Mexická Restaurant - 2 0 - 2 0 ARCHI TEK TI Project Mexická was initiated by the Together gastro alliance. Its co-owner, David Petřík, considers Asia, Italy, and Mexico to be the biggest players on the world gastronomic scene, so adding Mexico to their portfolio was only a matter of time. The investor’s brief was to create a monumental space in Prague offering not only Central American cuisine, but also an experience of its culture as such. From the beginning, the main idea was to mix an open kitchen, large wood-fired ovens, and a noisy Mexican hacienda. Mexická was to become Together’s largest venture. What is unique about the entire restaurant is its concept. The very fact that we are building two floors of galleries with a central courtyard into the elevated space of the former Holešovice brewery is exceptional enough, and when we add to that a multi-armed staircase illuminated with gold and sparkling with references to the history of Mexico during the Mayan era, it is clear that guests are in for an architecturally unusual experience.

-6-

CASE STUDY

Another unusual and interesting feature is the blending of the restaurant space with the kitchen, where tortillas are baked, tacos are prepared, and dishes are grilled and cooked in a wood-fired oven right before the guests’ eyes. Ceviche is prepared in the fish tank section, with the individual ingredients almost within reach. The kitchen, like the large cocktail bar upstairs, has an authentic design and material solution, including a beverage display case that extends over the bar to another gallery. The galleries are supported by columns covered with stone reliefs featuring Mayan pictographic motifs, which feature original alphabet characters created exclusively for the Mexican restaurant by graphic designer Petr Štěpán in collaboration with the architects and sculptors. The material and visual design of the stair treads are particularly unique. To achieve the desired effect, they are composed of individual milled boards that are screwed together, and the entire tread is then poured with epoxy resin mixed with “gold” flakes. The individual steps are connected to each other with screws and fitted with walkable glass. Spot lighting then illuminates the entire staircase, making it the dominant feature of the otherwise monochromatic interior.

The Latin American atmosphere is emphasized by a combination of references to historical civilizations that are an integral part of Mexican culture, perhaps even the colonial spirit, in the monumental symmetry of the space and the famously raw atmosphere of Mexican streets, which are primarily functional and decorated only as time has allowed. Structure and Materials. The newly built galleries consist of a steel support frame made of solid profiles in turquoise blue and walkable oak planks. The upper bridge of the central staircase platform seems to levitate in space, as the glass floor is supported only by subtle metal profiles on two circular columns. The impression of airiness is completed by black steel mesh replacing the railing.

Service That Never Sleeps - S LEEP EEZEE In hospitality, a great mattress is only half the story. What truly sets a supplier apart is the service behind it. As a Royal Warrant Holder with over a century of British craftsmanship behind it, and a proud supplier of eight of the UK’s twelve Three Michelin Key Hotels, Sleepeezee understands that reliability matters just as much as comfort, and that a great partnership doesn’t end once a mattress is delivered.

Expertise You Can Call On Every account is supported by a dedicated regional sales manager, bringing years of hands-on experience in hospitality specification and a genuine understanding of what different operators need, room by room. Behind them sits our Contracts & Hospitality admin team, on hand for dedicated dayto-day support so questions never go unanswered and projects keep moving, whoever you speak to.

Fast Answers, Right Advice Hoteliers rarely have time to wait, and neither do we. The Sleepeezee team delivers fast, accurate quotations alongside expert specification advice, helping operators make the right choice for every room category, property style and budget, without delay.

Delivered and Installed, Nationwide Once specified, our service continues through to delivery and installation, wherever in the UK a property is located. Backed by our factory in Rochester, Kent, and more than 300 expert craftspeople, our logistics network is built to support hospitality’s pace, keeping openings, refurbishments and room rotations on track from first delivery to the final room.

Built Around Your Project No two hotel projects run the same way, so Sleepeezee doesn’t work to a single template. Whether it’s a full nationwide roll-out or a smaller, phased refurbishment, we work to the deadlines and installation schedules that suit each property, coordinating every phase so rooms return to service exactly when needed. Every specification is bespoke to the brand, reflecting the exact look, feel and standard each hotel demands.

Support That Doesn’t End at Handover Our relationship with every operator continues long after the last mattress is installed. Ongoing account management and aftercare – backed by a five-year guarantee as standard – mean support is always close at hand. Our guest purchase scheme also lets guests take home the mattress they loved, turning a great night’s sleep into a lasting connection with the brand.

A Partner, Not Just a Supplier From first quote to guest purchase, it’s the people and the process behind Sleepeezee that make the difference: a partner built for the demands of modern hospitality.

The Poetics of Metamorphosis: The Architectural Evolution of VIVIFY Group’s Corporate Identity - BL L E N D D ESI GN OFFI CE The manifesto of the anatomical space In the silent dialogue between human biology and the built environment, space ceases to be a sterile container. It becomes a threshold of consciousness. For over a decade and a half, BllendDesignOffice has conceptualized architecture not as a static layout of walls, but as an evolutionary skin for the VIVIFY Group. To design for healthcare is to design for vulnerability and renewal. By deliberately abandoning the cold, clinical typologies of the past, Bllend has spent 15 years nurturing an architectural ecosystem where advanced medical science and deep environmental psychology merge. This journey is a testament to “Architecture as Living Identity.” Across every scale—from the

EDITOR’S CHOICE

solitary silence of a specialized treatment cabin to the multi-level choreography of a flagship facility— the design promises a physical translation of cellular rejuvenation. Through empirical research and a poetic understanding of materiality, Bllend has guided VIVIFY’s spatial identity on a profound trajectory: away from strict mathematical abstractions and toward the creation of warm, holistic, and deeply restorative medical sanctuaries.

The genesis – The chromatic pathway of the voronoi cell Every evolution requires a genetic code. For VIVIFY, this code was written in the geometry of the internationally awarded Voronoi projects. Confronted with the challenge of forging a powerful corporate signature within local layouts as intimate as 50 square meters, Bllend turned its gaze to computational nature. The design anchored itself on the Voronoi diagram—a mathematical method of partitioning space into organic cellular structures.

Crucial to this foundational era was the rigorous color expertise of Bllend’s Design Director & Co-Founder, Helen Brasinika. Trained directly under the global color guru Leatrice Eiseman of the Pantone Color Institute, Brasinika infused the clinical environment with a sophisticated, psychologically grounded palette that matured across distinct spatial iterations:

The First Voronoi Clinic (Syntagma): Emerged as a vibrant, glossy manifestation of biological energy, closely aligned with youth, light reflections, and bold aesthetic optimism. The Second Voronoi Clinic (Kifisia): Marked the brand’s intellectual maturation. Housed within the rigorous volume of a historic neoclassic building, the design shifted toward a deeper, serene intimacy. Here, Bllend introduced tactile CLEAF Primofiore leather textures in a profound midnight blue, establishing a sophisticated dialogue between heritage and avant-garde texture.

Defying standard medical orthodoxy, this interplay of deep midnight blue tones, contrasting finishes, and raw matte surfaces established a new emotional vocabulary for medical interiors. It proved that geometry and professional color theory, when fused with artistic intuition, can shield the human spirit while celebrating scientific innovation.

Photography by Louiza Nikolaidou

This custom-engineered, procedural paper installation floats across the ceiling plane like a suspended cloud of thoughts. Mimicking complex molecular lattices, it catches and diffuses light, casting a soft glow that evokes a feeling of biological optimism and transparency. The traditional waiting room is completely erased, reimagined instead as a silent cultural salon. Bold, dark monolithic volumes clad in CLEAF Bruciato surfaces punctuate the open layout, drawing inspiration from Shou Sugi Ban—the ancient Japanese art of preserving wood through fire. Surrounded by fine art from celebrated Greek painters, ALEKOS FASIANOS, GAITIS, XENOS, OPY ZOUNI, the space introduces a Zen minimalism that quietens the mind, shielding the patient from the chaos of the outside world.

The maturity – the floating lattice and the zen salon If the Voronoi era was an exploration of the microcell, the newly unveiled VIVIFY Medical Athens in Glyfada represents the macroscale maturity of this spatial narrative. Elevated on the first floor of a premium commercial building along the coastal Athens Riviera, this flagship clinic functions as a fluid filter where the horizon’s serenity meets the precision of elite surgical therapies.

The veil of healing and biophilic longevity The poetic climax of VIVIFY Medical Athens is found within its high-tech surgical divisions, where the necessity of medical privacy is dissolved into a sensation of weightlessness. Heavy, claustrophobic divisions are replaced by custom-engineered

architectural glass panels, laminated with an inner layer of Gaza(traditional medical gauze).

Project Blueprint & Brand Milestones:

This element unfolds a beautiful dual narrative: • The Metaphor: The gauze stands as a literal and symbolic act of wrapping, protecting, and healing a body in transition. • The Function: The micro-textile grid captures the incoming Mediterranean light, transforming it into a shimmering, translucent veil that secures absolute privacy while filling the clinic with a golden, interconnected glow.

•

The spatial journey concludes with a rich, biophilic installation woven into the clean geometric architecture. Exotic flora and raw earth elements act as living anchors, grounding high-tech medical breakthroughs in the cyclical, healing rhythms of the earth. From the sharp mathematical lines of Syntagma to the holistic coastal sanctuary of Glyfada, Bllend Design Office delivers a timeless proof: the highest form of healthcare architecture is a canvas for physical healing, emotional calm, and biological longevity.

The Home and Heart of ABI Interiors - A BI I N TER I OR S Certain spaces announce themselves quietly. ABI Interiors’ new flagship on Goswell Road — conceived in partnership with Conran & Partners and open throughout Clerkenwell Design Week — is one of them: unhurried, precise, and entirely sure of itself.

an architectural feature that became a driver of the entire spatial concept, creating a sense of arrival and theatre before a single product comes into view. On the ground floor, distinct zones draw on deeply residential references — kitchen, bathroom, living space — each with its own material story. Brassware catches the light alongside considered basin and shower pairings; hardware details reveal themselves slowly, the way they would in a well-appointed home. “We took the core palette from ABI’s products and existing showrooms and dialled it up slightly, without moving away from their brand values,” says Amy Blight, Senior Designer at Conran & Partners. “Spaces designed to feel like a kitchen or dining room genuinely read that way, helping visitors imagine the products in real-life contexts.” Below, a high-density gallery allows for deeper, more focused exploration of the full range — the home, and the heart, of ABI Interiors.

Opening its doors during Design Week, the showroom marks a significant moment in ABI Interiors’ journey from its Australian roots to an assured presence at the heart of London’s design quarter. The brand has long been known for its considered approach to brassware, tapware, basins, showers, and hardware — products built as much for longevity as for beauty, and backed by a 25-year warranty that speaks to the conviction behind them. Here, in Clerkenwell, that conviction finally has a home. “This space embodies everything we believe in: accessible luxury, thoughtful simplicity, and design that feels effortless,” says Mark Poulain, Commercial Director at ABI Interiors. “Every detail has intent — it’s a reflection of how we design, how we collaborate, and how we want people to experience ABI.”

For Poulain, the showroom is more than a new address. “The space is more than taps and basins — it’s an experience. It’s where design, light, and conversation come together.”

Conran & Partners approached the project not as a retail commission but as an exercise in hospitality. “The overall design concept was to blend the welcoming and the comfortable alongside the informative and the flexible,” says Simon, Partner at Conran & Partners. “It wants to be unique, sociable, and it wants to be somewhere you want to return to.” The result unfolds across two levels, anchored by a dramatic double-height void at the entrance —

Curtain Track Finishes That Blend Naturally - FOR EST GROUP For years, curtain tracks were meant to disappear. Hidden inside ceiling recesses or behind pelmets, they served a purely functional purpose. White was the obvious choice, allowing the track to blend seamlessly into the ceiling instead of adding to the overall interior.

DS® Taupe

Today, curtain tracks are stepping out of the shadows. As hotels increasingly embrace holistic interior concepts, every visible detail contributes to the guest experience. Designers are no longer looking to conceal functional elements, they want them to enrich the overall aesthetic.

DS® Antique

Defined by its flowing organic profile, Forest Group’s DS® Design System redefines the role of the curtain track. With the introduction of two new finishes, Taupe and Antique, it blends effortlessly into today’s warm, layered hospitality interiors. Instead of fading into the background, it becomes part of the interior palette, complementing surrounding materials and finishes with understated elegance.

Taupe and antique: designed to blend Warm, layered interiors are defining today’s hospitality design. Natural materials, soft neutral colours and refined details create inviting spaces where every element matters. In these interiors, finishes such as taupe and antique allow the curtain track to blend seamlessly into the overall palette, transforming it from a functional component into a subtle architectural feature.

Rooted in a shared design DNA, the two spaces speak a common language of warmth and quiet delicacy, while each asserts its own identity through subtle femininity, considered materiality and bespoke detail. The spatial experience unfolds along a clear linear path, shaped by the original layout of the banquet rooms, each organised into two distinct yet interconnected zones.

Materiality is central to the identity of the project. Warm timber surfaces, soft textiles and layered textures establish a sense of familiarity and comfort, while refi ned metallic accents introduce moments of quiet sophistication against an intentionally restrained, timeless palette, reinforcing a sense of continuity and understated luxury.

AB Concept refined this configuration to enhance fl ow and openness, allowing circulation to become part of the narrative as guests move between lounge and dining areas, with flexible partitions enabling the spaces to shift seamlessly between intimate gatherings and larger-scale events.

Every element within the spaces has been bespokedesigned by AB Concept, from loose furniture to decorative lighting, with each piece conceived not only for its aesthetic contribution but as a functional component supporting flexibility, comfort and cohesion across diverse hospitality scenarios.

This sense of openness extends outward too: by removing visual interruptions and refining the perimeter architecture, AB Concept drew the surrounding marina, one of the project’s greatest assets, into the interiors, extending sightlines towards the harbour and letting natural light and reflections become an integral layer of the design.

Realising this level of detail called for close collaboration with specialist fit-out contractors, furniture manufacturers and lighting artisans, with an emphasis on shop drawing reviews, material evaluations, prototyping and mock-up inspections at every stage.

What emerges is a quiet dialogue between interior and exterior, where the rhythm of the water subtly informs the atmosphere within.

This meticulous process of coordination ensured that the final execution remained faithful to the studio’s original intent, translating concept into precise spatial experience. Together, the renewed banquet spaces at Aberdeen Marina Club articulate AB Concept’s approach to design as an exercise in balance between tradition and modernity, elegance and functionality, familiarity and discovery. The result is a quietly refined destination that feels both enduring and contemporary, offering members an elevated setting for gathering, celebration and connection.

From Compliance to Competitive Advantage by Fitzroy of London For many hospitality businesses, accessible bathrooms have traditionally been viewed as a compliance requirement rather than an opportunity to enhance the guest experience. However, investing in well-designed, inclusive washrooms can help venues attract a wider customer base, improve satisfaction and encourage repeat visits.

finishes, contemporary styling and discreet support features allow businesses to create spaces that are both elegant and practical. Designing accessible bathrooms to a high standard also helps future-proof hospitality venues, reducing the need for costly refurbishments as guest expectations evolve. Bradley says: “Inclusive design isn’t just about meeting regulations – it’s about creating spaces that work for everyone. Businesses that invest now are investing in stronger customer loyalty, positive recommendations and a hospitality experience every guest can enjoy.”

“Accessible bathrooms should be seen as an extension of the overall guest experience, not a separate or secondary space,” says Bradley Culmer, Business Development Director at Fitzroy of London. “When accessibility is integrated into the design from the outset, guests feel genuinely valued rather than accommodated as an afterthought. That experience can influence whether they return or recommend a venue to others.”

As hospitality businesses welcome increasingly diverse guests – including ageing travellers, multigenerational families and people with disabilities or temporary mobility needs – inclusive design has become a valuable differentiator. Today’s accessible bathrooms no longer need to feel clinical. Premium

Between Tradition and Transformation - ALL STUD I O ALL STUDIO transforms a compact hotel into a contemporary dialogue between local traditions, climate, and the mountain landscape. Renovation is in essence, a continuous dialogue with what already exists. This conversation responds to both the building itself and the deeper narratives of the site it inhabits. On the northern edge of Lijiang’s ancient town, where dense traditional dwellings interlock like teeth, the new structure must negotiate with its neighbors, carving out its own identity within the gaps of property lines and setbacks. The original building was a five-story box: modest in volume, ambiguous in character, but also leaving room for transformation. The renovation strategy is neither an act of confrontation nor erasure, but rather a translation of the wisdom cultivated from the very place.

The double eaves found in Yunnan’s vernacular architecture represent a time-honored ecological response to intense sunlight and abundant rainfall, while also extending the possibilities of semi-outdoor living. The design reinterprets this formal archetype in contemporary terms: layered eaves are introduced at each floor level, integrating shading and drainage into a single tectonic gesture. Here, the double eaves are no longer merely a symbolic reference but a precisely calibrated adaptive system.

for lingering and wandering. The traditional local hearth is reinterpreted as a contemporary fireplace, while the colonnade, threading through the public zones, structures both circulation and a sequential scenographic experience. The juxtaposition of color and material sustains a measured tension between the raw and the refined. These operations neither mimic tradition nor abstract it; rather, they allow form, material, and space to articulate themselves within a contemporary construction context. The renovation does not seek to announce a new beginning, but to establish a place capable of accommodating multiple lives and sustaining layered readings—one that responds to the visitor’s gaze while making room for the routines of the local; one that borrows the landscape of the snow mountains, yet constructs a world of its own.

Yet the stakes of renovation go beyond physical environmental adaptation. In Lijiang—where tourists and residents, tradition and contemporaneity, the exceptional and the everyday coexist—a hotel must contend with multiple, often overlapping, modes of perception. The design responds by internalizing these external pressures: a colonnade set back from the street, an introverted courtyard, and a rooftop frame oriented toward the snow-capped mountains—each, within the constraints of a compact site, carves out intervals

Beyond the Terrace: Creating Hospitality Spaces for Every Season - AM ANI For hotels, restaurants and leisure destinations, outdoor space has become an important part of the guest experience. A terrace is no longer simply an additional area opened when the weather permits. When designed effectively, it can become a destination in its own right, supporting dining, drinks, events and relaxation across more of the year. The challenge is making that space feel both operationally dependable and genuinely desirable. Temporary awnings or parasols may provide occasional shade, but they rarely deliver the comfort, atmosphere or visual consistency expected from a premium hospitality environment. Renson Amani offers a more architectural response. Its modular design creates sheltered outdoor rooms that can be shaped around a venue, its surroundings and the way guests will use the space. Separate areas for dining, lounging, drinks or private events can be brought together within one coherent setting, helping operators make better use of previously seasonal space.

freedom to create anything from a secluded spa retreat to a sophisticated restaurant terrace or a welcoming hotel lounge. That visual continuity matters. Guests experience a venue as a whole, rather than separating its interior from its exterior. When the same level of attention is applied to both, the outdoor environment becomes a natural extension of the brand. It can influence first impressions, encourage guests to stay longer and create memorable settings that are more likely to be photographed and shared.

This flexibility is particularly valuable within hospitality, where a single area may need to serve several purposes throughout the day. A breakfast terrace can become a relaxed afternoon lounge before transitioning into an intimate evening dining space. Integrated lighting helps transform the atmosphere after dark, while heating and side elements can improve comfort when temperatures fall or the weather changes.

Recognised with a Red Dot: Best of the Best award, Amani combines architectural refinement with the practical adaptability hospitality spaces require. Its strength lies in creating comfort without disconnecting guests from the outdoors.

By extending the usable life of a terrace, venues can create more opportunities to welcome guests without compromising the quality of their experience. Additional covers may increase the potential number of comfortable tables, provide more options for events and reduce the disruption caused by unpredictable conditions. The commercial benefit comes not simply from adding seats, but from creating a space guests actively want to choose.

For hospitality operators, the question is no longer whether an outdoor area can be used during summer. It is how that space can work harder throughout the year. With thoughtful planning, Amani turns the traditional terrace into a flexible, experience led environment, one that supports the operation, strengthens the venue’s identity and gives guests another reason to return.

Amani’s clean lines and concealed technology also allow it to contribute to the character of a venue without overwhelming its existing identity. Colours, finishes and configurations can be selected to complement the building, landscape and interior scheme. This gives operators and designers the

The Art of Flooring: Bespoke Carpets as a Design Statement - D EI R D R E DYSON Award winning Carpet Designer Deirdre Dyson has been designing contemporary hand knotted carpets for over 25 years. A fine artist, Lady Dyson is a renowned colourist and selects from over 6,000 colours to create the perfect palette for her creations. Each Deirdre Dyson carpet is bespoke and made to order in your desired design variation, size and colourway. Colours are matched precisely and hand knotted to order by Nepalese craftspeople in the finest Tibetan wool and pure silk and each is certified by Goodweave International to ensure no child labour is used in the supply chain and that the welfare of our weavers is paramount. From May, Deirdre’s new collection for 2026, Melange, will be on view at her London flagship at 554, Kings Road, SW6. In this collection of seven new designs, rather than restricting herself to a single theme, Deirdre has embraced the freedom of creative spontaneity. Each carpet is a stunning, stand-alone design, but what ties them together is a shared sense of play and humour.

Geometric and kaleidoscopic shapes reoccur while the unifying colour palette centres around taupe neutrals, with bolts of burgundy, purple and burnt orange. The luxurious wool and silk threaded carpets are works of art in themselves, designed to complement and ground any luxurious interior scheme.

Deirdre says of the collection ‘I decided to move away from any preset objective and relied entirely on a random design process from ideas that just popped into my head,’…‘There are references to past works using overlays and floating shapes, while some carpets appear figurative and others more angular and geometric. What did become evident is that the designs are characteristically mine. As an improvised collection, the results are interesting, and I hope there is something for everyone and to suit a broad range of contemporary styles.’

Softening Hotel Interiors with Thoughtful Decorative Accents - COACH HOUSE First impressions are everything in hospitality. While striking architecture and quality furnishings lay the foundation for exceptional hotel design, it is often the decorative details that make guests feel truly welcome. Carefully selected accents such as faux florals, artwork and signature scents can soften interiors, creating warm, inviting spaces that encourage guests to relax, unwind, and return. This is where Coach House excels. Alongside a collection of more than 170 sofas, chairs, and beds suitable for Crib 5 environments, our beautifully crafted furniture provides the perfect foundation for any hospitality setting. Complementing this is an extensive range of decorative accessories—the finishing touches that transform a stylish hotel into a true home away from home. Modern faux florals have become an increasingly popular choice for hotels, offering all the beauty of fresh blooms without the ongoing maintenance. Highquality artificial arrangements provide year-round colour and elegance, making them ideal for reception areas, restaurants, and guest rooms. Thoughtfully styled, they bring life, texture, and a welcoming sense of warmth to every interior.

Another incredibly important design element is scent. Fragrance has a powerful connection to memory, making it one of the most effective ways to create a lasting impression. A subtle signature scent—whether fresh citrus in the lobby, calming lavender in the spa or warm sandalwood in guest corridors—can instantly influence how guests perceive a space, creating an atmosphere that is both comforting and memorable.

Artwork also plays a vital role in shaping a hotel’s atmosphere. Rather than simply filling empty walls, carefully curated pieces can tell a story, reflect a property’s character, or celebrate local culture. Abstract paintings, photography, and mixed-media installations all add personality and visual interest, helping guests feel more connected to the space.

Layering these decorative accents with soft furnishings, textured cushions, ceramics, and ambient lighting transforms a functional interior into one that feels comfortable, welcoming, and distinctive. These carefully considered finishing touches add warmth, depth, and personality without the need for major renovations. In today’s competitive hospitality market, guests expect more than stylish surroundings—they seek experiences that engage the senses and make them feel at home. By incorporating elegant faux florals, meaningful artwork and carefully chosen scents, hotels can create inviting interiors that leave a lasting impression long after guests have checked out.

Studio Shayne Brady Unveils Interiors for MOR at Carbis Bay Estate, Cornwall - S T U D I O SHAY NE BR ANDY Studio Shayne Brady has revealed the interiors for MOR, the highly anticipated new restaurant by celebrated chef Tom Sellers, at the Carbis Bay Estate in St Ives, Cornwall. Designed as an immersive coastal dining destination, the restaurant draws from Cornwall’s dramatic landscape, while layering influences from Japanese minimalism, British craft and sensory storytelling. Positioned overlooking the white sands of Carbis Bay, MOR marks the first opening outside London for Sellers’ HiStory Hospitality group, as well as Studio Shayne Brady’s first regional project within the UK. The restaurant is led day-to-day by Executive Chef Tom Anglesea, with menus centred around local produce, seasonal seafood and a raw bar concept inspired by the rhythms of land and sea. Studio Shayne Brady’s design responds directly to this philosophy. Conceived as an intimate coastal restaurant and bar, the 335sqm space balances

atmospheric depth with a strong connection to its coastal setting. Natural timber and stone textures create warmth and tactility throughout, while cleanlined detailing introduces a sense of restraint and refinement. The interiors transition subtly from day to evening through shifts in colour, texture and light. Warm yellow ombré tones within the dining room reference sand, sunlight and the changing Cornish skies, while the bar adopts richer, moodier reds to create intimacy and drama after dark. Soft, carefully considered lighting, designed especially for the restaurant by Studio Shayne Brady, deepens the restaurant’s immersive atmosphere, allowing the space to evolve naturally across the day. Furniture and detailing throughout MOR pay deep homage to British craftsmanship, with bespoke elements developed in collaboration with specialist local makers and artisans. Key collaborators include Haroys for joinery, Ben Whistler for bespoke FF&E, Atelier Lighting for custom lighting installations and Elephant Road Studio for ceiling curtains and soft furnishings. The work of Cornish artists, Stewart Kent and Neil Pinkett along with The Conner Brothers, feature throughout the space.

and a statement fireplace made from Cornish rock, further anchoring the project within the surrounding landscape and material culture. The completed interiors reflect Studio Shayne Brady’s signature approach to emotive hospitality design — spaces that are cinematic yet grounded and contemporary while deeply connected to place.

A defining feature of the project is the restaurant’s soft fabric ceiling installation — developed to evoke movement, lightness and the fluidity of the coastal environment. The feature became one of the project’s most technically challenging aspects, requiring careful coordination between concept, engineering and operational requirements.

“Working with Tom Sellers and his team has been a true collaboration, made all the more enjoyable by the wider Carbis Bay Estate. Tom’s vision for storytelling is what inspired us to create a space that is attuned to its location and materiality, a destination that is both intimate and dramatic.” says Shayne Brady, Founder and Director of Studio Shayne Brady.

Alongside newly commissioned pieces, the studio also sought to retain and reinterpret elements of the existing building, grounding the restaurant within its setting while creating an entirely fresh visual identity. Local artisans were engaged to craft bespoke joinery

Gary Sushi Restaurant - S T UD I O CRUZAR K Gary Sushi Restaurant is a contemporary architectural proposal developed in the municipality of FacatativáCundinamarca, Colombia, distinguished by its honest and expressive design. The project is located in a traditionally residential sector made up of singlefamily homes, which in recent years has undergone a gradual transformation toward commercial use due to the construction of nearby shopping centers. This context of urban change was decisive in the conceptualization of the project, which seeks to integrate with its surroundings while contributing identity and architectural value. Across 305 square meters, the design is developed on two main levels and a walkable rooftop with technical services. The ground floor is divided into two functional areas—a service zone and a dining room— both of which run longitudinally and are directly connected through the service bars, allowing for efficient operation and fluid circulation. At the roof level, a pergola is incorporated to allow natural light

to enter and to generate a double-height space that visually and spatially articulates the first two levels, bringing a sense of spaciousness to the architectural ensemble. The second floor consists of a second dining room and Gary Café, a small space dedicated to selling coffee, desserts, and ice cream. This level also features a terrace facing the facade, as dictated by local zoning regulations. The metal structure becomes one of the main highlights of the space. This technical decision not only allowed for greater structural lightness and speed of construction but also left its essence exposed, giving the place an industrial character that dialogues with the urban identity of the surroundings. The choice of austere materials responds to both an aesthetic and functional intention. Polished concrete, microcement, and exposed brick walls form a sober palette that enhances the texture and honesty of the materials without resorting to superfluous ornamentation. This calculated simplicity generates a warm and authentic atmosphere, aligned with the experience the restaurant seeks to offer its diners: an unpretentious space where the essential prevails.

One of the project’s most distinctive elements is the incorporation of art as an integral part of the design. At the visual terminus of the restaurant, a largescale mural spanning and framing the views of the double-height space was commissioned from the renowned artist Toxicómano Callejero, whose work adds a narrative and expressive layer to the space. His intervention not only adds color and energy but also connects the restaurant with the language of the city, reaffirming its identity as a contemporary, inclusive place with character. Gary Sushi thus succeeds in combining architecture, art, and gastronomy into a coherent, honest, and memorable spatial experience.

A green color palette, carefully selected as an accent within the project, is present in the furniture, construction details, and interior landscaping. This fresh and vibrant tone contrasts with the sobriety of the base materials, adding dynamism. More than a visual resource, the green color fulfills a symbolic function, evoking nature, freshness, and renewal— values that are also reflected in the restaurant’s culinary proposal.

Gradus Launches New Illuminated Bronze Stair Edging for Use in Premium Hospitality Interiors - GR AD US Gradus, a leading provider of contract interior solutions, has introduced the XT LED Bronze Stair Edging profile to help reduce slips on stairs while enhancing the ambience of a space.

The XT LED Bronze Stair Edging is available with three different inserts – including a bronze metal castellated insert - all designed to offer different levels of slip resistance depending on the interior conditions. The unique insert design wraps around the edge of the step, ensuring foot contact is always made and reducing the likelihood of slips, trips and falls further.

Designed for high-end environments, the XT LED Bronze Stair Edging is particularly suited to premium hospitality projects, where both stair safety and elevated aesthetics are crucial.

For applications requiring consistent material palettes, the new XT LED Bronze Stair Edging has been designed to coordinate with the wider XT Bronze (non-illuminated) Stair Edging range, providing a harmonious and premium finish across feature stairs, secondary staircases and connecting routes.

Enhancing safety and aesthetics with LED lighting Part of the established XT Bronze range, the XT LED Bronze Stair Edging features a bronze channel, available in a Polished Bronze or Satin Bronze finish, combined with Gradus’ Impression LED lighting tape. This further increases safety on stairs by enhancing visibility and defining the step riser in low-light settings without compromise to appearance.

Developed in-line with the latest guidance The XT LED Bronze Stair Edging has been designed with recommendations from BRE and the guidance contained within BS 8:300-2:2018 and Approved Document M of the Building Regulations 2020, so building owners and specifiers can choose the product with full confidence that it balances safety and style.

Alongside its safety benefits, the LED lighting can also be used to further enhance appearances, offering remote-controlled colour or white temperature adjustment to help create an atmosphere which can adjust to the mood - from warm white to cool white, or even RGB colour changing.

Hannah Parkinson, Marketing Product Manager for Gradus, comments: “We’re pleased to bring the XT LED Bronze Stair Edging to market, as it offers a coordinated solution that balances both safety and aesthetics.

A versatile stair edging solution Its ramp back profile means it can be used in conjunction with a range of popular floor coverings, including LVT, linoleum and other resilient flooring, or where there are no floor coverings installed, providing a versatile, durable solution for some of the busiest and most demanding environments.

“We understand the need for high-end hospitality environments to have durable solutions that don’t compromise design. The XT LED Bronze Stair Edging combines the proven performance and safety benefits of our XT Stair Edgings range with the visual impact and added illumination feature of integrated LED lighting. The new stair edging provides the opportunity to turn stairs into a genuine design feature, while still providing the recognised performance and durability expected from a Gradus product.” To learn more about the XT LED Bronze Stair Edging, please download the dedicated brochure.

From Orchard to Finished Ingredient - P LENTY In a global hospitality market defined by provenance, integrity and consistency, Australian-made ingredients continue to carry a distinctive weight. For chefs, procurement teams and product developers across the UK and Europe, Australia represents more than distance; it signals clean environments, trusted supply chains and an agricultural heritage built on quality rather than scale. It is in this landscape that Plenty Foods has quietly built its reputation. Based in Queensland’s South Burnett region one of Australia’s most productive agricultural food bowls, Plenty Foods brings over 40 years of food manufacturing heritage to the international stage. Today, the company exports to more than 15 countries, supplying premium oils and ingredients to food manufacturers, foodservice operators and increasingly, hospitality groups seeking reliable, highquality inputs.

The company has recently commissioned Australia’s first commercial superfine defatted nut powder facility, introducing a new category of high-protein, low-fat nut ingredients with improved functionality for bakery, snack, plant-based and prepared food applications, while maintaining the provenance and traceability increasingly demanded by global markets.

At the centre of the offer is a simple proposition: pure, natural, and minimally processed ingredients that bring integrity to professional kitchens. Plenty’s range of cold-pressed oils reflects their philosophy. Macadamia, almond, walnut and other specialty oils are extracted and expeller pressed without heat or chemical intervention, preserving their natural flavour, nutritional profile and functional performance. For chefs, this translates into clean taste and versatility across both back-ofhouse preparation and front-of-house finishing.

The combination of heritage manufacturing, modern processing capability and Australian provenance means ingredients that are consistent, nutritious and aligned with evolving growing expectations around natural, wholesome food. Plenty knows that in an industry where menus evolve rapidly but quality must not fluctuate, they are judged not only on product, but on reliability and intent. Plenty Foods regards itself as a long-term partner to enterprises seeking ingredients that are dependable and distinctive. Their products are currently sold under multiple prominent private label brands in Australia and around the world.

What distinguishes Plenty, however, is not only its edible oil heritage, but its continued investment in innovation.

From orchard to finished ingredient, the focus remains unchanged: simple, well-made products, grown and processed with care, and enjoyed in kitchens around the world.

Christmas 2026: Creating Memorable Hospitality Spaces Through Festive Venue Dressing - A L L IANCE ONLI N E As the festive season approaches, hospitality venues are once again preparing to welcome guests looking to celebrate with friends, family and colleagues. While exceptional food and service remain essential, the atmosphere of a venue often plays an equally important role in creating memorable experiences and encouraging repeat visits. Thoughtful venue dressing helps transform familiar spaces into warm, inviting environments that capture the magic of Christmas. Whether it’s a cosy country pub, fine dining restaurant, luxury hotel or busy cafe, festive decor provides an opportunity to reinforce a business’s identity while encouraging customers to spend more time enjoying the ambience. A well-dressed venue doesn’t have to rely on extravagant displays. Carefully selected Christmas trees, complemented by coordinated garlands and wreaths, can establish a festive focal point from the moment guests arrive. Extending decorative elements throughout bars, dining areas, reception spaces and entrances creates a consistent look that feels considered rather than overwhelming.

Whichever palette businesses choose, consistency is key. Carrying colours and materials across trees, wreaths, table decorations, candles and lighting creates a cohesive visual journey that enhances the overall guest experience. Planning ahead is equally important. Ordering decorations early allows venues to secure stock, schedule installations and ensure everything is ready before the festive rush begins. It also provides time to refresh tired displays or introduce new decorative elements that keep returning guests engaged year after year.

Lighting also has a significant influence on the guest experience. Warm white fairy lights, illuminated displays and candlelight can soften dining spaces, add depth to decor and create an intimate atmosphere that suits everything from relaxed lunches to evening celebrations and even Christmas parties. Combining lighting with decorative candles and elegant table accessories helps elevate festive dining without requiring a complete redesign of the venue.

Ultimately, successful festive venue dressing is about creating an atmosphere that complements the occasion. By combining coordinated decorations, ambient lighting and thoughtfully chosen seasonal colourways, hospitality businesses can create inviting spaces that encourage celebration, strengthen customer loyalty and make this Christmas one to remember. For festive decorations from one supplier, contact Alliance Online via hello@allianceonline. co.uk to view their full catalogue of Christmas options, or visit our website and shop online.

This year’s festive styling continues to embrace distinctive colour palettes that allow operators to tailor their decor to suit their brand. Jewelled Bliss celebrates deep burgundy, luxurious gold and elegant warm greens, creating a rich, layered aesthetic that feels both opulent and welcoming. Silver Frost offers a fresh, contemporary alternative, pairing crisp whites with shimmering silvers and soft greys to evoke the beauty of a winter landscape. For venues seeking timeless sophistication, Noel Navy combines deep navy tones with metallic accents to deliver a refined, modern interpretation of traditional Christmas styling.

Husky Intelligent Fridges: Redefining Unmanned Retail - HUSK Y The hospitality and retail industries are evolving at pace, driven by a need for efficiency, customer convenience, and smarter operations. Husky Intelligent Fridges are at the forefront of this change, offering a genuinely innovative approach to unmanned retail that blends technology, sustainability, and practicality. Unlike traditional vending machines, Husky Intelligent Fridges deliver a seamless customer experience. Guests or consumers can unlock the fridge using a payment card, mobile wallet, or even a hotel room key card. Once the door is opened, RFID sensors automatically register which items are taken and process payment instantly. The result is frictionless, staff-free sales available twenty-four hours a day. For hotels, the integration possibilities are particularly powerful. By linking with property management systems, items taken from the fridge can be automatically charged to the guest’s room, reducing administration and enhancing the overall experience. For cafés, gyms, co-working spaces, universities, and transport hubs, the fridges provide new opportunities for offering fresh, healthy food and drinks without the costs and complexities of additional staff. They are equally effective in corporate environments, supporting employee wellbeing by making nutritious snacks and drinks accessible around the clock.

Behind the scenes, Husky Intelligent Fridges provide operators with a robust management platform. Realtime dashboards track sales, stock levels, and expiry dates across multiple locations, while low-stock alerts help to optimise restocking schedules. This intelligence not only saves time but also reduces waste and improves profitability. For multi-site operators, centralised control allows them to view and manage an entire fleet of fridges from one system, ensuring consistency and efficiency at scale. Sustainability is also at the core of Husky’s design. Precision-engineered refrigeration technology ensures reduced energy consumption while maximising product visibility. Combined with the unmanned retail model, operators can lower both costs and carbon footprint while still delivering highquality customer service. Whether for hotels seeking to modernise minibar services, cafés aiming to grow round-the-clock sales, or retailers expanding into unmanned formats, Husky Intelligent Fridges provide a flexible, future-ready solution.

Iced Coffee Is Growing Fast. The Real Challenge Is Consistency. - F R AN K E COFFEE quality iced coffee experience is often more complex than expected.

Cold coffee beverages are becoming a more permanent part of the offer across HoReCa environments, from hotel breakfast and lobby service to restaurants, cafés, bars, terraces, catering and self-service settings. For operators, the opportunity is clear – but so is the challenge: delivering consistent taste, attractive presentation and efficient preparation without adding complexity during busy service periods.

Common methods include brewing coffee directly over ice, using pre-brewed coffee stored in a refrigerator, or relying on additional cooling tools before serving. Each approach can work, but each also adds variables such as temperature, timing, handling, storage and the amount of ice used. In busy environments, these factors can quickly influence the final beverage, especially its consistency from one cup to the next.

The shift is visible across global coffee markets. Starbucks reports that roughly two-thirds of beverages sold in its US company-operated coffeehouses are cold, while cold beverages account for around 60% of its international beverage sales. Across Europe, World Coffee Portal reports that half of industry leaders surveyed believe there is now strong year-round demand for iced beverages.

“Preparing iced coffee is not only about making coffee cold. The way the beverage is cooled has a direct impact on taste, aroma and balance,” says Wojciech Tysler, Irish Barista Champion and Brand Ambassador at Franke Coffee Systems. “When hot coffee relies mainly on ice for cooling, dilution can change the character of the drink. For operators, the challenge is to deliver an iced coffee that still tastes intentional, consistent and visually appealing, even during peak service.”

Younger consumers are helping accelerate this development, with a strong preference for customizable, iced and flavored beverages consumed throughout the day. As demand grows, cold coffee is becoming part of a broader shift toward more variety, personalization and new flavor experiences. For operators, this creates an opportunity to expand beverage menus and reach new customer groups but also raises expectations for quality, presentation and consistency.

Pre-brewed coffee requires planning, storage space and careful handling. Additional cooling tools, such as metal cooling balls, can help bring down the temperature, but they also add manual steps to the workflow. During peak periods, these extra steps can slow down preparation and make it harder for staff to deliver the same result consistently.

The hidden challenge behind premium iced coffee While adding iced beverages to a menu may seem straightforward, consistently delivering a high-

ActiveChill from Franke cools freshly brewed coffee before dispensing, helping operators serve fullflavor iced coffee with less dilution and fewer manual steps.

For operators focused on premium coffee quality, the challenge is therefore not only dilution. It is also time, workflow, and repeatability.

and reduce dilution compared to traditional iced coffee preparation methods.

“For operators, iced coffee preparation needs to be reliable, repeatable and easy to integrate into daily service,” says Patrice Schaer, Product Manager at Franke Coffee Systems. “With ActiveChill, the idea was to simplify one of the most critical steps in the process: cooling freshly brewed coffee before it reaches the glass. This helps reduce manual intervention and supports a more controlled preparation workflow.”

From trend to daily operations As cold coffee becomes a year-round category, it is no longer enough to add iced coffee to the menu. The process needs to stay simple during busy periods and deliver consistent results across different HoReCa environments, from breakfast and bar service to cafés, restaurants, terraces and self-service settings.

In practice, this gives hospitality operators a simpler way to prepare iced coffee in both served and self-service areas . It helps them offer cold coffee beverages with more consistent quality while reducing the manual steps required in daily service.

This is where the operational pressure becomes clear. A preparation method that works well in a small, highly trained team may be harder to manage in highvolume environments, self-service areas or multisite operations. If the result depends too much on individual know-how, manual steps or timing, quality can vary from one beverage to the next.

Looking ahead Iced coffee has become part of a wider shift toward customization, beverage innovation and all-day coffee consumption. For operators, the opportunity is clear, but success depends on execution.

Technology as an enabler The new approach is to treat iced coffee as its own beverage workflow, not simply as a cold version of the hot coffee menu. This means controlling the brewing and cooling process while reducing the number of manual steps needed to achieve a consistent result.

As expectations continue to rise, the question is no longer whether to serve iced coffee. It is how to do it consistently, efficiently and without compromising the taste experience customers expect.

This is where ActiveChill from Franke Coffee Systems comes into play. Available with the New A Line, the technology cools freshly brewed coffee before dispensing. Combined with iQFlow™ extraction technology, ActiveChill supports consistent in-cup quality while helping to preserve flavor and aroma

A Practical Path for Hospitality Hot Water - ADVECO For the UK hospitality sector, Net Zero is moving rapidly from a long-term aspiration to an immediate business consideration. Yet the transition will not be achieved through a single technology or a one-sizefits-all approach. For many operators, the greatest opportunity lies in rethinking one of the most energyintensive but often overlooked parts of the built environment: domestic hot water. Hotels, restaurants, bars, gyms and spas depend on a reliable supply of hot water. Guest comfort, hygiene and regulatory compliance leave little room for compromise. A system that cannot consistently meet demand presents an operational risk. With domestic hot water (DHW) accounting for up to 30% of a building’s energy consumption, it presents a low-impact, quick win for decarbonisation and costcontrol strategies.

The future of water heating is also being shaped by intelligent system design. Connected monitoring, Building Management System integration and predictive maintenance can help operators identify performance issues before they disrupt service. In an industry where downtime can affect revenue and reputation, this visibility is becoming as valuable as efficiency.

The hospitality estate is far from uniform. While new-build properties may be designed around electrification, many existing venues operate from ageing buildings with limited space, complex infrastructure or heritage constraints. For these businesses, replacing a gas-fired system with a fully electric alternative can involve significant capital expenditure.

Where electrification is viable, hybrid systems can provide a balanced solution. Air source heat pumps can preheat water, while thermal storage and electric backup maintain resilience during periods of high demand. Solar thermal can further offset energy consumption without placing additional pressure on the electrical supply.

This is why the transition must be viewed as a journey rather than a binary choice. While full decarbonisation remains the destination, improving efficiency and reducing energy demand can deliver meaningful progress now. High-efficiency gas water heating may continue to play a practical transitional role where immediate electrification is technically or financially difficult. Modern systems can reduce fuel use, support future fuel flexibility and provide the reliability hospitality operations require.

The key is to move beyond like-for-like replacement. Every hospitality site has a different demand profile, building fabric, available space and operational risk. The most effective responses will combine technologies to meet the property’s needs. For hospitality leaders, the challenge is not simply removing carbon. It is about managing the transition while protecting the guest experience, controlling costs, and maintaining business continuity. A phased, data-led and technology-neutral approach can turn domestic hot water from a decarbonisation challenge into a significant opportunity for measurable progress.

JAG Hotel Uses Genelec Smart IP to Put Music at the Centre of Luxury Hospitality - JAG H OTEL Luxury hotels have long been defined by fine dining, elegant interiors, and exceptional service. While JAG Hotel in downtown St John’s, Newfoundland, is no exception to these amenities, its luxury is driven by a sense often overlooked when designing premium guest experiences: sound. Owner, John Steele lets his musical passion shape the hotel’s identity, creating an extravagant atmosphere of high style, comfort, and character. Music is the defining personality of this boutique hotel, with Steele even hand-picking the playlist each day, making audio quality not simply an afterthought, but a deeply ingrained value for staff and guests. Last year, JAG Hotel unveiled a bold new addition to its eighth floor – a lavish cocktail bar named the Mojo Lounge. To reflect John Steele’s vision, the Mojo Lounge, along with the office floor and penthouse suite, required a premium audio system that would put music at the centre of the customer experience. Praised by music lovers and audiophiles around the world, Genelec Smart IP loudspeakers were chosen to play this defining role in the hotel’s identity.

- 86 -

CASE STUDY

Providing expert technical assistance and customer care to businesses across Canada, AV distribution and integration specialist, SFM, was commissioned by Steele Hotels to work alongside its in-house installation crew and oversee product selection and programming of the new audio system. “Music is such an essential part of the JAG Hotel experience, and visitors have come to expect care and quality in the way sound shapes their stay,” says Jodi Rhuland, Regional Sales Manager at SFM. Occupying the top three floors of the eight-story building, the luxurious Mojo Lounge, office floor, and penthouse suite are situated furthest from the hotel’s AV control room, located on the second floor. “Despite the distance, it was critical that these upper audio zones offered the same premium sonic performance as the rest of the building, especially in the newly opened Mojo Lounge.”

across the Mojo Lounge, office floor, and penthouse suite. Fifty 4435 in-ceiling models were deployed throughout the new audio zones for discreet, highquality coverage, while twenty-one powerful 4430 loudspeakers – the largest of the Smart IP range – were surface-mounted to the walls of the Mojo Lounge using accompanying 8000-402 adjustable brackets.

In addition to this logistical challenge, the sound system also needed to match the hotel’s boutique aesthetic. “The Mojo Lounge was designed to reflect the hotel’s commitment to luxury,” describes Rhuland. “Therefore, any installed loudspeakers could not disrupt the visual identity of the lounge; they had to become part of the environment as a carefully chosen design feature rather than a purely functional necessity.” Combined with a tight deadline for project completion, SFM needed an audio solution that could deliver premium sound, simplify installation, and preserve the architectural integrity of the space.

The Mojo Lounge has an undeniable sense of sophistication. Therefore, the decision to openly display the 4430 loudspeakers is a testament not only to the audio quality, but also to how the Genelec brand is regarded by music enthusiasts. “It was a conscious decision to ensure the loudspeakers were not hidden away,” Rhuland points out. “They are a prominent feature of the lounge and perfectly match the hotel’s aesthetic and values, elevating the space with design as well as purpose.” Since the grand opening last year, the Mojo Lounge, along with the penthouse suite and offices, has received rave reviews from guests to the boutique hotel. “The goal with this project was to create a listening experience, not merely a background audio solution, that would stand out to guests, especially those from the music industry,” explains Rhuland. “Thanks to Genelec, this project is a strong example of how premium hospitality can use professional audio, not just for functionality, but for shaping its identity.”

“Due to the distance between the AV control system and the Mojo Lounge, we realised that a PoE solution would allow us to deliver a reliable loudspeaker network to the top floors of the hotel without adding unnecessary infrastructure, disruption, or visual clutter,” Rhuland explains. SFM’s Professional Services team, headed by Evan Nearing, was responsible for system programming and product selection, ultimately specifying Genelec’s Smart IP series loudspeakers to deliver premium sound to the hotel’s latest guest experience.

Shawn Basha, Property Manager at JAG Hotel, also comments on the impact the new sound installation has had on the hotel staff and guests; “We at JAG Hotel don’t believe in background music – it’s something we actively avoid. Instead, we believe in the power of foreground music for defining the atmosphere and identity of our hotel. With Genelec, we have been able to create a space that reflects the true JAG Hotel brand – bold, music-led, and committed to the experience of our guests.”

“Genelec is a well-respected brand in both the luxury hospitality sector and the music industry due to its excellent studio-quality performance and clarity,” expresses Rhuland. “JAG Hotel places music at the forefront of the customer experience and Genelec’s audio philosophy perfectly aligns with the vision of Steele Hotels. On top of this, the active PoE solution of the Smart IP series was exactly the workaround we were looking for to overcome the architectural and logistical challenges.”

Protecting Hospitality Environments Without Compromising Design - YEO M AN SHEI LD In the hospitality sector, first impressions matter. From hotels and restaurants to leisure venues and serviced accommodation, interiors are expected to deliver both visual impact and long-term performance. However, with constant footfall, luggage movement, housekeeping trolleys, deliveries, and back-of-house operations, maintaining high-quality interiors can become an ongoing challenge. For 60 years, Yeoman Shield has been helping organisations protect buildings with specialist wall and door protection solutions designed to withstand the demands of busy environments while maintaining a professional appearance.

bays, and staff access routes are often subjected to significant impact damage daily. Left unprotected, repeated knocks and collisions can lead not only to cosmetic damage, but also long-term structural deterioration and increased maintenance costs.

Hospitality environments require a careful balance between aesthetics, durability, safety, and costeffective maintenance. Yeoman Shield’s extensive range of wall protection panels, corner guards, handrails, door protection systems and hygienic finishes are designed to minimise damage caused by daily wear and impact, helping operators reduce costly repairs and ongoing redecoration.

By protecting these high-traffic operational areas, hospitality providers can help prolong the lifespan of their buildings, reduce disruption caused by repairs, and maintain safer working environments for staff. Alongside its protection systems, Yeoman Shield also supports clients with specialist fire door services, helping organisations maintain compliant and wellprotected fire doors throughout their facilities. Services include fire door protection solutions, inspections, compliance support and ongoing maintenance assistance designed to help extend the life and performance of fire doors in demanding environments.

Front-of-house areas are often the focal point of any hospitality setting, where presentation and guest experience are paramount. Yeoman Shield offers bespoke design options, including printed imagery and custom finishes, allowing hospitality venues to seamlessly integrate protection products into their interior schemes without compromising on style. Protection systems can become part of the design aesthetic itself, creating welcoming spaces while still delivering practical long-term protection.

Apostoli Wellness Creators Designs the Lefay Wellness Residences on Lake Garda: the Future of Long-stay Hospitality - AP OSTOLI In Gargnano, five independent villas designed by the studio founded by Alberto Apostoli embody the Lefay brand’s vision of contemporary wellness living. The project comes at a significant moment for the brand, following the recent joint venture between Lefay Resorts & Residences and Marriott International. An innovative ownership model set within the grounds of Lefay Resort & SPA Lago di Garda, in Gargnano at the heart of the Riviera dei Limoni, the Sky Pool Villas represent the latest residential hospitality concept from the luxury Lefay brand. Designed by Apostoli Wellness Creators in collaboration with the Lefay Resorts Project Team, the villas respond to the growing demand for extended-stay accommodation.

CASE STUDY

Combining the comfort and privacy of a private residence with the exceptional standards of hospitality for which Lefay is renowned, the Sky Pool Villas offer an innovative living experience. Owners and guests enjoy exclusive access to the services and amenities of the celebrated collection founded by the Leali family - now part of Marriott International’s luxury portfolio - while benefiting from the privacy and independence of a standalone villa. Set within an eleven-hectare park surrounding the resort and overlooking the lake, the five villas are carefully integrated into the natural landscape of Lake Garda’s western shoreline. Their biophilic architecture, featuring planted green roofs, is embedded into the gently sloping terrain that descends towards the water, allowing the residences to blend seamlessly with their surroundings. The collection comprises three two-bedroom villas, one three-bedroom villa and one penthouse. Ranging from 300 square metres, each residence is arranged on a single level and features a private garden and infinity pool. Together, they represent the next evolution of the resort, expressed through a contemporary architectural language defined by expansive glazing, a restrained natural palette and refined stone detailing.

design. Floors are finished in Travertino Classico, creating a seamless continuity between the living and sleeping areas, all characterised by calm, neutral tones. The walls are finished with raw silk wallcoverings, showcasing the excellence of Italian craftsmanship, alternated with lacquered boiserie and, in the penthouse, Calacatta Oro marble surfaces, creating a subtle interplay of textures and tactile contrasts. Overhead, recessed ceilings featuring Canaletto walnut detailing and integrated lighting enhance the sense of warmth and sophistication.

This architectural vocabulary continues throughout the interiors, which draw inspiration from both the local landscape and the elegance of 1960s yachting

The bespoke furnishings, designed specifically for the project and crafted in the same carefully selected finishes and timbers, are distinguished by soft, flowing forms reminiscent of classic yacht design. This nautical influence is further reflected in the studio’s selection of aquamarine accents, including custom basins, finely crafted decorative tapestries and onyx panels, whose luminous tones echo the colours of Lake Garda framed beyond the expansive glazing. The relationship with the surrounding landscape is further reinforced through the interior layout, where slender timber screens create a gentle transition between the bedroom suites and the service areas while maintaining a sense of openness and visual continuity.

Each Sky Pool Villa is completed by a fully equipped outdoor terrace, a heated infinity pool, a designer kitchen with integrated bar facilities and a private spa. The two-bedroom and three-bedroom residences include a sauna and dedicated treatment area, while the penthouse further features an outdoor-facing whirlpool and an experiential shower. Together, these elements define the Sky Pool Villas as a new model of private luxury, seamlessly combining the exclusivity of a bespoke residence with the exceptional services and amenities of a world-class hospitality destination.

“The hospitality sector must evolve rapidly in response to emerging market trends and the changing social, cultural and professional needs of an international clientele,” comments architect Alberto Apostoli, founder of Apostoli Wellness Creators. “Our synergy with the Leali family and our longestablished collaboration with the Lefay Resorts & Residences brand, underpinned by a shared and wellestablished vision of redefining contemporary luxury through wellbeing, enables us not only to respond to new trends, but to anticipate them. The recent joint venture with Marriott International marks a further step forward, both in redefining the wellness segment on a global scale and in amplifying the international reach of this holistic philosophy, which serves as the very foundation of our design approach.”

The Standard Behind Every First Impression Every memorable hospitality experience begins long before a meal is served or a room key is handed over.

It begins with a first impression. From luxury hotels and fine dining restaurants to private members' clubs and premium leisure destinations, guests instinctively judge quality through the smallest details. The welcome they receive, the professionalism of the team and the consistency of presentation all shape how a business is remembered. Uniforms are no longer simply part of an operation. They have become an extension of a brand. A carefully considered uniform communicates confidence, professionalism and attention to detail before a single word is spoken. It helps employees feel proud of the organisation they represent while reassuring guests that they are in capable hands. As expectations across hospitality continue to evolve, leading businesses increasingly recognise that presentation, comfort and performance must work together. This is where Suiting Corporate Wear has established itself as one of the United Kingdom's trusted hospitality uniform specialists. Working with hotels, restaurants, healthcare providers, facilities management companies and corporate organisations, SCW creates premium uniform programmes designed around each client's brand, people and operational requirements.

Dunston Hall Hotel, Spa & Golf Resort Unveils £2 Million Investment Programme - D UNSTON HALL The Norfolk resort completes an exciting transformation, from refreshed bedrooms and a new stylish holiday retreat for groups to a stunning event terrace and spa lounge, as it sets its sights on growth within the leisure, weddings and corporate market. Dunston Hall Hotel, Spa & Golf Resort has completed a £2 million investment programme that has transformed the property, signalling a bold vision for the resort’s next chapter. At the heart of the investment is a complete refresh of 112 guest bedrooms. Every room now features a state-of-the-art air-conditioning and climate-control system, ensuring year-round comfort. Guests will also notice refreshed lighting schemes, upgraded bathrooms and USB-C charging points.

- 96 -

CASE STUDY

Opening in July 2026, Dunston Hall’s new threebedroom holiday retreat, named The Bolthole at Dunston, is the standout addition to the resort’s accommodation inventory. The self-contained space accommodates up to 10 adults, or 10 adults and 2 children and offers a genuinely premium group experience. It features cosy décor inspired by the beautiful Norfolk countryside, a generous living space and a fully equipped kitchen with a central dining table overlooking the championship golf course. The Bolthole at Dunston can be booked on a selfcatering bed-and-breakfast or dinner bed and breakfast basis. For those seeking a fully elevated stay, a private chef option will also be available, making it equally suited to a group golf weekend, a family celebration, a special birthday to include spa experiences, or a luxury pre-wedding get-together. Dunston Hall’s flagship event space, The Sunningdale Suite, has undergone a comprehensive refurbishment, with upgrades to the staging, a complete overhaul of the toilets and meeting areas, and freshly decorated interiors. What was once a plain paved area has been completely transformed into an impressive drinks terrace with decking, seasonal lighting, planting, and a stylish seating area overlooking the golf course. Perfectly positioned for summer weddings, receptions, and corporate dinners, the terrace brings a ‘wow factor’ to Dunston Hall.

We’re proud to be adding a new dynamic to our inventory. We’re investing not just in our facilities but in the experiences our guests take away, whether they’re here for a wedding, a weekend escape, a round of golf, or one of our signature events. Our team is incredibly proud of what we’ve created, The Bolthole, especially, and we can’t wait to welcome guests old and new to enjoy everything that’s coming in 2026.”

The resort’s bridal suite has also been elevated to a high-end sanctuary. Located within the original manor house and boasting views across the golf course, the suite is now fully refurbished and features a statement roll-top bath and luxury finishes throughout.

The hotel team is primed and ready to welcome guests across the summer season, and even more so, with an ever-evolving events programme for 2026 that includes outdoor cinema nights with summer screenings of Dirty Dancing and The Greatest Showman.

In the spa, a new relaxation lounge provides guests with a tranquil space to unwind post-treatment. The spa, brought back in-house two years ago, continues to grow as a destination in its own right, with further state-of-the-art facilities planned. The investment comes at a significant moment for the region as Norwich was recently crowned the UK winner in The Sunday Times Best Places to Live guide, a title that’s putting the destination firmly on the leisure travel map and fuelling demand for premium experiences across Norfolk.

Dunston Hall Hotel, Spa & Golf Resort is already looking ahead to the next phase of development, with proposals in progress for adventure golf, padel courts and outdoor lodge-style accommodation.

Total Water Care: Why Hospitality Businesses are Turning to Smarter Water Management - K IN ETI CO P RO In today’s hospitality sector, delivering an exceptional guest experience extends far beyond service standards and menu offerings. Behind every perfectly brewed coffee, spotless glass, luxury shower and efficiently run kitchen lies an often-overlooked essential: water quality. As hospitality businesses face increasing pressure to improve sustainability, reduce operating costs and extend the lifespan of valuable equipment, professional water treatment has become a critical component of operational success. This is where KineticoPRO’s Total Water Care approach is making a significant difference across the industry. KineticoPRO combines innovative water treatment technology with a proactive service model, providing hospitality operators with a comprehensive solution tailored to their specific requirements. Rather than simply supplying equipment, the company works closely with clients through a consultative process designed to deliver optimal water conditions from day one and maintain them throughout the life of the system. The journey begins with a free site survey and detailed water analysis, enabling KineticoPRO specialists to understand source water quality, hardness levels and the unique demands of each operation. From there, a customised proposal is developed, ensuring the most effective and cost-efficient solution for the business. For hotels, restaurants, cafés and catering operations, the benefits are substantial. Effective limescale prevention helps reduce energy consumption, lowers maintenance costs and significantly extends the

life of water-contact equipment, from combi ovens and dishwashers to coffee machines and boilers. By maintaining peak efficiency, businesses can protect capital investments while reducing their environmental impact. What sets KineticoPRO apart is its commitment to ongoing support. With nationwide coverage and a team of expertly trained engineers, the company provides installation, servicing and maintenance, ensuring systems continue to perform to exacting standards. This full-service approach allows operators to focus on delivering outstanding guest experiences while leaving water management in expert hands. The company’s heritage also speaks volumes. Founded in 1970 by two engineers determined to create a better water softener, Kinetico revolutionised the industry with the world’s first twin-tank, demand-operated, non-electric water softener. More than five decades later, that same spirit of innovation continues to drive the business forward. Today, millions of homes and businesses worldwide trust Kinetico to solve their water challenges. For hospitality operators seeking greater efficiency, sustainability and reliability, a Total Water Care strategy is no longer a luxury, it’s a smart investment in long-term operational excellence.

Next Generation Thermoelectric Minibars: Elevating Guest Experience and Unlocking New Revenue in 2026 - M I NI BAR SYSTEM S In luxury hospitality, every detail contributes to the guest journey — and every square foot of the guestroom must work harder than ever. Minibar Systems’ next generation Thermoelectric Minibars bring together silent performance, sustainable engineering, and a powerful commercial advantage that many hotels overlook: a reliable, high margin revenue stream hiding in plain sight. Our 2026 SmartCube Series continues to set the standard for premium in room refreshment. With modular, plug and play design and multiple configurations — including 40 litre, 60 litre, DualBar, and drawer models — SmartCube adapts seamlessly to any room category or design aesthetic. Its refined thermoelectric cooling system, powered by advanced Peltier technology, delivers whisper quiet operation with no compressor, no vibration, and significantly reduced energy consumption. But the true value of a modern minibar extends far beyond engineering. For ownership groups, GMs, and F&B leaders, minibars represent one of the most underutilized revenue opportunities in the guestroom. Hotels using Minibar Systems’ automated and thermoelectric solutions consistently report up to 60% labour savings, fewer guest disputes, lower cost of goods, and double digit increases in captured revenue. With real time monitoring, dynamic pricing, and automated posting, the minibar becomes a dependable profit centre rather than a labour intensive amenity.

Guest behaviour reinforces this opportunity. Over 25% of guests use the minibar when it is well designed, visible, and easy to access, making it the most frequently used outlet in the room. Silent, energy efficient thermoelectric units enhance this usage by eliminating the noise concerns that often lead hotels to unplug or underutilize their minibar programs. With more than 35 years of expertise and over one million installations worldwide, Minibar Systems remains the trusted partner for leading hotel groups across North America, Europe, the UK, and Asia. Our zero CAPEX programs allow properties to implement premium minibar solutions with no upfront investment, making it easier than ever to modernize the guestroom while unlocking new revenue potential. In 2026, the minibar is no longer a passive amenity, it is a strategic asset. Minibar Systems is proud to lead the industry with solutions that elevate guest comfort, support sustainability goals, and deliver measurable financial performance.

Helping Hospitality Businesses Create Safer Workplaces - STANN AH LI FTS As hospitality businesses continue to focus on workplace wellbeing and operational efficiency, installing the right lifting equipment has become an increasingly practical investment. Whether choosing a goods lift or a dumbwaiter, both lift solutions help reduce manual handling, improve productivity and create safer working environments.

Choosing between a dumbwaiter and a goods lift The choice between a dumbwaiter and a goods lift depends largely on the nature of the items being transported. A restaurant operating across multiple levels may find that a dumbwaiter is sufficient for delivering meals from the kitchen to the dining area, while a large hotel is likely to require a goods lift capable of moving laundry carts, housekeeping supplies and stock deliveries throughout the building. Goods lifts are designed to transport heavier and bulkier loads up to 15 metres, such as beer barrels and kegs, bins, catering supplies and cleaning equipment, whereas dumbwaiters are designed to transport lighter items such as crockery, food and small supplies. Although compact in size, most dumbwaiters have load capacities of 50 to 100kg, depending on the model specified. A platform goods lift has the capacity to carry heavier loads of 300 – 500kg. A heavy-duty goods lift can hold up to 2000kg and two people.

Both lift solutions facilitate the safe delivery of goods between floors, eliminating the need to carry loads upstairs and reducing the risk of slips, trips, and falls, as well as manual handling injuries. In many cases, larger hospitality businesses benefit from installing both a dumbwaiter and goods lift, allowing each lift to perform a specific operational role.

A guide to safer manual handling Installing a goods lift or dumbwaiter demonstrates a proactive approach to workplace safety by removing or significantly reducing the need for staff to carry loads between floors. To help hospitality businesses tackle manual handling challenges, Stannah has developed a practical guide designed to support employers in creating safer working practices. The guide offers clear advice on recognising potential hazards and improving lifting methods to reduce the risk of injury. It also provides a downloadable manual handling risk assessment template and a ready-made business case, helping businesses to build a stronger case for investing in safer and more efficient lifting solutions.

OUTDOOR FURNITURE

The Next Generation of Outdoor Heating Starts with Firestorm - F I R E STOR M H EATER S Firestorm Heaters is a proudly British, father-andson business founded by Steve and Zac Morris in Herefordshire. Built on a shared passion for engineering excellence and sustainable heating solutions, the company has spent the past five years refining its approach to outdoor warmth. What began as a hands-on project has evolved into a focused mission to challenge conventional heating methods, combining traditional craftsmanship with modern design thinking. Every product reflects their commitment to quality, durability, and environmentally responsible innovation. Unlike traditional patio heaters that rely on expensive and carbon-intensive bottled gas, Firestorm models operate using clean-burning British wood pellets. This renewable fuel source allows the heaters to deliver an impressive 14kW heat output while producing minimal smoke and virtually no mess. The result is a significantly more efficient and cost-effective solution, typically running at around one-third of the cost of gas alternatives. Alongside their performance benefits, the heaters feature a contemporary aesthetic that integrates seamlessly into a wide range of outdoor settings, from private gardens to commercial terraces. The product range is carefully tailored to suit different environments. The Phoenix model is designed with domestic users in mind, offering a balance of performance, simplicity, and style for home entertaining. For commercial applications, the Flamenco sets a new benchmark in outdoor heating. Matching the Phoenix’s powerful output, it delivers up to four hours of continuous heat without the need

for refuelling, making it particularly well-suited to restaurants, bars, and event venues. Thoughtful design features such as simple lighting, full safety guarding, and lockable castors ensure that the heaters are not only effective but also easy to operate and position. Each Firestorm heater is hand-assembled using robust, high-quality materials and rigorously tested to perform reliably in British weather conditions. This attention to detail ensures long-term performance and resilience. At its core, Firestorm’s mission remains clear: to provide a renewable outdoor heating solution that combines efficiency, sustainability, and striking design, delivering warmth that is as visually impressive as it is practical.

Picasso Digital – Scandinavian Hotel Technology Now Growing in the UK and Ireland - A K TECH HOTELS Picasso Digital and the company behind it, AK Techotel Ltd., may still be relatively new names to many hoteliers in the UK and Ireland. In Scandinavia, however, the story is quite different. Picasso Digital was originally developed in Denmark by Klaus Ahrenkilde more than 20 years ago and has since become the most widely used hotel management system in Denmark. Today, it is used by hotels, restaurants and hotel groups across Scandinavia. One reason for its longevity is continuous development. AK Techotel has a large in-house development department, and Picasso Digital has grown from a hotel management system into a comprehensive suite covering much of the day-to-day operation of a hotel – including reservations, online booking, restaurant management, POS, housekeeping and a range of integrations.

From order to payment at the table Picasso Mobile POS - or MPOS – is a good example of this ongoing development. MPOS takes the restaurant POS directly to the guest on a smartphone or tablet. Staff can take orders at the table, post directly to a room, table or conference account, split bills and accept card payments without having to return to a stationary till.

The latest development brings more of the restaurant’s table management into MPOS. Staff can now create and cancel table reservations for a selected date and check in guests directly from the app. Restaurants can also upload their own floor plan showing table numbers, making it easier for staff to find the correct table. Linked tables are supported too. When a larger party is seated across several tables, the tables are clearly identified as linked while the party can still have one combined bill. It is a practical example of the philosophy behind Picasso Digital: continuing to develop the system around the everyday work taking place in hotels and restaurants.

And for enhanced ease of use, Star’s One-Touch label function on both printers allows for the storing and printing of up to three pre-set label designs which can be printed instantly. Star linerless label printers enable food orders to be printed onto variable length low adhesive ‘sticky receipts’ which can follow the order through the preparation process and can even be used as the final bag seal with customer pick up order number and / or delivery address. The expertly designed and compact TSP143IV SK linerless label printer is ideally suited for this application, featuring a high print speed whilst benefitting from an internal power supply and 4-year warranty as standard.

Simple hardware set-up The ability to quickly and simply set up printers at any given venue enables a business to be up and running with minimal technical support required, avoiding unnecessary and potentially costly downtime. Star’s latest printer models allow users to simply connect via an auto-generated QR code or via the Star Quick Set Up Utility and be online within less than a minute. Benefitting from the Quick Set Up Utility, the TSP143IV X4 simplifies wireless connectivity ‘out-of-the-box’. For multi-site installations this can prove invaluable by providing simple and straightforward provisioning of multiple printers, while eliminating the time and costs associated with engineer visits and support. And, once a Star printer has been installed, additional Star hardware, scanners, label printers, cash drawer connectors based on the same architecture can be quickly integrated, allowing businesses to easily expand the hardware estate, react promptly to change and be ready to serve customers with minimal technical support required.

Multi-Platform Support and Cloud Connected Solutions Multi-platform support for greater flexibility and managing the printer estate in order to optimise operational efficiency is key to future proofing the hospitality environment. Improving Bar Tabs: Benefits of CardsSafe - CAR D SSAFE The CardsSafe system is designed to securely store customer credit, debit, and ID cards while the cardholder is running a tab. For over twenty years, CardsSafe has revolutionised how hospitality and leisure businesses manage customer tabs on or off their premises. Protecting assets, increasing customer spend and profits securely.

CardsSafe is Quick & Easy to Use The system is super easy to use and requires minimal instruction, saving you time. It is not hardwired and does not capture any data. Our hospitality clients use it alongside existing point-of-sale systems, while our golf centre clients use it across their site to offer refreshments on the green.

The Securest Way to Keep Bar Tabs It’s a fact that customers want their bank cards kept secure when they run a tab. Leaving a bank card in a till or a folder is irresponsible and poor practice. Ensuring that customers’ cards are handled professionally while they enjoy a meal and a drink should be a top priority. Trust and a happy experience are the cornerstones of good customer service. Venues with bar tabs offer patrons a convenient way to enjoy multiple drinks and extra dishes without the hassle of constant payment. Staff spend more time building relationships and less time taking payments. A streamlined experience will ensure that customers spend more every time.

Deter Dine and Dash Deterring dine and dash will reduce losses and improve the bottom line. Implementing innovative technology can be a valuable ally in the fight against walkouts. Consider using CardsSafe. It’s the ideal deterrent for anyone contemplating walking out of your establishment without paying because their card is safely tucked behind the bar in a CardsSafe unit.

Improving Customer Service The hospitality industry thrives on creating memorable experiences. While a comfortable bed and a delicious meal are essential, exceptional customer service sets a business apart. In today’s world of instant reviews and social media buzz, providing topnotch service isn’t just a nice-to-have; it’s a must-have. Technology can be a powerful tool for enhancing customer service. The goal is to provide the customer with the best possible experience. Keeping track of

C

M

bar tabs for food and drink bills will streamline the staff-to-customer experience, allowing the team to upsell effectively. Customers who don’t have to reach for their wallets or cards regularly are more likely to make impulse purchases.

CardsSafe is Affordable The beauty of CardsSafe is that it’s effective, easy to use and install, and incredibly affordable—it pays for itself! Since 2003, CardSafe has been trusted by leisure and hospitality venues, ranging from local pubs like The Deers Hut in Hampshire to Lord’s, the home of cricket, and hotel chains such as Hilton Hotels, including The London Golf Club and Silvermere, which utilise CardSafe in their pro shops and restaurants. One CardsSafe unit contains ten drawers that can hold ten customer bank cards. At just £9.95 per month, each hire includes customer service, troubleshooting, and free replacement keys. Additional units can be added at any time. A single £120 dine-and-dash incident is equivalent to one ten-card CardsSafe unit per year. With CardsSafe, the potential to prevent thousands of pounds of loss is significant.

‘From Field to Fork’: How Solar Power Supports the Food Supply Chain - G EO GR EEN P OWER It’s no secret that many businesses and chains within the hospitality sector are feeling the strains caused by increasing energy prices - especially those providing food and catering services. Every day more and more of these operators are struggling to turn a profit and make ends meet, without compromising on the quality of service their customers expect. What’s more, when we take a look at the bigger picture, it’s also clear that it’s not just the hospitality providers at the end of the food supply chain who are faced with problems due to rising energy costs - it goes right back to the start. From growing crops and raising livestock, to harvesting, product preparation and packaging, distribution and storage, it’s more expensive in terms of energy consumption at every step. However, while this unfortunately means the sector challenges run much deeper than they may appear, a positive is that they can all be combatted with the same solution, solar power.

To shed a little more light on this, Kat Auckland, Communications and Projects Director of nationwide renewable energy installers, Geo Green Power, has explained more about how solar can support at every stage of the food supply chain.

Production, processing and packaging “As with any industry, the greater the size of the operations, the higher the energy costs, but generally speaking, farming can be one of the most energyintensive sectors. Whether it’s climate-controlled greenhouses, automatic feeding systems for livestock, refrigeration for dairy farms or the machines and systems used for packaging and automation, there are many aspects where solar can be harnessed. Farmland, barns and warehouses offer lots of opportunity for commercial solar installations which can be essentially tailored to suit specific operational

- 120 -

TECHNOLOGY

requirements. This is something the Geo Green Power team did with Red House Farm in Doncaster; this project saw three solar PV systems being installed including roof and ground-mount installs - totaling a system size of 1,088kWp. These have made a huge difference to the farm’s operations, generating 1,000,000kWh of energy and saving 250 tonnes of CO2 every year.”

Distribution and logistics “When we consider this next part of the chain, there is often increasing automation and again temperature regulation for the storage of products before and after shipping, with refrigeration being a notable energy drain. At the same time, more and more logistics companies are moving their fleets away from fossil fuels to electric, which is of course a fantastic thing to do, but a decision that obviously increases energy consumption when these vehicles need charging. Once again, the benefits from solar are quite obvious here, as there is the opportunity to have rooftop solar installations on large logistics or transport hubs and premises, and erect solar car ports for vehicle charging. Battery storage can also be hugely beneficial at these sites, smoothing energy usage and particularly when used for charging EVs overnight. We have another example of a food wholesaler improving the sustainability of their logistics by adding solar panels and a battery storage system to their operations. With JK Foods - one of the UK’s leading importers and distributors of authentic East Asian foods - we installed a 309kWp solar PV and 87kWh battery system which generates the company an estimated 260,500kWh of energy every year, with annual savings of 65 tonnes of CO2 emissions.”

Retail and hospitality “Within the last parts of the chain, we have hundreds of thousands of UK hospitality and retail businesses serving up our nation’s produce to consumers. From product management and storage, or product preparation and service, there are costs associated

with every stage, including: temperature controlled storage, cooking facilities, heating, lighting, POS and back office systems. Once more, adding up to high energy demands. However, as above, there are many ways in which solar can be utilised to bring these costs down. Moreover, we also find that hospitality chains and groups can scale up the effectiveness of these energy saving benefits from having multiple solar installations across their sites. Our work for Mitchells & Butlers - one of the UK’s largest restaurant operators - is a great example of this in practice. Across 125 of M&B’s sites, including several of their key brands like Toby Carvery, Miller and Carter and Harvesters, our team has completed installations in sizes ranging from around 15kW to 60kW, with the total system size across the group being over 4.2MW. Effortless Comfort, Smarter Efficiency: How Zennio is Redefining the Modern Guest Room - ZEN N I O In today’s hospitality landscape, guest comfort and experience are no longer defined by aesthetics alone. Increasingly, they are shaped by how intuitively a room responds to the guest, how seamlessly technology integrates into the stay, and how effortlessly comfort is delivered. This is where Zennio Hospitality solutions are redefining the modern guest room. At the heart of Zennio’s approach is the principle that technology should be invisible yet impactful. From the moment a guest enters the room, lighting, temperature and ambience automatically adjust to create a welcoming environment. Intuitive touch panels, such as the Z35, CX40 and Z70, alongside sleek capacitive touch switches, provide simple, elegant control of lighting scenes, climate and even audio, removing complexity while enhancing personalisation. The result is a space that feels tailored to the individual without requiring effort or instruction. Crucially, this enhanced guest experience is underpinned by intelligent occupancy management. Unlike traditional keycard systems, Zennio utilises a combination of door monitoring, presence detection and time-based logic to truly understand when a room is occupied. This allows the system to maintain comfort when needed and reduce unnecessary energy usage when it is not—without compromising the guest experience.

From the guest’s perspective, the room simply “works.” Lighting scenes shift naturally from day to evening, climate control maintains a consistent and comfortable temperature, and features such as “Do Not Disturb” and “Make Up Room” integrate seamlessly with hotel operations. Behind the scenes, however, the impact is significant. Energy reduction becomes a powerful by-product of delivering comfort intelligently. Guest rooms can account for up to 40–60% of a hotel’s total electricity consumption, and by ensuring that heating, cooling and lighting are only active when required, Zennio systems can typically reduce in-room energy consumption by 40–50%. This not only lowers operational costs but also supports increasingly important ESG and sustainability targets. All of this is unified through Zennio’s KNX-based architecture, an open and future-proof standard that allows hotels to integrate lighting, HVAC, blinds, and third-party systems into a single platform. Through central management software, operators gain realtime visibility of room status, energy usage and system performance across the entire property. Ultimately, Zennio Hospitality delivers more than just automation. It creates environments where comfort feels effortless, operations become smarter, and sustainability is achieved as a natural outcome of doing things better.

Could Smarter Food Labelling be the Next Step in Kitchen Efficiency? - P R EP SAFE Food safety is fundamental to every hospitality operation. Yet one of the most routine tasks in a professional kitchen remains surprisingly manual. Write the product. Write the date. Check the time. Apply the label. Repeat. For a busy restaurant, hotel or catering operation, handwritten food labelling can quickly become a time-consuming daily task. Add multiple sites, changing teams and hundreds of prepared products into the equation, and maintaining consistency becomes even more challenging. So, what happens when you make food labelling digital? PREPsafe has developed a straightforward digital labelling system specifically for hospitality. Using the PREPsafe app and connected printer, kitchen teams can select the required product and produce a clear, consistent food safety label in seconds. The result is less handwriting, reduced opportunity for human error and a simpler process for staff to follow – particularly valuable for hospitality groups operating across multiple locations. But digital labelling is only part of the story. The label itself is evolving PREPsafe is also introducing innovative label technology designed around everyday challenges within professional kitchens. Its removable, waterproof label is made to withstand exposure to water without ripping or tearing and incorporates a temperature indicator that turns green when the temperature falls below 5°C, giving kitchen teams a simple visual temperature indication.

Then there is another familiar kitchen frustration: removing labels from reusable food containers. PREPsafe’s dissolvable labels are designed to make this process easier. When containers are washed and reused, the label dissolves, reducing the time staff spend scraping away old adhesive labels. From labelling to kitchen efficiency For PREPsafe, the bigger picture is about making everyday kitchen processes simpler. Digital labelling can help improve consistency, support staff training and make it easier to implement the same procedures across restaurants, hotels, franchises and multi-site hospitality operations. Importantly, the PREPsafe system also comes with no subscription fees. Customers simply purchase the labels they use, without an ongoing subscription charge for the labelling system. It’s a refreshingly straightforward approach to hospitality technology: technology should solve everyday problems – not create new ones. The future of food labelling may be simpler than you think.

AI-Powered Conversations: Redefining the Hotel Guest Experience - C A N A RY TECH N OLOGI ES Artificial intelligence is rapidly transforming hospitality, but its greatest value isn’t replacing human interaction—it’s enhancing it. As guest expectations continue to rise, hotels are increasingly turning to conversational AI to deliver instant, personalised service while giving front-of-house teams more time to focus on creating memorable guest experiences. Purpose-built for the hospitality industry, Canary Technologies has developed an AI platform that combines intelligent guest messaging with advanced voice capabilities, enabling hotels to communicate with guests seamlessly throughout every stage of their stay. From answering pre-arrival questions and processing reservations to handling in-stay requests and promoting upgrades, conversational AI is becoming an always-available extension of the hotel team.

Instant Service Around the Clock Today’s travellers expect immediate responses, regardless of the time of day. Whether they’re enquiring about check-in times, booking a room, requesting extra towels or asking about local attractions, waiting hours for a response is no longer acceptable. Canary’s AI Guest Messaging platform is designed to automate more than 80% of routine guest enquiries, allowing hotels to provide instant, professional responses while significantly reducing the workload on front desk teams. Operating in more than 100

languages, the platform helps hotels communicate confidently with international guests, ensuring language is no longer a barrier to exceptional service. Rather than relying on scripted chatbot responses, the AI continually learns about each individual property, expanding its knowledge base over time to provide increasingly accurate and personalised answers. If a request requires human intervention, conversations are automatically transferred to hotel staff with the relevant context, creating a seamless experience for both guests and employees.

Never Miss Another Call Telephone enquiries remain one of the most valuable booking channels for hotels, yet busy reception teams often struggle to answer every call. Every missed enquiry represents a potential lost reservation or missed opportunity to upsell additional services. Canary’s AI Voice platform has been developed specifically for hotels, acting as a virtual front desk assistant that answers calls 24 hours a day. The system can handle reservations, modify existing bookings, answer frequently asked questions, recommend hotel facilities and transfer complex enquiries to the appropriate team when required. Unlike traditional phone systems, AI Voice can manage multiple conversations simultaneously,

ensuring every caller receives immediate assistance without waiting in lengthy queues. By removing repetitive enquiries from reception teams, staff are free to concentrate on delivering personalised service where it matters most.

Creating New Revenue Opportunities Conversational AI is proving to be far more than an operational tool. By understanding guest preferences and recognising opportunities throughout the customer journey, AI can actively generate additional revenue. Canary’s AI Guest Messaging intelligently recommends services such as room upgrades, early check-in, late check-out and other ancillary purchases at the most appropriate moments. The company reports that

hotels using the platform have achieved up to four times more upsell revenue, while simultaneously improving response times and guest satisfaction. Similarly, AI Voice helps convert more enquiries into confirmed bookings by ensuring every call is answered, reducing abandoned calls and capturing revenue that might otherwise have been lost during busy periods. With some hotels reporting that a significant proportion of incoming calls go unanswered, the financial impact of automated call handling can be substantial.

Supporting Hospitality, Not Replacing It One of the biggest misconceptions surrounding artificial intelligence is that it replaces people. In reality, hospitality remains a people-focused industry where genuine human interaction continues to define the guest experience. Instead, conversational AI removes repetitive administrative tasks, allowing hotel teams to spend more time engaging with guests face-to-face, resolving complex requests and delivering the personal touches that create lasting impressions. Trusted by more than 20,000 hotels across 125 countries, Canary’s hospitality-specific AI platform demonstrates how intelligent automation can improve operational efficiency, strengthen guest satisfaction and unlock new revenue opportunities without sacrificing the human element that sits at the heart of exceptional hospitality.
