FOR THE TRAVELER looking to break away from the tourist path and immerse themselves in the authenticity of our city, The Bike Guy provided an unparalleled view from two wheels. This venture, created from Homero Santiago Iñiguez’s passion for cycling, transforms the act of cycling into a guided cultural exploration.
His philosophy is simple, but powerful: “To show people the not-so-touristy places in Puerto Vallarta and to share a little of the city’s history.” Through a private and meticulously personalized experience, you will visit Parque Lineal, viewpoints with spectacular trails, the Mercado del Mar, the Municipal Cemetery, the Cuale River and the entrepreneurial heart of the Versalles neighborhood, among other places. In addition to appreciating them, each stop includes a little information, anecdotes and stories.
Safety and comfort are the foundation of the operation. The bikes are modern and selected to ensure a pleasurable activity for any adult. As part of the tour, the experience integrates a culinary stop and the journey culminates on the Malecón, an icon of the city.

FUI AL MAR is an intimate gallery dedicated to the richness of the Mexican Pacific as seen through the artistic sensibility of Javiera Pintocanales. Every corner of the space radiates a deep connection with nature, especially marine life.
“The name of the store was born from my three favorite words meaning ‘I went to the sea’. When I say them, I feel like I’m really in my best physical and mental state,” Javiera shares.
The products on display, from sophisticated tote bags and mugs to minimalist T-shirts, are created with artisanal techniques like watercolor, pencil drawing, metal engraving and stencil work, giving them a unique quality and feel.

Work that began in her studio (Taller Pez), was organically transformed into this showcase, driven also by the need to expand her artistic exploration to large-format paintings and a desire to share her knowledge with bookbinding and watercolor classes.

SAVIA AGAVE Niche is as an essential space for both connoisseurs and curious adventurers looking to go beyond common Mexican spirits. It is a tasting room designed for understanding and sampling the ancestral drinks of our country: tequila, raicilla, mezcal, bacanora and sotol.
With an inventory of more than 200 labels, owner Isis Hernández, has created a tasting event that honors the universal bases for sampling these spirits, and her concept is a uniquely guided one- to two-hour immersive experience in the history, geography and complexity of the maguey.
With the sharing of these distillates, Isis sees a way to honor the origins of Mexico: “I consider Savia to be a good contribution to the cultural scene in our region, especially since we are very close to both creative cradles of raicilla.”
The atmosphere at Savia is intimate and educational, with only twelve stools placed in front of a small wooden bar. However, those looking for an even more exclusive experience can request this sensory experience in the privacy of their own home.

FOUNDED BY Jorge Santamaría and his wife Marina Medina, Lindas Café & Flores is a concept that materializes the harmony between two pleasures of everyday life—the delight of a cup of coffee and the beauty of a floral arrangement.

Their specialty coffee originates from Chiapas. It is a medium roast bean, which translates into lattes, cappuccinos and frappés with a full-bodied and continuing profile. In addition, the menu offers matcha, taro and a chai made from scratch with ingredients including cardamom, cinnamon and cloves, which brings a warm and comforting aroma to the space.
The walls exhibit floral arrangements that change according to the season; shelves with plants, natural textures and friendly lighting create cozy corners that invite you to stay and talk.
“Each table is unique, but it is the genuine service and the artisanal details that make each visit an experience that leaves everyday life on the other side of the door,” shares Marina.

TAI 38 is a bold exercise in culinary fusion, weaving an exquisite connection between the depth of Thai cuisine and the irreverence of Mexican flavors.
In just six months, their Thai-style cart (which travels around the town serving its dishes) and this small place have become a local hit. Yazmín López, the manager, summarizes one of the favorite menu items: “Definitely, Pad Thai is one of our most popular dishes. What we like most is that we make each of our sauces from scratch.”
That investment in homemade sauces makes all the difference, with the balance between sour, salty and sweet, textures and freshness of the herbs. Among the most popular dishes are the tacos in corn tortillas with curry and rice (a mix of Mexican tradition and the Thai profile) and the pork belly taco with its tamarind sauce, which combines sweet and sour with the juiciness of pork.
The drink bar plays with that same concept—cocktails that incorporate sake, plum liqueur and Mexican spirits. Not to be missed are the mezcalitas with Asian touches that surprise with their contrasting flavors.

IN THE Versalles neighborhood, where old houses serve as the venues for the new foodie and cocktail scene, is Cocomachete. Created by Anthony Spinelly and Yvette Skirrow Duran, this concept is inspired by classic cocktails infused with the vibrant soul of Mexico and the tropics.
At the end of 2022, this casual space opened its doors in a venue that has preserved the domestic feel of the house with wooden tables, warm lights and cozy corners for conversation. Its menu alternates between well-known drinks and those waiting to be discovered, where even mocktails receive creative respect.
Among their creations, the Xaxa stands out as a love letter to Mexico: fermented cacao, cinnamon, chile, coffee, agave honey and mezcal infused with cocoa butter. A drink with measured sweetness and a resounding personality.
A mix of locals, young entrepreneurs, and visitors looking for an authentic experience gather in this spot, creating a unique vibe.
Visiting Cocomachete is to discover a bar where music accompanies the conversation, and where the glasses are elegantly lit allowing you to see the nuances of each drink.

SANTO COYOTE has arrived in Marina Vallarta with the maturity of a brand that has been on the culinary map in Mexico for over twenty-five years. Founded in Guadalajara by Miguel Monroy, the concept embraces an aesthetic inspired by ancestral Mexico.
On the menu, corn takes a starring role. The culinary concept is centered around poultry, fish, meat and vegetables that combine traditional techniques with contemporary results. Christian Ferrawod, commercial manager, defines it clearly: “The restaurant offers a culinary experience that reflects the harmony of the five elements of nature within each dish, presenting the entire line in a great menu with multiple combinations.”

The restaurant occupies a grand house that is rich with history and pink quarry walls, antique wood furniture, and decorative pieces that pay tribute to the brand’s origins, for a vibe that mixes a sense of a home and a museum.
Santo Coyote also features the Santo Remedio boutique, which houses more than 1,800 labels of tequila in various vintages and styles, including El Gran Jefe, the house tequila, as well as Santo Remedio bottle, which is infused with chilcuague root (golden root) to enhance the flavor.

Over the last five years, Puerto Vallarta and Riviera Nayarit have enhanced the region’s theater scene. What were once low-key evening performances focused on winter seasons and casual audiences, have been transformed into an ecosystem of vibrant stage productions that run virtually year-round.
This entertainment boom has not happened by chance, but because of the work and growth of a network of performance venues, visionary producers and an expanding artistic community that has found a fertile ground to create and connect with an increasingly diverse audience in our area.
From intimate performances that mix cabaret, drag shows, live music and comedy, to large-format shows that rival world-class productions, our destination is solidifying itself as a scenic cultural hub in the Mexican Pacific.
In the entertainment world of our region, four pillars—ACT2PV, The Palm Cabaret and Bar, Coco Cabaret and Teatro Vallarta— sustain a cultural offer that attracts and showcases Mexican and foreign talents, reinforcing the idea that our destination is experiencing a rich theatrical moment in time.

ACT2PV was founded in 2013 to offer a space where local and international artists could develop and produce professional quality shows. The complex, which houses three venues for different types of performances, has become an indispensable pillar in our region’s cultural life. Its success is not only measured by the number of performances it hosts, but also by the diversity and consistency of its artistic offer.
For Cate Elizabeth, director of theater relations, the strength of ACT2PV has grown as the theatre established itself as a platform for talent and innovation: “Our philosophy has always been to open doors to performers who bring an honest, fresh and well-constructed production. Here artists find not only a stage, but a community,” she shares. This community is made up of singers, actors, directors, dancers and comedians who each year present a wide and changing billboard.
The variety of shows preformed on its stages is one of ACT2PV’s most distinctive hallmarks. With 59 different productions for the 2025-2026 season, the headliner
is the Chicago production (one of the longest-running musicals on Broadway), with which ACT2PV reaffirms its status as the only theater that produces full-scale musicals in the city. The lineup also includes the popular show The Best of Broadway.
The guest star cast is equally stellar, with high-profile international figures such as Frenchie Davis (American Idol), David Maiocco (Tribute to Liberace), comedian Tammie Brown (RuPaul’s Drag Race) and the Canadian Steam company.
Alfonso López, artistic director, explains that the growth of ACT2PV has been organic, but guided by a very clear vision: “The goal is to professionalize the scene and continuously raise the standard. If the audience finds quality, they come back. If the artist finds support, they come back. This is how the reputation of our theatre has been built.”
The recurrent presence of artists trained in musical theater, award-winning singers and comedians with international experience has contributed to positioning the venue as a hotbed and showcase of talent.
La cartelera también incluye el popular show The Best of Broadway

HAVING DRIVEN cabaret and live performances in Puerto Vallarta for over 25 years, The Palm Cabaret and Bar (along with Coco Cabaret, its sister space) continues to establish itself as one of the most vibrant performing arts venues in the city. Their commitment is clear—intimate, close and carefully curated shows that allow the public to experience the talent of national and international artists first-hand.
Mark Rome, the venue’s entertainment director, explains that the success of The Palm is, to a large extent, a reflection of the identity of the Vallarta audience: “Most of them are on vacation here, so they are looking for energy, humor, music and connection. They prefer memorable experiences.” This sensitivity to the audience preferences has defined an entertainment offer where musical tributes, comedies, drag shows, professional international vocalists and artists who find a platform to reinvent themselves.

For the 2025–2026 season, both venues will be presenting programming that reaffirms their commitment to high-level entertainment. With 36 different shows totaling 42 weekly performances, these venues focus on great vocals and high-quality tributes to icons like Bruce Springsteen, Beyoncé, and Pink. In addition, they will be celebrating the fifth anniversary of the acclaimed Freddie Mercury and Lady Gaga tribute shows. The stage will also host Karen Mason and Stephanie Pope, renowned Broadway stars, as well as Sam Harris, who is considered to be one of the 100 best voices in the world.
The creative energy expands even more in Coco Cabaret, as the venue has been able to expand its capacity and diversify the types of performances found on its stage. In this space, more daring and sensory shows are performed, where the closeness to the audience plays an essential part in the experience. AirOtic stands out as a dazzling aerial acrobatics show in the Cirque du Soleil style, which guarantees a visually unique experience.
The Palm and Coco Cabaret are venues where singers, drag performers, musicians, and comedians can build stable seasons, perfect their shows, and form lasting creative bonds. This dynamic has been key to professionalizing the cabaret scene in Puerto Vallarta.

AT THE opposite end of the spectrum, both in terms of capacity and scale, is Teatro Vallarta, the largest and most iconic venue in the region. With a capacity for over 900 spectators, since opening in 2010, this venue has been the host stage for national tours, international productions, ballets, operas and large-scale shows.
Its programming is a bridge between entertainment and cultural life, from symphonic concerts to professional musicals and productions that, in other circumstances, would only be seen in the country’s large cities.
For the 2025–2026 season, the theatre is planning an exceptionally diverse program. An example is Mayahuel, a cultural fusion turned spectacle that takes the audience through a pre-Hispanic journey. Through the story of the goddess of Maguey and Quetzalcóatl, the show combines staging, dance and an immersive tequila tasting experience, offering a complete vision into this Mexican legend.
Teatro Vallarta also revived glamour and nostalgia with Perfume de Gardenia, a cabaret show produced by Omar Suárez. With spectacular costumes and dazzling choreography, the cast is a true constellation of stars, with names like Aracely Arámbula, David Zepeda, Laura León, Lyn May, Jorge Salinas, César Évora and Aylín Mújica, among many others, and the live music of the Única Internacional Sonora Santanera.
The stage will also welcome former Broadway artist Kevin-Anthony, who will present Elevated, an extraordinary live concert that will fuse the power of soul with the 44-member Vallarta Symphony Orchestra and The Roxsand Band.

IN DECEMBER 2025, Vidanta World premiered LUDÕ, a permanent show developed by Cirque du Soleil Entertainment Group, solidifying Nuevo Nayarit as a new hub for stage entertainment.
For Daniel Lamarre, president and CEO of Cirque du Soleil Entertainment Group, the creation of LUDÕ represents “a celebration of the human imagination and an invitation to experience wonder from a completely new perspective.” This show combines theater, music, acrobatics, and immersive technology with Cirque du Soleil’s undeniable hallmarks of visual poetry, technical precision, and immersive narrative.
Iván Chávez, executive vice president of Grupo Vidanta, emphasizes that this project “marks the beginning of a new era of entertainment in the region, where scenic innovation will be an engine to attract visitors from all over the world.”
LUDÕ establishes a large-scale benchmark with international impact, while complementing the existing theater scene, generating a halo effect of more visitors, more media attention and greater recognition for local venues.

When your vision of a forever home in paradise is an all white treehouse in the jungle, we are with you every step of way. This is Destination Design. Simplified.

“OMG!! We just arrived. Thank you so much for the car service, it was perfect and much needed with the dogs and luggage. Big hugs coming your way. ABSOLUTELY LOVE LOVE IT. Thank you to the entire team! It is absolutely perfect. I love it all so much.” –JH, Idaho Investor, Punta Sayulita MX

(Swimming for Whales)

“When you see a whale freed thanks to a collective effort, you understand that all this work is worthwhile.” —Stephanie Montero, director of Nado por las Ballenas.
Banderas Bay is a place where passion for the sea is transformed into action. This is evident in Nado por las Ballenas, an association born from the desire to turn a sporting endeavor into a social and environmental purpose.
A visit to our destination and contact with ECOBAC (an association dedicated to the rescue of entangled whales) motivated Stephanie Montero, an open-water swimmer, to found this organization in 2023. Her first major event was swimming across the bay, a feat that took over 14 hours to cover a distance of 37.5 kilometers, raising more than half a million pesos which were donated for the conservation of cetaceans and the marine ecosystem.

(San Pancho Bird Observatory)
“With our work, we seek to ensure that San Pancho continues to be an example of how education and conservation go hand in hand.” —Luis Morales, director of the Observatorio de Aves de San Pancho
The Observatorio de Aves de San Pancho was founded in 2011 with a clear mission: to study and protect the endemic and migratory birds of Banderas Bay, while simultaneously fostering a culture of conservation deeply rooted in the community.
Luis Morales, the project’s director and one of its original proponents, recalls that beginning as an act of collective responsibility: “We wanted to combine scientific research with citizen participation, so that people would take ownership of their natural environment and learn to value it,” he explains.
What started as a small effort by volunteers and ornithology enthusiasts evolved over the time into a solid and recognized civil association committed to environmental education, scientific monitoring, and responsible tourism.

Its work is sustained by a diverse team of volunteers, students, researchers, and residents who, year after year, participate in conservation programs, educational workshops, and public activities ranging from environmental fairs to guided tours. This constant effort has generated tangible benefits for the region: increased ecological knowledge and a decisive boost to ecotourism.
One of their most important annual activities is the San Pancho Migratory Bird Festival, held every October, which has become a key meeting point for national and international birdwatchers. “Seeing how the new generations become interested in birdwatching is, without a doubt, one of our greatest satisfactions,” he affirms.
Looking ahead, the Observatorio de Aves de San Pancho recognizes that protecting nature is not only an act of conservation but a valuable legacy for future generations. With this premise, the association plans to extend environmental education to many more communities. Its main vision is to sow a profound ecological awareness. “If we manage to get one person to look up at the sky, recognize a bird, and feel that it is worth protecting, we will have fulfilled our mission,” Luis concludes.
(Children’s Circus)

“In addition to offering high-quality, accessible artistic training, this project is a tool for human and social development.” —Itantehuitl Barona, general director of Circo de los Niños
Circo de los Niños has consolidated itself as one of the most influential social and artistic projects in Banderas Bay. Founded in 2011 by the initiative of Gilles Ste-Croix, co-founder of Cirque du Soleil, and his wife Monique Voyer, the project began as an effort to raise funds for the EntreAmigos Community Education Center. That first performance (“When Dreams Didn’t Exist Yet”) marked the beginning of an initiative that understood circus arts not as mere entertainment, but as a profound path for human development.
With the support of international artists, volunteers, and Cirque du Soleil’s Cirque du Monde program, this organization evolved into a formal school in 2014-2015, when its current warehouses were renovated and a specialized space for dance and circus arts was created.
Today, Circo de los Niños operates with four main programs that cater to all ages: The Kids Circus School offers evening training in acrobatics, dance, juggling, and aerial techniques; the Adults Training bring together a diverse audience that finds a space for wellness through movement; the Circus for All project brings free workshops to underserved communities; and the Compañía Madrugada (Dawn Company) participates in professional events both within and outside the region.

General director Itantehuitl Barona, who dedicated eight years to teaching aerials before assuming the leadership role, explains: “The impact is palpable: for children, the circus becomes a daily exercise in teamwork, tolerance, creativity, and coexistence. For adults, it functions as a bridge to physical and emotional well-being.”
Its most prominent event is the Annual Fundraising Show, which brings together over 40 children on stage. Scheduled to take place from March 25th to 28th, 2026, parents, local businesses, and volunteers combine efforts to make this grand presentation possible.
Circo de los Niños looks to the future with a clear vision: to strengthen its social program and continue professionalizing the performing arts in the region.

(Vision 33)
“Supporting a cause like this helps you to understand the direct impact that finding discipline, education and purpose can have on a young person.” —Alexis Silva, director of Visión 33
Historically, sport has served as a powerful tool for social integration. Based on this idea, Visión 33 was born—a ten-year initiative (from 2023 to 2033) designed to transform the lives of young people through soccer and everything this sport entails: character building, discipline, and a sense of purpose.
The origins of Visión 33 can be traced back to the work that Ignacio Báez began in 2019 with the Puerto Vallarta Futbol Club, a team playing in Mexico’s Liga TDP (Tercera División

Profesional). The club operates under an uncommon principle in professional sports: adopting the US sports model, where players continue their academic studies and learn English while training.
This impact caught the attention of Alexis Silva, who witnessed firsthand the formative process his own children were experiencing within the club. The involvement of René García Cornejo—an expert in managing university athletic scholarships in the United States—completed the puzzle.
“That’s when we realized the genuine opportunities we could create,” Alexis recalls.

Then Alexis invited Ricardo Del Muro, a Vallarta resident by adoption with a long history of involvement in social causes, to join the project. Having witnessed the discipline, camaraderie and developmental potential that emerged on the field, the two men identified a clear starting point.
Today, the association stands on three pillars: the PV Soccer Academy (coordinated by René), the Puerto Vallarta Futbol Club, and a comprehensive guidance model that begins between the ages of 8 and 10, with pathways that may lead either to professional play or to a university scholarship. Its mission is clear and compelling: to offer platforms attractive enough to keep young people focused on a constructive path and away from options that could hinder their development. In addition to strengthening the High-Performance Center they have already begun in Mezcales, Nayarit—complete with its own professional field— the organization is planning a Comprehensive Community Development Center (which will include additional disciplines) and a self-sustaining model supported by the community itself.
“Visión 33 reminds us that true development begins on the field but is cemented within the community. Its legacy, which is still being creating, points toward a stronger, more united Puerto Vallarta with greater opportunities for its youth,” concludes Ricardo Del Muro, director of Visión 33

“Skateboarding is a sport that allows us to promote positive values. It’s also a multidisciplinary activity that combines art, music, and creativity.” —Javier Hernández, operations manager of Vallarta Skate Project
Skateboarding has carved out its own language within the urban culture of our destination. Since 2016, Vallarta Skate Project has championed this movement— an initiative born from the community and dedicated to transforming public spaces into real opportunities for children, youth, and families across Puerto Vallarta and Bahía de Banderas.
Its roots trace back to Punta de Mita, when Rebecca Scotti, Emilio Fernández, and a group of local skaters built the first ramps under the name Build Ramps Not Walls. Within the politically polarized context of that time, the concept evolved into a powerful message that inspired a short film showcased at international festivals (including Cannes) and paved the way for a broader vision. By 2018, the project adopted its current identity, focusing on one essential mission: creating safe places to skate and nurturing a vibrant local skate scene.
Today, the project orchestrates a network of initiatives ranging from park rehabilitation to structured learning. Spaces such

as the skate park at the Estadio (Unidad Deportiva “Agustín Flores Contreras”), the revitalized Riomar Skate Park at Parque Lineal (developed with support of Vans Global), and a dedicated zone in Ixtapa are the result of years of collective effort, local design, and community commitment.
La Escuelita de Skate is another cornerstone of the project—a program for children as young as four, led by fairly compensated instructors and grounded in safety, creativity, and holistic development. This is complemented by activities that broaden horizons, such as the organization of national competitions and opportunities for young skaters to learn from internationally renowned professionals who come to the bay to mentor and inspire them through the Mentorship Project. Together, these efforts show that skateboarding can be a true platform for personal growth.
“The most important thing is what happens beyond the ramps: young people find a sense of belonging, and girls discover a safe space. Meanwhile, communities come together to build and maintain the parks themselves,” concludes Rebecca Scotti, founder and director of the project.
(Clean Your Sea)
“Through this environmental project, our legacy will be to leave the ocean better than we found it.” —Rigoberto Pedroza, president and founder of Limpia tu Mar.
Limpia tu Mar is a civil association dedicated to protecting and conservating Banderas Bay and its surrounding areas.
Its origin dates back twelve years to the open-sea trips shared by Rigoberto Pedroza and captain Fermín “Chipol” Guzmán. On those outings, a simple gesture was born: picking up the waste they encountered, which over the years transformed into a mission.

The association, formalized in 2022, is strengthened by essential collaborators such as César Chavarín, Fernanda Chavarín, and renowned photographer Samuel Reséndiz. Their work combines cleanups of the sea, beaches, and rivers with a solid educational component that includes workshops, consulting, and the Zero Waste program, an initiative focused on minimizing trash generation in restaurants.
The impact is twofold: preserving biodiversity and projecting a tourist destination that is conscious of its environment. Among their most notable events is the International Trash Fishing Tournament, which in October 2025 brought together 34 boats and over 200 participants to collect 3.5 tons of waste.

(Students Conserving Nature)
“Conserving nature is conserving the legacy we leave for those who come after.” —Alejandra Monsiváis, general director of Estudiantes Conservando la Naturaleza
Estudiantes Conservando la Naturaleza has become a key player in protecting one of Puerto Vallarta’s most unique treasures: the Vallarta Mud Turtle (Casquito de Vallarta), the world’s smallest micro-endemic freshwater species, whose survival depends directly on the protection of urban lagoons.
The association was born in 2019 from the doctoral project of Taggert Butterfield, now its scientific director. His interaction with young people from rural communities across Mexico and his interest in continental turtles (a historically overlooked group) inspired a scholarship program that soon evolved into a formal organization. Together with Alejandra Monsiváis, general director, they cemented a mission that unites science, education, and youth development.
Their main actions include monitoring, rescues, and habitat restoration, as well as environmental education projects that have reached nearly 9,000 students. The Guardianes de la Casquito (Casquito Guardians) initiative has promoted murals, comic books, and school talks that contribute to the turtle’s conservation.

A Free Kitchen between the Ocean and the Mountains

Josué Martínez and Sebastián Renner met fifteen years ago in the kitchen of The St. Regis Punta Mita Resort, where they began a collaboration that has extended across several culinary projects. After working together in Guadalajara, they returned to Banderas Bay in 2016 to open the Makai restaurant, where their professional affinity and love for the ocean led them to create Mauka, a concept that they have perfected with absolute dedication.

of Careyeros Beach in Punta de Mita is home to Mauka, a restaurant that opened in February 2025 with a powerful idea—to unite the ocean and the mountains through a free kitchen, without labels or geographical limits. Facing the Mexican Pacific in a space conceived from scratch to harmonize with the environment, chef-owners Josué Martínez and Sebastián Renner have created a culinary concept where creative freedom, respect for the product and cultural fusion coexist with casual elegance.
Mauka is a balance between sophistication and freshness. The space, designed by architect Guillermo Michel and decorated by Karina Tinajero, combines natural materials, warm lighting and a setting that allows you to feel the proximity of the ocean without losing the intimacy of the dining room. The service is attentive but relaxed, with a team that flows between tables to describe cooking techniques, suggest pairings and guide the diner through a menu that evolves season by season.
The wine list, curated by Sebastián, is extensive and precise, while the cocktail bar offers creations that highlight tropical and botanical ingredients. However, it is the dishes that bring the true character to the restaurant.

ROMESCO SAUCE This dish is a creative reinterpretation of a Mediterranean classic. The shrimp meatballs—firm, juicy and aromatic—rest on a romesco sauce enhanced with Mexican dried chiles, which add depth and a smoky touch without losing the Catalan essence of roasted tomato, olive oil and almonds. Fire-baked peppers, baby potatoes and tiny tincuiche shrimp from Huatulco bring texture, umami and a nod to Mexico’s Pacific coast. It is a collaborative creation, conceived by several ideas and hands, which represents the essence of Mauka: technique, sensitivity and flavor.

OIL ICE CREAM To close with a flourish, this dessert combines delicacy and character. The chocolate cake has a soft and exquisite texture, which is enriched by the olive oil ice cream made on a vanilla base. Its sweet, round and slightly fruity notes merge with the chocolate, while the sea salt provokes an exhilarating contrast. This elegant finish with a marked Mediterranean spirit.

@mauka.restaurante

Cocktail Class with Mexican Spirits
Detrás del Jigger: Clase de Coctelería con Espíritus Mexicanos

WE ARRIVED AT OSTO Room on a Friday at 6:00pm, when the amber tones of the sky were slowly beginning to fade between the buildings of El Centro. We pushed open the door and climbed a staircase feeling, for a moment, that we were crossing into another time. Once in the waiting area, a warm glow revealed an old house elegantly remodeled with earthy textures and dim lighting that highlighted the decorative elements.

We looked at each other with amazement and curiosity. The air had a faint scent of citrus and herbs, a smell that came not from a drink served, but from the fact that the place seemed to be alive, as if infused with liquid memory.
Jeremy Albelda was the first to approach us. He had the natural smile of someone who enjoys receiving people into their home, and he extended his hand to welcome us. Then he offered us raicilla and said that a toast was part of the entrance ritual. As we toured the place, we noticed that his presence had an exact mix of warm hospitality and quiet security—the kind that comes from a person who knows exactly why they are there.
Then Carlos Unger appeared, with the calm aplomb of an observer who notices every detail. While Jeremy explained how the idea of bringing the concept to Puerto Vallarta had come about (an evolution of a previous project in Mexico City), Carlos intervened to complete the story, describing the intention to create an intimate, almost sacred space. “We wanted it to feel like a contemporary cave,” he said. “A refuge.” His words resonated as we caressed the walls finished in chukum, an elegant natural finish.
But the real entrance on the scene occurred moments later, when Alex Ainsworth came out from the back with a cocktail shaker in his hand. Its energy changed the atmosphere to something more specific. There was a serene, almost ceremonial concentration in it. Everything that was about to happen depended on his guidance.
The table was ready: jiggers and shakers lined up, bottles of Mexican spirits and small trays with herbs, essences and fruit slices. The utensils glistened in

the amber light, as if expecting a perfectly rehearsed choreography.
Alex started the class without haste. He spoke about the ingredients, but above all, about the reason for each one. He explained that a cocktail is, before a recipe, a decision: how much acid the liquor allows to breathe, what type of sweetener builds structure, and what texture is created when shaken and not when stirred. His voice had the tone of the teacher who refuses to impose; proposing, suggesting and guiding.
The first preparation was a Margarita, but not the one you think you know. Alex asked us to use the jigger to measure each of the ingredients: “Balance is what holds everything together,” he said. Pour them into the shaker, add ice and cover it with a lid.
“We’re going to shake it carefully, just to refresh the drink.” When we served it, we noticed that the liquid had a different shine, a consistency that invited us to taste it. “Sometimes, the simple thing is what surprises us the most,” he told us, watching us as if he enjoyed seeing how each one of us discovered our own wonder.
Then we moved on to the macerated cocktail, which was freer and everyone could choose their own ingredients. Carlos watched from the head table, fascinated by how even those who had never prepared anything at home were encouraged to experiment with slices of jalapeño chile, strawberry or pineapple. “Technique represents 70 percent of the preparation of a cocktail,” Alex said. “But the remaining 30 percent is creativity. It’s what connects you to your own essence.”
We found ourselves adding ingredients that we would never have considered before. The result was surprising, not so much because it was perfect—obviously it wasn’t—but because we understood why we had come up with that combination.
Throughout the entire experience, the conversation with the three partners was as eye-opening as the workshop itself. Jeremy talked about the importance of authentic hospitality, the kind that transforms an entire trip. Carlos told us how OSTO Room

Vallarta · Nayarit has now made a qualitative leap in healthcare services with the arrival of one of the most advanced life-sustaining therapies available today: ECMO Therapy, now available at CMQ Hospital thanks to the recent international certification of its medical team.
With this achievement, this critical care will not only save lives, but inspire confidence in residents and visitors, as well as in the growing community that chooses Banderas Bay as a safe place to live and visit.
ECMO: A THERAPY THAT MAKES A DIFFERENCE
ECMO (Extracorporeal Membrane Oxygenation) Therapy is an advanced life support technique used when the lungs or heart stop working properly. In simple words, ECMO acts like an artificial lung or heart, oxygenating and circulating blood through the body while the affected organ recovers naturally.
Its advanced sophistication is such that only a limited number
of hospitals in Mexico have the technology, certified personnel, and infrastructure to implement it safely. It is a tool that has contributed to changing medical outcomes for patients around the world and is now integrated into our region’s healthcare system.
Behind this technological advance is a team of specialists committed to innovation, who recently obtained certifications in ECMO and percutaneous cannulation during intensive training in Santander, Colombia, which is endorsed by the Extracorporeal Life Support Organization (ELSO), the leading international authority on this type of therapy.

This diversity of specialties is essential, as ECMO Therapy requires absolute coordination, as each decision can impact an outcome.
The intensive educational and training program in Colombia combined theory, advanced simulations and real application training. Clinicians were trained in ECMO candidate identification, system installation, complication management, and ongoing follow-up.
More than a course, it was a complete immersion in modern critical medicine, designed so that each team member can act with precision in the most complex of scenarios.
Shortly after their return, the team applied the therapy for the first time. The patient was an 18-year-old involved in a motorcycle accident. He arrived at the hospital in critical condition, with severe internal injuries, kidney damage, liver compromise and a coagulation condition that further complicated his condition.
After several hours of surgery without significant improvement, the team decided to implement the therapy. It was a risk, but also

the only real opportunity. “As soon as he was connected to the system, his oxygenation improved immediately. Thanks to this timely intervention, the patient survived and was able to make a full recovery,” comments Dr. Nuria Ayala.
Another case would further reveal the scope of this therapy: for the first time in the region, the cardiothoracic surgeons at the CMQ Hospital performed a Bentall Procedure, one of the most complex cardiac surgeries in modern medicine. The patient, a 67-year-old man with infective endocarditis and a periaortic abscess, underwent surgery for complete replacement of the aortic root and valve, in addition to reimplanting the coronary arteries.

After a surgery that lasted more than ten hours, the severe compromise of his heart and lungs demanded immediate action, so the team activated veno-arterial ECMO support. “A timely start was what allowed us to stabilize him and more importantly, give him a real chance to recover,” emphasizes Dr. David Hernández.
With this pair of successful procedures, it is clear that ECMO Therapy is marking a before and after in local medical care.
Before this technology was available, patients who required ECMO had to be transferred to Guadalajara, Mexico City or Monterrey. In addition to being costly, it involved significant risks: long wait times, pressure changes, clinical instability, and a race against the clock where every minute is crucial.
With the advent of ECMO Therapy and a multidisciplinary team prepared to implement it, both the CMQ Riviera Nayarit Hospital and the CMQ Premiere Hospital are consolidated as benchmarks for innovation and medical excellence, with a human commitment driving each clinical decision.
