In accordance with the philosophy of its founders, and what has perhaps been a fundamental part of its success, is that the objective of this establishment is to offer a place where diners not only go to eat, but also to create memories of food and good company.

Paul Mayer, creator of the successful Vallarta Food Tours, is in charge of this project. He conceived of this idea with the purpose of offering a place to taste and educate yourself about the great variety of Mexican drinks, some of which are normally difficult to find. More than a restaurant, Urban Dogs defines itself as a gastronomic company aimed at turning the traditional taste of the snack into a culinary experience with the highest standards of quality and service. Its specialties are dogos (hot dogs), such as the one prepared with artisanal sausage stuffed with cheddar cheese and pieces of jalapeño chile; hamburgers such as vegetarian or breaded chicken breast dipped in buffalo sauce and topped with Oaxaca cheese. In addition, to complete this experience, on Tuesdays and Thursdays they offer a variety of promotional menu items.

GONG CHA | Francia 111-B, Versalles This international franchise of high-quality teas comes to our destination to offer a wide variety of beverages including limited-edition infusions, with foam, with milk and/or fruit, as well as smoothies, coffees and other options. The origin of Gong Cha (Chinese term meaning “the act of offering the best tea to the emperor”) dates back to 1996 in Taiwan, but it arrived in Mexico in 2019. In addition to the striking establishment, it offers a menu that includes savory dishes such as chapatas (a Spanish-style ciabatta) and exquisite desserts ranging from muffins to chocolate cake.
Esta franquicia internacional de tés de alta calidad llega a nuestro destino para ofrecer una amplia variedad de bebidas que incluyen infusiones de edición limitada, con espuma, con leche y/o frutales, así como smoothies, cafés y otras opciones. ZETTA | Rodolfo Gómez 143, Emiliano Zapata This concept, created by La Piazzeta (a restaurant with deep roots in our destination), offers a wide variety of Italian dishes where the Caprese Salad and the Burrata stand out—the burrata being an Italian cow’s milk cheese made with mozzarella and cream. However, its extensive menu also features antipasti, several salads and paninis. The new creations that make up Zetta’s exquisite menu are the product of more than 25 years of experience in Italian culinary traditions and avant-garde cooking techniques.
Este concepto, creado por La Piazzeta (un restaurante de mucho arraigo en nuestro destino), ofrece una gran variedad de platillos italianos donde destacan la Ensalada Caprese y La Burrata, un queso italiano de leche de vaca elaborado con mozzarella y crema. OP INTERIOR DESIGN | Olas Altas 499, Emiliano Zapata This design firm and interior design store seeks to transfer the creativity and ingenuity of Mexican forms to its works and products. The managers and founders of this project are Verónica Olivares and Luz Fabiola Palos, who is an environmental designer with more than eight years of experience and who has worked on large projects across different states of our country. Both are focused on satisfying the individual needs of their customers and one of their strongest points is the elaboration of custom-made furniture, which results in unique pieces designed specifically for those who seek to inhabit exclusive spaces.
Tienda de diseño e interiorismo que busca trasladar la creatividad y el ingenio de las formas mexicanas a sus trabajos y productos. Las encargadas y fundadoras de este proyecto son Verónica Olivares y Luz Fabiola Palos, quien es diseñadora ambiental con más de ocho años de experiencia y que ha trabajado en grandes proyectos en distintos estados de nuestro país. Ambas están enfocadas en satisfacer las necesidades de sus clientes y uno de sus puntos más fuertes es la elaboración de muebles hechos a la medida, lo que resultan en piezas únicas para quien busca habitar espacios de manera exclusiva.

EL PATIO DE BETO | Francisco Márquez 138, Independencia El Patio de Beto is a magnificent place to enjoy an exquisite, charbroiled burger, the popular delicacy that is presumed to have originated in Germany. Its wide selection includes burgers made with beef, shrimp and chicken. One of the favorites is the Burger of the Month, a special recipe—new each month—carefully designed by its creators. To accompany these delectable burgers, they have national beers and classic drinks. This venue also broadcasts the matches of the most popular sports, as well as other special events.
El Patio de Beto es un magnífico lugar para disfrutar de una exquisita hamburguesa al carbón, la popular delicia que se presume tuvo su origen en Alemania. Su amplia selección incluye desde las que están hechas con carne de res, hasta las de camarón y pollo. Una de las favoritas es la Hamburguesa del Mes, una especialidad cuidadosamente diseñada por sus creadores. Para acompañarlas cuentan con cervezas nacionales y bebidas clásicas. Este lugar también transmite los partidos de los deportes más populares, así como otros eventos especiales.

MENT | Francia 255, Versalles This boutique pastry shop offers cakes, brownies, chocolate truffles, cookies and many more baked delicacies. Many of the desserts are sold by the slice or piece, and they always have carrot, tres leches and chocolate cake available. In addition, they accommodate custom orders for other types of cakes and desserts on request. Ment also works with products from other local companies such as Perro Café and La Broma de Teo. They offer here an artisanal drink made from pure cocoa. Currently, the pastry shop only provides products for takeaway service.

Noroc offers high-quality international cuisine that features Italian and Mexican influences, among others, but with a Peruvian touch. The cocktails menu is designed by Mario Mendoza, a well-known mixologist in our region. One of the details that has attracted the most attention to this new restaurant that opened its doors last February, is its exotic design. Here, diners enjoy a relaxing experience surrounded by water while eating their meals. It’s as if they were in the center of an island. It is recommended to book your reservation in advance.

El menú de bebidas está diseñado por Mario Mendoza, mixólogo muy reconocido en nuestra región. Uno de los detalles que más ha llamado la atención de este nuevo restaurante que abrió sus puertas en febrero pasado, es su exótico diseño en el que los comensales viven una experiencia relajante al comer rodeados por agua, como si estuvieran en el centro de una isla. This gastronomic concept is centered on an ancestral technique of Japanese cuisine called robatayaki, which is based on cooking food at various temperatures on the grill.

Unlike skateboarding (an urban sport that is practiced with a short board to be able to perform tricks and have some freedom of action), the longboard a special board is used that promotes greater stability and with which it is sought to experience turns, descents and higher speeds.
A diferencia del skateboard (deporte urbano que se practica con una tabla corta para poder realizar trucos y tener cierta libertad de acción), en el longboard se utiliza una tabla especial que propicia mayor estabilidad y con la que se busca experimentar giros, descensos y velocidades más altas.
Within this modality is longboard dancing, a unique sport where riders perform synchronized movements that include small jumps, some steps forward and backward, changes of position and other challenging movements while they are skating, which results in a striking and spectacular dance on the board.
Dentro de esta modalidad se encuentra el dancing, un estilo donde los riders realizan movimientos sincronizados que incluyen pequeños saltos, algunos pasos hacia adelante o para atrás, cambios de posición y otras habilidades mientras van en marcha, lo que da como resultado un llamativo y espectacular baile sobre la tabla.
At the local level, one of its most recognized participants is Valentina Cruz, a young woman from Puerto Vallarta, who has been focused on practicing this sport—which acquires more followers every day—professionally for more than 10 years.

“I started skating at the age of 13, when a friend would lend me his board from time to time. With the passage of time, I discovered dancing, and it was through YouTube that I learned different techniques. As I did them, I became convinced that this activity had to be an essential part of my lifestyle,” she shares.
“Comencé a patinar a los 13 años, cuando un amigo me prestaba su tabla de vez en cuando. Con el paso del tiempo descubrí el dancing y fue a través de YouTube que aprendí distintas técnicas. Conforme las efectuaba, me convencí de que esta actividad tenía que formar parte esencial de mi estilo de vida”, comparte.
Currently, Cruz is an ambassador for GoPro and is part of the GoPro Family, which is a community of athletes around the world who are dedicated to creating sporting content for a variety of different digital platforms. “I am also sponsored by Land Yachtz, Bear Trucks and Hawgs Wheels, which are some of the best international brands of accessories for this type of board.”

During 2021, there was a milestone in Cruz’s career: “Last year I was contacted to be part of the launch campaign of the new fragrance ‘212 Heros’ by Carolina Herrera. This fragrance and the campaign are inspired by the philosophy of skateboarding, youth and freedom. This initiation of the campaign was carried out in a park in CDMX, where the production team set up a skate park in which all the riders who participated could perform some skating sessions. In addition to this, I had the opportunity to model and dress in this brand to give interviews and make different presentations. That content was then shared throughout our social networks.” When asked about one of the situations that have given her the most satisfaction while practicing this sport, Cruz shares: “The happiness I feel when skating does not compare to anything else. It is very pleasant to respond to messages from followers who ask me about certain things and/or recommendations of activities to enjoy here.” Before concluding our conversation, Cruz took the opportunity to offer her vision of our destination: “This corner of the Pacific is a place blessed for its natural riches and attributes. It is a treasure we have in our hands, so we need to take care of it in order to keep it attractive to both residents and visitors. It is all of us who are ultimately an essential part of promoting our bay.”

The community of San Pancho,
Nayarit, is home to the offices where Alianza Jaguar A.C. operates, a non-profit civil association that, along with other collaborators, was founded in 2008 by Erik Saracho, an environmentalist and activist who has worked for the conservation of this species for more than two decades.

Originally from Guadalajara, Jalisco, Saracho received his bachelor’s degree in Communication Sciences from ITESO. During his years as a student, he created a recording studio. “At that time, internationally, the discourse began that music could be environmentally friendly, and the first album made with solar energy was released,” he shares.
Originario de Guadalajara, Jalisco, Saracho egresó de la Licenciatura en Ciencias de la Comunicación por el ITESO. Durante sus años como estudiante creó un estudio de grabación. “En ese momento, a nivel internacional, comenzó el discurso de que la música podía ser ambientalmente amigable y salió el primer disco hecho con energía solar”, comparte.
As a result, Saracho had a turning point and understood that he could devote himself to environmental communication and develop programs in which people understood that daily actions, however minimal, have large-scale repercussions. Due to his concern to work on these issues, he became involved with different environmental groups in Guadalajara.
A raíz de eso, Saracho tuvo un punto de inflexión y entendió que podía dedicarse a la comunicación ambiental y desarrollar programas en los que la gente comprendiera que las acciones cotidianas, por mínimas que sean, tienen repercusiones a gran escala. He arrived in Puerto Vallarta in 1996 and was soon invited to collaborate in the recently established Centro Universitario de la Costa of the Universidad de Guadalajara. In the following three years, in addition to his ecological work, he dedicated himself to exercising his profession as a university professor and editorial director of both the Vallarta Negocios magazine and a newscast that was broadcast on pay television.

Part of our destination is sheltered by the Sierra de Vallejo, a Natural Protected Area (ANP) that was established in 2004, which has about 70,000 hectares that extend between the municipalities of Bahía de Banderas and Compostela, Nayarit. In this tropical mountain range made up mostly of huanacaxtle, amates and big-leaf mahogany trees, resides one of the most important jaguar sanctuaries in Mexico.

“To encourage the conservation of this species throughout the mountains, since 2002 work began on the creation of a Livestock Insurance, which consists of offering a compensatory payment to the owner of a farm animal that has been attacked by a jaguar. In exchange, he will not hunt or destroy the animal. Now established, this protection mechanism is very important to preserve the species, because it is usually the females who hunt to feed their young. If the mother is missing during that stage of growth, the kittens are totally vulnerable.”

When asked about one of his greatest satisfactions at the head of the association, Saracho confirmed: “I think that, since I was presented with the possibility of contributing to the conservation of the jaguar, the main joy it has given me is to be able to work on human consciousness, environmental education and the awareness of producers and ranchers, which has resulted in a change in mentality and behavior. I am excited to see that the farmers and ranchers who were pursuing the jaguars a year ago are now the same people who are helping to protect the species.”
Al preguntarle por una de sus mayores satisfacciones al frente de la asociación, Saracho confirmó: “Creo que, desde que se me presentó la posibilidad de contribuir en la conservación del jaguar, la principal alegría que me ha dado es poder trabajar en la conciencia humana, en la educación ambiental y en la sensibilización de los productores/ganaderos, lo que ha dado como resultado un cambio de mentalidad y comportamiento. Me emociona ver que hace un año había gente persiguiéndolos y ahora son ellos mismos quienes están protegiéndolos”.

Looking to the immediate future, Saracho and his team of collaborators in Alianza Jaguar, A.C. aim to monitor and work together with the developers of the Guadalajara – Puerto Vallarta highway for the creation of wildlife crossings that respect the free and natural transit of the jaguar. “To achieve this, we have been fitting the animals with GPS collars to track their movements. This way we can know exactly where they are moving and where they are headed to inform the location of crossings. It is hard work, but it is totally worth putting all our efforts into its conservation.”
De cara al futuro inmediato, Saracho y su equipo de colaboradores en Alianza Jaguar, A.C. tienen como objetivo vigilar y trabajar de manera conjunta con los desarrolladores de la autopista Guadalajara – Puerto Vallarta para la creación de pasos de fauna que respeten el tránsito libre y natural del jaguar. “Para lograrlo, les hemos estado colocando collares GPS para rastrear sus movimientos. PUERTO VALLARTA, being a recognized destination for the LGBT+ community, has been characterized in recent years by having a large entertainment scene for both visitors and residents. Day in and day out, it is very common to find a variety of shows starring drag queens as well as plays with gay themes, but the reality is that the existence of all this success, of course, has a beginning. PUERTO VALLARTA, al ser un reconocido destino para la comunidad LGBT+, se ha caracterizado durante los últimos años por tener una nutrida escena de entretenimiento tanto para visitantes como residentes. Hoy en día es muy común encontrar espectáculos protagonizados por drag queens y obras de teatro con temática gay, pero la realidad es que todo éxito siempre tiene un comienzo.
A BIT OF HISTORY The origin of gay-themed shows in our city dates back more than two decades, when local creators such as Alberto Fabián and Edgar Treviño began to explore these themes in their plays. These projects—some very popular such as Cartas al Divino Preso and Por Ellas Las Botellas—entertained a large audience of residents of our destination including both Mexicans and foreigners who spoke Spanish. Thanks to these endeavors, today’s local Spanish-language theater has such successful plays as Princesas Desesperadas, by the Perro Bravo company (a work that has achieved great success since 2014 and plans its great return after the pandemic this summer) and Amigas Desgraciadas, the most

When it comes to theater that appeals to the LGBT+ community in our city, as well as the wider community as a whole, it is essential to refer to The Rocky Horror Show, which has had several incarnations with different local groups since the time of the now defunct Santa Bárbara theater. In fact, this same musical has been assembled on two occasions by the entertainment company that today is called Act2PV.

During the tribute I Want It All, Gomez’s talent shines thanks to his powerful voice that has left the audience breathless on more than one occasion. This stage professional not only plays the music of Freddy Mercury, but also enacts the events of his life that are now part of musical history worldwide. Classics such as I Want to Break Free, Somebody to Love, We Will Rock You, We Are the Champions and Bohemian Rhapsody, among others, are part of this spectacular performance.

Although many may find the name of this pueblo curious, there is really no proven version of its origin. However, oral history indicates that the founding family of this place was made up of Apolonio Palomera and Anastasia Gil along with their children Liborio, Pedro and Román. Apparently, when they arrived in 1918, the region was already known as Lo de Marcos. And the land was part of the hacienda and the vast possessions of the Camarena family, who was originally from Guadalajara, Jalisco.

Once this shift began taking place, the first bungalows were built to provide local accommodations. This pivotal change gradually ignited the growth and development of this small town. Over the past decade, major improvements have been made to the infrastructure of Lo de Marcos, including the

They offer a wonderful selection of healthy organic products here that are not found anywhere else in our region including fresh local produce but also kombucha and local cheeses. Since 2011, they have been applying sustainable techniques both in their crops and in marketing.

CHEF MARIO MENDOZA Originally from Mexicali, Baja California, Mario came to live in San Pancho at the age of four. Raised in this Riviera Nayarit micro-destination, his adventure in the kitchen began at the age of 13, during a summer vacation, when an uncle invited him to work in a small restaurant. Ultimately, he would discover his talent and, while working at Café des Artistes, he was able to complete and graduate with a bachelor’s degree in Gastronomy from the Universidad del Alica de Occidente. His desire to learn other techniques and flavors led him to work in the Apéritif restaurant in Bali, Indonesia, as well as in the Danish restaurants Relæ (one Michelin star) and Kadeau Copenhagen (two Michelin stars). On his return, he opened IKAN · Cocina Marina to offer a fusion cuisine that stands out for its exquisite flavor. Originario de Mexicali, Baja California, Mario llegó a vivir a San Pancho a la edad de cuatro años. She also earned and completed an internship in the kitchen at the prestigious Club de Industriales of Mexico City. Originally from Puerto Vallarta, in San Pancho she saw the opportunity to contribute her well-developed culinary talent to highlight each of the dishes created at IKAN · Cocina Marina. La aventura de María del Rosario en la cocina comenzó a sus 17 años, cuando estudió distintos cursos de gastronomía en el CeCaTI 63 de nuestra ciudad. “We usually have fresh dorado fillet, which is marinated with a chintextle miso, that is, a paste prepared with pasilla mixe chiles—which are of Oaxacan origin—and garlic, vinegar, spices and dried shrimp are added. From there a marinade is made to be able to shake it,” explains Mendoza.
“Usualmente tenemos filete de dorado fresco, el cual se marina con un miso de chintextle, es decir, una pasta preparada a base de chile pasilla mixe —que es de origen oaxaqueño— y se le agrega ajo, vinagre, especias y camarón seco. De ahí se hace un adobo para poder zarandearlo”, explica Mendoza.
“Once the protein is cooked, it is served on a bed of kimchi—fermented cabbage—and is accompanied with an acidic cream of cilantro, some kiniches, refried black beans, tofu and carefully added to the top of the dish is a small dusting of powder from dried chiles,” García adds.
“Una vez cocinada la proteína, se sirve sobre una cama de kimchi —col fermentada— y se acompaña con una crema ácida de cilantro, unos kiniches, frijoles negros refritos, tofú y en la parte de arriba se le agrega cuidadosamente un poco de aire de chiles secos”, complementa García.
To accompany this exquisite culinary specialty, a delicious signature cocktail called Teporocho is recommended. “This drink is prepared with mezcal and has pineapple tepache, a touch of orange juice and cocoa rosita syrup, which is a spice that gives off a lot of fragrance. All of the ingredients are poured into the shaker and shaken firmly. Before serving, the glass is carefully frosted with worm salt and to complete the cocktail, it is decorated with a pineapple leaf, a slice of dehydrated pineapple, a couple of slices of fresh jalapeño chile and dehydrated star fruit,” explains Julen Palomares, bartender at IKAN · Cocina Marina, who also masters the art of classic cocktails prepared with any type of distillate.

THE SPCA PUERTO VALLARTA
The SPCA Puerto Vallarta (Protective and Compassionate Society for the Animals) was founded in 2007. This non-profit organization helps to rescue animals in the streets or abandonment situations and promotes sterilization campaigns, in addition to facilitating the adoption of pets within our bay and to other countries. The first location of this shelter or Sanctuary (as it is also known) was in a small two-bedroom house in the Paso Ancho neighborhood, which was conditioned to receive, care for and rehabilitate the dogs and cats that were taken off the streets. It provided many rescued animals with a safe haven. With the passage of time, and as different needs arose, the SPCA Puerto Vallarta began to look for a larger space which would afford them the opportunity to

Its purpose is to facilitate the adoption of local animals and the transfer of them to those countries. To accomplish this, they must have the animals examined and have complete health documents (so they are medically authorized to travel).

PET RELOCATION PROGRAM Luz María Wong, director of SPCA Puerto Vallarta, shares the general details of this program that on average has rescued and relocated 200 dogs and cats per year. “Upon arrival at the shelter, the animals go directly to a quarantine area. They remain here and are given a protocol that includes blood tests and a series of tests to detect different diseases. Then, if they test positive for a disease, the corresponding treatment is administered to the animal. Once our veterinarians verify that they are completely healthy, we have them photographed, and then we upload the photos and any relative information to a website where pets are posted for adoption,” she explains. “When an adopter shows interest in a certain dog or cat, they are provided with an application to fill out. If the application is sufficient, a representative from one of the associations with which we collaborate abroad visits the house where the animal will live and reviews it in detail to ensure that it meets the necessary conditions. In this way they know who the owners will be and, if everything is in order, they proceed with the adoption of the pet,” she adds. “At this point, what we call Flight Angels enter the scene. That is, our network of collaborators and friends in person and on social media begins to ask among their acquaintances if anyone is going to travel soon to the United States or Canada who could take the pet and deliver it directly to the adopter. We carry out the procedure and we bear all the expenses, which are mostly covered by the cooperation fee,” she says.

Posteriormente, un representante de alguna de las asociaciones con las que colaboramos en el extranjero visita la casa donde el animal va a vivir y la revisa a detalle para asegurar que cumpla con las condiciones necesarias. De esta manera conocen a quienes serán los dueños y, si todo está en orden, se procede con la adopción de la mascota”, añade. “En este punto entran en escena lo que nosotros llamamos Flight Angels, es decir, nuestra red de colaboradores comienza a preguntar entre sus conocidos si alguno va a viajar pronto a Estados Unidos o Canadá para pedirles que se lleven a la mascota y la entreguen directamente al adoptante. Adoptions also take place locally and the process for application is much the same: “Family members who have decision-making power are asked to fill out an application where they express their mutual agreement to integrate a pet into the home. After the application is reviewed, we do a visit to the house to make sure that the spaces are adequate to include the animal. If they meet these requirements, the cooperation fee that includes the sterilization surgery, some vaccines and other related expenses are covered.”

Wong pieced together the story of Dusty, an abandoned dog who was very ill when he was rescued, that has since been adopted and lives abroad with a Canadian family.

“Dusty was very skinny and suffered from practically all the diseases that a dog can have. He was found in the Mojoneras neighborhood in 2019, in an area where there was a lot of dust—hence his name. His physical condition was so

CHALLENGES FOR THE SHELTER Hurricane Nora brought with her strong winds and heavy rains as she made landfall on our destination during August 2021. Unfortunately, these severe weather conditions caused the massive overflow of rivers, as well as devastating floods and landslides in several different parts of the city. With the flooding of the Pitillal River and the trees that were caught up by and dragged in its current, the facilities and infrastructure of the SPCA Puerto Vallarta shelter suffered severe damage. “More than half of our land vanished and approximately 6,500 square feet of the building structure were lost. This included the 20 cages that made up the quarantine zone, the pool that served as a place to perform physical therapies and the cat area, as well as our dining room, a bathroom, the laundry and an apartment where our collaborators lived. Now we are only left with nine cages, a bathroom, a veterinary office that we have adapted as a storage area and the surgery room,” explains Wong. Although in the short term they seek to gradually rebuild their facilities, one of their biggest challenges is to work on the reinforcement of the banks of the river, which require the implementation of gabion walls to function as effective protection against the possible presence of another meteorological phenomenon.

RETOS PARA EL ALBERGUE El Huracán Nora trajo consigo fuertes vientos e intensas lluvias cuando tocó tierra en nuestro destino durante agosto de 2021. Lamentablemente, estas condiciones climatológicas provocaron el desbordamiento de ríos, así como inundaciones y deslaves en distintos puntos de la ciudad. Con la crecida del Río Pitillal y los árboles que arrastraba su corriente, las instalaciones e infraestructura del albergue SPCA Puerto Vallarta sufrieron daños severos. “Más de la mitad de nuestro terreno se desvaneció y aproximadamente 600 metros cuadrados de construcción se perdieron. Ahí se fueron las 20 jaulas que conformaban la zona de cuarentena, la alberca que servía para realizar terapias físicas y el área de gatos, así como nuestro comedor, un baño, la lavandería y un departamento donde nuestros colaboradores vivían. Ahora solamente nos quedamos con nueve jaulas, un baño, un consultorio veterinario que hemos adaptado como bodega y el cuarto de cirugías”, explica Wong. Janice Chatterton, founder and president of the SPCA Puerto Vallarta, did in life what few do because she contributed to the changing of social behavior and saving many animals’ lives. She passed away in 2019 after suffering from a sudden illness. Originally from California, Chatterton, an entrepreneur, arrived in our destination in 1990, when she bought the iconic Casa Bur-Sus to use as a vacation property—the home Richard Burton gave to Susan Burton after filming The Night of the Iguana. She set forth with renovations and purchasing of the surrounding villas. Eventually, this property became Casa San Ángel and finally, in 2003, Hacienda San Ángel, which it remains today. Simultaneously, she developed the Sociedad Protectora y Compasiva por los Animales (Protective and Compassionate Society for the Animals) of Puerto Vallarta, a project that has been carried out with great success in our destination for 15 years.
