Cook the pasta in a pot of boiling water for 5 minutes. Drain and set aside. Combine both milks, eggs, melted and stir. Sprinkle Parmesan cheese on top of pasta. 1 c almonds 1 c rolled oats 1 c whole wheat flour 1 egg 1 t vanilla
2 T milk 1 T cinnamon
Preheat oven to 350°. In a food processor or blender, grind the almonds and oats until slightly coarse. Transfer them to a large bowl. Add the flour and mix well. In a small bowl mix the egg, vanilla, ¼ c applesauce, syrup, oil, and milk. Mix well. Add the wet ingredients to the dry ingredients and mix until just combined. Gather the dough into a ball. Wrap in plastic wrap and place in refrigerator till firm, 30-60 minutes. Once firm, cut a piece of parchment paper the size of a baking sheet and place on the counter. Cut the dough ball in half. Roll out dough on parchment paper. Roll out until it is ¼-1/2 inch thick. Spread the remaining applesauce and cinnamon on top of the dough. Repeat with the second ball of dough. Place that piece on top of the other piece so the applesauce is in between the two. Slice into squares. Bake 12-14 minutes.
