With a legacy of more than 50 years in Puerto Vallarta, Daiquiri Dick’s has entered a new phase. It is a reinvention under the guidance of its new owners: Chef Wayne Elias, Javier Jiménez and Chris Diamond. Since opening last August, they have enjoyed great success with diners, as well as appearing at the region’s most prestigious food festivals. The menu features rotating specials created by the partners, who have been restaurateurs and catering experts in Los Angeles for three decades.

This intimate restaurant is located in the southern part of Puerto Vallarta, on a beach of beautiful white sand and crystal-clear waters. Carefully designed by Carlos Osuna, one of Mexico’s most renowned chefs, the exceptional menu offers the best of Mexican flavors. The concept of this place was born with the aim of satisfying the palates of both residents and visitors. Less than six months after opening, Amixtli Restaurant (whose name means “breeze from the sea”) is integrated into the day pass experience at Xalli Beach Club and Tapazolli, an espresso and wine bar.

“This is a dream come true thanks to the daily work of our great team,” says Carlos Venegas, who opened IL PESCE with his partner Filippo Peralta in the final weeks of 2020. The restaurant’s culinary concept is based on seafood prepared in the Italian style, with a strong Sicilian influence. Pleased with the reception of this delicious menu, they are looking forward to continuing to fulfil their dream of having an establishment of this level in our destination.

MARCELITA BY MARCELA

Marcelita is a restaurant that offers contemporary Mexican cuisine prepared with quality local and regional ingredients. One of chef Jesús Rafael Córdoba’s star dishes is the catch of the day, which comes straight from La Cruz de Huanacaxtle and is served on a bed of esquites with guacamole. The drinks bar includes mezcales, raicillas and classic cocktails. “This project has grown little by little and is becoming a delicious culinary adventure,” says Ernesto Ledezma, general manager of Marcela, a hacienda-style boutique hotel owned by Albert Sclaglione and home to this intimate restaurant.

Marcelita es un restaurante con una propuesta de comida mexicana contemporánea elaborada con ingredientes locales y regionales de alta calidad. Uno de los platillos estrellas propuestos por el chef Jesús Rafael Córdoba es la pesca del día, la cual viene directa de La Cruz de Huanacaxtle y se sirve sobre una cama de esquites, acompañada de guacamole. Su barra de bebidas incluye mezcales, raicillas y cocteles clásicos. “Este proyecto ha crecido poco a poco y se está convirtiendo en una deliciosa aventura culinaria”, afirma Ernesto Ledezma, gerente general de Marcela, un hotel boutique tipo hacienda que es propiedad de Albert Sclaglione y alberga este íntimo restaurante.

MIKOH BUCERÍAS

Ranked number one on TripAdvisor in its area, Mikoh is a Japanese and Thai restaurant that opened its doors last year, with a privileged location in the Golden Zone of Bucerías, Nayarit. Its menu includes sushi rolls and sashimi, as well as other hot and cold dishes prepared with quality ingredients. Drinks include classic cocktails, mixology, three types of sake and Japanese beer. “We have a capacity of 100 people, divided between our lounge, terrace and private dining room,” explains Martín Roque Chávez, regional manager of this establishment.

Ubicados en el número uno de TripAdvisor en su zona, Mikoh es un restaurante de comida japonesa y tailandesa, el cual abrió sus puertas el año pasado, con una ubicación privilegiada en la Zona Dorada de Bucerías, Nayarit. En su menú cuentan con rollos de sushi y sashimis, así como otros platillos de línea caliente y fría preparados con ingredientes de alta calidad. Sus opciones de bebidas incluyen cocteles clásicos, mixología, tres tipos de sakes y cerveza japonesa.

“Tenemos una capacidad para 100 comensales distribuidos en nuestro salón, terraza y privado”, describe Martín Roque Chávez, gerente regional de este establecimiento.

OLIVE BY RUBÉN

Although most of the dishes are Greek, Olive by Rubén is an interesting concept that also has touches of Mediterranean, French and Italian cuisine. A white house with high ceilings and a pool completes the decor of the restaurant, which opened earlier this year in the Versalles district. “It’s like being somewhere in Greece, Santorini or Mykonos,” says owner Rubén Iñiguez, who has put his 35 years of experience in the kitchen to good use in designing the menu. The wine list includes Italian, French, Mexican, Chilean and Californian wines.

Aunque la mayoría de los platillos son griegos, Olive by Rubén es un interesante concepto que también tiene toques de cocina mediterránea, francesa e italiana. Una casa blanca de techos altos y con alberca complementan la decoración de este lugar que se abrió a principios de este año en la colonia Versalles. “Es como si estuvieras en alguna parte de Grecia, Santorini o Mikonos”, afirma su propietario Rubén Iñiguez, quien diseñó el menú magistralmente gracias a sus 35 años de experiencia en la cocina. En su listado de vinos encontrarás italianos, franceses, mexicanos, chilenos y californianos, entre otros.

It is an eclectic cuisine that combines three pillars: Japanese-Mexican fusion cuisine, Marival classics and special creations for Parrotfish. Chef Alfredo Jiménez has been responsible for concentrating this varied culinary offer. The wine list, created with the help of Anfitrión de México, is very varied, with a selection of sparkling, rosé, red, white and dessert wines. The professional service is worthy of note, as is the elegant atmosphere and decor inspired by the environment, the barrier reef and parrot fish.

The Pata de Elefante concept was born five years ago in Guadalajara, Jalisco. Its aim is to offer typical Mexican and American breakfasts with colorful presentations. The Nuevo Vallarta restaurant, which opened at the beginning of 2022, it is the sixth branch of this successful brand to arrive in our destination and contribute to what is becoming a gastronomic center. This pet-friendly establishment has air conditioning, a terrace, a balcony and a kids club with babysitting on weekends.

El concepto de Pata de Elefante nació hace cinco años en Guadalajara, Jalisco. Su objetivo es ofrecer desayunos típicos mexicanos y americanos, con presentaciones coloridas. Abierto a inicios de 2022, este restaurante de Nuevo Vallarta es la sexta sucursal de esta exitosa marca que llegó a nuestro destino para añadirse a esta zona que se está convirtiendo en un andador gastronómico. A fusion of traditional Mexican and Mediterranean cuisine. Good examples of the eclectic menu, prepared by chef Carlos Lanten, include the catch of the day with green pipian and the shrimp al pastor with pork belly, which is a regular favorite.

Olga and Robert Wojciak are the owners of this picturesque restaurant, decorated with attractive murals and named after Xochiquetzal, the goddess of beauty, sensuality and flowers in Mexican mythology.

IN THE HEART of the Versalles neighborhood of Puerto Vallarta is Homún, a restaurant that combines a cozy atmosphere with subtle elegance. Opened in May 2022, it has quickly captured the attention and palates of both residents and visitors.

Its location is in a charming old house with a traditional design which helps to highlight the dimensions of the space. The name of the restaurant is a play on words that comes from combining “Ho,” from home, and “mún”, as in common. Homún has a welcoming style and philosophy of being a communal space where everyone can meet to enjoy exceptional food.

This project is led by Diana Mora, partner and corporate image director of the restaurant, as well as by Mario Borja, partner and executive chef at Homún, which prides itself on its excellent gastronomy and

defines it as a Cocina Libre, which means that the talented team of chefs prepare each dish with creativity using interesting ingredients and exquisite presentations.

During a recent visit from the Vallarta Lifestyles editorial team to this magnificent restaurant, Borja presented a sample of the culinary delights that his kitchen offers. To start, he served the Hummus Burrata, an appetizer that combines an explosion of fresh Mediterranean flavors. A delicious salad is served on a plate with tomato and pesto, with pieces of homemade Italian sausage, soft burrata cheese and, of course, the homemade hummus. Each bite is a treat for the senses and a sample of the talent and ability that chef Borja possesses.

Durante una visita reciente del equipo editorial de Vallarta Lifestyles a este magnífico restaurante, Borja presentó una muestra de las delicias culinarias que su cocina tiene para ofrecer.

Para comenzar, sirvió el Humus Burrata, una entrada que combina sabores mediterráneos en una explosión de frescura y cremosidad. En un plato se sirve una deliciosa ensalada de jitomate con pesto, trozos de salchicha italiana hecha en casa, queso burrata suave y, por supuesto, humus casero. Cada bocado es una delicia para los sentidos y una muestra del talento y habilidad que posee el chef Borja.

“The vichyssoise, a leek and potato-based sauce, is combined with a fish fumet to create a delicate and aromatic foam. The first step to prepare the octopus is to marinate it with a black recado—a black paste that results from crushing and grinding a series of spices along with garlic, onion, chiles and seeds that were previously roasted. Next, the tentacle is brought to the grill and slowly roasted. Meanwhile, in a deep plate a base of chayote and bacon, baby corn grilled with extra aged Cotija cheese and the sauce is added, and then finally, the protein,” explains Borja in detail, who adds: “The result is a dish that surprises the senses, combining acidity, creaminess, fats and sweetness in a way that is truly unexpected and delicious.

Enseguida, el platillo principal que presentó fue el Pulpo Negro Vichysoisse. Se trata de una obra maestra de creación original, la cual está inspirada en tres elementos que el chef adora: los esquites con crema, la salsa francesa vichysoisse y los sabores del sur de México.

“La vichysoisse, una salsa a base de poro y papa, se combina con un fumet de pescado para crear una espuma delicada y aromática. El primer paso para preparar el pulpo es marinarlo con un recado negro —una pasta negra que resulta de triturar y moler una serie de especias con ajo, cebolla, chiles y semillas que previamente fueron tatemadas—. Enseguida, el tentáculo se lleva a la parrilla y se asa lentamente. Mientras tanto, en un plato hondo se pone una base de chayotes con tocino, un elote baby tatemado a la parrilla con queso Cotija extra añejo y se agrega la salsa,

The culmination of our exceptional culinary experience with chef Borja was the Basque Cheesecake, a truly irresistible option. Named the 2021 Flavor of the Year by the New York Times, this simple yet sublime cheesecake is made with cream, egg and vanilla and baked with care so that the crust browns slightly, while the interior remains smooth and creamy. Then it is served on a plate accompanied by a Swiss cheese quenelle, slightly toasted, and a strawberry compote that adds a touch of freshness.

To complement these delicious creations, Homún has a young and talented bartender named Alex Valdivia, who presented Santa Sangre, the most popular drink at the restaurant. The preparation of this signature cocktail begins with the cutting of a santa leaf in a circular shape to use it as a decoration inside the glass, while the rest is ground to create a special salt. The drink has a house-made kombucha base of hibiscus, mezcal, Ancho Reyes (an ancho chile liqueur) and yellow lime. Each sip of this cocktail is a refreshing experience that perfectly complements each of the culinary creations offered in this restaurant.

Homún is a unique culinary experience with a cozy atmosphere and a concept that will delight fans of creative and exceptional cuisine.

Originally from Guadalajara, Jalisco, Borja arrived in Puerto Vallarta in 2015, after having worked with various cuisines and culinary styles in his hometown and achieving a bachelor’s degree in gastronomy from the university of La Ciénega. Upon arriving in our destination, he worked at a French restaurant in Grupo Vidanta, and lead the kitchen at the Vallarta Adventures Rhythms of the Night show. He also had the opportunity to be a private chef in some villas in the Conchas Chinas area. These enriching experiences gave him the inspiration and knowledge necessary to create Cha’, a breakfast and brunch restaurant, whose natural concept has spread to the Cocina Libre concept that is offered in Homún.

Originario de Guadalajara, Jalisco, Borja llegó a Puerto Vallarta en 2015, justo después de haber trabajado en diversas cocinas y estilos culinarios en su ciudad natal. Su formación incluye una Licenciatura en Gastronomía por la Universidad de La Ciénega. Aquí en nuestro destino trabajó en el restaurante francés de Grupo Vidanta y encabezó la cocina del espectáculo Ritmos de la Noche de Vallarta Adventures. También tuvo la oportunidad de ser chef privado en algunas villas de la zona de Conchas Chinas. Estas experiencias enriquecedoras le brindaron la inspiración y el conocimiento necesario para crear Cha’, su primer restaurante de desayunos y brunch, cuyo concepto se ha extendido de manera natural a la cocina libre que se ofrece en Homún.

Para culminar esta experiencia culinaria excepcional, el Cheesecake Vasco es una opción irresistible. Nombrado como el sabor del año en 2021 por el New York Times, este cheesecake simple, pero sublime se elabora con crema, huevo y vainilla. Se hornea con cuidado para que la corteza se queme ligeramente, mientras que el interior se mantiene suave y cremoso. Luego se sirve en un plato acompañado de una quenefa de queso suizo también ligeramente quemado y una compota de fresas que aporta un toque de frescura.

Para complementar estas deliciosas creaciones, Homún cuenta con un joven y talentoso bartender llamado Alex Valdivia, quien presentó Santa Sangre, la bebida insignia del restaurante. La preparación de este cóctel de autor comienza con el corte de una hoja santa en forma circular para utilizarla como decoración en el interior de vaso, mientras que el resto se muele para crear una sal especial. La bebida lleva una base de kombucha de jamaica preparada en casa, mezcal, Ancho Reyes (un licor de chile ancho) y limón amarillo. Cada sorbo de este coctel es una experiencia refrescante que complementa perfectamente cada una de las creaciones culinarias de este restaurante.

After studying Design for Graphic Communication at the Centro Universitario de la Costa, where he had the opportunity to merge traditional design with digital design, Sanjuan began a journey around the world, where he visited different countries in the Americas and Europe with the aim of presenting and giving courses on airbrushing, art that would ultimately give him the basis to create his own style of tattoo.

“My tattoo style is a compilation of all the artistic techniques I’ve done. I define it as a mixture of realism influenced by airbrushing.

Después de estudiar Diseño para la Comunicación Gráfica en el Centro Universitario de la Costa, donde tuvo la oportunidad de fusionar el diseño tradicional con el digital, Sanjuan comenzó una travesía por el mundo, donde visitó distintos países de América y Europa con el objetivo de presentar y dar cursos sobre aerografía, arte que a la postre le brindaría la base para crear su propio estilo de tatuaje.

Through our work, we have contributed to educating people and demonstrating that we are no longer an underground industry, but a profession, we pay taxes, and, through that, we are pushing this art so that every day it is more admired and respected.”

LOCATED IN the heart of Puerto Vallarta, YamBak is much more than just a bar, it’s a haven that pays tribute to craft beer.

Arturo Saucedo, founding partner of YamBak PV, explains that the origin of this concept began 25 years ago in the city of Aguascalientes. After 10 years of success there, they decided to expand to Sayulita and just a couple of years ago they arrived in Puerto Vallarta.

Yambak is a Mayan word meaning “orphan” in Spanish. “We chose this name because we wanted our establishment to have a connect with pre-Hispanic culture and the ancestral civilizations of our country. Plus, it is a friendly word and easy to remember,” he explains.

In addition to the ocean views from the terraces, one of the biggest attractions at YamBak is its own craft beer. This subproject was named YamBak Brew Works and currently produces 11 styles of beer whose names pay

Located in the heart of this picturesque town, this souk (or market) is owned by partners Israel Preciado and Christophe Mignot, who have personally selected the items that adorn their shop, including surfboards, fine jewelry and Mexican beach souvenirs, among others.

In November 2022, the boutique officially opened its doors. “In addition to offering a different shopping experience, we love to share our love for Sayulita, so we will be happy to provide recommendations on the best places to explore, eat and enjoy everything magical that this place has,” shares Mignot.
