About Watcharee

Watcharee Limanon, a Thai culinary artist from Bangkok, is passionate about sharing the authentic flavors of traditional Thai cuisine. As a girl, she learned Thai cooking from her mother, but also experienced Asian cuisine while traveling across Asia as an environmental lawyer. Changing careers, Watcharee trained in Bangkok with top chefs at the Mandarin Oriental Hotel and Le Cordon Bleu Dusit Culinary School, as well as other culinary institutes that preserve Thai royal traditions. Thai Green Curry Sauce and Chicken Naan Pizza

Ingredients

• 1 jar WATCHAREE’S Thai Green Curry Sauce

• 4 pieces of naan bread (frozen or fresh)

• 2 bell peppers, sliced

• 2 cups of roasted chicken, shredded to small pieces

• Mozzarella cheese, grated

• Dill (optional)

Directions

1. Preheat oven to 450F.

2. Line a baking sheet with Silpain (non-stick baking mat) or use a perforated pizza pan for baking.

3. Spread WATCHAREE’S Thai Green Curry sauce on each piece of naan.

4. Top with mozzarella cheese, chicken, bell pepper and dill.

5. Bake for 10 minutes or until golden.

6. To save time, use roasted rotisserie chicken from the deli. Also feel free to substitute chicken with smoked salmon, shrimp, or whatever you have in your fridge!

7. Add pineapple, eggplant or create your own version of Thai green curry naan pizza. Enjoy!

Thai-Inspired Crispy Toast

Ingredients

• Watcharee’s Thai Sweet Chili with Ginger, Lemongrass Chili, or Spicy Chili for dipping

• 1.5 cups ground turkey, pork, or tofu

• 5 slices of bread (whole wheat or white), cut into quarters

• 2–3 cloves fresh garlic, finely minced

• 1 egg (separated into egg white and egg yolk)

• 1-2 tsp water (for mixing with egg yolk)

• 1 tbsp Thai soy sauce or Japanese soy sauce

• 1 tbsp oyster sauce

• 1 tsp ground white pepper

• 3–4 sprigs of cilantro (for garnish, optional)

• 2–3 sweet peppers, sliced into small pieces (for garnish, optional)

• 1 tbsp toasted sesame seeds (optional)

Directions

1. Toast the Bread: Place the quartered bread in the air fryer. Mist both sides with oil, then set the air fryer to 350°F and toast for 2-3 minutes.

2. Prepare the Turkey Mixture: In a mixing bowl, combine the ground turkey, minced garlic, egg white, soy sauce, oyster sauce, and white pepper. Mix until all ingredients are well incorporated, and the mixture is firm, about 3 minutes.

3. Make the Egg Wash: In a small bowl, mix the egg yolk with 1-2 tsp of water to create an egg wash.

4. Assemble the Toast: Use a spoon to spread about 1 tablespoon of the turkey mixture onto each piece of toasted bread.

5. Add the Egg Wash and Garnish: Brush the top of each piece with the egg wash. Then, garnish with a cilantro leaf and 1–2 pieces of sweet pepper for a pop of color. If desired, sprinkle sesame seeds on top and gently press them down.

6. Final Toasting: Mist the tops with oil and air fry for 6–8 minutes, depending on the size of the toast and the thickness of the turkey mixture. The toast should be golden and crispy.

7. Serve: Serve immediately with a Watcharee’s dipping sauce of your choice. Enjoy!

Thai-inspired Ground Turkey and Lettuce with Thai Spicy Chili Sauce

Ingredients

Watcharee’s Thai Spicy Chili Sauce

16 hydroponic Bibb lettuce or butter lettuce leaves

1lb ground turkey breast (I prefer 99% fat free)

½ cup water

3 -4 stalks lemongrass, thinly sliced purple section above the root

10 culantro (sawtooth coriander) leaves, thinly sliced

Fresh mint

Fresh cilantro, chopped

5 red chilies, chopped (optional)

Directions

1. Heat a wok or skillet on medium heat. Add water and heat until bubbling. Add ground turkey and stir until cooked through which takes 7-10 minutes.

2. Rinse whole lettuce, pat dry and arrange leaves on a plate.

3. Spoon cooked ground turkey in the center of each lettuce leave, adding sliced lemongrass, culantro, cilantro, mint and red chili.

4. Drizzle with Watcharee’s Spicy Chili on top before serving or serve as a dipping sauce. Enjoy!

Air Fryer Tofu with Sweet Chili Ginger Sauce

Ingredients

⅓ cup Watcharee’s Sweet Chili Ginger Sauce

14 oz extra-firm tofu, pressed and cubed

1 bunch asparagus, trimmed and cut into 2-inch pieces

1/2 red bell pepper, sliced

1/2 yellow or orange bell pepper, sliced

1½ tbsp neutral oil

1 tsp Herbes de Provence seasoning

ÂĽ tsp black pepper

Pinch of salt (optional)

Optional garnish: sesame seeds, sliced scallions, Thai basil

Directions

1. Press tofu for 10–15 minutes to remove excess moisture. Cut into bite-size cubes and set aside.

2. Place asparagus and bell peppers in the bottom tray of the air fryer. Lightly spray with oil, then season with salt, black pepper, and Herbes de Provence.

3. Insert the rack. Arrange tofu evenly on the rack above the vegetables. Lightly spray tofu with oil, then season with salt, black pepper, and Herbes de Provence.

4. Air fry for 10-12 minutes, flipping the tofu halfway through, until tofu is goldenbrown and vegetables are tender with light char.

5. Transfer tofu and vegetables to a bowl. Add Sweet Chili Ginger Sauce and brush gently until evenly coated.

6. Garnish with sesame seeds, scallions, or Thai basil if desired. Serve immediately.

Peanut Noodles with Sichuan Chili Crunch

Ingredients

1 cup cooked noodles (rice noodles, lo mein, or ramen work well)

¼ cup Watcharee’s Thai Peanut Sauce

1 tbsp Sichuan chili crunch

1 tbsp sesame chili oil (optional, for extra nuttiness)

2 tbsp unsalted roasted peanuts, roughly ground or chopped

1–2 scallions, thinly sliced (white and green parts separated)

Directions

1. Toss the noodles with sesame chili oil and Watcharee’s Thai Peanut Sauce. Mix well until evenly coated.

2. Add the sliced scallions and Sichuan chili crunch. Toss lightly to combine.

3. Top with crushed roasted peanuts for added crunch. Enjoy!

4. Optional Add-Ins: • A soft-boiled egg, grilled chicken, or tofu for extra protein • Shredded cucumber or pickled veggies for freshness and crunch

Asian Fusion Slaw with Classic Thai Peanut Sauce

Ingredients

1 jar Watcharee’s Thai Peanut Sauce

1 pack extra firm tofu, cubed

4 cups shredded coleslaw mix

1 cup shredded carrots

1 cup broccoli stem slaw

1 watermelon radish, thinly sliced

1 cup chopped cilantro

2 scallions, sliced

1 cup of your favorite crunch, such as cashew nuts, peanuts, almonds or roasted edamame

Directions

1. Prepare the Tofu: Drain the tofu and press to remove excess water. Cut into cubes. Mist tofu cubes with oil. Add to an air fryer, set the temperature to 375 F. Cook for 7-10 minutes. Shake the basket and cook for another 5 minutes until crisp. Set aside. If you don’t have an air fryer, you can cook in a non-stick skillet. Heat a little oil over medium heat. Add the tofu cubes and cook until golden and crispy on all sides, about 5-7 minutes. Set aside.

2. Prepare the Slaw: In a large bowl, combine the shredded coleslaw mix, shredded carrots, thinly sliced watermelon radishes, cilantro and scallions.

3. Add the Tofu and Crunch: Gently fold in the cooked tofu cubes. Then, add your choice of crunchy ingredients. Toss to combine.

4. Dress the Slaw: Drizzle the Watcharee Thai Peanut Sauce over the slaw mixture. Toss everything together until evenly coated. Enjoy the refreshing, colorful flavors and textures!
