NEWH Rocky Mountain Chapter has awarded a total of $20,000 in scholarships this year This is the second year in a row we are able to award this generous amount and we couldn’t have done it without our community’s immense support
These scholarships are awarded to students pursuing a major and career objective within the Hospitality Industry (interior design, hospitality management, culinary, architecture, etc ) We had a record number of applications this year and are pleased to award to three shining stars of hospitality
We can’t wait to see what your future holds!

BUTTERNUT SQUASH SOUP WITH COCONUT MILK & GINGER
INGREDIENTS
1mediumbutternutsquash(3pounds)
3tablespoonssaffloweroilorotherneutral-flavoredoil Koshersaltandfreshlygroundpepper ¾cupthinlyslicedshallots(3medium)
3clovesgarlic,smashedandpeeled 2tablespoonsmincedginger(froma2-inchpiece) ¾teaspoongroundcoriander
4cupslow-sodiumvegetablebroth ½cupcoconutmilk,plusmoreforserving 1tablespoonfreshlimejuice(from½lime)

COCKTAIL INGREDIENTS
Cinnamon sugar and flaky sea salt, for the rim
2 oz Mezcal or Silver Tequila
½ oz. Orange Liqueur (Cointreau)
4 oz. Apple Cider
Juice from ½ lime
1-2 tsp. maple syrup
Apple slices & cinnamon sticks, for serving
