Where to get a taste of the region’s biggest talent—one reservation at a time
By Ivy Morris

In and around Valley Forge, the most memorable experiences aren’t always found on a map—they’re found on the menu. Here, chefs and culinary personalities have turned dinner into a destination. Whether you’re chasing candlelit comfort food in Ambler, a perfect pizza in King of Prussia or a craft spirits experience in Lansdale, these three names are shaping what it means to eat (and sip) well in the region.

LA BAJA, AMBLER
Chef Dionicio Jiménez built his culinary legacy one dish at a time.
A James Beard Award finalist for Best Chef: MidAtlantic in 2023 and a semifinalist for Outstanding Chef in 2024, Jiménez’s La Baja was recently recognized among Philadelphia magazine’s 50 Best Restaurants.
Jiménez’s journey had humble beginnings. After moving to Philadelphia from San Mateo Ozolco, Puebla, Mexico, he took on an ambitious schedule: Washing dishes in the mornings for Chef Philippe Chin at Chin-Chin, then washing dishes for the dinner shift at Vetri Cucina under Marc Vetri.
Vetri became a mentor, nurturing his skills in pasta making and bread baking, then sending Jiménez to train in New York City with Mario Batali and Rocco DiSpirito. Jiménez eventually returned to Philadelphia as one of Vetri’s sous chefs—a full-circle moment that created the foundation for his own restaurant.
The menu at La Baja is inspired by cocina de frontera (“food of the border”), where Mexico meets the United States’ southern boundary, combining the Mediterranean influences found along Baja California’s coastal valleys and the Asian flavors introduced by early Chinese and Japanese communities who shaped the cuisine of northern Mexico in the 1920s.
Flavor combinations are creative, such as the ravioles de aguacate con cangrejo—ravioli stuffed with avocado and blue crab, layered with recado negro (a thick spice paste made with charred chiles), and xnipec salsa, a Yucatan salsa made with habanero peppers, tomato, onion and sour orange juice. Or try La Baja’s take on the bao bun, a soft pillowy bao filled with pork belly, queso fresco, crema, chile piquín, romaine and fried hominy.
At Mary in Ambler, Chef Chad Rosenthal proves that some of the area’s most exciting dining happens in the most intimate rooms. Self-taught and Philadelphia bornand-raised, Rosenthal has created a candlelit BYOB that feels special—without feeling fussy. Mary is cozy and moody, with deep blue walls and intimately sized tables.
Named after the borough’s namesake, Mary Ambler, Mary is only open for dinner Wednesday through Saturday, and the menu changes monthly (check the restaurant’s Instagram for the latest dishes and specials).
You might find warming entrées with rich sauces— such as bacon fat-poached salmon or coq au vin chicken wings with bacon, mushrooms and a Burgundy reduction—in winter; or an elevated tomato toast with ricotta, lemon zest and herbs in summer. The cheeseburger—a sirloin blend topped with a veil of elegantly draped Provolone and onions so caramelized they’re practically candy—is great year-round.
You may think that the person behind the 39seat open-kitchen concept would prefer to stay behind the spotlight, but Rosenthal has appeared on Food Network Star (twice), Chopped Grill Masters and Good Morning America and he famously took on Beat Bobby Flay (and won). Despite the résumé, the vibe at Mary stays approachable and unpretentious—the type of place where you might catch Rosenthal behind the bar, sipping a Miller High Life and chatting with diners like they’re regulars.

In 2025, the restaurant was voted Best New Restaurant by the Pennsylvania Restaurant & Lodging Association, and it has also earned major praise from The Philadelphia Inquirer’s Craig Laban, who named it among the “Top 15 Best Steaks in Philadelphia.”

IRVINE’S SPIRITS AND BOARDROOM SPIRITS, LANSDALE
Even if you’re not a foodie, there’s a good chance you already know Robert Irvine.
He’s a Food Network fixture and the host of Restaurant: Impossible, where he gives struggling restaurateurs a second chance. In the Valley Forge area, Irvine’s culinary influence takes a different (and very drinkable) form.
He’s the owner of Lansdale-based Irvine’s Spirits and the co-owner of Boardroom Spirits, a craft distillery known for small-batch vodka, whiskey, rum, brandy and more.
Boardroom stands out not only for its creative flavors—including cranberry vodka and beet and carrot spirits—but also for its sustainability-minded production, powered by clean energy and nearly 100 solar panels.
In Lansdale, you can visit Boardroom Spirits Distillery’s bottle shop and tasting room on Third Street (open Wednesday through Saturday, noon to 6 pm). Here, you could simply grab a cocktail—sure. Or, stick around for trivia nights and cocktail-making classes.
For a full dinner pairing, head to The Boardroom Restaurant & Bottle Shop in Phoenixville, a Boardroom

Spirits partner location whose bar menu features classic cocktails, seasonal house recipes and a variety of Boardroom’s ready-to-drink and canned cocktails—all paired with new American cuisine.
Whether you’re toasting with craft spirits, chasing the perfect blistered crust or scoring a candlelit dinner reservation, these culinary stars prove there’s no wrong way to eat your way through Valley Forge and its surrounding towns.

Sample local restaurants with connections to historic figures in our nation’s past
By Debbie Abbott
Did you know our nation is celebrating its 250th anniversary, also known as a semiquincentennial? That’s a mouthful! And there’s no better place to toast the occasion and please your palate than the revolutionary restaurants and taverns of Montgomery County. We invite you to step into one of the “rooms where it happened”—now serving up revived spirits and reinvented recipes.
GULPH MILLS
Built in 1765, the headquarters of lawyer, politician and Founding Father Aaron Burr were once located within the walls of SAVONA—a casually sophisticated fine-dining destination perched upon a hilltop near the Interstate-76 and U.S. Highway 202 corridors. Following the Gulph Mills Encampment — six days in December 1777 before the Continental Army marched
into Valley Forge — Aaron Burr stayed and commanded this strategic outpost.
Today’s guests can view the wood-burning oven and open charcoal-fired grill through a glass wall in the restaurant’s state-of-theart kitchen. The menu showcases farm-to-table Italian cuisine, including wood-grilled branzino, lobster and mushroom risotto and pizza with pancetta or braised short rib. Boasting one of the largest wine lists in Pennsylvania, SAVONA’s collection of more than 1,200

varieties will delight oenophiles. Open for lunch and dinner; private dining spaces available.
From Blue Bell, head 10 minutes northeast to Ambler and you’ll arrive at Spring House Tavern—the spot where Revolutionary War General John Lacy’s men were stationed in 1778 to intercept British supplies. Established in 1719, the tavern has been a destination for myriad travelers ever since.
Lunch guests nowadays are treated to housemade “surf” favorites such as snapper soup, crab bites and lobster roll, along with “turf” classics such as prime rib French dip, corned beef and grilled Reubens. An elevated dinner menu offers mussels, warm brie, filet mignon, spiced swordfish and pulled pork pappardelle. Sunday brunch includes eggs Benedict with homemade potato latkes, challah French toast, fluffy beignets and huevos rancheros tacos.
Each Thursday evening, enjoy an extended happy hour with trivia and prizes. Or visit for Prime Rib Night and Wine Wednesdays. Lunch, dinner and Sunday brunch are served. Private event space available.
A 10-minute drive east of Gulph Mills takes you to Black Powder Tavern, the location of a oncesecret munitions stash for Baron von Steuben and the Continental Army. Built in 1746, the building also served as a covert meeting place for George Washington, the Marquis de Lafayette and the ever-dapper “Mad” Anthony Wayne—for whom the community is named.
Tap into the past as you enjoy Washington’s Porter from the tavern’s craft beer menu or Lafayette’s Onion Soup with melted Emmental, Gruyère and croutons. Whether you’re craving a roasted veggie grain bowl or a Wagyu truffle burger, bring your appetite for Old World character and delicious American cuisine.
Check out the Historical Dinner Series held on the third Tuesday of each month, featuring guest speakers and dishes that reflect Colonial times. Open for lunch, dinner and Sunday brunch; private dining spaces are available.
About 30 minutes northeast of Wayne, you’ll find The Farmer’s Daughter restaurant tucked inside Normandy Farm—a premier hotel and conference center in Blue Bell. The rustic property with a chic vibe continues the historical tradition of being a respite for travelers. The massive barn was built in 1875 but the land was originally acquired in 1730. During the Revolution, this area of the township served as a strategic encampment zone for Washington and his troops.
Exceptional cuisine and warm hospitality now characterize The Farmer’s Daughter. Celebrating modern farm cooking, the menu highlights world flavors. Lunch offerings range from soups and salads to small plates and flatbread; dinner entrées include apple cider braised pork osso bucco, crab cakes and pan-seared scallops. Breakfast, lunch, dinner and brunch are served, days vary. Private event space available.

Seven miles east of Spring House Tavern stands Pennypack Mill, the oldest building in Hatboro. Now home to Concordance Ferments, it was built in 1724 and served as a lookout post during the Battle of Crooked Billet. The mill ground grain into flour for Washington’s troops during the Battle of Germantown, and it served as a waypoint on his army’s way to meet Lafayette.
During a recent restoration, the original 300-year-old wood beams and stone were exposed. Concordance Ferments officially
opened in October 2025 with small items such as charcuterie and burrata boards, signature grilled cheese and fire-roasted tomato soup. Snacks like housemade spicy beef jerky and locally sourced pickled veggies complement the brews. Entrées range from mild to wild with Shephard’s Pie and Face Bacon—which is Lancaster pork jowl braised in a strong pale ale called bier de garde, seared and served on Castle Valley grits.
Lunch and dinner hours vary; private events available. Concordance also offers memberships to their Reserve Society. Ever wanted to name a tank of beer? You can buy naming rights at this brewery! How revolutionary.
