Bitter Valentine Turns 10

Alewerks Brewing Company’s seasonally celebrated Bitter Valentine turns 10 this February 14, and the Williamsburg brewery is going all out with branding merchandise.

“The goal every year for Bitter Valentine merch is to create something that feels new while remaining loyal to the grumpy cupid irrevocably bound to this beer,” said Michael Claar, Alewerks’ Operations Director. “Our team has done a spectacular job of modernizing the Bitter Valentine imagery while remaining faithful to the original inspiration. This year, we have two new T-shirts and a gorgeous fullcolor glass that is selling out fast.”

Bitter Valentine is a lovely DIPA and is Alewerks’ best selling beer packaged in 16-oz cans. This year, there are four variants: the return of Hazy Valentine and Strata Valentine and the newest siblings, Sabro Valentine and Lil’ Bitter, a more sessionable 5% IPA in 12oz cans, available exclusively at the main taproom and the Alewerks L.A.B.

“There is a perfect balance of richness without being too heavy and citrus without being too fruity,” Claar said. “Bitter Valentine is brewmaster Geoff Logan’s masterpiece.”

Hardywood Rebrands

Hardywood Park Craft Brewery has cut down the longstanding tree logo as its deep-rooted brand identity and opted for a sheered red sheep trotting on what looks like a barrel.

Brand re-fresh initiatives are somewhat common among craft breweries in an effort to appear fresh and new. Starr Hill, Legend, and others led the way in Virginia. Hardywood, founded in 2011, used its 10th anniversary year to birth the idea.

Owners Patrick Murtaugh and Eric McKay spent time on a sheep farm in Australia, where they discovered hand-crafted beer made by the farm’s owner, David Crawford. Hardywood was the name of the farm.

“We love that our new identity speaks to where we come from, but we also believe it points towards our growth. Simply showing that we have evolved as a brand and are here to stay,” said Murtaugh.

Hardywood Park Craft Brewery’s success in Richmond and beyond has been anything but sheepish. If anything, the new logo gives the brewery a more European vibe. We wonder if they might hang a little plastic sheep around the bottle neck of each beer like Celebrator.

Reason & Champion Merge

Reason Beer and Champion Brewing Company have merged, though each brand and its recipes will remain unaltered.

“It’s an exciting opportunity for two like-minded local companies to combine to be better together,” said Champion CEO Hunter Smith. “Both brands are community-focused and philanthropic; it will be incredible to see our joint impact. Champion and Reason also have complementary beer portfolios and we look forward to seeing each other’s success under one ownership and management team.”

Water’s End: Where Chicken & Beer Meet

Water’s End Brewery announced plans to expand into downtown Fredericksburg in partnership with Hot Chickn Kitchn. The brewpub will be housed in Fredericksburg Square, a circa 1854 former townhouse with two ballrooms and high ceilings.

This will be Water’s End Brewery’s third location. It also operates taprooms in Lake Ridge and Potomac Mills.

New Historical Brew

Blue Mountain Brewery is partnering with the Thomas Jefferson Foundation to create Monticello Mountain Ale. Aside from an April release date, details — including the recipe — are being kept under wraps. Look for our feature on the ale in our April/May issue.

A Local Boy Selling Local Beer

Tommy Cawley was born in Alexandria, grew up in Fairfax Station, and went to Woodson High School. So, it seems pretty apropos that he would end up a sales rep for a Northern Virginia brewery, Ashburn’s Lost Rhino Brewing Company. As a beer drinker, early favorites included beers from Baltimore’s Union Craft Brewing and Salisbury’s Evolution Craft Brewing, but over time his choices came from closer to home, such as from Solace Brewing Company, Ocelot Brewing Company, and Port City Brewing Company – all NoVa breweries. The other thing Tommy realized was he wanted to work in an industry where he could expect to interact with customers as part of a job.

That latter realization led Tommy to Coastal Carolina University in South Carolina, studying Resort & Tourism Management and working for Marriott. After college, a neighbor back home provided an opportunity at a company that handled transportation logistics for sporting events, trade shows, and similar affairs. The job meant hard work for 14 to 16 hours a day, but it was exciting and allowed him to travel and meet famous people such as Mark Cuban and actor Jon Hamm of Mad Men. Eventually, Tommy was ready for something a bit less demanding, but working as an IT recruiter proved not a very good fit and after one cold call too many, it was time to move on. Even during that time, there had been side jobs as a server or bartender and then, a new opportunity arose in that a coworker was the son of Bruce Catts, owner of a Foster’s Grill location off Eisenhower Avenue in Alexandria, VA. Bruce was impressed enough by Tommy to offer him the General Managers job even though Tommy had limited work experience compared to a normal GM’s resume.

So…it worked. Tommy learned quickly and enjoyed the challenge. He particularly enjoyed being able to change a bland tap list where Yuengling was the most interesting offering to a list including NoVa beers from breweries such as Port City and old favorites such as Evolution. Beer sales increased 200% compared to the previous year and Tommy and the owner noticed the life injected into the evening crowd, leading to adding extra draft lines. Then…COVID. A major nearby source of business, the Patent & Trademark Office, transitioned essentially all its employees to working at home, a huge hit even before taking into account all the other pandemic effects. Tommy’s hours dropped to around 20 per week, working on skeleton crews which allowed less time for the fun interaction with customers Tommy enjoys so much. Despite how he enjoyed his time at Foster’s Grill, he started considering options.

Enter an ad for a sales rep position with Lost Rhino. Interviews with company President Dave Hoffman and a sales manager followed. When a quick job offer didn’t happen, Tommy was persistent. He knew he didn’t have the craft beer experience of some but he liked the idea of working for a well-established company with strong brand recognition, and the vibe he got of a company where one wasn’t a small cog in a very big machine (a feeling reinforced by Dave Hoffman occasionally joining employees like Tommy to meet with and talk to folks reps like Tommy interact with on the job). Initial time was split between working the tap room (to better learn the products he sells) and

training for the sales rep position. The job has the challenges you would expect when you cover an area that includes potentially 1,500 accounts, but Tommy enjoys it. Working events like tap takeovers or tastings at places such as Total Wine adds additional variety and Tommy tells me, “I like that Lost Rhino does charity events where I get to spend time with people like [former Washington Redskin] Fred Smoot.” A normal day means visiting 15 to 20 accounts and doing a job he was meant for. That makes those days very good days.

with the In Love

Competition

They met over beer, their wedding reception was held at a brewery, and now, they both work full time for two different beer distributors based in Northern Virginia.

Yes, Matt and Kelsey Totman of Leesburg clearly have found a common tie that binds: a love for beer.

Originally from California, Kelsey moved to Virginia in 1999. After attending Clarke County public schools, she earned a Bachelor of Science in Nursing from Shenandoah University. “I never seriously pursued nursing,” Kelsey explains. “It was bad timing.”

Instead, she fell in love with craft beer working as a bartender at Dogfish Head Alehouse in Fairfax. “I went on to be the bar manager at Leesburg Public House. In January 2015, I was bartending there when Matt came in for a Miller Lite and a burger.” Matt, who graduated from Loudoun County high and worked in Purcellville most of his career, was co-owner of Purcellville Marketplace from 1995-2017. They were both “locals” with common friends and had met briefly. Then Matt stopped in. “We just talked and he asked if I’d like to go grab a drink after my shift,” Kelsey says. “We met at a TGI Fridays afterwards.”

They married in San Diego, California on the beach in 2017. “We had our wedding reception at Ballast Point Brewing,” Kelsey says. “We had small events set up, kayaking in the ocean, lunch at Stone Brewing, and small get-togethers leading up to the wedding. After that, Matt and I spent a week in Punta Cana in the Dominican Republic.”

Matt was working at Public House with Kelsey when he met the on-premise manager at Premium Distributors of Virginia and applied for the job. Kelsey followed suit in October 2019 and joined Hop and Wine Beverage. She says, “ I knew a lot of the guys from Hop and Wine from my years as a buyer and I have always had an appreciation for them and their portfolio. I worked most of my life in the restaurant business but was looking for a change in schedule and work-life balance.”

Although they work in the same industry, their companies operate in very different ways. Kelsey says, “Hop and Wine focuses on smaller, more boutique breweries and works with them to grow their brand, while Premium has well-known brands that have already made a big presence in the market. Both companies are unique and essential in their own ways.” Premium sells and distributes the largest portfolio of import, craft, and domestic beers in Virginia, according to its website. They deliver 19 million cases of beer each year to more than 7,600 retailers across 26 counties in Virginia.

With so many beers to choose from, Kelsey says picking a favorite is tough. “Dogfish Head was the basis of my craft beer

knowledge and education. Maine Brewing was one of our first trips together and they make great beer. Solace is local and delicious! I feel like we work hand-in-hand with our breweries. We are all out here with a common goal to sell great beer! I would say our more local breweries are my closest “partners” because they are boots on the ground with us day-in and day-out. They are always willing to meet up and hit accounts or host our company at the brewery. We all work hard but we have fun. Solace, Port City, Aslin, Ocelot, and Mustang Sally have great local spots.

Matt likes craft beers also, but clearly has a traditional favorite. “Miller Lite. It’s my go-to, tried and true,” he says. “Lagunitas has a great vibe and has a great location in Chicago. Ballast Point I like because it’s where we celebrated our wedding. But, Miller Lite has always been a staple in my life: They call me ‘Miller Matt.’ I’ve also enjoyed getting to know more local breweries like Old Ox, Atlas, and Fair Winds Brewing Company. I’d say we are more of a partnership.”

Their exact “beer jobs” also differ. Matt says, “My job is based solely on-premise while Kelsey is a hybrid account manager and deals with wine along with craft beer.” Kelsey agrees, “A typical day for me starts at grocery stores. We merchandise and write orders then move on to convenience stores and bars and restaurants. There’s always something new to do. We write orders, plan events and deal with any issues our accounts may have with kegs or draft systems.”

Despite working for different companies in the beer industry, they do not see any professional conflicts. “We technically are competitors,” says Kelsey. “But, I like to think a rising tide lifts all boats.”

beertenders

Our popular, annual feature "Beertenders We Love" is back! A beertender (bartender at a brewery) can make or break your craft brewery experience. Beertenders are at the frontline of the brewery - the friendly face serving your beer and providing in-depth knowledge of the selections on tap, often providing recommendations to the novice or adventurous beer drinker.

As a salute to these all-important employees, we asked our fans on social media as well as those in management/ownership roles across Virginia to share with our readers their favorite, outstanding beertender.

Haley Williams Legend Brewing Co., Richmond

Over the past three years, bartender and server Haley Williams has made quite an impact on Legend Brewing Co. Her extensive beer knowledge and welcoming demeanor has made her a crowd favorite at Legend. Haley is charismatic and passionate, and her positive attitude will make anyone feel at home when visiting the Pub. When she’s not behind the bar, Haley can be found getting creative designing chalkboard signs and custom mugs for Legend’s Mug Club members. She’s become a familiar face that everyone looks forward to seeing. Whether she is pouring beers, laughing with guests or helping the company and those around her, you can be sure that Haley will provide a true craft beer dining experience.

Sam Rahsman Parkway Brewing Co, Salem

Sam Rahsman is undoubtedly a beertender that has been loved for many years among the Parkway Brewing Company family. Sam has worked in the tasting room since 2015, and his humor has provided endless laughs and good times. Always good for a joke and a cheers, Sam is someone deeply cherished by customers and staff alike. When not behind the Parkway bar, Sam spends his time perfecting his cooking talents, spending time with his family, and of course being goofy with his girlfriend Kristine (another beertender we love!) and their adorable Australian Shepherd pup Luna. We are so lucky to have Sam at Parkway Brewing Co. for all these years, and know he will always be part of our family no matter what path his life takes.

Manny

Moreira Starr Hill Brewery, Charlottesville

Manny has been a rock-solid beertender who has been with our downtown taproom since the very beginning. Not only does he go the extra mile by unloading and putting away kegs, but he also hosts our fabulous weekly trivia nights. While sometimes sporting an electric Mohawk, he’s best known for truly catering to our customers’ beer needs. He loves to offer samples until he arrives at the perfect beer brand for each guest’s unique character and style.

Ashlee & Morgan

COVA Brewing Company, Norfolk

Ashlee and Morgan are both so personable and knowledgeable on all our beers. They always give the customers a great experience whether they’re a new guest or have been here tons of times! These ladies know their beer and they love to share it with others.

Reyann Wintersgill

Bald Top Brewing, Madison Reyann, affectionately called Rey, is a graduate student, our social media manager and one of our Tap Barn servers. Rey is customer experience focused, a complete team player, and excellent communicator. Customers love her for her welcoming call-out as they enter our Tap Barn and for her beer knowledge. Having 20 beers on tap requires that she and her colleagues are up to speed on our daily offerings. She personifies Bald Top’s values and we are proud to have her on our team!

Matt O’Grady

Nansemond Brewing Station, Suffolk

Matt has been a staple of the brewery since he joined a year ago. Great conversations and excellent beer knowledge of the beers on tap! Come on down to Suffolk and say hello to him!!

Mackenzie Cowcer

Elation Brewing, Norfolk

MAC is the BEST beertender!

Upon entering the Elation tasting room, one might NOTICE THIS Bunyan-esque stature of one particular beertender. Approaching with eager caution, you’re greeted with an enthusiastic Hello! This HIGHLAND fellow is the first to give a ROSE to the ladies of Larchmont. Mackenzie, or Big Mac for short (Mac Daddy if ya nasty) has been with us since the beginning and is surely the beertender we love most!

Alexandria Pamp

Smartmouth Brewing Company, Norfolk

Alley is a rock star! She joined our Smartmouth team during COVID and has been a happy, smiley face behind the bar for all of our customers. She is always willing to lend an extra hand to anyone on our team and does it with enthusiasm and without complaining. She stepped up and was a leader when our team was without a manager, performing extra duties without being asked. While her other passion is her coffee (Pamp Coffee), she knows our beers and can help customers find the right style that they will enjoy. She has a way of describing them which makes them approachable for the newest beer drinker or the regular who is in every week. Our customers constantly comment about the cheerful beertender behind the bar. Go Alley!

Chris Rossie  Starr Hill Brewery Tysons Biergarten, previously Crozet & Charlottesville, Tysons

When we learned that Chris was moving to DC, we didn’t hesitate to offer him a position at our newest rooftop Biergarten. Chris has always been a favorite of our regulars, and he is fantastic at making each customer feel empowered to choose the beer that best suites their tastes. He’s patient, kind, and funny! He has been a fantastic addition to each taproom he has worked with, and we never want to let him go! He also sometimes gets confused as Ted Lasso, and he won’t mind if you call him by the popular show’s namesake.

Kailyn Henson

Settle Down Easy Brewing Co., Falls Church

Kailyn is one of our most tenured employees and delivers the VERY best service to our customers! She joined the team in January 2019, three months after we opened, and quickly became a FAN FAV! Her personality, charm, and beer acumen allow her to connect on a personal level with our staff and customers! She is the first to volunteer and the last one to leave, making sure the tap room is clean and secure! Our brewery is a better place when Kailyn is behind the bar! Customers come to the tasting room just to visit Kailyn! Cheers!

Marlene Seale Three Roads Brewing Company, Lynchburg

One of our favorite beertenders in Lynchburg is Marlene! Plan your next visit into the taproom and look for her infectious smile and positive attitude! She is a hard-working woman who is always ready to serve up a great conversation and even better craft brews. When you walk into the taproom and see Marlene behind the bar, you can be sure that your day will be infinitely better. We appreciate her consistency and commitment to the Three Roads Brewing family, and we would not be who we are today without her.

Shannon Waggoner Precarious Beer Project

Shannon gets a ton of love in the taproom and on social media. He not only bartends, but he is also co-taproom supervisor and has been at the Precarious Beer Hall since opening, after jumping over from bartending at The Amber Ox. We also just had him join us brewing a beer of his own in which his friend, artist John Airo, drew him for the label. He’s an allaround awesome dude who deserves the nod!

Kristin Robinson

Lost Barrel Brewing, Middleburg

Kristin has been with us since we opened. On many a day at Lost Barrel Brewing, hers will be the face that greets you at our front bar. With her friendly smile, it is no wonder many of our regulars know her by name. By nature, Kristin is sweet and patient, making customers comfortable asking questions, and taking their time with their beer selection. With her knowledge of our beers, Kristen always helps customers find their perfect choice. At Lost Barrel Brewing, we are proud to have such a great bartender provide a first impression.

Craig T.

Hawksbill Brewing Company, Luray

Rob

Schonberger  Port City Brewing Co., Alexandria

Rob Schonberger has worked at the Port City Brewing Company Tasting Room for over 8 years now. There is a huge chance that if you’ve gone on a Port City tour, Rob was the one giving that tour. We’ve loved watching him express his passion for the industry through his beer service in our tasting room. Always eager to share our ‘brewery magic’ with every guest that walks through the door and make every moment a teachable moment. His positivity and kindness are contagious, and we wouldn’t be the same without him.

Craig was born and raised in Luray, but he spent 12 years away in Seattle and Chicago, returning last year to join the team at Hawksbill Brewing Company. Since he is from Luray, he has the inside track on what makes the town so special, but his experiences make it easy to connect and talk with locals and tourists from all over about their travels. Beyond the customer connection, Craig says he enjoys being part of the brewery, “an amazing team that is invested and involved in the community, participating and hosting a variety of local events.” His favorite Hawksbill brews are the Bearfence Black Lager and the 7 Days a Wheat watermelon ale – both seasonal beers, but he is primed any time to make a recommendation that will suit any taproom visitor’s tastes!

Lexi has also taken the lead on keeping VBC’s chalkboard game on point, and our brewery is absolutely a more colorful place because of Lexi’s presence.

Ryan Steffen Beale’s, Bedford

Ryan joined the Beale’s BEER team on a BUSY Friday night in the summer of 2021. He came in for a shadow shift and inadvertently was tossed in the deep end. Lucky for us this man could swim and he’s been killing it ever since! Ryan had just moved from Cincinnati to Bedford with his husband John. Ryan said during his interview that he had been to Beale’s many times and always thought it would be fun place to work. That fun has only been amplified by Ryan’s presence not to mention outstanding customer service skills. Ryan has been an asset in every department. From bar to kitchen to brewery. Oh and that one time he filled in for our Pitmaster when he hurt his back. We are so thankful to have him on our team!

Helen Keeling

Big Ugly Brewing, Chesapeake

Helen is an original Big Ugly Beertender. It is often joked that she started as a volunteer and just never left. After almost 7 years, we could not imagine Big Ugly without her presence. She has a passion for craft beer and happens to be one of the nicest people we know. If you have ever met Helen, you know that she is absolutely obsessed with all dogs. She is the first one out from behind the bar with treats in hand to say hello and offer belly rubs. She is beloved by guests and staff. Her heart is as big as her personality and is always up to support a cause. She has shaved her head twice for St. Baldricks to support childhood cancer research. We couldn’t imagine our taproom without her.

Lorrie Thompson & Trystan Davies

Basic City Beer Co., Waynesboro

“Lorrie and Trystan are very warm and welcoming, greeting people with great big smiles as customers walk through the door. They take the time to get to know their regular customers, and often have their favorite beer just about poured as they hit the bar stool. I always look forward to seeing them when I stop in for a beer as I know they will make me feel at home and make me laugh.”

– Faith Mawyer

Nicole Barnett

Long Way Brewing, Radford

“Nicole is the Taproom manager at Long Way Brewing. She is friendly, funny, and the girl knows her beer! She’s also adept at blending brews! Huge part of that brewery’s success!”

– Jeff Klepping

Morgan Scott

Stable Craft Brewing, Waynesboro

Morgan heads up Stable Craft’s beertenders and tops off our farm fresh beer with a smile and a ray of sunshine - every time she pours a beer. Having worked in the F&B industry for over 14 years, Morgan’s professional demeanor and pleasant can-do attitude make her our Stable Craft Rock Star. On her days off, Morgan enjoys spending time with family and friends, reading a good book, and cooking. Her favorite beer of all time is the Night Latch American Stout from my favorite brewery.

Jake Starrrett

Lost Barrel Brewing, Middleburg

Jake is our part time volunteer firefighter and part time beertender. When he is in the building, he brings his smile and friendly personality. Not only do we love him, but our guests do too. He makes every customer interaction memorable, so much so that they always try to get him to sit and have a beer with them. Drop by yourself and you’ll see right away why he embodies the friendliness and fun loving environment we try to create at Lost Barrel Brewing.

Wes Cesafsky

Apocalypse Ale Works & Beer Garden, Forest Wes always does his best to provide an experience at AAW. Whether educating the customer on what they’re purchasing or quickly displaying his cunning sarcasm, he is truly a ‘one-of-a-kind’ experience. His service is fast, but not as fast as his banter. He’s a great friend, willing to listen to the serious conversations, but ready to lighten the mood with a joke. His authenticity is a lot like Gandhi- that is, if Gandhi routinely laughed at your expense. Made crude jokes and innuendos. And encouraged you to be less frugal.

Jenna Koon

Tradition Brewing Company, Newport News

Since joining the Tradition family in September 2020, Jenna has quickly become a standout behind the bar and behind the scenes. She was recently promoted to Lead Beertender and was added to our marketing crew in late 2021. She is quick to greet customers and assist with their beer selections. Her infectious smile and warm personality have helped her shine behind the bar. When not behind the bar, you will see her helping out at almost all Tradition events or working diligently on the company website and many other projects. Jenna enjoys visiting other breweries across the state especially those in her hometown of Charlottesville, VA. Jenna also enjoys attending concerts and spending time outdoors with her two rescue dogs, Ronan and Penny. You’ll find Jenna in the taproom every Wednesday and Thursday plus the occasional weekend evening.

Alex Langelotti

Gloucester Brewing Company, Gloucester

In 2020, Greg retired from a 40-year career in Corporate Finance and decided to “lean in” to his craft beer hobby. A home brewer for more than 10 years, and a craft beer enthusiast for even longer, he decided that the best way to spend his retirement years would be to find a “hobby job.” At first, he worked in a bottle shop, selling over 750 different craft beers, leading beer tastings, and filling growlers. However, he wanted to get closer to the source, and eventually found his way to Beltway, first as a bartender and a brewing assistant and then as Taproom Manager. His passion for craft beer and his knowledge of beer styles and brewing methods allows him to engage our customers in their own craft beer journey. Greg anticipates their wants and needs, and he is always one step ahead of making sure the guest is impressed and happy with their experience.

Alex is one of the veteran beertenders here at Gloucester Brewing Company. He has been with the company since the beginning, and he is known as the “go to guy” behind the bar.

He’s a hardworking, dedicated beertender and it shows through his craft beer knowledge. If you were to ask Alex what his favorite brew here at Gloucester Brewing Company is, without hesitation, he would tell you it’s our Shucking Good Oyster Stout. If he’s not working in the taproom, you can find him exploring other craft breweries in the area chasing the perfect brew.

WAR Craft Scores a Direct Hit

While the last few years may not have been the start to the contemporary roaring ‘20s that we all had hoped for, some brave souls have marched on, pursuing their dreams and entrepreneurship in one of the most challenging times to open new spots. Bradley Stepp, of WAR Craft Brewery in Culpeper County, did just that.

Opened in July of 2021, WAR Craft Brewery’s name incorporates an acronym (Winery At Rapidan). However, the name also relates to Stepp’s prior military service and he incorporates that into his brews as well.

“I was a counterintelligence special agent in the military, so a lot of our beers have cool names,” said Stepp.

The disabled combat veteran-owned business is a family operation that is not only a brewery but a winery and cidery as well, offering over 35 types of drinks in their tasting room. In addition to Stepp, his wife Amanda, daughters Cassidy and Madison, mother-in-law Elizabeth Haggadone, father-in-law Randy Haggadone, and family member Brennan King all contribute to the process of making WAR Craft Brewery work on their family’s property, Culpeper County Line Farm.

“It’s a dream of ours to have our own business,” Stepp said.

Prior to opening WAR Craft, Stepp had been home-brewing for 15 years but also worked at a variety of other breweries, including helping to open Adventure Brewing in Stafford. He and his wife paired his knowledge and passion for brewing with her extensive background in the service industry to create an experience for visitors to the brewery tucked away in Culpeper near the Blue Ridge Mountains.

“My wife comes from the service industry and is familiar with people’s taste and habits. I’ve traveled all over the world and I’ve noticed that people here are being conditioned to a low standard of craft beer and wanted to change that. We wanted to expand and explode what

WAR Craft Brewery is a hit with couples with its rural setting, wine, and low ABV beers.

people have expected from a craft brewery,” explained Stepp.

Stepp’s approach to brewing is about keeping flagship styles (eg, hefeweizen, IPA, stout) on tap, while also frequently changing the recipes and flavors. From additions like lavender to coriander, or a different flavor like for holidays, an oatmeal stout in Irish Whiskey barrels or flavors of gingerbread, Stepp enjoys experimenting and offering variety.

“We are always moving the target and the goalpost. I’ll keep a favorite style on but when that keg runs out - I don’t like to make the same thing twice. I won’t brew it again unless I really want to. I might brew another IPA - it just may be a little different. This is a place you want to go if you get bored easily and want a new thing to try. People are falling in love with renditions of every beer.”

Stepp is also passionate about maintaining the craft of brewing, ensuring that ingredients are as pure and local as possible, and that the labor is handmade, not machinated.

“If you’re not grinding it, not mashing it, and machines are doing it for you, it’s not craft. You also want to know that the grains and hops are from here and I do as much of that as I can. We do use our own well water, which is the best well water in the county and it’s kind of like Colorado, being next to the creeks on the mountain so you’re getting the best water.”

the HeartofTh

Stepp also focuses on making sessionable brews, noting that the brewery is in a spot with such incredible views, paired with the brewery’s rustic ambience, outdoor games, and quaint tasting room that guests will want to spend time enjoying the space.

“We’re not a corner bar. We are a boutique with small batch craft beers. When we started, we aimed low [ABV] — we wanted beers to be around 4%. Most breweries are 6% or more and then you’re bloated and you have to drive —- this is a place you want to spend hours in.”

Wine is part of the brewery’s acronym, but they aren’t producing their own just yet, with vines only a year and half old. However, they have partnered with Old House Vineyard as well as Effingham to provide high quality wine in their tasting room as well.

“We have a ‘93 96-point wine — you wouldn’t expect that here. Excellent Nortons and Merlots are here from those vineyards.”

In addition to an abundance of beer, wine, and cider, the brewery also offers up a number of food options. Their charcuterie can be a quality pairing for the beer and wine alike, but the brewery also offers a full BBQ menu including ribs, brisket, brats, pulled pork, pimento cheese, and flatbread pizzas.

While WAR Craft Brewery is still in its early stages, there are an abundance of future goals from continuing to expand their boutique tasting experience to offering new and exciting events. In addition, Stepp is applying for a distiller’s license with the hopes of using the farm’s fruit and other abundant crops to distill liquors like apple pie and butterscotch moonshine, apple brandy, wheat whiskey, bourbon, vodka, and gin.

In addition, WAR Craft has recently expanded its hours to be open later on Sunday, weeknights until 6 pm, and Friday and Saturday until midnight, but with the flexibility of staying open later if needed.

“If the beer’s flowing, we’re staying open,” Stepp says, enthusiastically.

Turning Compliance into Profit

Understanding the Regulations Allows for Innovation

Liquor look-a-likes have hit the shelves of Virginia convenience and grocery stores over the past few years, causing consumer confusion. Most people are aware that Virginia is a “control” state, in which packaged and bottled liquor is only sold by governmentowned and run Virginia ABC stores. Observing products such as Fireball being sold by wine and beer retailers has many people wondering, did Virginia law change?

The short answer is Virginia law did not change, but innovation is flourishing. Bottles of hard liquor are generally only allowed to be sold by Virginia ABC stores and Virginia distilleries with a distillery store privilege. Manufacturers such as wineries and breweries have grown smarter and more advanced in their development of new alcoholic beverage products. Many of these new look-a-like liquors are wine-based like the picture below.

1. Flash Point, which mimics a cinnamon whiskey, is cinnamon grape wine with natural flavors and caramel color.

2. Hobble Creek resembles a bourbon or whiskey, but is essentially a special select grape wine with natural flavor and caramel color.

3. Stroyski Premium looks similar to Smirnoff Vodka, which is sold in Virginia ABC stores, but it’s a Russian style premium grape wine with natural flavor added. Total Wine & More sells Stroyski online stating; Stroyski Premium 1.5L USA – Neutral flavor makes it the perfect addition to any cocktail.
