It is the largest amphitheater ever built! They say that if you listen carefully, you can still hear the roar of the crowd in the wind. Gaze at the Forum and imagine walking among the ancient Romans as they bustle through the crowded streets going about their busy days. Take the opportunity to see Il Vittoriano, one of the most imposing and impressive buildings, not only in Rome, but anywhere in the world! Its layered construction earned it the nickname “The Wedding Cake.” Built to honor Victor Emmanuel II, the first king of a unified Italy, stunning panoramic views can be seen from the top. Experience the great domed Pantheon with its oculus window that funnels in the sun and links the temple to Heaven. Throw a coin into the Trevi Fountain to ensure your return to Rome!

It took 120 years to build St. Peter’s Basilica, the largest church in the world! Its gold coffered ceilings reach 150 feet high and every inch of the Basilica is awe-inspiring. The Basilica is an architectural marvel that displays astounding works of art, including Michelangelo’s La Pieta. Just go — it is truly a place that must be seen to be believed! The Vatican Museum has 54 galleries displaying masterpieces from Caravaggio, Giotto, Leonardo da Vinci, Raphael and, of course, Michelangelo’s famous Sistine Chapel. If you can’t get enough of Baroque paintings and so-realistic-it-might-move marble sculptures by Bernini, Caravaggio, Raphael and others, visit Borghese Gallery. A leisurely stroll through the surrounding tranquil Villa Borghese Gardens is also sure to impress. Made famous by the movie and fashion industries, the Spanish Steps are an energetic area with nice photo and people-watching opportunities. The steps link Piazza de Spagna and its beautiful fountain to the Trinità dei Monti church.

Aglio e Olio Recipe (Serves 4–6)

Time: 20 minutes

Ingredients:

1-pound (450 g) dry bucatini or spaghetti

1 small slice butter

1/4 cup (60 ml) (good quality olive oil (possibly more, if needed)

8 cloves garlic (thinly sliced)

1/2 cup (120 ml) or more salted pasta water

1/4 cup (60 ml) fresh Italian parsley (chopped)

Optional garnishes: crushed red pepper flakes, freshly shaved Parmigiano Reggiano

Instructions:

Cook the pasta:

Boil the pasta in generously salted* water until al dente per the box instructions. (Al dente means “to the tooth” in Italian. This is the ideal firmness for cooked pasta.) *Salted water is highly recommended for this recipe. Reserve at least ½ cup of pasta water.

Sauté the garlic:

After the pasta has cooked for 3–4 minutes, add the butter and olive oil to a pan on medium heat. Once hot, add the sliced garlic. Sauté until golden brown, being careful not to burn the garlic.

The pasta should be done at the same time as the garlic. If the pasta does require additional cooking time, remove the garlic pan from the heat to avoid burning.

Assemble the dish:

Add the pasta and ½ cup of salted pasta water to the garlic sauté pan. Toss well using tongs.

Add more pasta water, as needed, to form a glossy sauce. The sauce will emulsify and cling nicely to the pasta.

Garnish and serve:

Add crushed red pepper flakes, parsley and freshly grated Parmigiano Reggiano to taste and to add color.

Serve immediately while hot and enjoy!

Saint-Tropez is dripping with luxury, opulence and yachts! Crisp, French vanilla cream-colored facades lining this amazing port wait to welcome visitors. Even the Harbor Master’s Office, formerly Saint Elme Tower, built in 1637, displays a Rolex® clock above its entrance. If you can look away from the gorgeous Mediterranean harbor, check out:

• Annonciade Museum — Founded in 1922, this art museum is located in a former 16th-century chapel. Archways lead visitors to paintings and sculptures from some of the most well-known 20th century artists, including Henri Matisse, Paul Signac and others who lived in or near Saint-Tropez.

• National Gendarmerie Museum — Appropriately, housed in an old police building, this museum celebrates the history of film in Saint-Tropez and the cinematic depictions of French police. An odd combo, for sure, but worth the visit. Nearly 70 movies have been made in SaintTropez since 1930. Then, in 1956, Brigitte Bardot showed up in her floral bikini, and both she and Saint-Tropez were instantly catapulted into fame and history.

• The Citadelle of Saint-Tropez — Cross the now-grassy moat and enter the Citadelle’s dungeon to learn about the town’s rich nautical history. View well-curated displays of navigation instruments, ship models, fishing gear, curious artifacts and more. The uphill hike to the Citadelle is often accompanied by wild peacocks, and the site itself rewards visitors with stunning panoramic vistas of the harbor.

Pampelonne Beach

Located less than a 15-minute taxi ride away, this legendary beach is where many A-listers, jetsetters and yacht dockers soak in the sun. Envision pale sands, aquamarine waters fading to a royal blue horizon and swaying palms that dot the shoreline. Reserve a beach chair and lounge in luxury.

A Sweet Treat

Try a Tarte Tropézienne. An orange floral crème patisserie is sandwiched between two fluffy brioche layers. It’s rumored that Brigitte Bardot named this dessert herself. Pair it with a Provence rosé wine to enjoy two local treats!

Traditional Ratatouille Recipe (Serves 4–6)

Total Time: 1 hour, 30 minutes

Ingredients:

1 medium eggplant (cut into ½-inch cubes)

2 medium zucchinis (sliced)

1 onion (chopped)

3 garlic cloves (minced)

1 red bell pepper (chopped)

1 yellow bell pepper (chopped)

4 ripe tomatoes (chopped or one 14-oz. can diced tomatoes)

1 tsp dried thyme

1 tsp dried oregano

3 tbsp olive oil

Salt and pepper to taste

Optional garnishes: fresh basil or parsley

Instructions:

Prep the vegetables:

Sprinkle salt on the eggplant cubes and let them sit for 20–30 minutes to draw out bitterness. Rinse and pat dry.

Sauté the vegetables:

In a large skillet or Dutch oven, heat 2 tbsp olive oil over medium heat.

Add the onion and garlic and sauté until soft. Add the bell peppers and cook for 5 minutes. Add the zucchini and eggplant and cook for another 10 minutes, stirring occasionally.

Add tomatoes and herbs:

Stir in the chopped tomatoes, thyme, oregano, salt and pepper.

Reduce heat to low, cover and simmer for

30–40 minutes, stirring occasionally until vegetables are tender and flavors are well combined.

Garnish and serve:

Drizzle with the remaining olive oil and garnish with fresh basil or parsley.

Serve warm or at room temperature with crusty bread, rice or as a side to grilled meats.

Palamós, Spain

Golden sands and a rich fishing heritage!

The Old Town historic streets of Palamós are lined with shops and restaurants with outdoor seating. Visit the History-Museu de la Pesca and learn about fishing methods and local fish stories! Then, take in a cooking demonstration at the Espai del Peix (Fish Space). Visit Santa Maria del Mar church, built in 1441, and the remains of the 16th century Augustinian Convent. The convent archways make a beautiful photo and the oculus window frames a perfect view of the Palamós harbor. Watching the fishing dock activity is also a great way to enjoy your day.

The famous local dish here is Gambas de Palamós, fresh daily-caught red prawns. Also try pintxos [pronounced pinchoss], small tapas-like assemblies typically held together with a skewer.

The Stunning Costa Brava Coastline

Palamós is part of Costa Brava — nearly 125 miles of golden sandy beaches and crystal-clear, gorgeous Mediterranean blue water. Platja Gran, the largest Costa Brava beach, is a short walk from the city center. Here beachgoers enjoy sunbathing, swimming, scuba diving, paddle boarding, fishing, sailing, snorkeling and windsurfing. Take your pick! While every Costa Brava beach is beautiful, Platja d’Aro, makes everyone’s list. Located just ten minutes south of Palamós, its beachscape mixes golden sands with rocky jetties. Guided kayaking tours lead to hidden coves and snorkeling opportunities. On the rocky cliff above lie picturesque verdant, yet rocky, views and plenty of posh shops, bars and restaurants.

Visit Medieval Girona

Girona, located approximately 40 minutes from Palamós, also has much to explore: colorful facades, cozy cafés and boutique shops, gothic churches, narrow cobbled streets and medieval walls.

• Like Game of Thrones? Girona and the Girona Cathedral with its wide staircase were the settings for season 6 scenes in Braavos and King’s Landing.

• Xuixo [pronounced sweex-zo], fried sugar-coated pastry rolls filled with crema Catalana originated in Girona in the 1920s. Try one!

• Be inspired by the dream-like surrealistic works of the egg-centric (look it up!) Salvador Dalí at the Dalí TheatreMuseum in nearby Figueres.

Spanish Seafood Paella Recipe (Serves 4)

Total Time: 1 hour

Ingredients:

1¾ cups (300 g) Spanish bomba rice (or shortgrain rice)

3½ cups (800 ml) fish or seafood stock (warm)

7 oz. (200 g) squid rings

7 oz. (200 g) shrimp or prawns

5 oz. (150 g) mussels (cleaned)

5 oz. (150 g) clams

1 small onion (finely chopped)

2 garlic cloves (minced)

1 red bell pepper (cut into strips)

2 ripe tomatoes (finely diced)

Extra virgin olive oil

A few saffron threads (or drops yellow food coloring)

Salt and black pepper to taste

Optional garnishes: lemon wedges, fresh parsley

Instructions:

Make the sofrito:

Heat olive oil in a large paella pan or wide skillet.

Sauté the onion, garlic, and red pepper until soft.

Add the tomato and cook until the mixture thickens and the liquid evaporates.

Add the seafood:

Stir in the squid and cook for 2–3 minutes. Add the shrimp, mussels and clams and cook until they start to open.

Add the rice:

Stir rice into sofrito and seafood. Mix well. Pour in the warm stock and add saffron, salt and pepper.

Cook the paella:

Cook over medium-high heat for 10 minutes without stirring.

Reduce the heat and cook for another 10 minutes, until the rice is tender and the liquid is absorbed. If needed, add a bit more warm stock.

Rest, garnish and serve:

Remove from heat and cover with a clean cloth. Let rest for 5 minutes.

Garnish with lemon wedges and parsley and serve hot.

*Tip – This can be made with chicken or vegetable broth and any unwanted seafood can be omitted.

The spectacular Mediterranean Sea is the largest enclosed sea on Earth and accounts for 0.7% of the global ocean footprint! It has an average depth of 4,900 feet, though it stretches down to 17,280 feet at Calypso Deep, its deepest point!

Scholars believe that the Mediterranean took two years to create during the Zanclean Flood when the Atlantic first breached the Strait of Gibraltar approximately 5.33 million years ago. Presently, the sea is fed by waters from the Atlantic Ocean, the Sea of Marmara, the Red Sea and five rivers.

Historical Significance

The Mediterranean has been called the cradle of Western civilization. It enabled the trading of goods and cultures and bore witness to the rise and fall of the ancient Egyptian, Greek, Roman and Phoenician empires. During Roman rule, the Sea was “the center of the world” and Romans controlled all of its surrounding territories for centuries!

Today, the coastline stretches along 22 countries, measuring approximately 28,600 miles. With more than 450 major ports, 100 tons of goods are shipped across the sea each year.

Iconic Mediterranean Blue

The beauty of the Mediterranean inspires everyone. It inspired greats such as Homer’s The Odyssey. And Picasso’s blue period? Yeah, that was the Mediterranean, too. But what creates its famously unmatched blue? Would you believe it’s a lack of nutrients and extra salt?

The Atlantic Ocean water that flows into the Mediterranean is surface water which contains fewer nutrients, such as phosphates, nitrates and nitrites. This unique mixture provides for excellent biodiversity but is not a habitat in which certain plants that affect water clarity can thrive. The salinity of the Mediterranean is roughly 3.8%, one of the highest of any natural saltwater bodies. Because of the limited inflow from the Atlantic, evaporation happens at an above-average rate, and more salt remains.

Biodiversity

More than 10% of the world’s marine species make the Mediterranean Sea their home and approximately 28% of them are endemic. Common fish include anchovies, sardines, sprat, red mullet, sea bream, mackerel, tunas, hake, bonitos, marlin and swordfish. Dolphins, rays, seahorses, “mostly harmless” sharks, turtles and whales are also found here, as well as the endangered loggerhead sea turtle and the Mediterranean monk seal.
