What to eat?
Peru has been named Best Culinary Destination in the World for six consecutive years (2012-2017), and Lima is known as the gastronomic capital of Latin America, as it brings together and enriches coastal, Andean and jungle traditions — many of its restaurants are among the best in the world (50 Best). The creativity and skill of its chefs play a significant role, but so do the variety and freshness of the ingredients.
Iconic dishes, such as lomo saltado, also express this pairing; while ceviche, arroz con mariscos, and conchitas a la chalaca pay tribute to the sea that washes the coast of the city. Maíz morado (purple corn) acquires its maximum expression in the form of mazamorra and chicha morada. In Lima, you have to try ají de gallina, anticuchos, causa, and cau cau, and desserts, such as suspiro a la limeña or picarones. In the capital, the content of each dish, served in the simplicity of a market bar or in a sophisticated restaurant, is an endless recipe.
