Westchester mom goes from grazing boards to community gatherings to build Starcuterie

When Betty Evans-Beck wheels her signature charcuterie cart into a community event, it’s hard not to stop and grab a nibble. Overflowing with artisan cheeses, cured meats, fresh fruit, homemade specialties and colorful seasonal treats, the cart has quickly become a favorite at Westchester gatherings. But behind every carefully arranged grazing board and every bite-sized appetizer is a story of family, resilience and finding a way to build a career that fits around the people who matter most. Just one year after launching Starcuterie, Betty has become a familiar face throughout Westchester. Residents have sampled her creations at community events, school functions and neighborhood celebrations, while her custom charcuterie boards and grazing tables have become increasingly popular for birthdays, parties and special occasions. For Betty, however, the business was never simply about food. It was about creating a career that allowed her to continue caring for her family while reconnecting with a profession she has loved for decades. “I’ve always worked in hospitality,” she says. Her résumé includes nearly every side of the restaurant industry. She’s worked both front-of-house and back-of-house, managed San Francisco’s famed Harry’s Bar and the Starlight Room, and later served as general manager of Real Food Page 4 • August 2026
Daily in Santa Monica before focusing on having a family. Life instantly got better when she and her husband, Justin, welcomed their two sons, Evan and Brewer. Brewer, who is on the autism spectrum and attends WISH Community School, requires significant therapy and support. For years, that became her full-time job. Now, with Brewer entering sixth grade and becoming more independent, she finally felt there was room to pursue something of her own again. “I needed something that was very flexible,” Betty says. “I figured going into business for myself would be easier because I could set my own schedule.” Charcuterie turned out to be the perfect fit. Unlike opening a restaurant, it required relatively little kitchen space while allowing her to draw on years of hospitality experience and her lifelong love of entertaining. Although charcuterie is traditionally associated with meats and cheeses, Betty sees it as something much broader. “I like to consider it more of a grazing situation. Not just strictly meat and cheese,” she says. That philosophy has become Starcuterie’s signature style. Alongside artisan cheeses and cured meats, guests might discover homemade honey goat cheese rolled in pistachios and dried cherries, offering a sweet, tangy crunch in every bite. Another favorite is her bacon-wrapped apricots with fresh sage that has quickly become
one of her most requested items. “I tried one years ago and thought, ‘I’m going to remember this,’” she says. “People really love them.” Her creativity extends beyond traditional grazing boards. One of the biggest additions to Starcuterie over the past year has been her custom-built charcuterie cart. Instead of serving guests from a static buffet, the cart allows Betty to prepare individual portions tailored to each person’s tastes. Whether someone prefers extra fruit, additional cheese or a vegetarian selection, every serving can be assembled to order. The cart has also become a memorable centerpiece at events, giving guests a more personal and interactive experience than a traditional catering table. Business has grown primarily through word of mouth, a testament to the closeknit community Betty has embraced since moving to Westchester 10 years ago. Originally born in Korea, Betty spent much of her childhood in Northern California before following her future husband, Justin, to Southern California. After living in Newport Beach and Brentwood, the couple decided Westchester was the ideal place to raise their family. Today, she’s deeply involved in the neighborhood. As co-president of the Parent Teacher Organization at Visitation School, she helps organize school events throughout the year. These experiences gave her the
confidence to launch Starcuterie. “You start doing events and think, ‘I can really do this,’” she says. She especially enjoys participating in the monthly Second Saturday Stroll in the Westchester Triangle, where streets fill with local vendors, musicians and families. Sponsored by the Drollinger Family Foundation, the event gives Betty a chance to create seasonal tasting experiences for visitors, from crostini and specialty dips to caramel apple bars in the fall. “I’ve always been so envious of places like El Segundo where everyone gathers for community events,” she says. “Second Saturday Stroll gives us a flavor of that.” Later this year, residents will also be able to find her charcuterie cart inside the beer and wine garden at WAM (Westchester Arts & Music Block Party), where she’ll be serving snacks to concert-goers. “What I love about Westchester is that it has a small-town feel in a big city,” she says. Nothing captures that spirit better, she believes, than the annual Fourth of July Parade. “It’s one of our favorite things. We go every year.” Both of her sons have marched in the parade with their schools, Evan with Visitation and Brewer with WISH, making it one of the family’s most treasured traditions. THE BRAVERY OF BEING PRESENT Perla Hollow knows the importance of showing up, and is using her voice to lift others who feel unseen. By Sylvia Wilson

Opening her own practice was her greatest professional leap. “I remember being so anxious and doubting whether I would be successful,” she said. But she showed up anyway, painting her office with her husband and brother, building her website with her cousin, hanging her daughter’s artwork on the wall as a reminder of why she does this work. Now, she shows up for her clients with the same devotion she learned as a child. “The best part of my job is I get to see people grow and change,” she said. “People trust me to help them feel better, and that is such an awesome honor.”
Showing up for her community Perla’s impact extends far beyond her office walls. She is a founder and committee member of the LA CAMFT Mentorship Program, where she helps builds pathways she never had herself. “I am passionate about providing professional mentorship for others… especially for therapists of color,” she says. She also leads a support group for Middle Eastern and North African therapists, a space where identity is not just acknowledged, but celebrated. A place where shared heritage becomes a source of community and strength rather than something to hide. (continued on page 49)

National Night Out. Playa Vista’s Concert Park was packed with community members during National Night Out on Tuesday, August 4. Hosted by the LAPD Pacific Division, the event brings neighbors and protective agencies together to build relationships and strengthen communication. While officers met with attendees, guests visited a variety of booths set up by local businesses and organizations, including the Playa Venice Sunrise Rotary serving pasta, LMU handing out swag, and local real estate teams passing out prizes. That same sense of community has helped fuel the success of Starcuterie. “I’ve been very busy just in my local Westchester neighborhood,” she says. “I don’t have to go very far, which is great.” Although the business has only been operating for a year, Betty has no shortage of ideas for the future. Inspired by her Korean heritage, Betty is already imagining new ways to use her mobile serving cart. One idea she’s especially excited about is a customizable ramen bar featuring premium Korean ramen paired with toppings like roasted corn, shredded beef, shrimp and fresh
herbs. She envisions it as the perfect latenight snack or interactive wedding party experience. “I think that would be really fun,” she says. After spending years putting her family’s needs first, she’s rediscovering the joy of building something that’s uniquely her own. Her leadership is quiet, consistent, and deeply felt. She doesn’t seek recognition; she seeks connection. Showing up for the women who showed up for her When asked what inspires her, Perla speaks of women, the ones who carry families, communities, and futures on their backs. “Women truly are the pillars of our communities,” she said. “They gather others, volunteer, and propel society in positive and progressive ways.” Her mother, especially, shaped her. A single parent who learned English through adult education classes and built a career in the medical field, she taught Perla that education is a woman’s “ticket to freedom and opportunities.” Her mother showed up, even when life was difficult. Perla learned to do the same. Showing up for her family Perla and her husband have been together nearly 27 years and married for 21. Their partnership is built on mutual support, shared ambition, and the belief that showing up for each other is the foundation of a good life. Their daughter, now 11, is a budding entrepreneur, athlete, reader, and photographer. She runs a lemonade stand each September and invests her earnings. She plays softball and basketball. She reads voraciously. She photographs nature with the curiosity of someone who sees beauty everywhere. “She is a true light in this world,” Perla said. Family time often means movies, dinners, or trips to their home in Lake Tahoe, where they hike, ski, and take their dog Biscuit swimming in the lake. The quiet of the lake with still mornings, soft wind, and the hush of pine trees,
has become one of Perla’s favorite places to exhale. Showing up for herself Outside of work and family, Perla nurtures her own spirit through poetry, art, music, hiking, and theater. “In my free time, I write poetry as a way to express myself,” she says. She hikes to find quiet. She attends live theater to reconnect with the performing arts that shaped her identity in high school. These are not hobbies; they are acts of self presence. They are how she shows up for herself so she can continue showing up for everyone else. Full circle: a life defined by presence From a 3-year-old immigrant arriving in Westchester with her family’s hopes packed into suitcases, to a respected therapist, mentor, mother, and community builder, Perla Hollow’s life is a masterclass in showing up. And in a time when this edition celebrates “The Best,” Perla embodies that title in its truest form. Not through accolades or attention, but through the simple bravery of being present, with a spirit that never stops giving. Community Plan Update Enters EIR Phase The Westchester–Playa Community Plan Update is currently in the Environmental Impact Report (EIR) phase, one of the final major steps before adoption. The City is preparing the Draft Environmental Impact Report (Draft EIR), which is currently expected to be released in 2027 for public review and comment. The Draft EIR will evaluate the potential environmental impacts of the proposed land use and zoning changes.
After the public comment period, City Planning will prepare responses to comments and finalize the EIR before the Community Plan advances to the Planning Commission, City Council, and ultimately the Mayor for adoption. Throughout this process, the proposed land use maps and zoning remain subject to revision based on environmental analysis, public input, and policy direction.
Community members are encouraged to stay engaged throughout the process by attending the Neighborhood Council’s Community Plan Update (CPU) Committee meetings, held on the fourth Monday of each month. Public participation remains an important part of shaping the future of Westchester and Playa.

Mah Jongg (cont’d) (continued from page 50) In an era dominated by smartphones and social media, Mah Jongg requires four people to sit around a table, talk, laugh, think strategically and spend uninterrupted time together. A game for every age Elizabeth sees even greater possibilities for the future. She hopes to expand beyond lessons in her living room into schools, community organizations and corporate settings. “I think it would be a great afterschool program,” she says. “Perfect for teenagers.” She also recently began exploring opportunities to use the game as a corporate strategy-building exercise. Because every player must constantly analyze changing information while adapting to the moves of others, she believes Mah Jongg naturally develops planning, critical thinking and decision-making skills. More than just a hobby Perhaps the most meaningful moment of Elizabeth’s teaching career came recently when she worked with a woman recovering from a stroke. The student worried that cognitive challenges might prevent her from learning. So Elizabeth adjusted the pace. “I had to repeat some stuff, but I didn’t mind repeating it,” she says. “It worked beautifully; she did great!” After completing the course, the
woman sent a heartfelt message thanking her for the patience and encouragement that made success possible. “I’m just so touched that it was such a positive experience for her,” Elizabeth says. A local community resource For Westchester residents interested in giving the game a try, there are several ways to get started. Elizabeth teaches small-group classes through her cottage business Mah Jongg Made EZ, making the game approachable for complete beginners. She also encourages graduates to continue practicing at the Westchester Senior Center, where Mah Jongg players gather on Thursdays from 2 to 4 p.m., creating another welcoming place for newcomers to sharpen their skills and meet fellow players. Looking back, Elizabeth never imagined that a simple online solitaire game would lead to a second career. What began as a way to keep her own mind active has evolved into something much bigger, a growing network of neighbors connected by colorful tiles, friendly competition and meaningful conversation. “I’ve met so many wonderful people whose path I wouldn’t have ordinarily crossed,” she says. For a game that has been around for generations, this may be Mah Jongg’s greatest move of all.

I recommend the much simpler and less invasive approach: strength-train a couple times per week, eat protein with every meal, and eat an overall healthy diet. These tips can be a huge step to building more healthsustaining muscle. Protein needs increase as physical activity increases, so target numbers can vary. Assuming you are physically active, multiply your weight in pounds times 0.7 as a daily protein intake goal. If you weigh 150 pounds, that is around 105 grams of protein per day. Do your best to eat that much protein or as close as you are able daily. This relatively small commitment can pay great health dividends over time. Building muscle is one of the best things we can do to maintain a healthy weight, which reduces the risk of many chronic diseases. 5. Muscle contributes to a much healthier aging experience. When we were kids, we climbed trees, rode bikes and jumped rope. These physically challenging activities fueled our muscles and kept them strong. Aging tends to bring less activity, which contributes to loss of muscle and often body fat increases. This process tends to be a vicious cycle as physical activity often becomes less enjoyable and even painful as we lose muscle. Today, we thankfully live in an era where it has been shown that moderate lifestyle changes can increase healthy muscle retention. This increase can dramatically improve our aging experience. People can now enjoy mid-life and beyond more than ever via travel, family time and a more dynamic lifestyle. While committing to maintaining muscle is not the aging cure-all, it is a foundational strategy that gives us more health autonomy than past generations have experienced. Is couples therapy worth the risk?
My wife and I have been together for 10 years. We love each other and get along, but I wish we were closer. I’ve heard stories of couples therapy making things worse, so part of me wants to try it, but part of me wonders if it’s worth the risk. Dear reader, I wish I could promise that couples therapy always brings couples closer. I can’t. My honest answer is it might. I’ve seen couples become closer than ever, and I’ve seen couples decide to separate. Often though, therapy doesn’t create problems. It brings them into the open where they can be understood and addressed. If you do decide to try couples therapy, here are some points to consider: What do you think keeps you from being closer? I wonder if your tentativeness reflects a broader pattern of conflict avoidance in your relationship. Over time, avoiding conflict can lead to distance. If so, what makes conflict feel risky? If there are specific barriers, either within yourselves or between you, couples therapy can help you identify them and find ways to work through them instead of avoiding them. Are you, your wife and the therapist ready and able to do the work? People often come to therapy hoping the therapist will convince their partner to change. Yes, a partner can grow, but that stance alone will limit therapy’s potential. Ask yourself honestly whether you’re as willing to grow as you hope your partner will be. Another challenge is when one partner feels dragged into therapy by a more eager partner. While some discrepancy in motivation can exist, if one partner is hardly invested in the process, it might be better to consider a different starting point, such as blending individual and couples therapy. Last of all, while I don’t advise expecting magic from the therapist without doing your part, do seek a caring and competent therapist. I’ve found the outcome depends on how all three participate in the process. What helps couples therapy work? Relational Curiosity: View couples therapy as a classroom, perhaps a learning crucible, that can propel growth and change. When curiosity and compassion for yourself and your partner can sit alongside hurt, anger, and disappointment, they help move the work along. A commitment to doing well for the relationship: Couples therapy is

effective when both partners care deeply about the relationship and want to do right by it. That commitment allows tension and disconnect to be treated with respect and sensitivity. It also provides motivation to practice new ways of relating outside the therapy room. A skilled couples therapist: Experience matters. Find a therapist with advanced post-graduate training and with couples therapy as a main rather than peripheral part of their practice. Also, find a therapist who is not only adept at listening, but also leading, one who can interrupt unhelpful cycles as they unfold and guide you to more helpful relational patterns. Remember that couples therapy isn’t just a place to express emotions. It involves movement between thinking, feeling and sensing. It’s a place where we can become more aware of our internal worlds and the way we perceive one another. It’s an opportunity to understand our partner more deeply, learn how to bring out the best in them, and become more intentional about the relationship being created. While we cannot predict entirely how couples therapy will go, those points may increase the chances that it goes well. Lastly, you said you wish you were closer. What do you think, feel and imagine closeness and love to be?
