30 Years And Counting

Finding the perfect words to describe a 30-year love affair is no small task. What we do know is this: Three decades of John Craig have truly been a labor of love. When we opened our flagship store in the historic Park Avenue District of Winter Park, Florida, on March 2, 1996, we had no idea that single location would become the foundation for something so much bigger—a growing family that now includes eight stores in Winter Park, Ponte Vedra Beach, Naples, Ocala and Jupiter, dozens of employees who are more like partners, and tens of thousands of dear friends who just happen to double as our customers.

Over the course of 30 years, our stores have grown. Our team has grown. Our family has grown. Along the way, we have experienced extraordinary highs and heartbreaking lows. We’ve been honored with remarkable recognition, including Esquire’s Best of Class, MR Magazine’s 2023 Men’s Specialty Retail Store, Best of Naples, Best of Ponte Vedra, Best of Orlando, Best of Winter Park, Best of Ocala and many more. We weathered a global pandemic—and emerged stronger for it.

When John Craig Clothier first opened, Craig and Suzanne DeLongy had a 5-year-old son and a 10-year-old daughter. Today, Brant and Blair have families of their own. One of our downtown Naples locations proudly bears the name of Blair’s eldest son, Carter Finley. And that 10-year-old girl who once barely reached the store counter is now helping steer the ship.

On opening day in 1996, John Craig had just three employees. Today, we are supported by nearly 50 fulland part-time partners—the lifeblood of this company. The deep relationships they’ve built with our customers, many of whom have become lifelong friends, are the true reason we’ve reached this milestone.

Not all of the remarkable people who shaped John Craig are still with us. We have lost cherished friends and colleagues along the way; no loss is felt more profoundly than that of our matriarch, Suzanne Shelfer DeLongy, who won her race and went to heaven on Nov. 7, 2024. Her Southern grace, quiet wisdom, strength and enduring legacy are woven into the very fabric of John Craig. A wrought-iron bench bearing her name now graces the entrance of our original store—a lasting tribute and a gentle reminder that she is always with us.

Since that first spring day 30 years ago, we have looked forward to opening our doors each morning and serving the communities we are so proud to be a part of. Our team is family, and we treat everyone who walks through our doors the same way—with care, expertise and respect. The people we serve, the brands we partner with and the relationships we’ve built along the way are the reason we’re here today.

We are honored to celebrate 30 years with you—and we can’t wait to see what the next 30 will bring.

Has combining the flavors of land and sea put you in a matchmaking mood? Good. Now it’s time to choose a wine.

There’s something timeless about surf and turf—the convergence of land and sea on one beautifully set table. A perfectly seared steak alongside pristine seafood is a succulent study in contrasts, and while premium food ingredients are paramount, the right wine can bring the entire experience into harmony. Whether you’re hosting an intimate, sit-down dinner or a lively buffet crowd, thoughtful pairings make a meal a memorable occasion.

“The ideal pairing of wine and food should elevate multiple senses: aroma, flavor, visual appeal, tactile feel, emotions and a sense of elegance,” says Michael Perman, a longtime certified sommelier and founder of C’est What?, a Portland, Oregon-based wine-tasting and events organization.

Bold red wines like Cabernet Sauvignon and Bordeaux blends are natural matches for red-meat entrées such as ribeye and New York strip, while white varietals like Sauvignon Blanc and Vermentino, with their bright acidity, are happy companions to shrimp and lobster. But can one wine complement both steak and seafood?

“Finding one wine that serves both masters (the surf and the turf) requires balance and precision,” says Perman. “The ideal wine will have a solid structure, balancing

tannins and acids, delivering powerful vor with complexity but not overwhelming either of the two culinary creations.”

A Burgundy like Premier or Grand Cru is a good place to start, he says. Or perhaps try a Gevrey Chambertin. “It be exquisite because the black fruit will expressive and rich, while tannins will tight but silky,” he says. Another option a Chassagne-Montrachet from producer Domaine Ramonet, which creates both reds (Pinot Noir) and whites (Chardonnay). “A Chassagne-Montrachet will be delightful, as red fruits will emerge along with more floral and earth tones, violets and the forest floor,” says Perman.

Our expert also recommends factoring in the profile of any sauces or spices. A Châteauneufdu-Pape, which exudes baking spices like clove and cinnamon, also pairs well with dried herbs such as rosemary and thyme.

In the end, a successful surf-and-turf dinner is about balance—thoughtful wine pairings that will allow every element on the plate, and in the glass, to shine.

BOTTLES TO TRY

• 2019 Drouhin Gevrey Chambertin Premier Cru. “Seek this year specifically, as 2019 was an excellent year for red Burgundy,” says sommelier Michael Perman.

• 2020 Domaine Confuron-Cotetidot Vosne Romanée Premier Cru. “The beautiful black fruit, Earl Grey tea, violet and sandalwood will complement ribeye, filet and strip steaks as well as lobster, scallops and shrimp,” he says.

• 2021 Hamilton Russell Hemelen-Aarde Valley Pinot Noir (South Africa). “This selection,” our expert notes, “has well-integrated oak and silky tannins that pair well with any red meat and seafood.”

• 2008 Château de Beaucastel Châteauneuf-duPape. According to Perman, this lighter, fresher year is a perfect partner for surfand-turf.

The Game Is Where You Put It

The surname Keiser is synonymous with golf. It started with the patriarch, Mike Keiser, who parlayed a fortune from the greeting-card business into a project that forever altered the landscape of the game. Prior to Bandon Dunes, the resort Keiser founded on the Oregon Coast, conventional wisdom held that golf courses needed to sit near major airports and cosmopolitan hubs, places where traveling golfers could touch down, snag their bags off the carousel and squeeze in 18 before dark. Bandon blew up those assumptions and replaced them with a “Field of Dreams” template: If you built it on a cool site, they will come, no matter how far they had to travel.

After Bandon, Keiser carried that philosophy inland. In central Wisconsin, he and his sons, Michael and Chris, brought Sand Valley to life on heaving dunes that Ice Age glaciers had left behind. Think links golf, without the ocean. In the years since, Mike has stepped back from the daily operation, leaving the Keiser portfolio under the care of his sons. Michael, in particular, has not slowed. Last summer he presided over preview play at Rodeo Dunes, where the first of multiple courses will open next spring in the hills outside Denver.

The Keiser story does not end there.

The next chapter is unfolding farther south. Also slated to open next year, Wild Spring Dunes carries the Keiser ethos into a remote swath of East Texas, roughly equidistant from Dallas and Houston and a shorter hop from Shreveport. The property sprawls across more than 2,400 acres of dunes, meadows and spring-fed creeks, land long used for hunting, logging and fermenting moonshine. The rolling forests of tall pines and hardwoods, the spring-fed creeks cutting through red dirt, the natural movement in the ground— East Texas has long possessed the raw ingredients for compelling golf. Sometimes, great sites just need to be discovered.

To make the most of it, for the first course Michael Keiser tapped Tom Doak,

If there is a single symbol of the place, it is Old Baldy, a treeless, 40-foot sandy hillock that rises unexpectedly from the East Texas pines. At Wild Spring Dunes, Old Baldy will serve as both a landmark and a launching pad: Three tee shots across the eventual two courses will fly from its slopes. Elsewhere, the hill will come into view or into play in ways that tie the property together, a recurring topographical refrain.

Wild Spring Dunes’s second 18 is already in the works, along with a short course, a sprawling putting course and a state-of-the-art practice facility. Lodging and real estate will follow, including private cottages and estate homes. But the core of the project is the land itself.

Finding that land is its own story. Ever since Bandon reshaped the business, the search for untouched, sandy ground has become almost a cottage industry, with developers, designers and lone-wolf enthusiasts scouring satellite imagery for the next great site. Brett Messerall was one of those lone wolves. A Dallas native, he took the hunt to obsessive lengths, sifting through aerial photos, topographical maps, soil surveys and government reports, looking for a needle in the haystack of East Texas. When he found it, he picked up the phone.

Cold call number one went to Doak, who agreed to inspect the site in person. The architect walked the property and confirmed what Messerall had suspected: The place was worth pursuing. Cold call number two went to Michael Keiser. The rest is history.

For the Keisers, Wild Spring Dunes is less a departure than a continuation of a map they’ve been sketching for decades. In the coming year, East Texas will become yet another family landmark, a new dot in the growing constellation of remote places that for players more than reward the long haul they require.
