Water voles have been pictured displaying natural behaviour in the Hogsmill, a year on from 50 being released into the river and surrounding wetlands in Ewell. Water voles were once common along the Hogsmill but disappeared from Surrey following habitat loss and pressure from invasive American mink.

He also looks back on his granny cooking for the crew of The Impossible in Thailand – making a complicated chicken Veronique in a beach hut. Says Tom: “And we had an apple crumble– and it was like a slice of home – in the most peculiar place. So now if I’ve ever been away – and I come home to the family house for dinner, that’s always what we have.”

Wimbledon Art Trail Take a self-guided trail through Wimbledon, with over 80 artists in more than 30 locations. This year, as well as homes, studios and gardens, businesses are also hosting the event, including Elys and several locations in the Village. The art trail runs 12-13 September.

Art Surrey A new archaeology project will look at what lies beneath the Royal Parks, exploring historic underground conduits, wells, reservoirs and tunnels that once supplied water to royal residences. Local communities, schools and volunteers can take part in guided walks, community excavations, and learning activities. The Lost Waterways project will run until 2029, starting in Richmond Park before moving to Bushy Park and Greenwich Park.

ADAM BYATT
The chef reveals the Italian journey behind his new Wandsworth Common restaurant Rosina, as he celebrates 20 years of Michelin-starred Trinity with a new book…
itting with Adam Byatt just weeks before his restaurant Rosina opens, he looks unruffled. There are decorators around us, and he’s just finished a meeting about the wine list. If there are any nerves beneath the surface, they don’t show. In fact, Adam is beaming as he walks me around his new Wandsworth Common venture, talking about the artwork and photography that he has

sourced, the wood-fired oven, and a road trip around Italy with his daughter Rosie to source the ingredients – the restaurant is named in her honour, and she will play a key role in the kitchen. A few weeks later, Adam is still smiling at the launch party, surrounded by the many friends and supporters he has built up over the years. He’s been in the business since
he started at Claridge’s at just 16, rising to become one of the most respected chefs in the industry, gaining a Michelin star for Trinity in 2016, and was honoured with the prestigious Mentor Chef Award by Michelin last year. His new restaurant sits on a corner spot overlooking Wandsworth Common, a site previously occupied by Brinkley’s, and a spot Adam has had his eye on for years. Michelin-starred Chez Bruce is down the road. But Adam says that Rosina is an entirely different proposition – it’s not another Trinity in waiting. It’s Italianinspired, casual. Adam says: “I felt like that would be the right thing for this site and also I’ve cooked classical French gastronomy for 36 years. You get to a point where you think, well, actually, when I go out, or when I’m at home, most of the time I’m eating Italian/ Mediterranean food.” “So we wanted Rosina to be Italian but not in a cheesy three-foot-pepper mill way. Just hone in on what Italian restaurants do really well: the hospitality, the table theatre and the focus on the quality of the produce.” Rosina suits the economic climate too, is Adam’s rationale: a neighbourhood restaurant where you can pop in for a bowl of pasta or some cocktails and antipasti at the bar. “The dishes are simpler in a good way. French gastronomy is high production, high elevation of a simple product. It’s very labour intensive.”

The food may be simpler than Trinity, but a great deal of thought has gone into sourcing the produce. Adam and Rosie set out on an Italian road trip with a small team, including a cameraman, to research ingredients and gather footage for a YouTube series ahead of the opening. “We spent six days travelling from Milan to Sicily,

stopping at 25 different places: suppliers, chefs, people’s houses, bars, cafés, restaurants, hole-in-the-wall spots, just to get those little pockets of inspiration.”
launch. She says: “On our road trip we met a woman making tiramisu without the alcohol, you don’t need it. She also uses a particular type of thin biscuit, which works really well to soak up the flavours.”
“It changed the direction of the menu – we are cooking more traditionally than we originally intended and not being led by London trends.” He is particularly excited by the pasta and risotto dishes - on his trip, he discovered Riso Buono rice that he describes as “the best risotto rice in the world.” The antipasti is a highlight, and Adam talks with pride about the bar menu, including an impressive Negroni list. Several members of the kitchen team have come across from Adam’s other restaurants. Rosie, who has just turned 18, will shape the dessert menu. She has already worked alongside her dad at Trinity. Rosie is autistic, and Adam says the new restaurant has been designed with her in mind. “The lightness, the calmness of it, the less formal food. It was designed around a restaurant that could suit Rosie.” Adam feels that hospitality has some way to go in seeing the benefit of hiring neurodivergent people. “It’s a creative environment, it’s stimulating, and I think hospitality needs to recognise the benefit of taking on neurodivergent people who are super-creative and can do a multitude of things. Hopefully Rosie can be an example.” Rosie joins us to talk about the dessert menu - there is a lemon sorbet served inside a lemon, and the most incredible tiramisu, which we got to try at the restaurant
She says she’s excited to be working in the kitchen. “There’s a great sense of community in the kitchen and working as a team.” Adam is now involved with seven restaurants: Trinity, Upstairs, Bistro Union, Brasserie Constance, Rosina, Wildflowers and Charlie’s at Brown’s Hotel, where he is chef director. So, how’s he going to make sure he doesn’t spread himself too thin? “The answer is to stop. I realise that this is as far as I want to go. You also have to remember that I have a few things in place that make it work. I can get to every single restaurant within 20 minutes. “They’ve also got very good people working in them – my job is to give steerage and support. I provide a platform for people to be brilliant.” But it hasn’t all been plain sailing. Adam has spoken to us previously about how the work took its toll in the past. “I didn’t look after myself very well. I didn’t delegate very well. I didn’t step back from the business and look at the bigger picture.” “People see what we have now but it’s the result of a journey that nobody would particularly want to go on.” The turning point came in 2015. “We closed Trinity, we did a refurb, spent a whole lot of money and we changed the way we worked and I changed the way I worked.”

The pandemic also gave him time for some reflection. “It was like a reset – to take a look in the mirror and decide what was working in my life and what needed to get better.” Running, saunas and cold plunges all help “quieten his mind,” he says. Trinity’s 20th anniversary falls on 12 September, with Trinity: The Cookbook coming out in October. He has worked with his close friend, journalist James Steen, on the book. James’s father was the photographer David Steen, and his striking images of Twiggy, Lee Marvin and Sophia Loren line the walls of Rosina. Adam says the book is not about him, but the journey of Trinity – two decades’ worth of stories, alongside recipes including signature dishes such as semismoked salmon with beurre blanc, and tarte tatin. “I’m unbelievably proud of it. It’s like a pinch-me moment to be able to produce this book. It will hopefully be something that young chefs will refer to but also people will cook from – there’s definitely 150 recipes in there that everyone can cook.” What’s been his proudest moment of Trinity? “Getting to 20 years, still being married with kids who will speak to me. And with my mental health relatively intact. That feels like a massive achievement.” “I put my life and soul into Trinity and I’ve realised that I’m never going to do a piece of work like Trinity again. I’m too old. But it’s my pièce de résistance, and I’m pretty proud of it.” T&L

Focus on your health goals
Look at what you want to achieve in terms of your health over the coming months. Is it to feel stronger, sleep better, look after your longevity? Or even how you move and improving your posture? This is a great time to explore what your priorities are.
Schedule your fitness
Elisa Withers, co-founder and director of APPI Clinics, points out that women can struggle to get back into a routine after summer, particularly those with families. She says: “Women often prioritise others first and can view exercise for themselves as an indulgence. But looking after your health isn't selfish - it's an investment in your ability to care for yourself and those around you.” Schedule it in your diary like any other important appointment. Aim to move every day, she advises. “Try to accumulate 30 minutes of moderate activity most days and vary it to target different fitness components. Think brisk walking, cycling, swimming, padel, Pilates, yoga or dancing.” Strength training is key – aim for two to three sessions a week as it helps maintain muscle mass, supports bone health, improves posture, and reduces the risk of injury as we age. And make recovery an essential part of your routine.

Living Well in Older Age Tom Holden from Signature Care Homes on giving you confidence to begin a new chapter Growing older should not be viewed as a period of simply managing decline. For me, living well in older age is about continuing to make choices, maintaining independence, staying connected to the people and places that matter, and having the confidence to begin a new chapter. Living well starts with many of the things we already know are good for us: eating well, keeping hydrated, staying physically active and remaining socially connected. The challenge is that these things are all linked and letting one slip can impact the rest. Poor hydration, for example, can contribute towards an infection. This in turn can make us weaker, weakness increases the risk of falls, and a fall can lead to hospitalisation, reduced appetite and further loss of strength. Something seemingly small can quickly snowball. Maintaining muscle strength is particularly important as we get older. Regular physical activity, including appropriate resistance or weight-bearing exercise, alongside sufficient protein, can help preserve strength, balance and confidence. It does not have to mean joining a gym or lifting heavy weights. The important thing is finding activity that is safe, enjoyable and appropriate for you. After more than 20 years working in health and social care, I have seen how differently people approach later life. Increasingly, people are choosing to move into care settings before they absolutely need to. That may sound counterintuitive, but there is real logic to it. Rather than waiting for a crisis, a fall or a hospital admission to force a decision, some people are choosing a new home while they are still independent, active and able to shape exactly how they want to live. The right environment should support independence, not take it away. At Signature at Surbiton, this is why our approach will include a physiotherapy
assessment and an individual wellbeing plan when someone moves in. It is not about prescribing how somebody should live; it is about understanding what is important to them and giving them the support to continue doing it, but physical health is only part of the picture. One of the greatest risks in later life can be losing connection with other people. Social isolation and loneliness are associated with poorer physical and mental health outcomes, and I have seen first-hand how quickly someone’s world can become smaller following retirement, bereavement, illness or reduced mobility. A good quality of life therefore means remaining part of a community. It means conversation over dinner, seeing friends, meeting new people, enjoying the garden, joining an activity because you want to rather than because you have to, and still feeling that your day has purpose. My philosophy to living well is “thriving, not surviving”. Older age will inevitably bring change, but change does not have to mean
giving things up. Sometimes it means making different choices that allow us to preserve the things we value most. Moving home in later life should never feel like the end of a story. Done at the right time, for the right reasons and in the right environment, it can simply be the beginning of a new chapter.

BEYOND THE CLASSROOM What makes a good extra-curricular programme? For many families going through the process of choosing a school, academic results remain firmly at the top of the list. But increasingly, parents are looking beyond the classroom to ask a broader question: what sort of person will my child become here?

That is where extra-curricular and co-curricular programmes come in. Once seen as an important complement to academic life, clubs, activities, performance opportunities and pupil-led projects are now playing a more central role in the school experience – helping children develop confidence, resilience, creativity, and leadership.
The distinction between the two terms varies between schools, but broadly, co-curricular activities complement the academic curriculum, while extra-curricular activities sit outside it. In practice, the boundary is often less important than the opportunities available. Traditional choices such as sport, music, drama and debating remain popular, but the modern school programme is increasingly eclectic. Robotics, astrophysics, podcasting, DJing, gardening, Dungeons & Dragons and even Beyblade clubs can sit alongside more established pursuits.

What does a good programme look like? For parents, a long list of clubs can be impressive – but it doesn't necessarily mean the programme will be right for your child. Start by asking who the activity is for. Is an activity genuinely inclusive, or is it primarily aimed at pupils who already excel? Both approaches can have value, but it is worth understanding the level required and
whether beginners are welcomed. Look at breadth and balance. A strong programme should offer opportunities to develop different sides of a child: physical fitness and teamwork through sport, creativity through the arts, intellectual curiosity through new areas to explore, and resilience and independence through outdoor or practical activities. There should also be room for activities that are simply for the fun of it. Consider progression. Does an activity evolve as pupils get older? Can a child move from beginner to advanced level, compete, perform, exhibit their work or eventually lead younger pupils? Finally, look beyond the prospectus. If an activity is particularly important to your child, ask how well attended it is, when it runs and whether it is realistically compatible with the rest of their timetable. Find out about additional costs for specialist equipment, kit, trips and tours, too. Perhaps most importantly, look for a programme that allows children to explore without becoming overcommitted. The strongest provision should complement school life rather than turn every afternoon into another performance metric. As Debbie Bellenger puts it: “The conversation has shifted from simply asking how many clubs a school offers to considering the quality, accessibility and impact of those experiences. The strongest programmes do not merely keep students busy; they help young people discover who they are, what they value and what they may be capable of becoming.”
