Passionate about showcasing the bounty of the Salish Sea, Evan focuses on thoughtfully sourced, hyper-local ingredients. His menus highlight regional seafood such as salmon, Dungeness crab, halibut, and shellfish—often sourced directly from local fisheries or personally caught through his pursuits as an avid fisherman.

Splitting his time between winters in the North Cascades and summers in the San Juan Islands, Evan has developed a distinctive style that blends refined culinary techniques with rustic, approachable elements. WELCOME ABOARD: FRESH COASTAL BEGINNINGS

The journey begins with a relaxed morning spread of seasonal fruits, freshly baked pastries, and creamy yogurt layered with granola and honey—light, nourishing, and welcoming.

Lunch transitions into a more comforting introduction, featuring a rich crab mac and cheese finished with a crisp breadcrumb crust, balanced by a bright arugula salad dressed in lemon vinaigrette.

As evening settles, the menu turns to the flavors of the Pacific Northwest. Delicate Dungeness crab cakes are paired with a citrus-kissed aioli, followed by simply grilled sockeye salmon finished with a silky herb beurre blanc. Charred zucchini and a nutty wild rice pilaf complete a clean, coastal first dinner, setting the tone for the week ahead.
