gently into the sauce, giving it a lighter taste and texture without any fruity pineapple flavor. Softly bright and briny, it’s perfect for marinades or for splashing on seafood like scallops or fish.

Full disclosure: the price on these fruit cakes may cause sticker shock. While we think of fruit cake as a cheap, industrial holiday laughing stock, these are another species altogether, crafted by Robert Lambert from rare citrus that he candies himself. Taking a cue from its native England, where fruit cake is eaten for special occasions (including royal weddings) year round, Robert made a special batch of cakes just for us for Mother's Day. A slice cut thin while the cake is cool—I recommend serving it chilled—looks like a stained glass window and is a taste revelation.

Broadbent Breakfast Sausage from Kentucky
Josh Poling and his team make this sausage from Grandma Anna Broadbent’s recipe, who started selling it from the family barn in 1909. Just like Anna did, they mix a batch of fresh heritage breed pork, sage and red pepper and stuff it into cloth bags that are cured by air drying for a week or so. Then it’s smoked over green hickory for 24 hours. Try it for breakfast with eggs and biscuits or in omelettes. It also makes some serious sausage gravy.

Germack is a fourth generation family owned nut, seed and coffee roaster in the historic Eastern Market area of Detroit. They started out in 1924 as the first importer and roaster of pistachio nuts in America. They source from small farms and roast in small batches. Large and lightly salted, these pistachios still in their shell are a favorite at home for Zingerman’s marketer Brad—and especially for his fifteen-yearold daughter, Minnie. Her room is littered with empty bags and shells around the pile of laundry she swears is clean. Since she steals and hoards every bag Brad brings home, he finally started buying bags just for her personal use. Minnie could live the rest of her life eating nothing but these pistachios and she wouldn’t complain once. Imagine that: a teenager that didn’t complain, all thanks to pistachios.

A roasted red pepper and vegetable spread, Lutenitsa is a Balkan staple. This particular version comes from Bulgaria. Sweet, roasty, and not at all spicy, it’s a go-to spread for sandwiches and a helpful addition to add flavor to sauces for pastas and meats. It’s also a favorite finger food for Peter, the one-year-old son of Zingerman’s marketer Val. Ferry Farms Bacon
Ferry Farms is a fourth generation farm in Litchfield, Michigan. The Ferry family sources their heritage breed pigs from a handful of neighbors’ farms, where they’re raised without any hormones or antibiotics. To make the bacon, after a wet cure in a mix of salt and spices, the pork bellies are smoked over hickory wood. The result is a little sweet and a little smoky, but not too much of either.

With a fantastic depth of wheat-y flavor and a superb al dente chew, they become the star of any dish I put them in. The Napoletani shape is like a shell, but with more embellished ridges. Mexican street food is one of my favorite cuisines—tacos especially. My favorite is pastor—a slightly spicy, fruity, sweet sauce served with sliced pork. The flavors are deep, complex, bright, savory, sweet and a few things in between. I can’t create those flavors on my own, so this sauce is a savior. First you cook vegetables or proteins till they’re about done, and then you add the jar of sauce to the pan and let it simmer for ten minutes or longer. Served over a bed of rice or corn tortillas, it’s a homerun and—most importantly—it was fast and easy to make.
