PUBLISHER’S CORNER MIAMI BEACH PRIDE & MIAMI SPICE DINING Celebrating Pride in Miami Beach always fills my heart with happiness. I love seeing so many members of our LGBTQ community from all walks of life come together to celebrate who we are and express ourselves freely. I am so happy that Miami Beach Pride will once again be taking place this year. Given the long struggle everyone has endured due to the COVID-19 pandemic, it will be nice to gather with old friends and meet new friends at Pride. Miami Beach Pride 2021 will take place September 10-19 with ‘One Love’ celebrating ‘Unity, Inclusivity and Equality.’ International music superstar Paulina Rubio will be the headliner of Pride on Saturday, September 18. Organizers have planned the festival, parade, and several events and parties, including some brand-new ones added to this year’s festivities. Our URGE friends are also having their Pride party in the former Mansion on South Beach Saturday night until 6 a.m Sunday, featuring DJs Paulo and Joe Gauthreaux. For your information, the team at Miami Beach Pride is implementing health safety protocols to protect all Pride attendees from COVID. For this Miami Beach Pride special issue, we bring you a cover story that previews what you should expect this year and what Pride means for Executive Director Rich Walczak, and three other people involved in official Pride events, Tracy Young, Jake Resnicow and TonYYnot. I also strongly encourage you to visit miamibeachpride.com for the latest information about all official Miami Beach Pride 2021 events and parties, and to purchase your tickets and passes to everything you would like to attend. Check out our Miami Beach Pride cover story! Something else that I love is dining on delicious dishes created by some of Miami’s best chefs. Therefore, every year I preview the Miami Spice dining program and visit some participating restaurants for dinner and lunch. This special issue also features our Miami Spice dining program annual preview, for which I dined at five of Miami's best restaurants. During Miami Spice, you can savor three-course dining experiences with an appetizer, entrée and dessert at discounted prices in our city’s best restaurants until September 30. Some eateries also offer special discounts on select wines and specialty cocktails. Take advantage of this yearly special promotion if you like dining out. See you at Pride! Cheers,

MIAMI SPICE DINING BOURBON STEAK

I often dine at Michael Mina’s James Beard Awardwinning modern American steakhouse in the JW Marriott Turnberry Miami Resort & Spa with our executive team from the cellular telecommunications company where I am the chief operating officer. Bourbon is well-known for its organic, hormone-free cuts of Japanese A5 Wagyu beef or American Wagyu and Prime cuts and the freshest seafood available, served in a luxurious dining room with a beautifully displayed 850+ Wine Spectator Award-winning cellar. I had to try their Miami Spice dinner menu. Our dining delicious experience included the following items. Cocktails: Passion Fruit Mule with Tito's vodka, passion fruit, lime, ginger beer and bitters, served in a mule mug; Old Fashion with Highwest Prairie Bourbon. Appetizers: Spicy Beef Lettuce Cups with Thai chili and basil, sweet chili sauce and crunchy rice; The Wedge salad with blue cheese, bacon, egg, tomato, onion and buttermilk ranch. Entrées: A mouth-watering 6 Oz. Filet Mignon with carrot jus and bordelaise sauce; Local Snapper with lemon and fines herbs citronette. Side: Mac & Cheese with black truffle. Desserts: We tasted all four. Strawberry Greek Yogurt Panna Cotta with red berry gelee and strawberry basil sorbet; Nutella Cheesecake with hazelnut ice cream and chocolate crumble; Chocolate Molten Cake with ganache, chocolate streusel and vanilla bean ice cream; Tropical Key Lime Pie with toasted meringue, graham cracker and mango sorbet.

The first time I dined at Chotto Matte I was very impressed by its delectable food and vibrant, chic ambiance. This South Beach restaurant serves Nikkei cuisine, a fusion of delicious Japanese and Peruvian ingredients and techniques, based on locally produced, natural, non-GMO ingredients. Besides the flavorful dishes, you will enjoy their live DJ sets, retractable roof and purple light pouring over the cool bar area. We ate the following food for dinner. Appetizers: Lychee Ceviche Vegan Gluten-Free with leche de tigre, chive oil, sweet potato, Peruvian corn and cilantro; Salmon Tataki with seared salmon, spicy mango salsa, crispy filo and cilantro. Entrées: Asado De Tira Gluten-Free with slow cooked BBQ beef, purple potato puree, teriyaki jus and chives; Ebi Tempura Roll with crispy shrimp and mango unagi salsa. Desserts: Strawberry Garden with sweet crema, white soil, wild strawberry granita and mixed herbs; Chocolate Brownie with mango chili, mango sorbet and mixed berry coulis. Cocktail: Pisco Peach with Caravedo Quebranta pisco, lime, egg white and peach.

As a world class resort, The Setai provides outstanding dining options with excellent service and great entertainment. Jaya, which means victory in Sanskrit, is inspired by historical silk and ancient spice trading routes and features a culinary diversity with regional specialties from Southeast and Northern Asian cultures. The Ocean Grill serves the delicate flavors of southern Europe, classic American dishes, and specialty seafood selections, prepared on a wood-fired grill, with breathtaking views of South Beach’s shoreline. I had an extraordinary dinner in The Setai’s Courtyard of their Miami Spice offerings from both Jaya and The Ocean Grill, sitting by a serene pool, listening to a great DJ play chill-out music and watching a fire dancer perform around the restaurant. We savored the following dishes. Appetizers: Salmon Sashimi with miso glaze, shaved radishes, Ikura, crispy quinoa and fresh herbs; Thai Beef Salad with hanger steak, cucumbers, tomatoes, red onions, cashews and chili lime vinaigrette; Yellowfin Tuna with haricot verts, preserved lemon, shallots, grated egg and herb vinaigrette; Grilled Artichokes with celery root puree, shaved artichokes, artichoke hearts and sundried tomatoes. Entrées: Snapper with grilled papaya and apple slaw and mint chutney; Wok Fried Beef with flank steak, Szechuan sauce, shishito peppers, asparagus, broccolini and bean sprouts; Spiced Cauliflower with turmeric potatoes, masala spices and curry leaves; Tortellini with spinach, sundried tomatoes, white beans, kalamata and basil; Braised Short Ribs with mashed potatoes, roasted baby carrots and pea tendrils. Desserts: Miso Puff cream puff with craquelin and Dulcey blonde ice cream; Raspberry and Vanilla Vacherin with toasted meringue and mixed berries. Cocktail: Fig Old Fashion with fig, macadamia nut, cinnamon infused Tanduay Gold Asian rum, simple syrup and whiskey barrel bitters.

Phuc Yea offers a rendition of Vietnamese cuisine deeply inspired by the flavors of the Mekong, but fused with the personal experiences and cooking styles of chefs Cesar Zapata and Ani Meinhold. The food is distinct, vibrant, bold and layered with an extensive selection of dishes deeply rooted in Vietnamese flavors and ingredients, fused with spicy, bold Cajun richness. Our dining experience included the following dishes. First course: Salmon Roll with smoked salmon, jicama, avocado, herbage, yuzu aioli and lemongrass ponzu dipping sauce; Bay Scallops raw with Szechuan peppercorn, lemongrass, nuoc cham, scallions and rice crackers. Second course: PY Egg Noodles with oyster sauce, lemongrass garlic butter and parmesan cheese. Third course: Duck Confit served with a side of jasmine rice, red curry, mi chay noodles, pickled daikon, pineapple and coconut; Masitas De Puerco served with a side of jasmine rice, 5-spiced roasted pork shoulder, nuoc cham, lemongrass chili, lime, onion, tomato and herbage. Desserts: Classic Coconut Croissant Bread Pudding with coconut rum custard, condensed milk and chocolate chunks; Classic Tiramisu with mascarpone cream, condensed milk, espresso and coffee jellies. Cocktail: Lucky Cheng Manhattan with Old Grand Dad bourbon, black cardamom infused Cocchi Vermouth di Torino, Nux Alpina Walnut Liqueur and house bitters blend.
Toro Toro, at the iconic InterContinental Miami hotel in Downtown, is an excellent steakhouse that offers a twist on the contemporary steakhouse experience by artfully blending Pan-Latin flavors and creative sharing plates. Executive Chef Jean Delgado, under the supervision of Chef Richard Sandoval, the man behind the Toro Toro concept, will satisfy the most sophisticated palate. My dinner included some very flavorful options. Appetizers: Smoked Pork Belly plated with roasted carrot, cornbread and topped with smoke chipotle; Bone Marrow & Short Rib topped with smoked onions, garlic aioli and served with grilled bread. Entrées: 7 Oz. Skirt Steak with roasted boniato potato and shishito salsa; Frito Chicken Thighs served with biscuit a la huancaina – topped with yellow potatoes and Peruvian sauce. Desserts: La Bomba chocolate half sphere served with cream cheese mousse, dulce de leche, strawberry ice cream, fresh berries, cookie crumbles, vanilla and berry sauce (upgrade $20); Chaja Rum Cake peach and dulce de leche cake with crispy merengue; Lychee & Raspberry Granita served with vanilla cremeux. Cocktail: Miami Mule with Absolut Elyx vodka, Pama, lemon, simple syrup and ginger beer. Photo by Rafa Carvajal
