Today we’re going to whip up a hearty White Bean Soup in a flash then elevate the humble dish with the vibrant flavors of this Provencal herb sauce. This makes a lovely lunch or light supper served with crusty bread and a green salad.

Provencal herb sauce is

a vibrant and flavorful condiment with similarities to Italian pesto. It’s a fragrant blend of fresh basil, garlic, tomato, red wine vinegar and olive oil, bursting with flavor and flair. This sauce brings a unique twist to this soup, adding a touch of Provencal charm to your culinary adventure.

The end of summer brings an abundance of herbs to our gardens that need to be used quickly. One easy way to preserve them is to make herb sauces like chimichurri, pesto or this Provencal herb sauce. They freeze beautifully, and they’re nutrition-packed condiments. Herb sauces are rich in flavonoids with antioxidant properties and vitamin K.

Simple white bean soup

Yield: 4 (1 1/2 cup)

Total Time: 20 minutes

1/4 cup extra virgin olive oil

2 teaspoons garlic, chopped

3 (14.5-ounce) cans

Great Northern or other white bean (5 cups)

1 (14.5-ounce) can vegetable or chicken broth (1 1/2 cups)

Kosher salt & fresh ground pepper to taste

4 thick slices of crusty bread, grilled or toasted Provencal herb sauce (recipe follows)

In a saucepan on medium heat, warm the olive oil. Add garlic and stir until fragrant. Add beans and broth. Bring to a boil then simmer for 5 minutes. Now, you want to puree some of the beans to add creaminess to the soup. Puree about half of

the beans with a food processor, blender or immersion blender, or smoosh beans on the side of the pot with a fork. It all works! Return the puree to the soup and stir to combine.

Serve the soup topped with lots of pepper, a drizzle of sauce and a big chunk of toasted bread.

Provencal herb sauce

Yield: 3/4 cup

Total Time: 10 minutes

1/4 cup extra virgin olive oil

1 tablespoon garlic, crushed

1 teaspoon red wine

vinegar

2 cups basil leaves, torn into pieces

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground pepper

1/4 cup tomato, diced

Pulse oil, garlic, vinegar and basil in a small food processor to a loose paste. Add salt and pepper. Stir in the tomatoes and refrigerate until ready to serve.

24 corn tortillas

1 1/4 pounds cooked, shredded chicken breast (about 3 packed cups)

Heat the tortillas:

Wrap the tortillas in a clean dish towel and place them in the microwave to steam, making them pliable. Use medium to high heat for increments of 30 seconds until they are just warmed through. Do not overheat, or they will be too fragile to use.

Fill the tortillas:

Place 2 dinner plates on the counter. One is a work surface, and the other is for the rolled taquitos.

5 to 6 hot dogs

For serving: Mustard Ketchup

Make the honey coating: Wipe out the pot and set it back on the stove. Add the honey and butter to the pot and heat on low. Stir with a flexible spatula and simmer for 1 minute.

Coat the popcorn: Use the parchment as a sling to pour the popcorn into the pot. Return the parchment paper to the baking sheet. Using a flexible spatula, start at the bottom of the pot and scoop up use a folding motion to coat the popcorn with the honey mixture. Scrape the sides and continue stirring from the bottom to the top until the popcorn is evenly coated and no liquid is pooled at the bottom. The popcorn will be a glossy golden-yellow color. Dump the coated popcorn back onto the parchment-lined baking sheet and spread it out evenly with a flexible spatula. Sprinkle with 1/2 teaspoon of kosher salt, if using.

Bake:

Bake until the popcorn has deepened to a caramel color and it feels dry and firm, about 45 minutes, stirring every 15 minutes. The popcorn will end up chewy and soft if not baked long enough. You can tell the popcorn is done when you can smell the honey, the popcorn has darkened slightly, and it feels dry and firm to the touch. It becomes even crispier as it cools. Let the popcorn cool for 15 minutes, then break the popcorn into bite-sized chunks or individual kernels. Once completely cool, about 30 minutes, serve or store at room temperature in an airtight container for up to 5 days.

Fry the taquitos:

Add 1/2 inch of canola oil to a 12-inch cast iron frying pan over medium heat. Use an instant-read thermometer to check the temperature—it should be 350°F. Line a baking sheet or platter with paper towels.

Once the oil is hot, place 5 to 6 taquitos seam-side down in the frying pan with tongs so you don’t burn your fingers. Make sure not to crowd the pan or the taquitos will not get golden brown.

Once you see the edges turning golden, about 3 to 4 minutes per side, turn over with tongs and fry until the other side is cooked to the same color. Remove from the pan with tongs and place on the baking sheet or platter to drain. Add more oil to bring it back up to 1/2 inch up the pan and let the oil come to temperature in between batches, if needed. Repeat with the remaining taquitos.

Serve with toppings: Remove the toothpicks. Add toppings like chopped onion, cilantro, lettuce, crema, crumbled queso fresco, and salsa. Serve hot.

Extra taquitos (without toppings) can be stored in a zip-top freezer bag in the freezer for up to 4 months or in an airtight container in the fridge for 2 days.

While you can eat them cold out of the fridge—and I have—they reheat nicely on a cookie sheet in the oven at 400°F for about 5 minutes or until you can see the surface sizzle. If pulling them from the freezer, reduce the temperature to 350°F and increase the time to 10 to 15 minutes.

Mix the wet ingredients: In another bowl add the melted butter, eggs, and buttermilk and whisk until smooth.

the wet and dry ingredients: Pour the buttermilk mixture into the dry ingredients and stir well, making sure there are no lumps or dry pockets of flour. Cut the hot dogs: Cut each hot dog into 1-inch pieces. You’ll want 20 pieces total. Fill the muffin tray and add the hot dogs:

a tablespoon measure, distribute the cornbread batter into the greased muffin tray.

Bake: Bake for 8-10 minutes until the muffins have risen, become a golden color, and a toothpick inserted into the cornbread portion of the muffin comes out clean.

Serve: Remove the muffins from the pan with the help of a small offset spatula.

A: After one season of exclusively airing on Disney+, “Dancing with the Stars” is returning home to ABC. This is likely in part due to new episodes of scripted shows being postponed until 2024 due to the writers’ and actors’ strikes. It will still be available to stream on Disney+ and Hulu, but a return to network television is a welcome one.

Julianne Hough, a former pro dancer on the show, is also returning, but in the form of cohost, alongside former “DWTS” champion Alfonso Ribeiro. She replaces Tyra Banks, who has left the show after three years. Sadly, longtime judge Len Goodman passed away earlier this year after battling cancer. This year’s judging panel consists of familiar faces: Derek Hough, Carrie Ann Inaba and Bruno Tonioli.

This fall’s contestants feature some big names from reality TV -- Charity Lawson of “The Bachelorette,” Ariana Madix of “Vanderpump Rules,”

A: Both of these beloved talk show hosts and their popular syndicated daytime shows are on hiatus until the writers’ strike ends. Initially, “The Drew Barrymore Show” was slated to return this fall despite the strike, with Barrymore noting that her unemployed crew needed to get back to work. But after protests from

picketers and the negative stories that ran in the press, Barrymore recently had a change of heart and agreed to wait until the strike is resolved.

“The Kelly Clarkson Show” hasn’t resumed filming in front of a live audience either. But when it does, it’ll be relocating from Los Angeles to New York -- once the strike ends.

“Priscilla’s revenge” is the new nickname for Sofia Coppola’s biopic of Priscilla Presley, as it is somewhat of a rebuttal to Baz Lurhmann’s “Elvis” ($288.7 million gross and eight Oscar nominations, including one for its Elvis, Austin Butler). The Venice Film Festival audience afforded a tremendous ovation for “Priscilla.” In a Venice news conference, Priscilla even took the mic to say, “It’s very difficult to sit and watch a film about you and about your life and about your love. I think Sofia did an amazing job.”

She also expanded on how “Priscilla” tells her side of the story. “It was very difficult for my parents to understand that Elvis would be so interested in me and why. And I really do think [it was] because I was more of a listener,” she explained.

“Elvis would pour his heart out to me in every way in Germany: his fears, his hopes, the loss of his mother, which he never got over. That was really our connection.
