Women’s Hair Loss Why Does it Happen? & What can you do about it?
What used to be a “men’s condition” is now quickly becoming a female epidemic. It is scary to think that you could randomly wake up one day and begin to see more hair on the pillow case and less on your head. For women losing their hair, it is a serious blow to femininity and the ideal vision of themselves. We are constantly cutting and coloring to make sure our hair looks the best it can. But what if one day the un-thinkable happens… and it falls out and doesn’t grow back?
1
Question: What causes women’s hair loss? Answer: Female hair loss can be
caused by multiple factors, but the most common cause is an underlying genetic pre-disposition to hair loss known as androgenetic alopecia or female pattern hair loss. Unlike the popular myth that you inherit hair loss from your mother’s father, women can inherit hair loss from either side of the family. This means that women can inherit hair loss from men and vice versa. It is much more common than people know. There are other factors that can cause hair loss or increase hair loss due to family history. They include stress, lifestyle, diet, thyroid disfunction, fungal infections, scalp parasites, and medications (most common hormone replacement and birth control pills).
2
Question: What do your clinics use to help women with thinning hair?
Answer: Depending on the reason for the loss, the treatment protocol will vary. Usually though for common female pattern hair loss the protocol is relatively similar. We a have a 9 month program that includes twice weekly office visits for cool light laser treatments for the scalp. This stimulates cell regeneration and is already approved to promote thicker hair. Our program also includes topical pharmaceuticals, hormone therapy balancing cream, nutritional supplementation, holistic hair care products, and topical scalp serums. This is most aggressive treatment that we offer, but it works. When you use everything together the way that our program does, you are bound to get results.
3
Question: What advice would you give a woman who is dealing with this problem?
Answer: Find the source of the problem as quickly as possible and treat that problem. Don’t try to treat it yourself because it wastes time that could be spent growing hair back. I obviously would recommend to call us and then come in for a consultation. Worst case scenario, you can stop the progression of the loss. Best case, we can dramatically reverse your hair loss and regrow hair. We have had numerous cases where a woman was wearing a wig or extensions when they started the treatment. Then 9 months later they were able to remove their wig permanently or stop getting extensions because their hair had gained so much volume and density.

Question: Is there hope for women with thinning hair? How do you control it?
Answer: There certainly is. There are
so many tools that can be used to control female hair loss and reverse it in many cases. Once you have established the reason for the hair loss and it can be treated with a variety of methods. Unfortunately, most general physicians simply don’t have the time or the knowledge to get a full understanding of why a woman is losing her hair. The female patient is then left combing the internet for solutions that rarely leads to any real answer.

Call today for your FREE Consultation
Question: How you do know what is causing your hair loss? Answer: A simple patient history
is the easiest way. Many women have blood tests for hormonal issues, thyroid dysfunction, iron levels, and vitamin D deficiency. Unfortunately this rarely produces any other cause other than normal pattern hair loss. At our clinics we use a video microscope to analyze the condition of the scalp at 50x magnification. At this level we can tell if the client has loss due to stress, diet, infection of the hair follicle, or simple hormonally related hair loss.
6
Question: Is there maintenance required?
Answer: 99% yes. I usually tell people it’s like brushing your teeth. If you don’t brush them and go to the dentist, your teeth will rot and fall out. The same goes for your hair. If you have a genetic hair loss problem, you have two options; oneyou can treat the problem long term, or two- let your hair fall out and go bald. Clearly our clients choose hair.

NOW THAT HALLOWEEN IS OFFICIALLY OVER, the holidays
are here. And while my wallet might be nervous, my inner child is trembling with excitement. I’ll always remember Christmas mornings as a kid. I was known to wake my parents up at obscene hours, even by Christmas kiddo standards. 3 a.m., in my head, was a prime hour to get up and unwrap all of the goodies that Santa brought. Of course I was told to go back to bed, but I couldn’t sleep. I’d lay there in my dark, silent room, daydreaming about the hours to come. Luckily my big brother was doing the same thing in his room. When I’d finally doze back off, he’d wake me up to play video games at 5 a.m. We were just two kiddos, anxiously bidding our time. I don’t remember what gifts I got that Christmas, but I’ll always remember that morning with my brother. Recently my brother became a daddy. I do not envy him and his wife come Christmas morning five years from now. Surely he’ll get some karmic payback for our early morning wakeups. Christmas is my favorite holiday, but I consider Thanksgiving the much-needed appreciation before the shopping storm. No matter the kind of year you’ve had, there’s always something to be thankful for before Black Friday takes over and the crazier among us venture out at night to get a deal.

VALLEY LIFESTYLES MAGAZINE | NOVEMBER 2015
Occasionally I’ve been that crazy person, but I won’t be this year. After all, unique gifts typically don’t come from big box stores, so if you’re looking for something a bit more heartfelt, we have the solution, and the good news is that you don’t have to drive far—or in some cases, even at all! The East Valley is rife with original gift giving ideas. The local businesses we profile on P. 38 will help you avoid the crowds and the insincere “thaaaaanks...” on Christmas morning. And speaking of planning for Santa’s arrival, we’re feeling a bit fancy this holiday—and so are some of the East Valley’s best restaurants. Whether you have in-laws coming into town and want to impress, or you just want to give your immediate family a bit of a holiday treat, our feature on P. 30 will direct you to the EV’s most spectacular, upscale restaurants that are worth the splurge. It’s the most wonderful time of the year, and we live in one of the most wonderful places in the country. Let’s give thanks to the East Valley and all of the businesses and people that make it truly an amazing place to be. Save some turkey for me,

GILBERT COMEDIAN JILL BRYAN BREAKS DOWN BARRIERS FAR AWAY FROM COMEDY’S CAPITALS BY SARAH MARMOLEJO PHOTOS BY CARL SHULTZ
With a brother like Jimmy Kimmel, you would think breaking out of his shadow might be difficult. But it’s not, if you’re Gilbert comedian Jill Bryan. Bryan has made a name for herself on the local comedy scene, and when you hear a few of her jokes, you’ll be asking, “Jimmy who? Oh, right! Jill’s brother!” It was another day at the bland, dull office where “babysitting adults” and “political correctness” go hand-in-hand, Bryan says. Another day, another dollar, and one more day at the office as an administrative assistant wasn’t something Bryan could take. When she heard about an open mic night in town, she decided to give it a shot. After all, comedy runs in the family. Bryan explained that she always loved acting and making her friends laugh, so stand-up seemed like the natural next step. But it wasn't until July 2006 that she gave it a shot and fell in love, and by then she was 35. VALLEY LIFESTYLES MAGAZINE | NOVEMBER 2015

Since Bryan began her comedy career late by the industry’s standards, the nagging factors were always there—the late start, the male-dominated field, the idea of failing. But Bryan didn’t let anything get to her as she raced through the doorway to success. Bryan grew up around boys. As she entered the comedy scene, dealing with the male majority was nothing new, and she sure didn’t let that stop her. It should not stop anyone, she explains. “I have always had more male friends than female friends, so it felt normal to me,” she says. “But I also won't allow anyone to treat me poorly, so my gender hasn't been an issue so far. My only advice to women who may want to try comedy is to be a funny woman. Don't try to be a guy. Be a woman. And be funny. That's the only way to go.” Gilbert might be happy to stake its claim on Bryan as she breaks through comedy’s barriers, but why here? Bryan has accomplished a great deal in her career and might be expected to live in Hollywood or New York, but she says she loves it here—and not just because it’s a town that's monumentally cheaper than Los Angeles. She was born in Brooklyn, lived in Las Vegas from age 6 to 15, then her family moved out to Gilbert, and she has been here ever since. “I love my little house, my neighborhood . . . It’s easy to live here. Much cheaper than L.A. The traffic is barely existent, the schools are good. I may move to L.A. or New York if my career leads me in that direction, but for now I am very comfortable.” Continued on page 16

Bryan may enjoy living in Gilbert but that doesn’t stop her from traveling as she gets ready to go on her third tour for the U.S. military, where she will be joined by a few other comedians. For Bryan it’s not about being the most famous comedian, it’s about making people who need it smile. “I feel like any piece of America puts a smile on the faces of the men and women who are living elsewhere because of their service. If we come in and tell a few jokes and make them smile and laugh for an hour or so . . . that is well worth the 12-hour flight stuck in a middle seat between two people with pointy elbows. Here's a secret, though . . . it means a lot more to me than they realize. I'm happier about being there than they are to have me.” With such a go-get-‘em attitude, it’s no wonder Bryan is as successful as she is. Catch Bryan this month as she opens for Michael Costa at Stand Up Live on November 6 and 7, and as part of The Veterans of Comedy at Tempe Improv on November 11. VLM

HELPING HAND ‘TIS THE SEASON TO VOLUNTEER, AND THE EAST VALLEY HAS SOME GREAT OPPORTUNITIES TO GIVE BACK BY BREANNE DEMORE
The holidays are a wonderful but complicated time of year. The ability to celebrate with our family is a gift that many of us take for granted, especially when so many don’t have family or can’t afford even a meal. Luckily, the holidays are a great reminder to give back to our community and help those less fortunate. Check out the organizations below to volunteer this season—and don’t forget to donate. A little goes a very long way! UNITED FOOD BANK
Working to provide food and nutritional education to five counties in Eastern Arizona, including the greater East Valley, United Food Bank Mesa is always looking for food and monetary donations ($5 can provide 20 meals!) as well as volunteers. They host specific events that you can sign up to volunteer for either on a one-time or regular basis. And be sure to get your older kids involved, as the United Food Bank welcomes volunteers 12 years old and older. 245 S. Nina Dr., Mesa, (480) 926-4897, unitedfoodbank.org TEMPE COMMUNITY ACTION AGENCY (TCAA)
With the mission “to improve the quality of life for the underserved in our community,” the TCAA works to end hunger and homelessness, build stability, keep families healthy and offer services to senior or aging citizens. They host volunteers in many different programs, including their homeless shelter program, their home meal delivery program, as well as their senior center, food pantry and community gardens. 2150 E. Orange St., Tempe, (480) 350-5880, tempeaction.org FEED MY STARVING CHILDREN (FMSC)
A non-profit organization that is committed to feeding malnourished children around the world, FMSC needs volunteers—adults and children—to help pack nutritious meals to be shipped to nearly 70 countries. This is truly a great organization, especially for getting the younger kids involved to show them how they can change the world—the minimum age for volunteer at FMSC is 5 years old. 1345 S. ESSENTIAL ELEMENTS ELEMENTS MASSAGE BRINGS THE ULTIMATE RELAXATION EXPERIENCE TO THE EAST VALLEY BY JASMINE KEMPER
Elements Massage in Mesa strives to give every one of their customers a relaxing and comfortable atmosphere. Owner Troy Suzann Gatza, and her husband, Ron Gatza, decided to leave the corporate world to pursue the franchise and are now celebrating a successful six months in the East Valley. They are one of the 200 Elements Massage Studios in the United States that offer the highest form of professionalism and friendly customer service. To enhance the experience, their studio includes deluxe therapy rooms with adjustable lighting, heated tables and calming music. What’s unique about Elements Massage is that every massage is tailored to fit the needs of each individual customer thanks to their “Elements Way” service path. From the moment an appointment is scheduled, guests are matched with a massage therapist that is trained to meet their specific individual needs. “Your session includes a consultation, a mid-massage check-in and a post-massage recommendation. This communication is essential to ensuring that your massage session is truly customized to meet your expectations at every step of your service,” Troy Suzann Gatza says. According to Gatza, scheduling a regular massage can be beneficial for your overall health. That’s why they offer the Elements Wellness Program, which is a month to month program that offers benefits such as discounted sessions priced at $30 to $60 per massage. “We believe that there are ongoing physical and emotional benefits that come from personalized, therapeutic massage. A customized massage isn’t a frivolous indulgence. Those who receive a regular massage benefit from lower levels of stress hormones, a heightened immune system and increased circulation,” Gatza says. They also have specialized massage packages like the Swedish Massage to reduce stress, a Hot Stone Massage to relax the muscles and a Prenatal Massage complete with a cut out table specially made for expectant mothers. “Providing the best massage is something Element Massage prides itself on. The best massage isn’t just a slogan, it’s a commitment,” Gatza says. VLM

SWEETS AND SWEAT CALORIE-BUSTING WORKOUTS THAT WILL LET YOU INDULGE IN THE SEASON’S GOODIES BY JULIE LEMEROND
We are entering that awesome time of year that is chockfull of events and parties with family and friends, and if we aren’t careful, these events are chock-full of temptation, too. It’s no fun to have to pass when the hors d’oeuvres are headed in your direction, so we’ve figured out some ways to alleviate the guilt this season with some mega calorie-busting workouts that will allow you to have your cake and eat it too! WEIGHTLIFTING
Whether you already pump iron or haven’t started yet, this is perhaps the single best way to start boosting your metabolism and burning the calories before they even begin coming your way. Building muscle in the body continues to do the work, even when you are lounging on the couch afterwards, plus it tightens and tones your body quicker than a simple cardio routine. It wakes your body up and keeps it guessing, which is the single best way to make change happen physically. Try using the heaviest weights that your body can handle doing eight to 12 reps with before exhaustion. This means you too, ladies. Don’t shy away from the weights! You won’t bulk up like men do, even using heavy weights. HOT YOGA
Find a hot class near you, and expect to burn between 400 to 500 calories per hour. With many classes lasting 75 or 90 minutes, that is a good chunk of caloric change to get rid of. This is another practice that will sculpt and mold your body, too, so you won’t feel as guilty indulging in your mom’s mashed potatoes during Thanksgiving dinner. JUMP ROPE
If you jump rope for an hour straight, expect to burn up to 1,000 calories—although, the chances of jumping rope for that long are probably next to none unless you're a superhero. But that’s great news for shorter stints, too! Jumping rope blasts calories fast, so even ten minutes of jumping will help you get ready for your office holiday party. Plus it can be done 28
VALLEY LIFESTYLES MAGAZINE | NOVEMBER 2015
just about anywhere. You can even use an imaginary jump rope and get the same effect! HIGH INTENSITY INTERVAL TRAINING
Find a class at a gym near you and get ready to reap some rewards! Usually interval training means quick bursts of highenergy moves, followed by short stints of relaxing before doing it again. Often weights are incorporated and add even more calorie burn for your buck. Your body will thank you afterwards! Don’t deprive yourself this holiday season. Just adding a few extra reps or little extra time to your gym routine can make a big difference when temptation comes knocking. And it’s no fun to let the goodies pass you by because you don’t want to start the New Year with five new pounds. Go ahead and indulge in the goodies and also in your workouts. Treat yourself to both and you’ll be fine this season! VLM

HAPPY
SEVEN WAYS TO PROMOTE AND BUILD BUZZ FOR YOUR NEW APP BY TINA MACHADO OF CODE RED-I
Besides building native mobile apps at CodeRed-I, we also assist our clients with promoting their apps. It may seem as easy as build it and they will come, but there’s much more to garnering attention for your new mobile app than concepting, developing, and launching it to the public. As most app developers will attest, the completion of an app is just the beginning step. The success of your app depends on how it is launched and user reception. Whether you choose traditional methods or opt for guerilla tactics, promoting your app can be done in various ways from media reviews to award nominations. Before your app even makes it into the App Store or onto Google Play, you should be plotting a plan of action for driving traffic to your app so it can be downloaded and enjoyed by millions. Here are seven ways to promote and build buzz surrounding your new app. 1. BUILD A WEBSITE: Your app needs a place to call home before
it lands in the App Store or on Google Play. At least two months prior to the launch of your app, build a website to not only showcase your upcoming product, but to collect emails of interested users and provide an avenue for them to connect with you. 2. KNOW THE WHO, WHAT AND WHEN: You will need to write a short promotional description of your app. To create this, you will need to explain several things such as who you are, what your app does and when it will launch. 3. CONTACT LOCAL AND NATIONAL PRESS: Write a press release and distribute it to local and national media including newspapers, magazines, network stations and blogs. Make sure to reach out to the reporters and bloggers who are most likely to cover your app release. Reaching out to the media is a necessary task that takes some finesse, so this takes some planning. If you are not a well-known business or developer, you might have to get creative with how you approach outlets. For example, if you are creating a dining app that locates hotspots in the city, you would want to reach out to food critics and select a few restaurants for them to try based on the hotspot that your app selects. Keep in mind, reporters and bloggers get many emails and other forms of
correspondence, so you will definitely want to do something that makes you stand out from the crowd. 4. CREATE MULTIMEDIA CONTENT: Shoot a video, take pictures and conduct user interviews. These are just a few ways to create multimedia content to share on your website and social media pages. For videos and podcasts, keep the length to a minimum with video being no more than two to three minutes. You want to engage, not bore. According to statistics, you have about 20 seconds to capture your audience’s attention. Use that time well. 5. HAVE A CONTEST OR SWEEPSTAKE ON SOCIAL MEDIA: There is nothing like a contest or sweepstake to get people excited about what you have to offer. Think of something you can give away that complements your app. If you have a movie app, it probably wouldn’t make sense to give away passes to a sporting event. Keep it relevant. 6. APPLY FOR AWARDS: Research the different award opportunities for apps in your category. Participate in those you qualify. You may not win right away, but your app will be circulating through these competitions and in many cases listed on websites with high traffic and seen by judges who are leaders in the industry. There may be nominal fees for these, but look for ones that fit your budget and target audience. 7. PLACE LINKS IN YOUR EMAIL: Your email signature is great real estate to promote your app. Place at least two links in your signature—one to your website and another to the App Store or Google Play page where your app is available for download. There are numerous ways to promote your app; these are just a few to get your new product in front of the public. Building an app is an emotional process and CodeRed-I and its sister marketing company, BTG Strategy, understand this and work clients through the process. We put a lot into what we do, and we love it. So when you do get the opportunity to speak with someone to help build and launch your app, make sure they exude the excitement that you feel and are prepared to take your mobile app to the world. The only AAA Five Diamond and Forbes Five Star restaurant in Arizona, Kai utilizes the creativity, history and essence of the Pima and Maricopa tribes while also using mainly locally-farmed ingredients from the Gila River Indian Community. The restaurant itself is elegant and maintains a smart business casual dress code, so leave your denim, T-shirts and shorts at home when you head to dinner. With a beautiful patio and views that look out over the desert landscape, this is a truly exquisite restaurant. It’s nearly impossible to mention fine dining in the Valley without mentioning House of Tricks. For nearly 30 years, House of Tricks has been a go-to date night spot and foodie destination for many people in Tempe and beyond. House of Tricks was “seasonal” and “local” before those were buzzwords that every restaurant was throwing around. With an evolving menu depending on what is available and tasting the best, this restaurant has a wide variety of soups, salads and grilled meats and fish. All of their dishes toe the line between being unique and inventive and reliably delicious. The food is the perfect pairing to their oasis of a patio. Canopied and dappled with sunlight in the afternoon hours, the patio is far known as one of the most relaxing and secluded areas in Tempe. A tree-covered bar is ideal for before dinner drinks or a fun happy hour. VALLEY LIFESTYLES MAGAZINE | NOVEMBER 2015

FOR JAWDROPPING VIEWS
Top of the Rock One of the nice things about our little corner of the universe is that our beloved nickname, “the Valley,” is actually pretty literal—we’re surrounded by mountains. Those mountains can provide some pretty incredible views of the desert landscape, especially when there is a wellplaced, upscale restaurant perfectly placed on top. Sure, it isn’t the only restaurant in the Valley with spanning views, but the food here is just as good as the view. Led by Executive Chef Gregory Wiener, the team at Top of the Rock captures the essence of a relaxing, elegant restaurant—vivid flavors, unique ideas and simply-prepared, yet decadent dishes. Chef Wiener just went through a menu reboot, too, and some of the dishes that have caught our eyes are the buffalo tartar, the savory chicken doughnuts and the BBQ beef cheeks. Show off the Valley of the Sun with this elegant restaurant.

Quiessence at the Farm One of the best ways to ensure a true farm-to-table experience is to have a dinner at, well, the farm. Located at The Farm at South Mountain, Quiessence takes advantage of all of the produce offered by their location, as well as other local purveyors and producers. With a seasonally changing menu that adapts to the best products they can find, Quiessence can offer guests a truly polished and refined dining experience. Choose from their regular menu or their signature brick oven experience, which includes eight courses of delicious and thought-out dishes. However, they don’t just stop there. Their cocktails also adapt to the seasons and are as carefully planned and prepared as their dishes. If you’re more of a wine person, Quiessence supports many Arizona winemakers while filling out their menu with other American producers. Offering an upscale, fine dining experience on a farm, Quiessence has perfectly blended elegance with fresh cuisine.

Santa s ' Best-Kept SECRET
Sometimes the best ideas come from the minds of children. Scott Pace learned this in the mid-2000s while visiting the Polar Express in Flagstaff with his then 5-year-old twin daughters. “We went four years in a row and had a great time,” Pace says. “My daughter said, ‘We’re having a great time and I’m excited to see Santa. But next year can we go to Santa’s workshop, meet the elves and build toys with them?’” Pace promised his 5-year-old daughter that he would do that. However, when he couldn’t find anything like that in the world, he decided to build it. Thus The North Pole Experience was born. The North Pole Experience is an interactive family Christmas event in Flagstaff that includes tours of Santa’s workshop, toy factory and a visit with the big man himself. Originally founded in Greer in 2009, it moved to Flagstaff in 2012.

6 hour drive
It takes about 90 minutes to go through the 12,000-square-foot attraction, which runs this season from November 20 through December 31. “We did it for fun to start out but it became so popular that it grew from there,” Pace says. “We have a great cast, great kids and it’s all because of the families. They enjoy it. “They tell us every year what they like. We’re always listening. Authenticity is our big thing. The whole experience is designed to be a 400-year-old active workshop. There’s a lot of history. There’s a lot of nostalgia. There’s a lot of antiques. There’s a lot of high tech. That’s what people really like is the authenticity.” For The North Pole Experience, ticketholders meet at the Little America Hotel in Flagstaff where they are then transported through a “portal” to the North Pole. “They travel on magic trollies and go through a magic portal,” Pace says. “Families can go in the workshop, meet the elves, build toys with the elves and see the Toy Hall of Fame, where Santa’s most famous toy inventions are.” The exact location of the portal is a “timehonored secret,” according to Pace. “It’s a secret place,” he says. “We tell people to park at Little America and we go out to the forest, through the magic forest and get propelled to the North Pole.” 46
VALLEY LIFESTYLES MAGAZINE | NOVEMBER 2015
Visitors are met by head elf Alabaster Snowflake, who has been Santa’s “right-hand man” for more than 300 years. “Alabaster, he runs the workshop,” Pace explains. “He runs the elves. He oversees the whole family experience at the workshop. It’s all in Alabaster’s hands and he takes care of everything else there. He’s one of the first people you see. He gives everyone their orientation. He’s a hoot.” Families go through the main factory room, visit Mrs. Claus’ bakery and then attend Elf University. “One of the big things is Santa’s top-secret sleigh hangar (Area 47),” Pace says. “This is the most advanced sleigh he’s going to fly.” He explains that the hands-on experience is interactive and fun for families as well as couples. Visitors travel in groups of 55, so it’s an intimate setting. “It’s not like there’s thousands of people all together,” he says. “It’s very small, intimate groups. They’re with each other through the entire experience. It makes it very personal and very interactive.” Tickets to The North Pole Experience range from $38 to $55, with day and evening trips available. “The only difference is the Christmas lights at the workshop,” Pace explains. “Everything else is identical. Day trips are great for families who just want to drive up and not stay the night, or for parents who have little ones who can’t stay up late. “For the night trips, you get the Christmas lights at the North Pole, the Christmas lights at Little America—they have a million lights. It’s really amazing.” VLM FIND SANTA AT:

STATE OF MIND CREOLE CAJUN BISTRO BRINGS LOUISIANA’S SPICE TO CHANDLER BY JASMINE KEMPER PHOTOS BY SAM NALVEN
ABOVE: Cajun food takes influences from West Africa, France, Spain, Germany and Italy.
If you’re hungry for homemade Cajun cuisine, there’s no need to leave the Valley. Creole Cajun Bistro in Chandler has got you covered. Every aspect of the restaurant screams Louisiana, from the Bourbon Street and French Quarter street signs to the framed photos of well-known jazz musicians adorning the walls. This type of cuisine may be new to Chandler, but not for Chef Eric Rachal, who grew up in his grandmother’s kitchen. As a gourmet chef and caterer in New Orleans, grandma’s recipes for traditional Creole dishes like gumbo and jambalaya are meals Rachal and his family eat on a daily basis, and that’s why he decided to incorporate them into the menu. Cajun food is unique because it is influenced by a variety of cuisines all over the world including West Africa, France,

Spain, Germany, Italy and more. It utilizes plenty of rice, seafood, sausage, and a whole lot of southern love. The restaurant opened its doors in February, hoping to bring southern hospitality to the desert. “It’s that Louisiana vibe where you can come in. You can get loud. You can come with your family. We do live jazz sometimes. We put on football on Sundays. Whatever the guests actually want, we try to cater to them in that way to make it feel almost like home,” Rachal says. One word Rachal would use to describe Creole Cajun Bistro is “authentic.” Everything is made to order and is always fresh. He makes his own Louisiana hot sauce, smokes all his own meats and mixes a homemade Cajun spice mix. “I make everything from scratch. There’s no semihomemade here. I mean, I’m buying 50 pound sacks of flour and starting there,” Rachal says. One dish that Chef recommends is their filé okra gumbo. Gumbo is a soup that originated in Louisiana during the 18th century and has a combination of seven different cultures. The flavor of the gumbo comes from filé powder, which is ground up leaves from sassafras trees. Rachal starts off with the “holy trinity,” consisting of bell peppers, onions and celery to form a roux. The roux is thickened and stirred continuously for six hours so it doesn’t burn in the pot. “It’s your meats that take the longest, like pork roast and beef roast, and then you would do the things that take less time, like your sausages, shrimp and last your crab,” Rachal says. Another traditional dish is the French-inspired étouffée. The word étouffée means “to smother” in French, and that is exactly how the stew is made. “The Cajun-style gravy [uses] the holy trinity of bell peppers, onions and celery. So you would take those three things and start with that and then you add a roux and then

you would add any type of thing that you wanted like chicken breast, andouille sausage, crawfish, shrimp,” Rachal says. When the food gets to the table, people are always surprised how big the portions are. A lot of the time Rachal is asked why he serves such hefty portions, and he always answers the same. “That’s how we feed you in Louisiana. I’m skinny one in the family,” Rachal jokes. “You give big portions.” Another dish they are known for is the Creole barbecue shrimp. The shrimp is sautéed with the shell and heads on and served with fresh French bread and a lemon wedge. “I make a sauce with Worcestershire, rosemary, thyme, red chili pepper, garlic, butter, Louisiana hot sauce and then my Cajun spice. It has nothing to do with barbecue whatsoever but it’s really, really good. It also has beer in it, the Abita Turbodog which is a very dark, dense beer,” Rachal says. Rachal recommends trying some of the more unconventional foods like the fried frog legs, alligator and green tomatoes. He even has a secret “swamp sauce” that he uses on chicken. “It’s made with hot sauce, culver honey and a mountain of other stuff that I can’t reveal,” Rachal says. In the short amount of time they’ve been open, Creole Cajun Bistro already has regular customers who come back every week for the family-friendly, laid back atmosphere. He plans expand to locations like Phoenix and Scottsdale in the future. “The food is good, but more or less the atmosphere makes you feel at home. It’s that neighborhood spot [where] everyone knows your name,” Rachal says. VLM

Snooze An A.M. Eatery is one of the hottest things to come out of Denver these days. Opened in 2006 in the Mile High City by two brothers, Snooze sought out to create twists on America’s favorite breakfast classics in an electric, energetic and friendly atmosphere. Mornings aren't the easiest for many people, but Snooze’s special coffee, cheerful environment and delicious food cause smiles for even the crankiest grouch. Snooze’s Gilbert location opened in mid-July of this year and has already become a bustling weekend brunch destination for many in the East Valley. Although Snooze has many delectable and inventive treats such as the breakfast pot pie and the green eggs ‘n hamwich, it’s the pineapple upside down pancake that has us itching to go back. This pancake starts off with a yummy buttermilk base to which Snooze adds caramelized pineapple chunks. Once the pancake is cooked, they top it with housemade vanilla anglaise and cinnamon butter. Perfectly exemplifying Snooze’s goal to take classic breakfast dishes and add creative and fun twists, the pineapple upside down pancake has been on the menu since they opened in 2006, and is their signature dish. IN SEASON POMEGRANATES
POMEGRANATES BY CHRISTINA CALDWELL
Pomegranates have become an en vogue fruit in recent years. Known for its juicy, tart, pop-in-your-mouth seeds, the pomegranate has made its mark on everything from the juice aisle to desserts. In season from September through February, pomegranates originated in modernday Iran, and have been cultivated for their many uses ever since. Introduced to Latin America in the late 16th century, the fruit eventually made its way to California via Spanish settlers in 1769. In that time, the fruit has not become any less prized. Pomegranates will quickly run up your grocery tab, even when they’re in season, reaching upwards of $6 a pop! (Yes, pun intended.) Ever wondered why pure pomegranate juice is so expensive? That’s your answer! The unusual-looking fruit can be used in many kinds of dishes, from desserts to savory Thanksgiving meals. The seeds add unexpected, bright flavor to otherwise basic dishes and add an exotic flair. Try out these holiday-worthy recipes using the beloved, antioxidant-rich pomegranate. VLM

FINAL THOUGHTS
THE EVER-EVOLVING SCIENCE OF SELF BY CHRISTINA CALDWELL
As I’ve watched the presidential debates unfold these last few months, I’ve noticed a cultural trend that shuns changing your mind. They call it “flip-flopping”—evolving your views in the face of new information—but I fail to see how this is a weakness. When science does this it’s called a “discovery,” but when we do it in our personal lives it’s called “uncertainty.” Where is the disconnect between the two, and how is it different? I’m in the process of undergoing a major life change, the details of which I’ll spare you, but the underlying sentiment is the same. At one point I had a goal, but after achieving it, I realized it wasn’t for me. The backlash I’ve received from friends and family for this weighs on me. I guess I’m a flip-flopper, but I choose not to see my life as a linear path. Because it’s not—especially in the modern age, where adults are estimated to change career paths three times in their lifetime. Is that uncertainty, or is that simply personal growth? Careers aren’t the only barometer on which you should base your self-worth. I think everyone knows that at their core, but every pressure in society is telling us otherwise.

VALLEY LIFESTYLES MAGAZINE | NOVEMBER 2015
The first time we meet someone, among the first questions we ask is “What do you do?” In other words, “How should I categorize you?” or “Are you of any value to me?” Whether it’s personal and professional, the “What do you do?” question is loaded, so much so that it begins to define us. But you are not your career. You are not your hobbies. You can’t be defined. That’s because personalities are fluid, and your goals should change with the discovery of new information of self. Let’s call that self science. No one should stop making discoveries about themselves—their likes, dislikes, goals and attitudes. To stop making discoveries about yourself is to stop learning, and if you’re not learning and growing, really, what’s the point in even being alive? There is so much to learn and discover in this world. Why resign yourself into the little box you painted yourself in as a young person? In all likelihood, it will no longer be relevant to you when you’re older. The “goal” can move, propelled by your self discovery. The truth is that, over time, we’ll live many lives, and I’m ready for my next one to start. VLM
