. In a large o en o er medi m-high heat, heat oil. Add onion, carrot, and celer , and cook n l so�, abo t min tes. S r in beef and garlic, breaking p meat ith back of a spoon. Cook n l no longer pink and lightl seared, abo t min tes.
. Add ine, and bring mi t re to a simmer. Cook n l ine is mostl red ced. S r in tomatoes, tomato paste, stock, and ba leaf, then red ce heat and simmer for ho r, allo ing fla ors to meld.
. Discard ba leaf, then grad all s r in milk. Co er ith a lid slightl ajar and simmer, s rring occasionall , n l milk is f ll incorporated, abo t min tes. Season ith salt and pepper

• po nd boneless, skinless chicken breast, c t into strips
• red bell pepper, c bed
• b nch scallions, trimmed & sliced into / -inch lengths
• ( o nce) can pineapple ch nks, drained & j ice reser ed
• tablespoon cornstarch
. Combine so sa ce, tablespoons oli e oil, paprika, and salt in a bo l. Add chicken strips and let marinate hile preparing the remaining ingredients.
. Heat remaining tablespoon oli e oil in a ok o er medi m-high heat. Add bell pepper and s r-fr for min tes.
. Add scallions and cook for more min tes.
. Remo e chicken from marinade and add to the ok; discard marinade. Cook, s rring occasionall , n l chicken is cooked thro gh and no longer pink in the center, to min tes.
. Combine pineapple j ice and cornstarch in a bo l; mi together. Add pineapple ch nks to the skillet and cook for to min tes.
. Po r in pineapple j ice mi t re and bring to a boil. Simmer n l sa ce has thickened, abo t min tes.
