ON THE COVER

This Easter, Hunter Valley Gardens transforms into a world where ancient giants and mythical legends share the same spectacular stage. In 2026, Mega Creatures introduces the brand-new Land of Legends alongside its beloved prehistoric displays — towering dragons atop castle ruins, shimmering unicorns in a meadow of toadstools, and all the roaring animatronic dinosaurs that have made this event a school holiday tradition. Read more on page 14. Image sourced: HVG.

Welcome to the March–April issue of Your Hunter Valley Magazine, where ancient legends meet Easter adventure and the region’s enduring charm is on glorious display.

As summer softens into the golden days of autumn, the Hunter Valley reveals a quieter, more contemplative beauty. The harvest is in, the vines are resting, the days are warm, and the light has a quality that makes every view feel like a postcard. It’s one of our favourite times of year in Wine Country — and this issue captures it beautifully.

Our cover story brings the biggest event of the Easter school holidays to life. Mega Creatures at Hunter Valley Gardens is bigger, bolder and more imaginative than ever, with the brand-new Land of Legends joining the beloved prehistoric displays. Ten-metre-high dragons loom over crumbling castle ruins, unicorns shimmer in a whimsical meadow of toadstools, and the ever-popular animatronic dinosaurs roar as loudly as always. After dark, the Night Safari transforms the Gardens into something truly spellbinding — and across Easter weekend, the charming new Hoppity Hollow activation adds a festive twist for the little ones. It’s a genuinely spectacular day (or night) out. Read more on page 14.

We also celebrate what makes this region’s wines so extraordinary. Our Signature Wines feature dives into the Semillon and Shiraz varieties that earned the Hunter its world-class reputation — and explores the exciting

alternative varieties that are increasingly turning heads. If you’ve ever wondered what makes a wine truly “flagship”, this is a wonderful read. Turn to page 26.

With Easter in the air, it’s the perfect time to celebrate a very sweet milestone. The Hunter Valley Chocolate Company is marking 25 years of handcrafted chocolate magic in Pokolbin. Owner Jo Clarke’s “quiet little retirement business” has grown into a genuine regional icon, turning out eight tonnes of premium couverture chocolate every year. The Easter range is exceptional — and yes, Dubai chocolate has arrived in the Hunter. Read more on page 20.

For the perfect Sunday morning, the Pokolbin Market at Hermitage Road is hard to beat — fresh local produce, Hunter wines poured by the makers, live music, handcrafted treasures and Japanese soufflé pancakes that are, quite frankly, not to be missed. Page 23.

Rounding out this issue, Huntlee Fitness clears up the gym myths that hold people back (page 24); Hunter Valley Gardens Aqua Golf & Putt Putt proves there’s plenty of fun beyond the cellar door (page 19); and the Hunter Valley Gardens Shopping Village offers boutique retail, great food, and leisurely wandering in one beautiful precinct (page 18).

However you choose to spend your time in the Hunter this autumn, we hope this issue inspires you. See you in Wine Country!

v From Fossils to Fairy Tales

Where Dinosaurs and Dragons Share the Garden

WORDS LIANE MORRIS | FEATURES WRITER IMAGES SOURCE HUNTER VALLEY GARDENS

A long time ago, when dinosaurs roamed the earth, the Hunter Valley was a land of volcanoes and untamed wilderness. Every Easter school holidays Hunter Valley Gardens brings that ancient world back to life with its annual Mega Creatures event. Explorers, both young and old, can wander the Gardens, discovering towering dinosaurs, giant insects, and this year, for the first time, mythical dragons, shimmering unicorns, and legendary beasts that step straight out of storybooks.

In 2026, Mega Creatures takes its adventure to a whole new level. Alongside the returning Jurassic favourites, visitors can explore the brand-new Land of Legends, where ten-metre-high dragons guard crumbling castle ruins, unicorns shimmer beneath the trees, and other mythical creatures bring folklore to life. It’s an imaginative expansion that adds fresh excitement for returning families while keeping all the prehistoric roar, wonder and hands-on fun that has made the event a school holiday tradition.

At the heart of the evolution is a dramatically enhanced Land of Legends precinct. Perched above the Sunken Garden Waterfall, majestic dragons now loom atop castle ruins, creating a theatrical centrepiece that feels straight from the pages of a storybook. Nearby, Unicorn Meadow offers a gentler kind of magic, with graceful unicorns surrounded by whimsical toadstools inviting children - and plenty of grown-ups - to pause, sit and soak up the enchantment.

Julie Pettit, Marketing Manager at Hunter Valley Gardens, says the team has worked hard to ensure 2026 delivers a genuine “wow-factor” for returning visitors.

“Mega Creatures has become a signature autumn-time event for the Hunter region,” she says.

“In 2026, we’ve expanded our fantasy zones and creature installations to deliver even more visual impact and immersive storytelling. The combination of large-scale animatronics, themed areas and our Night Safari experience makes it visually breathtaking and highly engaging for visitors of all ages.”

For families who have made Mega Creatures an annual tradition, that sense of renewal is key. Each year the displays are reimagined and reconfigured, and 2026 introduces new themed zones including Dragon

Den, Dragon Floresta, Carnivore Concourse and Herbivore Hectareseach offering its own atmosphere and carefully curated creatures.

Of course, the dinosaurs remain the undeniable stars of the show.

Towering over pathways and lawns, the animatronic giants transport visitors back millions of years. Carnivores and herbivores are thoughtfully grouped, encouraging curious minds to compare claws, teeth and tails while wandering through the garden landscapes. The ever-popular giant insects also return, delighting and horrifying in equal measure. Spiders cling to structures, beetles gleam in the sunshine, and oversized creepy crawlies create perfect selfie moments for brave explorers.

While the animatronics command attention, the atmosphere extends well beyond the displays. Daily from 9am to 4pm (last entry 3pm), the Day Session allows visitors to explore the full breadth of the Gardens, with amusement rides operating from 10am to 3.30pm.

The vintage Venetian Carousel adds a touch of nostalgia, while the Tea Cups deliver dizzying giggles. The Swing Chair lifts riders 11 metres into the air, offering sweeping views across dragons and dinosaurs alike. For those seeking a little more adrenaline, the towering Superslide promises fast-paced fun, and the Ferris Wheel provides a panoramic vantage point over the fantasy-filled landscape.

Beyond the rides and roaming giants, Mega Creatures 2026 invites children to step directly into the adventure.

Young explorers can roll up their sleeves at Dinosaur Diggings, a hands-on fossil experience set near the Brumbies and Frog Ponds. Guided by the resident Mega Creatures Explorer, children dig for real fossils, transforming curiosity into genuine discovery and giving budding palaeontologists a thrill that feels wonderfully authentic.

In the Brumbies and Border Garden, the Bug Hunt Adventure turns the Gardens into a riddle-filled quest. Armed with a stamp sheet collected at entry, families solve clues and collect stamps as they explore - a simple but effective way to encourage wandering eyes and inquisitive minds.

On Saturdays, Magical Unicorn Meetings offer a serene, storybook encounter in the Sunken Garden, where families can meet a graceful unicorn up close and capture a photo to treasure. Nearby during the day session, Fairy Face Painting adds sparkle and colour, transforming children into fantastical creatures.

For those drawn to medieval adventure, Dragon’s Quest brings live-action storytelling into the Formal Garden. Families gather as a brave knight faces a fearsome flight of dragons in a theatrical battle of courage and legend.

Even the smallest details hold surprises. The Daily Creature Egg Hunt challenges visitors to locate a missing oversized egg hidden somewhere in the Gardens - returning it to “Mumma” at Garden Entry for the chance to win a family pass to the Spring School Holidays event.

Potion Play with the Wizard, set within the Amphitheatre, invites children into a bubbling world of colourful brews, smoky mixtures and interactive fantasy fun.

It’s this layering of experiences - visual spectacle, interactive wandering, hands-on activities, entertainments and classic carnivalstyle rides that encourages families to linger. Pettit says planning ahead can make all the difference.

“We always encourage visitors to allow plenty of time,” she explains. “There is so much to see and do, from exploring each themed zone to enjoying the rides and taking photos. Arriving early in your session ensures you can truly immerse yourself in the experience.”

If the daytime experience is enchanting, the after-dark transformation is nothing short of spellbinding.

On select evenings (28–29 March, 3–19 April and 24–26 April), Mega Creatures Night Safari invites guests to return from 5pm to 9.30pm and see the Gardens in an entirely new light. Illuminated pathways lead into a dramatic twilight world where dinosaurs loom more ominously, dragons glow against the night sky, and unicorns shimmer beneath carefully crafted lighting effects.

The scale feels heightened in the dark. Shadows lengthen, sound carries differently, and the atmosphere becomes immersive in a way that’s both thrilling and magical. It’s easy to see why the Night Safari has become a favourite for families with older children, couples looking for a unique date night, and keen photographers chasing striking imagery.

With illuminated creature displays and a rich fantasy ambience, the Night Safari delivers a distinctly different experience from the daytime visit, and many families opt for combination tickets to enjoy both.

And of course, Easter has always been a highlight at Hunter Valley Gardens, but 2026 introduces an entirely new element: Hoppity Hollow.

Running across the Easter long weekend from Friday 3 April to Monday 6 April, this specially designed zone brings a festive twist to the Mega Creatures adventure. Children who pre-purchase a $2 hunt ticket can participate in the Hoppity Hollow Hunt between 9.30am and 3pm, searching for nominated eggs marked with the numbers one, two and three. Once all three are found, they can present them to staff at the end of the trail and claim their Easter chocolate reward.

“We changed the egg hunt this year to ensure that it was a more inclusive, a less hectic and overwhelming experience,” said Petit. “Some children with diverse needs found the experience last year to be too crowded, so we’ve made sure to accommodate that this year. It’s a charming, structured experience that adds an extra layer of excitement.”

The Easter Bunny will also make special guest appearances outside Hoppity Hollow across the long weekend, providing plenty of photo opportunities. Best times are 10.30am, 12.15pm and 1.15pm, but check your program to be sure.

A fun day or night out can make you hungry, and with so many food options available, you’ll be spoilt for choice. The Garden Terrace Café is open from 9.30am to 3.30pm daily serving a seasonal menu, the Hunter Valley Gardens Trailer, open day and night will serve up kids meals, nuggets, chips, burgers and healthy options, you can’t go past the Gelato Bros woodfired pizzas and dessert menus, the German Grill Haus has perennial favourites – kransky, pretzels, and hotdogs, you’ll also find vendors selling slushies and dumplings and loads more - so you won’t go hungry!

Located just one hour from Newcastle and two hours from Sydney, Hunter Valley Gardens continues to position Mega Creatures as both a day trip and an overnight escape. Accommodation packages in

partnership with Mercure Hunter Valley Gardens and Harrigan’s Hunter Valley encourage visitors to extend their stay, supporting the broader tourism economy.

For many families, Mega Creatures has become part of an annual holiday ritual much like Snow Time in the Garden and the Christmas Lights Spectacular later in the year. The scale of the production, spread across 14 hectares of landscaped gardens, ensures there’s always something new to discover.

“Mega Creatures continues to grow each year,” Pettit says. “We see families returning annually, children who first visited as toddlers now bringing younger siblings along. Creating those shared memories in such a visually spectacular environment is incredibly special for us as a team.”

In 2026, Mega Creatures isn’t simply returning - it’s evolving. Expanded zones, new installations, a reimagined Easter activation and

the ever-popular Night Safari ensure that even seasoned visitors will find fresh surprises around every bend.

As the gates open once more and the first delighted gasps echo through the Gardens, one thing is certain: in this corner of the Hunter, legends truly come to life.

SWEET SUCCESS

25 Years of Chocolate Magic in the Hunter Valley

LIANE MORRIS | FEATURES WRITER IMAGES SOURCE HUNTER VALLEY

For more than a quarter of a century, the Hunter Valley Chocolate Company has been proving that the Hunter is about far more than wine. With Easter approaching and shelves brimming with handcrafted creations, there’s never been a better time to rediscover this local icon.

Owner Jo Clarke can still remember when the idea for her business first took hold.

“When I started planning this business back in the late 90s, I had no idea it would grow to this extent,” Jo says.

“It was meant to be a quiet little retirement business.”

Instead, it became a destination.

Back then, Pokolbin was dotted with cellar doors and little else. Jo saw an opportunity to offer visitors something different - something indulgent, family-friendly and universally loved.

“People thought the Hunter Valley was only for wine,” she says. “We proved them wrong. Now every second cellar door is offering chocolates on their counters.”

Decades on, the sweet scent of Belgian couverture chocolate still greets visitors as they step inside. Truffles, pralines, cabinet chocolates and glossy bars line the displays. Fudge is poured, cut and wrapped on site. And the company now works through an extraordinary eight tonnes of chocolate each year - five tonnes of milk, two of dark and one of white.

That volume speaks not just to popularity, but to consistency.

“We’re proud of what we’ve achieved,” Jo says.

“We started with nothing. We wanted to prove something, and we have.”

While tradition underpins the business, innovation keeps it fresh.

“We move with the times, stay current, look at trends,” Jo explains.

In the past six months, the team has expanded, welcoming two new chocolatiers, Dee and Kelly, whose creativity is already making waves.

“They’re turning out beautiful chocolate,” Jo says.

“They’ve created individual bars with soft centre fillings that are just walking off the shelves.”

Among the new flavours are peanut butter and jelly, caramel hazelnut, mango coconut, Turkish delight, Biscoff velvet and tiramisu.

These contemporary creations sit alongside enduring bestsellersrocky road, premium cabinet chocolates and their famous handmade fudge, which remains a must-buy for first-time visitors and loyal regulars alike.

One of the biggest flavour stories of the past year has been the rise of “Dubai chocolate” - and yes, the Hunter Valley Chocolate Company has embraced it.

For those who missed the viral wave, the trend began in late 2023, when a TikTok video featuring a bar from FIX Dessert Chocolatier in Dubai went viral. The bar, filled with pistachio cream, tahini and toasted shredded pastry known as kadayif, became an overnight sensation thanks to its dramatic break-and-reveal moment and lush green filling.

The Hunter Valley Chocolate Company version features toasted kadayif blended with pistachio paste and tahini, enrobed in quality couverture chocolate. The flavour has also found its way into Easter creations this year, including Dubai-filled eggs and mini bunnies.

Easter is obviously one of the busiest and most joyful times of year for the team. This season’s range is expansive: rocky road-filled egg cups, freckled eggs, dark mint eggs, strawberry white chocolate creations, M&M-filled mini bunnies and a collection of Australianathemed chocolate medallions perfect for gifting or sending overseas.

Among the standout offers this year is what Jo describes as exceptional value.

“Our handmade Easter eggs presented in a clear ribboned gift box are just $19.90,” she says.

“They look beautiful, and they’re handcrafted right here.”

In a time when supermarket chocolate prices continue to climb, value is something Jo is particularly conscious of.

“The rising costs of chocolate are beyond our control - just like petrol prices. Couverture prices have risen more than 60 per cent in the past 12 months,” she explains.

Those increases stem largely from difficult growing seasons in parts of Africa, where much of the world’s cocoa is sourced before being processed by European producers.

“We’ve had to slowly increase our prices to accommodate that,” Jo says.

“But we’re not greedy. You can get a high-quality block of chocolate here for $9.50. In Sydney, you’d pay $12.50, and in the supermarket, you might pay $8.50 for something much lower in quality. For an extra dollar, you’re getting vastly superior chocolate.

"Major chocolate companies extract up to 70% of cocoa butter from chocolate mass, replacing it with animal fats, leaving a greasy taste when eating mass-produced chocolate. Cocoa butter provides smoothness, flavour, and that perfect melt-in-your-hand quality."

And quality has always been non-negotiable. The business uses premium European couverture chocolate, Australian fruits and nuts, and pure fruit oils. Production is done in small batches to maintain freshness and flavour integrity.

“We try to provide a full range of chocolate and confectionery, but you can’t please everyone,” Jo says candidly. “What we can do is focus on quality and give people something special.”

Not a chocolate lover? Choose from over 20 flavours of handmade fudge, Italian-style gelato, candies, or visit the café for desserts and their famous chocolate fondue. Everything is available to purchase online, but you can’t go past an onsite visit for complete overindulgence of your senses.

Over the years, the Hunter Valley itself has evolved - and so has its audience.

“The demographics of our visitors have changed dramatically,” Jo says. “People are looking for places where they can hold family occasions. They want a nice time in the country, alternative experiences, and a place where grandparents, parents, and children can all gather, taste, and indulge. It doesn’t have to be all about the wine. We provide enjoyment for everyone.”

Bookings for tastings are available, Easter stock is already on shelves, and as always, early shopping is encouraged to secure favourite items before they disappear.

After more than two decades, Jo still finds satisfaction in watching customers leave with ribboned boxes and bulging bags.

“When I started, I never imagined it would become this successful,” she reflects. “But it’s been wonderful. We’re proud of what we’ve built.”

And as Easter approaches, it’s clear that the Hunter Valley Chocolate Company remains as relevant and irresistible as ever.

Myth 3: Pilates is just stretching

Pilates is often misunderstood as simply slow movement or flexibility work. In truth, it is controlled strength training. Through precise, intentional movements, Pilates builds deep core strength, improves stability, enhances muscular endurance, and supports better posture. It also plays a significant role in injury prevention and rehabilitation.

Busting Top Gym Myths at Huntlee Fitness

When it comes to starting or progressing your fitness journey, misinformation can be one of the biggest barriers. At Huntlee Fitness, we often hear the same myths repeated, and they’re the very things that hold people back from achieving real results.

Let’s set the record straight.

Myth 1: I’ll get bulky if I lift weights

This is one of the most common concerns, particularly for women or beginners stepping into the weights area for the first time. The truth is, building significant muscle mass requires very specific training programs, progressive overload over a long period of time, and carefully structured nutrition to support it. It does not happen accidentally.

Myth 2: If I don’t train for 60–90 minutes, it’s not worth it

In reality, effectiveness matters far more than duration. A wellstructured 30-minute session with clear intention can be incredibly powerful. Focused strength training, interval work, or a targeted Pilates

Significantly Sensational Signature Wines

READ ONLINE

The Hunter Valley stands as Australia's oldest and most distinguished wine region — a place where nearly two centuries of winemaking heritage have shaped a viticultural identity unlike anywhere else in the world. At the heart of that identity are two extraordinary varieties: Semillon and Shiraz.

Hunter Valley Semillon is widely regarded as the region's crowning achievement. Acclaimed British wine critic Jancis Robinson once described it as "Australia's wine gift to the world" — high praise that speaks to a style that remains genuinely unmatched. With the capacity to age gracefully for 20 years or more, Hunter Semillon transforms from a lean, citrus-driven young wine into something deeply complex and honeyed, a journey no other region has managed to replicate. Shiraz, too, carries the Hunter's distinctive fingerprint — mediumbodied, earthy and elegant, with a savoury quality that sets it apart from bolder expressions found elsewhere in Australia.

Of the more than 150 cellar doors that grace the Hunter's scenic wine trails, you'd be hard-pressed to find one without an exceptional Semillon or Shiraz among its premier offerings. Beyond these signature varieties, the region's talented winemakers excel with Cabernet Sauvignon, Merlot, Pinot Noir, Chardonnay and Verdelho — and increasingly, with a spirited range of alternative varieties. Grenache, Tempranillo, Sangiovese, Durif, Nebbiolo, Barbera, Vermentino, Fiano, Pinot Grigio and Viognier are all producing impressive results, a testament to the region's pioneering spirit and versatile soils.

So what exactly makes a wine a "signature" or "flagship"? The definition is wonderfully subjective. No formal industry criteria exist, but flagship wines universally represent exceptional quality — embodying both the grape variety and the region's distinctive character. A winery's flagship might be its most awarded wine, the winemaker's personal favourite, or the bottling that best captures their artistic vision.

This concept resonates globally: Malbec in Argentina, Sangiovese in Tuscany, Pinotage in South Africa, Tempranillo in Spain, Riesling in Clare Valley. These wines serve as brilliant ambassadors, drawing enthusiasts to discover not just a standout variety but everything a region has to offer.

In the Hunter Valley, that conversation always begins with Semillon.

2025 Steven Vineyard Pecorino

Pecorino, isn’t that a cheese?! Yes, it is, and it’s also a native white variety from the Abruzzo region, where the De Iuliis family immigrated from. De Iuliis Wines were the first in the Hunter to plant Pecorino in 2020. Excellent growing conditions in 2025 led to the production of this outstanding wine.

TASTING The grapes were handpicked and basketpressed. The juice was transferred to neutral French oak barriques to increase texture and palate weight. The use of indigenous yeast adds complexity. Aged in barrel for 9 months on full lees was used to increase palate texture, add creaminess, and soften the naturally high acidity.

FOOD MATCH Pecorino + Italian food = chef’s kiss.
