One of my favorite flavor combinations is strawberry shortcake. There’s nothing like a soft sponge, layered with cream and berries. I knew I had to make this in an ice cream version and the results were out of this world!
Ingredients:
1 tub vanilla ice cream, semi defrosted
1 16 oz container of frozen strawberries in syrup, defrosted
1/2 of a store-bought sponge cake (I used Sterns. You can also use homemade but I opted for an even easier version)
Directions:
1. Preheat oven to 350°.
2. Cut your cake into cubes and place in baking pan. Bake for 15 minutes, mixing halfway.
3. In the meantime, blend the entire container of defrosted strawberries in syrup.
4. Add your strawberry sauce into the semi defrosted ice cream and swirl in. (No need to fully mix)
5. Crumble baked sponge cake generously over the ice cream.
6. Return to freezer.
I did not think this would go over well with the little kids, but boy did they love it! Something about the peach flavor that adds an element of freshness and balances out the sweetness of the ice cream.
Ingredients:
1 tub vanilla ice cream, semi defrosted
4 cups frozen peaches
3/4 cup sugar
4 Tbsp water
Directions:
1. In a blender, add frozen peaches, sugar and water.
2. Blend very well, scraping sides occasionally.
3. Once well blended, add to semi defrosted ice cream and swirl in. Return to freezer.

This ice cream flavor is inspired by an ice cream I had in Israel recently. I had tried recreating it from scratch, making my own homemade ice cream, but this simpler version came out so good, I ditched the patchke.
Ingredients:
1 tub vanilla ice cream, semi defrosted
1 container store bought lemon curd (I use Bakers Choice)
Juice and zest of two lemons
1 bar dairy white chocolate, chopped (If making pareve, either remove completely or use white chocolate chips)
3/4 cup ABC cookies or any plain cookie, slightly crushed
Directions:
1. Preheat oven to 350°.
2. Place crushed cookies on a baking pan and bake for 5 minutes. Let cool.
3. Combine lemon curd, lemon juice and lemon zest. Mix well to combine.
4. Add chopped chocolate into the semi defrosted ice cream and mix well.
5. Swirl lemon curd into the ice cream.
6. Top generously with crushed cookies. Return to freezer.
