His menus highlight regional seafood such as salmon, Dungeness crab, halibut, and shellfish—often sourced directly from local fisheries or personally caught through his pursuits as an avid fisherman.
Splitting his time between winters in the North Cascades and summers in the San Juan Islands, Evan has developed a distinctive style that blends refined culinary techniques with rustic, approachable elements.
