It was a TV month for Vegas Family Insider! Quinn and Ian Zafra joined me and PR whiz Ruth Furman of ImageWords Communications at the FOX5 Studio Live for a mid-morning appearance about our Mighty Moguls Market and inaugural 18 Under 18 recognition. Then, FOX5 came to us! The news team visited our community studio to interview Tasha Dixon of Colorful Geniuses Homeschool Co-Op. Our Jr. Journalists watched the interview process and even asked the cameraman questions about working behind the scenes in television. Ashten Frenchman, videographer and owner of Media Solutions, far left in photo, was able to sit on sound and camera angle discussions. Talk about a newsroom lesson coming to life! They stayed to talk about lighting, angles and working with a TV crew. What did I buy at the July 11 Mighty Moguls Market at Fantastic Indoor Swap Meet.? Oh, everything! One of my faves was from Ameira Clark, 8, and Ava Yu, 12, of Cute & Crafty. I couldn’t resist buying some adorable bag jewelry to dress up my rather drab handbag. They also brought the whole crew! Soul Talks with with Heather Heather Criswell Criswell Putting Ourselves First Me first. I know how that sounds. But hear me out. Because if I'm not here, really here, filled up, grounded, alive in my own body... then what exactly am I giving anybody? An empty shell showing up on autopilot isn't motherhood. It's survival. And we deserve so much more than that. Can we talk about self-care for a second? Like really talk about it? Because I think we've been sold a lie. Somewhere along the way somebody decided that a pedicure was self-care. That a 60 minute massage was self-care. That a glass of wine and a bubble bath was selfcare. And listen, I love all of those things. Truly. But let's call them what they actually are. That's maintenance. That's upkeep. That is you keeping the wheels from completely falling off. That is not the same thing as feeding your soul. Not even close.
Real self-care, the kind that actually changes something, is an investment. Not a transaction. You don't buy it at a spa and walk out fixed. You build it. Slowly. Consistently. On purpose. It's the thing you return to when the noise gets loud and your nervous system is completely done and you need to find yourself again.
For me that's meditation. Sometimes once a day. Sometimes three times. It rewires me back into coherence, back into love, back into oh right...I actually like my life. It fills my bank. Not my cup. My bank. Because a cup empties by Tuesday. A bank you can actually build something lasting with. For you it might look completely different. A walk alone in actual silence. Painting. Dancing in your kitchen. Sitting outside before the house wakes up and the needs start.
Whatever it is, it has to be yours. It has to fill you before you go emptying yourself into everyone else. And yes I've sat in the guilt. The am I a bad mom for choosing myself spiral is real and it will lie to you every single time. Here's what I know... my son needs to watch me choose myself. That is the lesson I'm leaving him. There is no overdraft protection here. It is time to start investing in you.

The Mindful Momma You Don’t Return to Yourself After Motherhood By Antoinnette Majors
There is a version of motherhood that is easy to recognize. It is visible, documented, and widely understood. It centers the baby, the milestones, and the external markers of care. It is the version most women are prepared for.
What is less discussed and far less supported is the internal transformation that occurs alongside it. The term matrescence, once largely confined to academic and clinical spaces has begun to surface more frequently in conversations around motherhood. At its core, matrescence refers to the process of becoming a mother, not just physically, but psychologically, socially, and emotionally. It acknowledges that motherhood is not a single event, but a transition, one that unfolds over time and reaches far beyond the early postpartum period. In conversation with matrescence educator Janeica Davis, that broader definition takes on more depth and clarity. The term matrescence was coined by Dana Rafael in 1973. It has been largely ignored. Dr. Aurélie Athan from Columbia University revived the term and is known as the Godmother.
She describes matrescence like adolescence, to help us understand that mothers also undergo a developmental transition. Her framing moves the conversation beyond surface-level adjustment and into a more complete understanding of what women are actually experiencing. This distinction matters more than we tend to acknowledge, because many women enter motherhood equipped with information about birth and early childcare, but without language for the identity shift that follows. The result is often confusion, not because something has gone wrong, but because something significant is happening without acknowledgment.
“You’re transitioning into motherhood. Moms are shifting from an old self to a new self,” Davis says. “And that transition causes a lot of confusion… it brings us into a space of questioning who we are.” That questioning is not incidental. It is central to the process. As Davis describes it, matrescence often moves women into deeper reflection about their lives as a whole. “It brings us into a realm of… a spiritual realm,” she explains. “Questioning our lives, questioning our careers, questioning meaning and purpose.” To read more about Janeica’s work check out her Substack: Diaries of Ambitious Women.

Grandparents in Action Before You Hand Over the Keys
There are few parenting moments quite like teaching a teenager to drive. Then you become a grandparent and discover you get to experience the whole whiteknuckled adventure again, this time from the passenger seat of a car you would very much like returned in one piece. Letting a grandchild borrow the car can feel like a simple family favor. But before handing over the keys, grandparents should make sure they understand how their insurance applies. Insurance needs can also change when grandchildren live in the home, use a grandparent’s vehicle frequently or bring friends along for the ride. The right answer will depend on the household, the driver and the policy, which is exactly why an annual insurance review is so important. Local insurance professional Lori Clarke, owner of Lori Clarke Insurance, recommends talking with your agent before a young driver begins using a family vehicle regularly. Even better, before the teen gets their driver’s license.
“It’s a good time to ask about available discounts, driver-safety programs, liability limits and whether the family has enough protection beyond the minimum required coverage,” Clarke said. Grandparents are wonderfully good at preparing for everything, such as snacks, sunscreen, emergency cash and at least three reminders to text when you arrive. Insurance deserves a place on that list, too. Because protecting our grandchildren doesn’t end when our children grow up. Sometimes it looks like good advice, sometimes it looks like an extra set of keys, and sometimes it means asking the important questions before anyone pulls out of the driveway.
Three questions to ask before your grandchild drives your car: Is my grandchild covered if they occasionally borrow my vehicle? Do they need to be listed on my policy if they live with me or drive the car regularly? Are my current liability limits enough when a younger driver is behind the wheel? When Kids Hold It All In Helping Them Feel Safe Enough to Open Up The school year can bring big emotions, and sometimes the hardest moments happen after the final bell. We asked Nicole Gregorio, DNP, APRN, PMHNP-BC, of Arbor Wellness Mental Healthcare, to explain why children may unravel at home, what a quiet teenager might really be communicating, and how parents can offer support without adding pressure. Her practical advice begins with what every child needs: a safe place to land. Q: My child holds it together at school , falls apart at home. Why and how can I help? - Tiffany W. This is one of the most common things we hear from parents, and it is usually a sign your child is doing well at school — not badly. Kids spend the entire school day using enormous effort to hold it together: following rules, navigating friendships, sitting still, managing frustration in front of an audience. That effort is finite. By the time they walk through your door, the tank is empty. Clinicians sometimes call this after-school restraint collapse. It comes out at home because home is safe. You are the person they trust enough to fall apart in front of. It's a backhanded compliment, but it is a compliment. Find more practical tips here. Q: How can I tell if my quiet teen is struggling and help them open up? - Fabian G. First, some reassurance: a teen who doesn't want to talk to a parent is not automatically a teen in trouble. Pulling back is developmentally normal. What matters is whether the rest of their life is still working.ental health provider directly. Signs worth paying attention to: • Withdrawing from things they used to enjoy, not just from you • Significant changes in sleep or appetite • Grades slipping, or avoiding school • Irritability or anger that's new or out of character • Hopeless comments, talk of being a burden, or giving away possessions — these need attention right away How to open the door without it slamming? Skills and Thrills Advice for New Cosplayers
By Arya McCarty Editor’s note: The cosplayers in this story are identified by the names they use professionally and on social media.
With the time and effort it takes to build props from scratch, sew costumes, perfect wigs and makeup, cosplayers can spend hours bringing their characters to life. The results are stunning and award-worthy. The art form can be intimidating to someone just getting started. Four local highly skilled cosplayers shared what they love about the community, what scares them about their art and what they wish beginners knew.
What do you love about cosplay? Jasper: I’d say the friends I make, but honestly, I think it’s styling wigs. Roki: The community! Most cosplayers I’ve met are really sweet and supportive of everyone else. Shoutout to Ward! Jay: I love being able to shift into a new person. I’m a girl and very feminine-presenting outside of cosplay, so getting to cosplay a male character is so much fun. I enjoy the outfits, the makeup and tapping into the character’s personality while filming. It’s nice to let loose and escape my day-to-day life. I’ve also met many people through social media and conventions. Some of the people I’ve met through cosplay are now my closest friends. Sophiringa: Going to a convention and having someone stop me for a picture. I’m also an actor, and the characters I cosplay are (those) I would love to play. Top, Jay,. What scared you at first? Jasper: Messing up and failing at something that was supposed to make me happy. It does make me happy now that I’ve stopped worrying about that. Roki: I was scared I wouldn’t be accepted because some of my cosplays were inaccurate.
I thought everything had to be perfect, and I wasn’t. Jay: Putting myself out there was scary. It can be intimidating to be perceived online, especially when you aren’t used to being on social media.
I was nervous to try certain trends or make videos because I worried people would think I was weird or cringe. I learned that many people enjoy those silly little videos. Some have even told me my content makes their day a little brighter. Sophiringa: I was horrified to start cosplaying again after four years. I worried about being bullied or made fun of. Then I began cosplaying with friends, and I instantly lost my fear of filming TikToks in public or acting like the character when people asked for a photo. “To be cringe is to be free!” That’s my motto, and I live by it. Local tutor Brittani Edwards shares why homeschooling was the right path for her child
Why did you choose homeschooling? I want my kids to learn in a more engaging and hands-on way, which is often lacking in modern traditional classrooms. As a former teacher, I understand how quickly the curriculum must be covered in school districts, often at the expense of students fully retaining the information being taught. By choosing to homeschool my children, I can ensure they are not only learning the necessary skills and concepts for their grade levels but also retaining that information effectively. My goal is for my children to reach their full potential without being bound by a timeline set by individuals who are not in the classroom with them every day.
HOMESCHOOLING
TECH HAS ITS PLACE
What was your experience at public school? Our experience with the public school system was generally positive. My oldest child attended public school from first through sixth grade. One observation I made as we progressed through the different grades was the decreasing use of physical materials, such as textbooks, worksheets, and workbooks, in favor of Chromebooks and other technology. While I believe that technology has a valuable role in the classroom, it shouldn't be the sole focus of education. Instead of conducting hands-on science experiments, my daughter mentioned that they use virtual simulators for their science activities. I feel that learning should incorporate a balance of writing with paper and pencil, reading from actual books, and using technology as a supplementary tool rather than the primary means of education.
What's your best advice for parents evaluating schooling choices? My advice is to take your time and research different options for your child’s educational path. Determine what will work best for them by understanding their learning style, how they learn, and what resources they need to succeed on their educational journey. Additionally, connect with other homeschooling families and co-ops in your area. You can learn a great deal from other families who are also navigating their homeschooling experiences.

Zafeen Boulware

Age: 16 After learning that children in foster care may celebrate birthdays alone, Zafeen Boulware partnered with Olive Crest to create 85 birthday bags and first-aid kits. She has also assembled toiletries for youth at Child Haven and Spring Mountain Youth Camp, collected books for WestCare families and turned rescued bananas into bread for people experiencing hunger. A Gold President’s Volunteer Service Award recipient, hospital volunteer and Southern Nevada Health District youth board member, Zafeen is exploring ways to improve academic outcomes in the juvenile justice system. What makes her one to watch: Zafeen turns compassion into action. When challenges disrupted her plan to grow vegetables for food-insecure veterans, she pivoted—freezing tomatoes for sauce, gathering figs for preserves and delivering homemade food.

Ethan Cohen Age: 17 Ethan Cohen spent 17 months helping spearhead Senate Bill 179 after approaching Nevada Sen. James Ohrenschall with an idea to address antisemitism. Signed by Gov. Joe Lombardo, it strengthened Nevada’s tools for identifying and responding to antisemitism. Ethan also founded YOUth Can Do It!, pairing his selfpublished book with service workshops that have empowered 3,200 children. Through the National Holocaust Youth Council, he created resources teaching history, empathy and inclusion to more than 11,000 young people. His curriculum was adopted by the Nevada Department of Education for grades 6–12.

Ahnalise Alvarez

Age: 13 Ahnalise Alvarez is the young entrepreneur behind Pretty Paws Lemonade, where every cup helps support a pup. She donates part of her proceeds to Animal Help Alliance and other animal rescue organizations, turning a simple lemonade stand into a business with purpose. When Ahnalise learned she needed additional health permits to sell at larger events, she refused to let the setback end her mission. She raised the necessary funds, completed the requirements and returned stronger and better prepared. Her determination rallied local vendors and community members around her—three of whom independently nominated her for this recognition. What makes her one to watch: Ahnalise proves that being knocked down isn’t the end of the story. With purpose, preparation and community support, you can get back up.

Hanna Aschenaki Age: 14 Hanna Aschenaki founded Melodies of Hope, a youth-led nonprofit using music and self-expression to combat bullying, and organized a 2025 conference bringing students, families and educators together. She has also represented youth voices in conversations about expanding pediatric behavioral health services in Nevada. Her original song, “In the Middle,” draws from navigating her Ethiopian and Caucasian identities and encourages others to embrace what makes them different. She pairs her advocacy with academic excellence, maintaining a 4.1 GPA.

Hayden Pharris

Age: 17 After injuries ended his path as an elite basketball player, Hayden Pharris found a new purpose. At 15, he invested his savings in Faith Fragrance, a luxury fragrance brand built around hope, perseverance and faith. His first production run totaled just 50 bottles—and sold out on opening day. Now 17, Hayden has developed products, launched an ecommerce business and built retail partnerships. His newest custom fragrance will debut alongside established brands at Fragrance House Las Vegas in August. He also supports young basketball players and sponsors children through Compassion International. What makes him one to watch: Hayden refused to let the loss of one dream define him. He transformed adversity into purpose— and created a business that encourages others to keep going when life changes their plans.

Justyn Boumah Age: 11 Justyn Boumah has turned one childhood question—“Do you think they’ve been thanked?”—into a global movement of kindness. Through Justyn’s Blessing Project, he has assembled thank-you bags and handwritten notes recognizing hundreds of sanitation workers, educators, first responders and other everyday heroes. Justyn founded Heroes & Hearts to advance literacy, leadership and service. He has authored 14 books and established six libraries in underserved communities from Las Vegas to Poland, Gabon and South Africa. His work has brought books and technology to hundreds of children while inspiring young people to join his service projects. What makes him one to watch: Justyn notices people others overlook, and transforms compassion into action that crosses neighborhoods, generations and borders.

Age: 9 Founder of Love Trinity Designs, she create handmade faith-based jewelry while learning entrepreneurship and financial responsibility. Her business earnings fund her singing and piano lessons to achieve her dream of one day sharing her musical gifts through church worship. As Little Miss Las Vegas Nevada Princess, she participates in modeling, community service and events that build confidence and creativity. Once nervous about approaching customers and community leaders, she kept showing up at Mighty Moguls Markets until conversation became one of her strengths. Today, she welcomes customers and leads interactive bracelet-making activities for other children. What makes her one to watch: Trinity turns creativity into opportunity, using her growing confidence to encourage others to dream boldly and believe in themselves.

Annie Stewart
Age: 15 Born with congenital heart disease, Annie grew up knowing the story of an older sister who died from the same condition before Annie was born. She now honors her sister’s memory through service and advocacy. Through the National Charity League, Annie volunteers with the Nevada Children’s Heart Foundation at events including Walk with the Heart of a Child, Adopt a Family, Trunk or Treat and Hearts for ChariTea. Her experience helps her welcome children and parents with genuine understanding, optimism and compassion. She also encourages fellow volunteers and steps forward whenever help is needed.

Age: 16 Cara McAnallen has become a trusted youth voice in Southern Nevada. A mayoral appointee to the City of Las Vegas Youth Leadership Advisory Council, she also serves on the Clark County School District’s Sex Education Advisory Board and has led teen boards for the SHERO Foundation and Assisting Lives Las Vegas. A two-time Gold President’s Volunteer Service Award recipient, Cara has fought hunger with Three Square, supported youth at the Shannon West Homeless Youth Center and coached speech through Best Buddies Nevada. Her environmental advocacy and longtime Girl Scout service further reflect the breadth of her commitment. What makes her one to watch: Cara doesn’t collect titles, she earns trust. She listens, follows through and ensures people feel seen in every room she enters.

Lewis Layton Age: 14 Lewis Layton is a youth journalist for Vegas Family Insider and an aspiring author working on his first science-fiction book. His love of writing is matched by a curiosity for history, justice and the world around him. Lewis was elected attorney general of his mock government class, where he served his classmates and strengthened his leadership skills. As an older member of Trail Life, he mentors younger scouts, teaches new skills and leads by example. He also volunteers with his church, older adults and community organizations while performing guitar at family-friendly events in Henderson. At home, he is a role model for three younger siblings. What makes him one to watch: Lewis combines curiosity with conviction, using writing, leadership and service to stand up for what is right.

Ranked third in her senior class, she was also elected president of the National Honor Society—a reflection of the trust and respect she has earned from classmates and teachers. Sophie balances her demanding academics with a job at a neighborhood restaurant, bringing kindness and dedication to every shift. She encourages classmates, celebrates their achievements and sets a powerful example for her two younger sisters. Her goal is to become a psychologist and help others navigate life’s challenges. What makes her one to watch: Sophie pairs extraordinary academic achievement with humility, empathy and service— showing that true excellence is measured by how we help others rise.

Astrid Veronika Florido Age: 14 Astrid Veronika Florido is a singer, actor and dancer who uses art to celebrate culture and champion young performers. Her original song, “Filipinice,” was created for Maestro, a traveling Clark County Public Arts installation honoring Filipino American culture. She has performed the National Anthem for the Las Vegas Aces and Aviators and will portray Tess Tyler in Clark County’s inaugural Community Youth Theatre production of “Camp Rock.”

Age: 12 Amalia “Mali” Kress is a multitalented athlete who brings focus and courage to every challenge. A second-degree brown belt in martial arts and national champion competitive cheerleader, she also plays tennis and pickleball and competes on a summer swim team. Mali balances athletics with a 3.5 GPA, school choir, church involvement and acceptance into her school’s broadcasting class. Teammates know her as a bold encourager who speaks up for others, pushes friends to recognize their strengths and remains composed when the pressure rises. Younger athletes admire the discipline and authenticity she brings to her pursuits. What makes her one to watch: Mali leads by protecting, encouraging and challenging others—and proves that everyday choices build extraordinary resilience.

Christopher Forgione Age: 12 From a young age, Christopher “CJ” Forgione understood how frightening and lonely a hospital stay can feel. Born with congenital heart disease, he has undergone three open-heart surgeries and numerous cardiac catheterization procedures. CJ transformed those experiences into a nonprofit that creates and delivers handmade cards to young hospital patients. Each card offers encouragement from someone who understands what it means to face serious medical challenges and keep moving forward. He also volunteers with the Nevada Children’s Heart Foundation, serving as a positive example for children and families navigating congenital heart disease. What makes him one to watch: CJ turns his own difficult experiences into hope, reminding hospitalized children that they are seen, supported and never alone.

Age: 16 Josiah Nelson transforms ordinary pipe cleaners into detailed Godzilla sculptures. Each figure requires patience, problemsolving and imagination, allowing him to turn a simple material into an original work of art. Josiah’s creativity has also become a positive outlet for friends and classmates. Inspired by his work, several have joined him in creating figures and exploring how their art could become a small business. After experiencing bullying, school violence and serious safety concerns, Josiah remained focused on creating rather than allowing fear or adversity to define his future. His example shows other young people that creativity can provide connection, direction and possibility. What makes him one to watch: Josiah doesn’t simply make art, he uses imagination to build community, inspire his peers and create a more hopeful path forward.

Josephine Kress Age:15 Josephine “Josie” Kress is a nationally ranked diver and reigning Nevada 4A high school diving champion. She has competed across the country and earned Las Vegas Review-Journal second-team honors, all while maintaining straight A’s from middle school through her freshman year. Josie brings the same dedication to serving others as Northwest Career and Technical Academy’s student council secretary and a youth member of her church council.

Crystal’s original song, “My Mirror,” grew from her experiences with self-doubt and performance anxiety. By sharing how therapy, breathing techniques and family support helped her move forward, she encourages other young people to ask for help and pursue their dreams despite fear. She also volunteers her talent at charitable events, veteran programs and youth organizations. What makes her one to watch: Crystal brings more than talent to the stage. She leads with honesty, kindness and courage, using music to help others feel confident, connected and less alone.

Kingstyn Majors Age: 12 Kingstyn Majors is already an entrepreneur, sportswriter and food critic. A business owner since age 8, he balances his ventures and writing assignments with the demands of being a multisport athlete. Kingstyn has reported with the Las Vegas Raiders at high school showcase games and was invited to cover the Southern Nevada Sports Hall of Fame. He approaches every assignment prepared, polished and ready to learn. Through his business, he has also created paid opportunities for teammates, allowing other young people to gain experience while earning money. His example has inspired children to explore their own interests in writing and entrepreneurship. What makes him one to watch: Kingstyn doesn’t wait for a seat at the table—he arrives prepared, creates opportunities and brings other young people with him.

Mary Hausch is a Nevada Newspaper Hall of Fame journalist and emerita associate professor at UNLV’s Hank Greenspun School of Journalism and Media Studies. Before teaching journalism, media ethics and reporting at UNLV for 25 years, she spent 19 years at the Las Vegas Review-Journal, including a decade as managing editor. A trailblazer in Las Vegas journalism and a longtime mentor, we are honored to have her expertise and guidance in recognizing the remarkable young people selected for Vegas Family Insider’s 18 Under 18.
Rachel Gomez is an entrepreneur, business strategist and community leader dedicated to helping ideas become successful businesses. She is the founder of ArtCee, a platform connecting creative professionals with opportunities, and AddHR, an HR consulting and recruiting firm. Rachel also serves as Board President of the ACE Chamber of Nevada and as a Business Development Advisor with the Nevada SBDC at UNLV. It’s planning season! YES. PLANNING Season! August is the prime time to set up a new garden on paper, expand your gardening spaces by adding new garden beds and replenish your garden for a season of delicious organic fruits and vegetables through fall into winter. Las Vegas’ bright and sunny blue skies allow gardeners to have food growing at home all year long.
Did you know that you start planting your Fall garden in September? It’s just around the corner. Let’s get ready for your Cool Season Garden of vegetables, fruits and herbs.
End of Summer Gardening Guide 1.Set up your garden space. Build or install garden beds with SMRI certified organic soil. 2.Install a drip watering system in your garden. September is still very hot and self watering irrigation systems are a must. Especially if you like to travel! Even one day without water in September can destroy a vegetable garden in Vegas!
3.Choose the vegetables, fruits and herbs you want to plant. Be sure to follow the Southern Nevada planting calendars! It’s the key to success (apart from great soil). 4.Buy your seeds. Order your seedlings. Mark the day seedlings arrive at local nurseries on your calendar. Go buy them early as they sell out fast!

Leave any tomato, pepper and eggplants as they will blossom and fruit again this Fall! I often get the best tomatoes, peppers and eggplant in the Fall season. Replenish your soil. Biscoff Cheesecake Ice Cream With layers of cheesecake, cookie butter and crushed Biscoff cookies, this no-churn treat tastes impressive but comes together in just minutes. The hardest part is waiting for it to freeze! Equipment Loaf Pan Hand or Stand Mixer Prep time: 10 min Freeze: 6-8 hours Total: 6-8 hours
Ingredients Yield: 8-10 servings
2 Cups Heavy Whipping Cream 1 14 Ounce Can Sweetened Condensed Milk 1 1/2 cups no bake cheesecake 5-7 Biscoff cookies 1/4 cup Biscoff cookie butter 1 Tablespoons vanilla extract
Instructions Whip the heavy cream for about 2-3 mins until frothy. Add in the vanilla and sweetened condensed milk and mix on high until soft peaks form Stir in crushed Biscoff cookies Add 1/3 to your pan. Add melted Biscoff cookie butter and a few dollops of no bake cheesecake. Add another layer of whipped cream mixture. Top with cookie butter and no bake cheesecake. Add a final layer of whipped cream, cookie butter and no bake cheesecake. Cover with plastic wrap and freeze 6 hours for a soft set or 8+ hours until it is ready to serve.

Craving fish and chips, a juicy burger, French toast or even fried chicken and waffles? You may not have to settle for a plain salad while everyone else digs in. BANANA CHOCOLATE CHIP COOKIES By Heather Wikle Gonzales, FearlessFaithfulMom.com Two of the baked goods my husband loves the most are banana bread and chocolate chip cookies. Whenever I make either one, I can guarantee I’ll find him snatching a piece every time he walks through the kitchen. Recently, I was trying to think of a unique gift idea for him when kitchen inspiration struck. I could combine his favorite treats into one irresistible dessert. These soft and pillowy Banana Chocolate Chip cookies pack a punch of flavor that instantly transport you to a crisp fall afternoon. Best of all, they are gluten-free so that your whole family can enjoy them.
When you bake up a batch they’ll disappear just as quickly from your house as they do from mine!
Ingredients
½ cup (130g) mashed banana, about 2 bananas ½ cup (100g) shortening 1 tbsp vanilla extract 3/4 cup (150g) brown sugar 2 ¼ cup (315 g) GF flour mix ¾ tsp xanthan gum (omit if your mix contains xanthan gum) ½ tsp salt 2 ¼ tsp ground cinnamon 1 ½ tsp ground ginger ¼ tsp ground cardamom 1 tsp baking powder ½ tsp baking soda 3/4 cup (112g) chocolate chips
Directions
In a small bowl, mash your bananas and set it aside. In a medium mixing bowl whisk together your flour, xanthan gum, salt, spices, baking powder, and baking soda. Set it aside. In a large mixing bowl, beat your shortening, brown sugar, and vanilla extract for a few minutes, until lighter and somewhat fluffy. Add the mashed banana to your shortening mix and beat until well mixed. Add your dry ingredients, ½ at a time, beating after each addition. Fold in your chocolate chips by hand. Chill the dough in the refrigerator for 1 hour. Preheat your oven to 350* F. Line your baking sheet with parchment paper. Once your dough has chilled, scoop it into 1-2 tbsp size balls, placing them 2-3 inches apart. Flatten the dough balls slightly, then bake for 10-12 minutes, rotating the trays halfway through baking. After baking, cool the cookies on the pan for 5 minutes, then finish cooling on a wire rack.
