Horses turned out a little earlier, grazing while the air still carries a hint of cool.
It’s a season that doesn’t rush—but it doesn’t wait either.
Much like spring, many of the most meaningful moments in family life pass faster than we expect.
At Waldens, we see spring as an invitation—to slow down just enough to notice who is standing beside you right now, in this chapter of your family’s story.

Rayann’s Popcorn Company holds a special place in our hearts. Founded right here in Lexington by our longtime friend Rayann White, it began the same way so many great things do—by sharing something homemade and loved with family and friends.
Those early gift bags of gourmet popcorn were such a hit that everyone kept saying the same thing: you should share this with the community. So she did.
Since then, Rayann’s vision has grown. In 2020, she opened her first shop at Julietta Market inside Greyline Station, and it’s become a local favorite. It’s one of those places that feels (and smells) glorious the moment you walk in… and we’re so proud to share her story with you.
Her goal: to fill a void with popcorn more delicious than anything we have ever tasted.

Ingredients
A Spring Table Favorite
Whipped Goat Cheese with Honey, Herbs & Warm Bread
• 8 oz goat cheese (softened)
• 3–4 tbsp cream cheese (for extra smoothness)
• 2 tbsp olive oil
• 1–2 tbsp honey
• Fresh herbs (thyme, chives, or basil), finely chopped
• Salt & pepper to taste
• Optional: lemon zest
• Warm baguette slices or crackers for serving
Instructions
1. In a bowl, whip together goat cheese, cream cheese, and olive oil until smooth and airy. (A hand mixer works great, but a fork will do just fine.)
2. Spread onto a shallow serving dish.
3. Drizzle with honey and a little extra olive oil.
4. Sprinkle with fresh herbs, a pinch of salt, pepper, and a touch of lemon zest if using.
5. Serve with warm bread or crackers.
