Anyone who follows our program knows that we are always on the lookout for ways to do better beef business. To seek opportunities rather than focus on obstacles. To create solutions for the challenges that face us as a business and the Speckle Park breed. To learn, to grow and to invest in ourselves. This philosophy led us to create Speck Fest, a three-day festival that not only celebrates Speckle Park but provides breeders, buyers, agribusinesses, enthusiasts and the genuinely curious an opportunity to get together to learn, network, discuss, brainstorm and get off farm.
We have brought together a stellar line-up of industry experts, Speckle Park International representatives and inspirational speakers to provide insight, help and hope. The mini field day offers an eclectic mix of agribusinesses and market stalls.
There are panel discussions, interactive sessions, farm tours (by appointment), The Greatest Steak BBQ Challenge, and the Honky Tonk Stomp Dance Party on Saturday night.
Speck Fest is part information, part education, part conversation, part disruption, part sale and all good time.

Dale Humphries is a visionary entrepreneur and driving force in Australia’s beef cattle industry, renowned for his ability to challenge convention and reimagine what’s possible in one of the country’s most storied agricultural sectors. With decades of hands-on experience and an instinct for identifying opportunity where others see obstacle, Dale has carved out a reputation as a genuine disruptor — a producer and businessman who doesn’t just adapt to change, but creates it. From the paddock to the marketplace, he approaches every facet of the beef industry with a forward-thinking mindset, embracing innovative breeding programs, rethinking supply chain efficiencies, and championing sustainable land management practices that raise the bar for what modern beef production can achieve. Grounded by an unwavering commitment to loyalty, honesty, and integrity, Dale is equally devoted to his family — building not just successful enterprises, but a legacy generations can be proud of.
Belinda Humphries — known to most as Bin — is the warm and beating heart of Wattle Grove Speckle Park. As Dale’s devoted partner in life and in business, Bin has been a cornerstone of the stud since 2009, bringing an energy and dedication that touches every corner of the operation. Creative, diligent, and wonderfully people-focused, she manages the administration, lends a hand wherever needed, and makes everything around her run a little smoother and feel a little warmer. A proud and loving mother of four, her greatest passions are her family, new experiences and Speckle Park cattle. As her children grow, Bin is embracing exciting new adventures — including her dream of one day becoming a published author.
Hugo Humphries is the leading farm hand at Wattle Grove Cattle Company, overseeing daily operations and herd management for the renowned Speckle Park Stud. He is based on his family’s property, “Tarwarri”, Garoo, NSW. With years of experience in livestock maintenance and care, Hugo has streamlined the farm processes and contributed to the business’s health and productivity. While juggling the family’s Cattle Stud, the soon-to-be dad also enjoys training working dogs and connecting with like-minded friends, which reflect his commitments to life on the land and agriculture. Hugo also runs WG Cattle transport, travelling all over QLD, NSW and VIC, picking up and delivering cattle safely for clients.

Olivia Humphries is a proud member of the Wattle Grove Cattle Company family as a farm and administration hand. Originally from a family-owned and run Santa Gertrudis stud in Southeast QLD, she now lives and works alongside Hugo on “Tarwarri” Garoo, NSW. Liv has been a part of the agricultural industry her whole life and has been heavily involved in Stud Beef cattle for over 15 years. She was awarded the 2024 National Youth Parader and National Grain Judge Runner Up in Melbourne and has been honoured to judge at shows and Junior camps across QLD and NSW. Along with farm maintenance and cattle management, you’ll find Liv keeping on top of calf DNA and registrations, working horses, exercising, and preparing to be a MUM!!!




Claudia Humphries is an agriculture educator, founder of AgHeroes, and passionate advocate for food and fibre education. Growing up on her family’s Speckle Park cattle operation, Claudia developed a deep appreciation for Australian agriculture and the importance of connecting consumers with the people behind their food.
With a background in teaching and hands-on farming experience, Claudia is dedicated to inspiring the next generation through engaging agricultural education programs. She is passionate about bridging the growing disconnect between farms and communities and believes strongly that the future of farming is in education. Alongside her work with AgHeroes, Claudia is actively involved in the Speckle Park Youth Committee and is a strong advocate for young people in agriculture
James Stephens is the 2025 RAS Rural Achiever. Originally from Cronulla, James discovered his passion for agriculture early, leading him to pursue a career in the industry. Armed with a Diploma in Agriculture, he established James Stephens Rural Contracting, working across the Dungog Shire managing properties and supporting local farming operations. Alongside his contracting work, James manages his own herd of beef cattle with plans to expand his operation. He is an active committee member of the Gresford District Agricultural Society, stewarding in the horse ring and working in the yards during the campdraft, and is always ready to volunteer at community events.
Charlotte Nugent grew up in the Riverina region of southern NSW, where her family runs a mixed farming business at Tarcutta, selling cattle and prime lambs. Charlotte has studied broadly both in Australia and abroad through agricultural opportunities. Charlotte is an advocate for youth programs across the beef industry, Charlotte has been fortunate to be heavily involved in Angus Youth, through programs such as the annual Youth Roundup for multiple years as a competitor before stepping onto the committee . As well as being fortunate to receive a number of scholarships, giving her the opportunity attend courses such as the Tocal Beef Cattle Assessment Course. After returning home from the US Charlotte has moved to Northern NSW, now calling Tamworth home where she works as a Marketing and Communications officer for Tamworth Regional Council, while completing her Masters in Communications online. Most recently signing a contract with Wise Repro as their newly appointed Junior Marketing Officer.
Eden Kaminski is currently completing a Bachelor of Agriculture at the University of New England, with a focus on beef cattle. Raised on the Mid North Coast of New South Wales, Eden grew up involved in his family’s commercial beef cattle enterprise, building a strong foundation in livestock production. His interests have since expanded into breeding, genetics, and livestock management across diverse production systems, alongside a commitment to educating the next generation of agricultural producers.
Over the past year, Eden has travelled extensively across North America, touring purebred and commercial operations and competing internationally. As part of the B.E.E.F Farmfair International Australian team, he helped secure the 2025 Champion Team title on a global stage. Eden was also awarded the Angus Australia University of Illinois Scholarship, spending five months with the U of I Livestock Judging and Meat Animal Evaluation teams, competing at the highest collegiate level across cattle, sheep, pigs, and goats.

Lincoln McKinlay is a respected auctioneer and stud stock specialist with extensive experience across the livestock and agricultural sectors. Based in New South Wales, McKinlay is recognised as one of the lead auctioneers servicing NSW and Northern Victoria. He began his professional career in 2012 as a commercial livestock agent with TopX Australia, where he gained six years of industry experience. In 2016, he completed a diploma in auctioneering at the World Wide Auction College in Iowa, USA. The following year, he won the National Young Auctioneers Competition at the Sydney Royal Show and went on to represent Australia at the Calgary Stampede, where he earned the title of International Rookie Champion Auctioneer. In 2018, McKinlay joined Glasser Total Sales Management, where he managed stud stock sales across southern Queensland, New South Wales, Victoria, South Australia and Western Australia. Before joining Elders Stud Stock in 2020, he continued to work closely with stud stock clients to strengthen genetics programs and improve commercial outcomes. He was also selected as a member of the 2024 GenAngus Future Leaders cohort, reflecting his ongoing contribution to leadership and innovation within the beef industry. Lincoln now operates LINC’D, where he works with cattle producers to strengthen product quality, refine marketing strategies and build stronger client relationships. Through this work, he supports producers in improving profitability while contributing to the long-term strength and sustainability of the beef industry.

Simon Quilty is a graduate of Agricultural Science from Melbourne University and has worked in the meat and livestock sector for 35 years.
His experience and expertise are based on various roles within the industry, including his first job as a research officer for the Victorian Farmers Federation, where he focused on bringing farmers and meat processors together.
This work led to his immersion in the private sector as a meat trader, which involved living overseas and developing global markets. As a result, he has a deep understanding and passion for international trading and product development around the globe.
In recent years Simon has moved into the risk management sector and developed derivatives and meat swaps that are used by companies in both North America and Australia to manage price risk in processed meat and livestock.
Simon is an independent meat and livestock analyst and brokers swaps on behalf of large financial institutions across the world. He also brokers physical meat products worldwide.
In 2020, Simon also established Global Agritrends Downunder subscription business. Simon’s analysis looks at beef, pork and poultry trends worldwide, giving in-depth analysis two to three times a week on what current global events are occurring

Rod Polkinghorne is an outstanding industry visionary and leader as recognised in multiple awards including an Order of Australia medal for services to the beef industry and Honorary Doctorate from Murdoch University. He is a pioneer of the Australian feedlot industry, a leading innovator in the Australian dairy industry with marketing of specialty ultra-filtered milk and intensive production and a leader of consumer based beef grading research for over 20 years.
Rod was an original team leader of Meat Standards Australia (MSA). He helped develop the base concept and managed the scientific development that followed.
He continues to lead ground-breaking research related to MSA and is an Adjunct Professor of Meat Science at the University of New England.
Rod has led collaborative consumer research projects for red meat across the globe, with many papers published.
From his own herd, he developed a paddock-to-plate branded beef production and retail business— covering deboning, retail cut fabrication, cooked meal production, retail, and IT systems. He also developed operating systems that combine MSA eating-quality estimates with yield parameters to optimise revenue from each cut in every animal. Rod’s technical expertise and hands-on approach have driven innovation and revenue growth in Australia and internationally.

Emma Spartalis is an award-winning digital strategist, ethical AI advisor, and founder of Spartalis Consulting. After leading digital transformation and technology capability for a billion-dollar enterprise brand, she now helps business leaders make practical sense of AI, without the hype. Based in regional New South Wales where she completed her MBA while raising a young family, Emma understands both the realities of modern business and the unique pressures facing regional operators. Her work focuses on helping leaders use technology wisely, balancing opportunity, efficiency, and risk.
A recipient of the 2025 APAC Women in Tech Award and 2026 NSW/ACT AgriFutures Rural Women’s Award finalist, Emma is passionate about ensuring rural and regional communities are not left behind in the AI era.

As Operations Officer at Speckle Park International, Maddie is at the core of how the association operates, overseeing animal registrations, DNA verification, ownership transfers and the day-today systems that keep everything running. With a background in membership administration, registry coordination and promotional strategy across breed societies and agricultural organisations in Australia, she brings a grounded, practical perspective to her role. Maddie also played a key role in communicating the launch of SPI’s new Commercial Register in 2026, helping producers understand how to record commercial steer and heifer performance data and get the most from the system.
Newly appointed Director, Justin has spent a lifetime around livestock, from his early years on Nardoo Station in Far West NSW to managing properties across Central and Northern NSW. He and wife Amy co-founded JAD Speckle Park at Yeoval in 2016, to build one of Australia’s most influential Speckle Park studs. Justin brings a data-driven, commercially focused approach to everything he does on-farm and to his role on the SPI board, where his hands-on breeding experience and deep understanding of the beef supply chain inform the breed’s direction.
Serving as Treasurer and chair of the Marketing & Communications Sub-Committee. Together with her partner Andrew “Paffy” Paff, Brooke runs Born Ready Speckle Park Cattle from Dyers Crossing near Forster on the NSW Mid North Coast, a stud built through years of perseverance that achieved national recognition in September 2023 when their bull Born Ready Shady sold for $150,000 at the inaugural East Coast Select Speckle Park Sale at Kempsey — a world record price for the breed.
As Company Secretary and Organisational Sub Committee chair at SPI, Jason draws on his diverse skills and knowledge to help shape how the association operates and serves its members. Jason is owner of Victory Cattle Co. at Doyles Creek in the NSW Hunter Valley, breeding Speckle Park bulls with a clear eye on commercial relevance — animals with depth, length and the maternal foundations to keep delivering across generations.






Kristen graduated as a Veterinarian from Charles Sturt University Wagga Wagga in 2017 before working in clinical practice in NSW and Qld. She pursued a path in cattle reproduction and reproductive technologies at the beginning of 2021 and since this time, has continued to undertake further training in the services she offers both here and abroad. Her knowledge and experience thus far is backed by that gained through her family sheep and cattle property in Orange.
With a background in cattle and rodeo, Edward completed a Bachelor of Animal Science at Lakeland College, Alberta then continued down the path of bovine reproductive technologies. He attended the International Embryo Transfer School before working in Oklahoma and Iowa, honing his embryo flushing and transferring skills, then training in IVF. Since moving back to Australia, he has worked both here and overseas in the embryo space.

Since 2008, Wattle Grove Speckle Park has been instrumental in the development and success of the Speckle Park breed, both in Australia and across the globe. There have not been many waking – or sleeping – moments in the past 18 years that have not included thoughts of Speckle Park and the wider beef industry. Under the leadership of Director Dale Humphries – a visionary, an entrepreneur, and by every measure a pioneer – Wattle Grove built a reputation as one of Australia’s premier Speckle Park studs. Focusing on breeding hardy, easy doing, structurally correct and highly fertile cattle.

Having Hugo and Olivia on the ground at Tarwarri has been instrumental in the success of the transition and the scale-up of operations.

Rewarding quality not coat colour in the beef cattle industry.
Sale O Sale O Sale O!! Go to any sale yards across Australia and, for that matter, across the globe, and day after day, week after week, month after month, you will see the dominance of black-coated animals selling for higher prices than coloured cattle. Not better cattle, not fatter cattle, not better fed or finished cattle, not because they weigh more, not because of better genetics, not bred by better producers, not the most muscle, not the most desirable, not the most complete, no, just more money for black coloured cattle.
Does it make sense, or does it make dollars in an industry that is full of false facts, fuckups, and fabricated figures? As a young boy growing up, I would often attend cattle sales with my father. He would teach me about the importance of life on the land, how the cattle industry worked and who was who in the zoo; from the stock agents to auctioneers to meat buyers, meat wholesalers, truck drivers, processors, the local butcher, other producers and farmers. He would explain it was key that everyone worked together for the benefit of all, and it was important that everyone involved made a few bucks. He would tell me to get to know people and the industry, give a good strong handshake, look someone in the eye when you talk to them, and understand that your word is your bond. If you support the industry, it will support you. He taught me to know a good deal when you see one, and to know what’s cheap, what’s too expensive, what to look for when buying, and what not to look for. Structural integrity, easy doers,’ good breeders, easy keepers, too fat, too skinny, too much muscle, not enough muscle, too mad, too quiet, too cheap, too expensive, and quality over quantity. He would say, ‘Look, that’s a nice run’ or ‘Wow, that’s an even lot of steers’ or ‘Maybe we should look at that lot, they will suit our country’. ‘I think we got a good deal’, ‘the butcher will buy them from us’, ‘the agent said they have good breeding’, ‘they will grow out nicely’. A generation of knowledge being passed down.
One thing I never ever heard him say over all the years was, ‘Yep, we better buy them because they’re black!!!’
Being a part of the beef industry over the past 35 years
and running our own properties and breeding programs, we, like everyone, have had ups and downs, good times and bad. One thing we believed would remain constant is that a quality product always sells and always pays well. Unfortunately, it’s no longer the case in the beef industry. If it’s not black, it’s not wanted or is heavily discounted, no matter the quality. We see coloured cattle breeds worldwide being forced to switch to a dominant black coat, with the industry attitude being ‘adapt or die’. Traditional cattle breeds are being lost, along with the quality and breed characteristics they are renowned for. Agents can be heard worldwide telling buyers, ‘Just buy black mate, just buy black’.

This industry attitude is forcing cattle producers worldwide to sell their existing-coloured cattle herds at discounted rates. Beef producers are now being financially forced to breed solid black animals rather than focusing on a quality, stable product that has taken generations to perfect. We no longer see an industry where quality pays; we see an industry where a black coat colour pays, no matter the quality of the cattle or product underneath. I hear beef producers and agents say, ‘Just breed them black, what’s the big deal? That’s the way everyone is going.’ I even find myself wondering, ‘Why not be a part of it?’ Why try to breed great beef? Why be honest? Why be sustainable? Why focus on quality? Why produce a product you can be proud of? Why not just breed black? It’s easier, it makes more money, you don’t have to try, just listen to the agent, just listen to the market.
We, like many other cattle producers, breed, buy, feed, grow, raise and sell many types of breeds and colours of cattle. We have seen the good, the bad, and the ugly in all shapes and sizes. We have used our generational knowledge to buy right, breed the right cattle, use the right cows, cull hard, demand the best, expect the worst
and quality will pay. It’s about steak on plates, I would hear my dad say. If the product isn’t right, consumers won’t buy it. Breed better beef is the key, mate, breed better beef.
So why, as an industry, are we so focused on the colour of a hide when it ends up on the slaughterhouse floor? The carcass hanging is red and white. We go to the butcher, we buy beef, not steer beef, not heifer beef, not bull mince or cow steaks or black beef. We ask for a good cut of steak that has good fat, good flavour, and, most importantly, not be tough. We want a good eating experience. The average consumer is now more educated than ever before. They demand better products that are more consistent and cost-effective, they want more information about what they put on the dinner table. As beef producers, we want more people to eat beef. We want to provide an awesome product and a great eating experience, and we all want to be paid accordingly for delivering that quality. An industry and system where quality gets rewarded.
Bury our head in the black or change an industry? This question, while confronting, has had us soul-searching for answers and solutions. It seems like we have two choices as producers: either breed black or don’t come back. Neither of these choices sat well with us or with our belief in breeding better beef, so we have created the Coloured Cattle Company (CCC).
The CCC was created to promote and demonstrate the many benefits of quality animals and quality beef products. The CCC is a collective
of like-minded beef producers focused on sharing the many benefits of coloured cattle while achieving more consistent, fairer prices. The CCC wants to lead the way in changing how the beef industry supports its producers and how quality is paid for.
The CCC is driven to explain to consumers the many benefits of beef while helping producers sell their product and stock at better prices, where quality is once again rewarded. The CCC is dedicated to getting the beef industry back on track while helping producers to breed quality accredited stock and provide a quality product. No more black coat dominance, just great steak on plates.
The CCC prides itself on finding better ways to do beef business and working with the industry to help promote the benefits of beef for all beef producers. The CCC plans to host events and sales to promote and sell coloured cattle breeds. These events will be open to any beef producer not breeding straight black coated animals. The idea is to showcase the crossbreeding benefits of cattle and purebred cattle in a commercial sale environment.


The CCC will also hold seedstock events and sales, giving the purebred stud producer the opportunity to sell purebred bulls and females into the industry. These types of sales and events will be designed to showcase the very best cattle of the highest quality that do not display a straight black coat.
