made easier with simple “cheats”

Upside Down Chili Pie 4 cups chili (canned or homemade) 1/2 cup water 1 box Jiffy Corn Muffin Mix 1 large egg 1/3 cup milk 1 tsp onion powder

Warm up the chili and water over med. heat. If your chili is especially thick, add up to another 1/2 cup of water. Transfer chili to casserole dish. You should have about an inch of headspace left in the pan. Prepare the cornbread batter: In a medium mixing bowl, add the corn muffin mix, egg, milk, and onion powder. Stir everything together until well incorporated. Drop 1/4 cup portions all over the chili. Very gently, using the back of the spoon, push the batter towards the edge of the casserole pan, spreading the cornbread batter until most of the chili is covered. Bake 25-35 min. The cornbread batter should have risen and be a deep yellow color. Let the casserole cool for about 10 min. before serving so the chili can set.

Chicken Pot Pie 2 1/2 cups diced rotisserie chicken or other cooked chicken 1 (16-ounce) jar alfredo sauce 2 cups frozen mixed vegetables 1 sheet frozen puff pastry, thawed

Preheat the oven to 400°F. Make the filling: In a 10-inch ovenproof skillet, combine the chicken, Alfredo sauce, and vegetables. Add 1/4 cup water to the Alfredo sauce jar, screw the lid on, and shake, then add to the chicken mixture. Bring to a simmer over medium heat and cook until heated through, about 3 minutes. Cover with pastry: On a lightly floured countertop, gently roll out the puff pastry so it is just large enough to cover the top of the skillet with a little overhang. Drape the puff pastry over the skillet and cut 4 slits in it to allow the steam to vent. Bake until the puff pastry is golden brown and the filling is bubbling, 25- 30 min. Let cool for a few minutes before serving.

Pumpkin Mousse 8 oz cream cheese, softened 1/4 cup sugar 15 oz pumpkin

3.4 oz instant vanilla pudding mix 2 teaspoons pumpkin pie spice 1 cup cold 2% milk

1-3/4 cups whipped topping 24 gingersnaps, divided Whipped cream, optional

In a large bowl, beat cream cheese and sugar until smooth; add pumpkin, pudding mix and pie spice. Gradually beat in milk. Fold in whipped topping. Spoon 1/4 cup mousse into eight serving dishes. Crumble 16 gingersnaps; sprinkle over mousse. Top each with remaining mousse. Refrigerate until serving. Top with whipped cream and additional crushed gingersnaps just before serving.
