Iced berry
terrine
Makes 8 to 10 slices INGREDIENTS Terrine • 1 large Madeira sponge cake, or panettone • 300g each ripe strawberries, blueberries and raspberries • 2 litres vanilla ice cream, slightly softened
INGREDIENTS Topping • 250g frozen raspberries • 200g fresh or frozen blueberries • 200g sliced strawberries • 1 tablespoon icing sugar
METHOD Line a 900g loaf tin with cling film, making sure it overlaps the sides of the tin so that you can fold it over the dessert.
Place a layer of vanilla ice cream onto the base of the tin and on top of that place a few thin slices of sponge cake. Cover with a row of strawberries, and next to that a row of blueberries, and next to that a row of raspberries. Cover the berries with vanilla ice cream and continue layering as before till the loaf tin is full. Press down firmly to make sure you seal all the holes. Fold the cling film over the top. Place the tin in the freezer and freeze till really hard. Remove the terrine from the freezer 15 minutes before you want to serve it. Dip quickly into warm water and unmould it onto a platter. Top with the berries and give it a good shaking of icing sugar. There was joyful enthusiasm, as the girls arrived at school and greeted new and old friends and staff. Teachers had prepared colourful, stimulating classrooms to encourage thinking and learning – a very warm welcome ‘back to school’ for the girls. The little Grade 0s were full of enthusiasm and anticipation and most said good bye to their parents without a backward glance! Some mums, however, found that it wasn’t very easy at all! Matric 2017 Top Achiever Results Northcliff High School is extremely proud of the Matric Class of 2017. 286 students sat the matriculation exams and there were no failures. 80.4% of the students satisfied the criteria for entrance to a Bachelor’s Degree course at university. There were 222 distinctions in total. Of the 17 subjects that were written at the school, 14 had an average above 60%. In the other subjects, the averages were above 55%. NHS’s top subject was history, which had a grade average of 71%. Our top students are Christopher Conroy and Ralishini Munsamy, who both achieved 8 distinctions. 4 students achieved 7 distinctions, 5 students achieved 6 distinctions and 4 students achieved 5 distinctions. Northcliff High is consistently rated as one of the top feeder schools for the major universities. Our ex-students cope very well with the rigors of university study and we see university success rates over 85%.
