appy Fourth of July! This year will be a very different July, one I have never experienced before. Typically, July kicks off with excitement over not only celebrating Independence Day but also celebrating my mother’s birthday (July 3). This year, July brings with it a different kind of independence celebration. As many of you know, my daughter graduated from high school in May. As I write this, she is at freshman orientation at the University of Texas (Hook ‘em!). So, around our household, we are learning about a different kind of independence. We (my husband and I) are trying to come to grips with the fact that our one and only child is becoming an adult. It’s strange. It’s complicated. It’s exciting. It’s a whole lot of things that only a parent can understand. As we dropped her off for orientation, I was reminded of when I was her age. When I graduated from high school, I was ready to conquer the world...until my parents dropped me off. Then I was nervous, anxious, and all of a sudden, afraid. I can only imagine how our forefathers felt so long ago. I am so very thankful that they had the courage and foresight to do what they did for future generations. I take comfort in knowing I’m sending our daughter off into no better place than the United States of America. It’s also a strange, complicated, and exciting time to be an American. This month, I’d like to ask you to raise your glass to our leaders and the service men and women who have served and those who continue to protect our country. Brenda Guerrero Receives Billy Thomas Award Special to Welcome Home RGV

Brenda

Guerrero, unit director of the Boys and Girls Club of McAllen Roney Center, recently received the Billy Thomas award for her services at the club. She was nominated by Isabel Garcia, a recipient of the Youth-of-the-Year award at the club. “I was surprised,” said Brenda about receiving the award. “It shows me that I’m actually making an impact in children’s lives. Every day that I go to work, I strive to make a difference, and this award proves to me that I do.” Brenda began her tenure with the club eight years ago. She initially worked part-time as a staff worker. Demonstrating hard work and dedication, Brenda was promoted to unit director. At the club, she mentors and tutors students after school, creates student schedules, and oversees staff members. Brenda also received the Administrator Award, and her

employee, Gustavo Sustaita, received the Youth Development Professional Award at the 2016 BGCA South Texas All Staff Award Ceremony. The 2016 BGCA South Texas All Staff Conference Committee awarded four individuals the Club Professional Awards. All the Boys and Girls Clubs in South Texas participated, and the Boys and Girls Club of McAllen took two of these awards. BGCM is extremely proud of our amazing staff. Meet the Tyrants The

world of birds is full of different personalities. You might go from the enjoyment of a shy Whitetipped Dove to the brashness of a male Great-tailed Grackle. I always enjoy watching the business attitude of a Carolina Wren as it pokes and prods along a fallen tree trunk, scolding angrily if a cat strolls by. Yet in the Valley, there is one family of birds that seems to have gotten an extra serving of pizzazz – the Tyrant Flycatchers. The family Tyrannidae is one of the largest families of birds in the

world, with over 400 known species in their native Americas. Most tyrant flycatchers are insectivorous, as evidenced by their name. Here in the Lower Rio Grande Valley, over 30 species have been documented. These include many loud, beautiful, and, well, tyrannical birds. Let’s meet a few! Our most common tyrant flycatcher is the 9.5 inch Great Kiskadee. The kiskadee is also one of the loudest, most recognizable, and easiest to see. Its distinguishing characteristics are its black and white striped head,

(Couch’s Kingbird by John Brush) The easiest and most reliable way to distinguish this Couch’s Kingbird from its similar cousin, the Tropical Kingbird, is by its song.

yellow front, and loud “kis-ka-dee!” calls. Kiskadees are unique in that they will eat almost anything, including fruits, insects, lizards, and even dog food. (I’ve personally seen a pair bring lizard after lizard to their large, dome-shaped nests.) Kingbirds, also sporting bright yellow like the kiskadees (though lacking the striped heads), are some of the most tyrannical of flycatchers. They often perch high in trees, looking for the next flying insect to pursue. They will aggressively chase hawks, dive-bombing and pecking them until the predator leaves. We have several kingbird species here in the Valley, with two of them also being

considered South Texas specialties-the permanent resident Couch’s Kingbird and the Tropical Kingbird. Nearly identical in appearance, these two are best told apart by their voice. The Scissor-tailed Flycatcher, named after their long, forked tails, is a beautiful bird of open areas. The longer the male’s tail (also perhaps the female’s), the more attractive the bird is to a potential mate. These birds mostly eat grasshoppers but will also eat a number of beetles, as well. Brunch Casserole • 8 slices stale bread • ½ cup butter • 2 cups grated sharp cheese • 1 (4 oz.) can green chilies, chopped • ½ cup sliced green onions • 8 slices Canadian bacon, quartered

• 8 eggs, beaten • 2 ½ cups milk • ½ cup half-and-half • ½ teaspoon salt • ¼ teaspoon cayenne pepper • ¼ teaspoon dry mustard

Preheat oven to 325 degrees. 13 x 9 baking pan. Lightly grease baking pan. Trim crusts off bread. Butter one side; cut into cubes. Layer bread, cheese, chilies, green onion, and Canadian bacon. Mix beaten eggs, milk, half-and-half, salt, cayenne pepper, and dry mustard. Pour over layered ingredients in pan. Bake uncovered for 45 minutes. This can be made ahead and refrigerated before baking. Jalapeno Onion Meatballs • • • •

1 jar (12 oz.) cocktail sauce 1 jar (10.5 oz.) jalapeno jelly ½ medium sweet onion, finely chopped 24 oz. bag frozen, precooked meatballs

Combine the cocktail sauce, jelly, and chopped onion in a large, heavy saucepan and cook over medium heat for about 5 minutes. You want the jelly to melt and the mixture to be smooth. Whisk the sauce. Stir in the meatballs. Reduce the heat, cover, and simmer, stirring occasionally for 35-40 minutes. Pre-heat your slow cooker on LOW for about 20 minutes just before you are ready to leave for the picnic. Place the meatballs and sauce into the cooker, cover, and you’re good to go. As I understand it, the expression

“flip-flopping” means to change one’s mind. If this is true, why has flip-flopping become an indictment? Deliver me from people who cannot change their minds. Why is it considered weak or indecisive for politicians to change their minds when conditions and situations actually demand that they do so? Of course, there must be justifiable, extenuating circumstances to justify a change of mind, but refusal to do so when conditions demand it falls into the realm of pig-headedness. If people never changed their minds, they would behave like juveniles into middle age, women would still be wearing lace-up corsets, and men would settle their differences by aiming dueling pistols at each other. If the Christian churches of the Middle Ages hadn’t changed their minds, we would still be burning people at the stake. A change of mind is a change of attitude, and we all need that occasionally. Refer to it as a change of heart, a mental stretch, a new

Not to be confused with the term “snowbird” pinned on seniors in other parts of the country, locals embrace their neighbors from up north and welcome them with the “abrazo” (hug) that is part of the traditional Hispanic culture. Winter Texans come to the RGV for warm weather, which eases the aches and pains of longevity. There is no snow to shovel and outdoor activities abound. There are many things to do and reasons to stay in South Texas to escape the icy grip of winter. Although the choices are many, approximately 10,000 Winter Texans pick an Encore Resort to stay in when they come to the RGV. There are 10 age-qualified Encore RV Resorts to choose from. They decided that life on the road, and the freedom to get up and go wherever they want, is an amazing way to view the panorama of America and the best way to spend winters away from the frigid northern cold. “The life of an RVer--you cannot imagine the freedom you experience when you see places and things that are out there that other people don’t see when they stay in a hotel,” Kathy said. Chili Cheese Frito Corn Salad Prep Time: 15 minutes Total Time: 15 minutes Yield: 8-10 servings • 2 (15 oz.) cans whole kernel corn, drained • 1½ cups grated cheddar cheese • 1 cup chopped red bell pepper • ¼ cup chopped green onion • ½ cup sour cream • ½ cup mayonnaise • 1 (10.5 oz.) bag coarsely crushed Chili Cheese Fritos • Salt and pepper, to taste. In a large bowl, toss together corn, cheese, red pepper, and green onion. Stir in sour cream and mayonnaise. Stir in Chili Cheese Fritos just before serving. Season with salt and pepper, to taste. This recipe is very good and easy to make.

Grilled Shrimp with

Rio Star Grapefruit Glaze

Makes 6 servings

• 2 cloves garlic, minced • 1 tsp. grapefruit zest • ½ cup fresh Rio Star Grapefruit juice • 1 Tbs. olive oil • 2 Tbs. honey • ½ tsp. salt • ¼ tsp. black pepper1 lb. jumbo shrimp, peeled and deveined • 12 wooden skewers, soaked for 30 minutes in water Light the grill. In a small bowl, combine the garlic, grapefruit zest, grapefruit juice, olive oil, honey, salt, and pepper. Add shrimp to the marinade, stirring well to coat. Let marinate for 20 minutes, stirring after 10 minutes. Thread shrimp onto wooden skewers. Cook the shrimp until just done, 2 to 3 minutes per side. Brush each side with glaze while grilling. In a small saucepan, bring the remaining glaze to a boil. Boil for 1 minute, remove from heat, and pour over shrimp skewers.

The beauty of the Scissor-tailed Flycatcher is rivaled by the incredible red plumage of a male Vermilion Flycatcher. No other tyrant flycatcher in the Valley has such vibrant plumage. But the most sought-after flycatcher is not any of the above. Indeed, it is the tiny gray Northern Beardless-Tyrannulet that lures many birders to the Valley. Only found in small portions of Texas, New Mexico, and Arizona, the tyrannulet is an inconspicuous bird but has a loud voice. The species’ slightly sad sounding whistles of “peer” carry long distances in the South Texas riparian

woodlands, a declining habitat in our area. Meeting the tyrants here in the Rio Grande Valley is a regular, and yet always exciting, experience. They are relatively easy to spot and will readily occupy our towns and cities. Take a look in your yard. I’m almost sure a kiskadee is proclaiming its presence.
