I encourage everyone to take advantage of one of the unique assets that we all can enjoy here in Knox County; it is literally just outside our door! The Kokosing Gap Trail is a paved path that runs from Mount Vernon to Danville, and can be a safe source of entertainment for the whole family--one that can build memories for years to come.

Every time my wife and I take a stroll, or ride our bicycles down the trail, we find ourselves reminiscing about the first time we visited, or brought our dogs out to the trail to see how they would cope as they encountered other critters or people. Personally, it conjures fond memories of family hikes, cross-country skiing with my wife, and even setting goals for reaching a new distance benchmark on a run or on my bicycle.

The Kokosing Gap Trail is a gem in our county, maintained completely by volunteers. It is a source of exercise and relaxation as well as a place to people-watch and observe nature. Thousands of people each year take advantage

of the most amazing, enjoyable and accessible bicycle paths in the Midwest!

ABOUT THE TRAIL

The Kokosing Gap Trail is a paved, 14-mile recreational trail built on a former Pennsylvania Railroad line with endpoints in Mount Vernon and Danville. It is part of the bike trail that runs from Lake Erie to the Ohio River. Visitors will traverse the Kokosing River twice on railroad bridges more than 250 feet long with forests, wetlands, agriculture and villages along the way. A 1940 Alco 0-6-0 locomotive and a 1924 Chesapeake & Ohio caboose sit next to the trail in Gambier, and a wonderful park with play structures is adjacent to the trail in Howard.

Water fountains, bicycle “Fixit” stations and restrooms are available on the trail in Mount Vernon, Gambier, Howard and Danville. Water is turned off and restrooms closed mid-November to mid-April, but the Howard restroom is open all year. Park benches are located along the trail about every 1/2 mile.

Biscuits

Breakfast Biscuit “Bombs”

1 can refrigerated crescent rolls or biscuits

8 oz. bacon, ham or sausage (cooked & crumbled)

4 eggs (scrambled & cooked)

8 tablespoons shredded cheddar cheese

1 egg, beaten (for egg wash) & 1 tbsp. water

Separate each biscuit in half. Press each into a 4-inch round. Spoon 1 heaping tablespoon full of each eggs, meat & cheese onto center of each round. Gently fold edges up and over lling; pinch to seal. In small bowl, make egg wash by mixing remaining egg and water. Brush on biscuits on all sides. Bake at 350o 15-18 minutes, until golden brown Tip: Also works great in an Air-Fryer!

Avocado Toast

What You Need:

• I slice of thick whole-grain bread

• ½ ripe avocado

• Pinch of salt

• Toppings: Bacon, Tomatoes, Poached Egg or Radishes

Toast your slice of bread until golden and rm. Remove the pit from your avocado. Use a big spoon to scoop out the esh. Put it in a bowl and mash it up with a fork until it’s as smooth as you like it. Mix in a pinch of salt and add more to taste, if desired. Spread avocado on top of your toast. Enjoy as-is or top with any extras o ered in this recipe. Sprinkle with akey sea salt

Healthy Basics

Breakfast doesn’t have to be fancy. A simple bowl of cut up fruit (whatever you already have on hand). Top with your choice of whipped topping, yogurt, granola, or chopped nuts will make you feel satis ed & energized.

Protect Check Remove Watch

• When in grassy or wooded areas, wear long pants, tucked into socks or shoes and a long-sleeved shirt tucked into your pants.

• Use Insect repellents with 30% DEET.

• Have pets treated with topical or oral medication or by vaccination.

• Even if treated, check your pets often. Ticks can hitch a ride inside.

• Check for ticks daily - they can be the size of a pin head and easily missed

Visit

Our EH staff identify ticks.

• If you find an attached tick, remove it ASAP and monitor for symptoms for a month. Note the date of the bite.

• Symptoms of Lyme disease can include bullseye rash, fatigue, chills and fever, headache, muscle pain and swollen lymph nodes.

• You could be bitten and not know until symptoms start to appear.

• If symptoms arise, contact your doctor.
