Mardi Gras on the Northshore is always a season to remember. From colorful floats and marching bands to families gathered along familiar parade routes, these celebrations continue to bring our community together year after year. In this issue, we look back at some of the moments that made this Mardi Gras season so special.
We are also highlighting another exciting part of our local community, the growing Business of Beauty. Across the Northshore, entrepreneurs in aesthetics, skincare, and wellness are building businesses rooted in expertise, care, and a desire to help people feel confident in their own skin.
Thank you to our community for allowing Social Northshore to be a resource that celebrates local business leaders, meaningful events, and the charitable organizations that continue to make this region such a special place to call home.

The idea for Garden Spot of Mandeville began decades ago when Judy King started growing ferns in greenhouses on her property, in Bush, Louisiana. Ferns take a while to grow to a size in which they are sellable and so Tommy, King’s husband, started growing vegetables to sell since they are faster and smaller. It was at this time he realized the potential of growing annuals and perennials and selling them to friends.
Word began to spread and people from all over started coming to the greenhouses in search of beautiful plants. They eventually had the idea to open The Garden Spot of Franklinton, an outdoor store created to sell locally grown, quality plants. The store became very popular, enticing people from all over and so the King’s decided to open a store in Mandeville to reach a larger audience.
Thus Garden Spot of Mandeville was born and today both locations are run by Tommy and Judy’s daughter, Sandy, and her husband Tony. Just as they started, annuals and perennials are still grown at the local greenhouses and both locations continue to serve their communities well with high quality, locally grown plant materials and expert customer service.
Garden Spot of Mandeville is a family-owned retail garden center, offering customers a wide selection of high-quality products. Our annuals and perennials are grown at our nursery located in Bush, Louisiana, and our shrubs and trees are sourced from local nurseries so you can rest assured that your plants are coming directly from the grower to you.

COUNCILMAN
CLeadership and community engagement have defined his trajectory. Larry began working at age 16, secured a full time job at 18, and never looked back. In 1999, he became a business owner, operating LA Logos and Promos in Covington for 18 years. Today, he serves as Director of Sales and Marketing for La Prints and Promos. His entrepreneurial background continues to inform his common sense, business minded approach to government.
Among his proudest accomplishments is founding and organizing Carnival in Covington, later rebranded in 2023 as the Krewe of Bogue Falaya Mardi Gras Day Parade, now 600 members strong. As Krewe Captain, he has helped build a signature community event that celebrates local spirit and brings families together. His passion for giving back is also evident through his service with Kelly Kicking

Larry L. Rolling, Jr.
ouncilman Larry L. Rolling, Jr. has long been a familiar and energetic presence in Covington and throughout St. Tammany Parish. A resident of Covington since 1993, Larry first came to the Northshore for its strong schools and quality of life. More than three decades later, he remains deeply committed to protecting and enhancing both for future generations.
Larry currently serves as St. Tammany Parish Councilman for District 2, representing Covington. Elected in 2023, his role entails representing the interests of his constituents, overseeing parish policies and budgets, and working collaboratively to address infrastructure, economic development, and quality of life initiatives. Prior to his parish role, Larry served as Covington Councilman at Large from 2019 to 2023, including three years as Council President, and as Councilman for District D from 2011 to 2019. During his tenure, he chaired the City of Covington Economic Development and Financial Committees, focusing on responsible growth and fiscal stewardship.

Cancer, COAST, Leadership St. Tammany, the St. Tammany West Chamber of Commerce, and numerous other boards and civic efforts. He has earned statewide recognition for community achievement and was named Alliance for Good Government St. Tammany Legislator of the Year in 2019.
Larry says what he loves most about his work is simple: giving back and making a difference. While he acknowledges that making everyone happy in a governmental role can be challenging, his energetic and intense personality keeps him moving forward. He strives to find the silver lining in every situation and is always thinking ahead about how to better serve his community.
A proud father to Lindsey Meyer and Kaitlin Rolling and grandfather to Amelia, Abby, and Beckett, Larry frequently travels to visit his family. He is also known far beyond parish lines as the New Orleans Saints “Sign Man,” a 48 year season ticket holder whose spirited support has been featured in media nationwide. Whether in government, business, or the Superdome, Larry Rolling shows up with consistency, heart, and an unwavering commitment to his community.

Northlake Gastroenterology Associates is proud to welcome Dr. Lara Boudreaux, a Louisiana native with a passion for patient-centered care, to its Covington clinic.
Dr. Boudreaux earned her undergraduate degree from LSU, where she was an active member of Chi Omega, before pursuing her medical training entirely within the LSU system. Her journey included medical school in Shreveport, an internal medicine residency in New Orleans, and a gastroenterology fellowship at LSU New Orleans, where she also served as chief fellow.
With her clinical expertise, approachable style, and love for her Louisiana roots, Dr. Boudreaux is ready to serve patients across the Northshore. She looks forward to building lasting relationships with the families who entrust their care to Northlake Gastroenterology Associates.

Who in your life influenced your decision to become a teacher? I was influenced by all my teachers, both the caring and compassionate, and the cruel and sarcastic. I will admit up front that I was a challenging student, not disrespectful, but I had a mind of my own. I can remember my kindergarten teacher, Mrs. Merriwether, who would let me lie on the floor of the coat closet during nap time. My fourth grade teacher, Ms. Davis was very “groovy” and she allowed me to create, discover, and wonder. Mrs. Gibbs and Mrs. Harry pulled me through the social doldrums of junior high and high school by having me in their home economics classes. With them I learned most of my practical life skills, and a few much needed social skills. The teachers who have influenced me to be the teacher I wished to become made me feel that they genuinely cared about me and gave me a sense of belonging.
What do you find most rewarding about teaching? Every student is unique and brings with them individual learning and social-emotional experiences. I love being a meaningful factor in a student’s success in all areas of learning. With over thirty years of teaching experience, I am now approaching my third generation of learners. I have worked in both special education and general education classrooms, supporting students with diverse needs. Being recognized by former students in the community and greeted with genuine happiness fills me with purpose. It is deeply rewarding when they share their accomplishments.

Dr. Ann Delarosa-Strain currently teaches 4th grade at KehoeFrance Northshore. She has been teaching for over 30 years but at Kehoe-France Northshore for three years
If you could leave your students with one lasting message, what would it be? Research has demonstrated that kindness fosters learning by improving focus, reducing anxiety, and creating a supportive, safe environment conducive to academic and social growth. It enhances brain function by releasing serotonin and dopamine which boosts attention span and encourages collaboration. This all happens when we are kind, so this is my message, be kind. It is inexpensive and low tech. Even someone who knows very little knows what kindness feels like. One of the people I wish to meet in Heaven is Maya Angelou. She said, “I’ve learned that people will forget what you said, people will forget what you did, but people will never forget how you made them feel.”
Kristin Billiot
SUPER MOM
For Kristin Billiot, motherhood, faith, and service to others are deeply intertwined. Whether she is caring for patients in the hospital or raising her two young children at home, her life is guided by compassion, resilience, and a quiet strength rooted in faith.
A Registered Nurse since 2013, Kristin spent the first decade of her career in the ICU at Ochsner Baptist, where she cared for patients during some of the most critical and vulnerable moments of their lives. In 2023, she joined Covington Trace ER & Hospital in Mandeville, where she now serves on both the MedSurg floor and in the Emergency Room as an Inpatient Lead. Nursing, she says, has always been more than a profession. It is a calling.


At Covington Trace, patients receive comprehensive emergency care around the clock, supported by state of the art imaging and a team of board certified physicians. For Kristin, what makes the hospital truly special is the heart behind the care. The teamwork and compassion among the staff create an environment where patients are treated like family. Over time, the colleagues she works alongside have become family to her as well.
At home, Kristin is the proud mom of two children who bring endless joy to her life. Juliana, 6, is thoughtful, creative, and curious, with a love for piano and art. She was recently nominated for her school’s gifted and talented program as well as a leadership ambassador at Madisonville Elementary, something that fills Kristin with pride. Her son Jonah, 4, is the family’s joyful adventurer, happiest when playing Spider Man, jumping on the trampoline, or enjoying games and laughter at Tiny Tumblers Preschool.
In September 2025, Kristin and her children experienced a heartbreaking loss when her husband, Rick, was killed in a motorcycle accident. Rick loved adventure and lived life fully, from time spent on the boat to trips to the mountains and simple family moments together. The children especially loved those adventures with their dad, who believed deeply in making memories and putting family first. Though their loss has been profound, his spirit continues to shape the way Kristin and the children move forward each day.

Through the support of her mother, sisters, extended family, friends, neighbors, and her Covington Trace work family, Kristin and her children have been surrounded by love during this difficult season. Their prayers and encouragement have been a powerful reminder that no one walks through life’s hardest moments alone.
Balancing a demanding healthcare career and motherhood requires strength, but Kristin sees both roles as deeply connected. Caring for others fills her cup, and that compassion flows naturally into her home. She hopes her children grow up seeing the value of empathy, kindness, and serving others.
At home, the Billiot family cherishes the traditions that keep them grounded in faith and joy. Bedtime prayers, Sunday church, family game nights, cheering on LSU baseball, and their annual Mother’s Day beach trip are moments they hold close. Kristin hopes her children will always remember laughter in their home, bedtime stories, disco dance parties, and endless “mommy tickles.”
Through every season of life, her faith remains the anchor guiding her forward. “But they that wait upon the Lord shall renew their strength; they shall mount up with wings as eagles; they shall run and not be weary; and they shall walk and not faint.” Isaiah 40:31

The St. John Fools of Misrule parade filled downtown Covington with color, creativity, and local tradition. Revelers gathered at the Covington Trailhead to celebrate the whimsical spirit of Carnival. Music, costumes, and community energy defined the event, honoring Louisiana culture through playful pageantry and time-honored revelry and shared celebration together.

KING CAKE BREAD PUDDING
CAKE INGREDIENTS:
1 pound French bread, cut into cubes
8 large eggs
1 cup granulated sugar
1 tbsp vanilla extract
1 tbsp cinnamon
1/2 tsp salt
3 cups milk (whole)
2 cups heavy cream
ICING INGREDIENTS:
2 cups confectioners sugar
2 tbsp lemon juice
1/4 cup condensed milk


DIRECTIONS:
Preheat the oven to 350°F.
In a large bowl, mix all ingredients except the bread.
Cut the bread into 2-inch cubes, then place it in the egg mixture and let soak for 10 minutes, pressing down any pieces on top so they absorb the mixture. Spray an 11x13 baking pan and pour in the mixture.
Bake for 60 minutes.

In another bowl, combine confectioners’ sugar, lemon juice, and condensed milk, adjusting measurements for desired icing consistency and taste.
Once the bread pudding has cooled completely, spread the icing over the top and decorate with sprinkles or colorful sanding sugar.







Jen Morgan (BFA) is an award-winning fiber and mixed-media artist whose vibrant 2D felted fine artworks celebrate the soul of Louisiana through texture, color, and whimsy. Using wet, Nuno, and needle-felting techniques, she layers fibers and hand-embellishes each piece to add sparkle, dimension, and joy. Originally from Raleigh, North Carolina, she has lived in the Greater New Orleans area for over 30 years and now calls Mandeville home. Her work is represented by Orleans Gallery on Julia Street in New Orleans.

The Mande Kings Day Walking Parade brought festive energy to the Mandeville Trailhead as the community gathered to celebrate Epiphany. Led by the Mande Milkshakers, participants enjoyed music, costumes, and local flair. The parade honored tradition while creating a lively, family-friendly atmosphere rooted in creativity, culture, and community connection.

ST. TAMMANY HEALTH SYSTEM WELCOMES DR. GRAYSON TERRAL
Dr. W. Grayson Terral was born and raised in Covington, Louisiana. He attended Louisiana State University for his undergraduate education and completed his medical degree at Louisiana Health Science Center in Shreveport, LA. He completed his general surgery residency at Ochsner Medical Center in New Orleans, and then went on to complete his fellowship in hand surgery at the University of Mississippi Medical Center in Jackson, MS. While not at the hospital, he enjoys spending time with family, hunting and cheering on the Tigers.
Hand surgeon Dr. Grayson Terral is no stranger to St. Tammany Health System. The Covington native was born at the health system’s flagship St. Tammany Parish Hospital. But he truly became a member of the St. Tammany Heath System family recently with the relocation of his practice to the St. Tammany Physicians Network clinic on St. Anne Drive in Mandeville.
“This is a very familiar place for me,” Dr. Terral said. “I decided to leave and train, and when it came time to find a place to return to work and raise a family, I couldn’t think of a better place.”
In addition to Dr. Terral’s hand practice, the STPN Mandeville facility also boasts primary care and cardiology services, with full lab and imaging offerings at the adjoining Mandeville Diagnostic Center.
At the Mandeville clinic, Dr. Terral will address ailments from the fingertips to the elbows, including vascular, nerve, tendon, muscle, bone and joint issues. The clinic includes in-office imaging capabilities, including X-ray and ultrasound, as well as on-site certified hand therapists specializing in hand injuries.
“It’s certainly exciting,” he said, “as someone who was born in this hospital, raised in Covington, to now come back and provide care to those who need it.”
