New Life unveils its new IN&OUT collections at the 2025 Fuorisalone during Milan Design Week - N EW LI FE New Life, an Italian company with a longstanding presence in the hospitality sector, showcased its latest indoor and outdoor collections at the 2025 Fuorisalone during Milan Design Week. The presentation took place in the enchanting setting of the Great Cloister of San Marco’s Church in Brera, a neighbourhood well-known for art, design and fashion. This magical and historical setting became the perfect backdrop for the debut of the L’Ala Outdoor chair, designed by Marco Zito. In 2024, the collection was honoured with the Sustainability Award at the Archiproducts Design Awards. The addition of the chair to the collection, which already includes an armchair, lounge chair, barstool, dining table, and coffee table, further enriches it, enhancing its versatility. The project draws inspiration from nature, transforming organic and floral shapes into design pieces that align with current trends.
Ergonomic and comfortable, each piece is crafted with a commitment to circular economy. New Life also presented indoor products, including a lounge chair and a new collection of tables and chairs designed to transform hospitality spaces into welcoming, functional environments. Harlock, the lounge chair designed by the Alan de la Coba team, showcases the company’s expertise. The backrest, the seat and the footrest are crafted following a single shape. This design choice emphasises continuity and coherence from an aesthetic and practical point of view, creating a functional piece that tells a story of innovation and craftsmanship. The result is a harmonious design that offers exceptional comfort and a total relaxation experience. Making their debut as well were the Martina chairs and Martino tables, designed by Alessandro Ghiringhelli. These pieces stand out for their formal and technical simplicity, achieved through a harmonious blend of shapes and volumes. The legs are the defining feature of both pieces, allowing them to complement each other seamlessly. The designer drew inspiration from electricity pylons, iconic elements that shape our landscapes. Much like these towering structures, their legs provide stability and structural integrity while adding a touch of minimalism and elegance to any space. The strong character of the products displayed, paired with the magic atmosphere of the elegant cloister, created a fascinating connection between modernity and tradition. Matter, sustainability and design became the main characters of the week, allowing people to live an unforgettable experience.

Room mate hotels, unstoppable in its expansion in europe, opens to the Swiss market - H OTEL M AR M ONT The chain enters the Swiss market with the addition of the Hôtel Marmont in Geneva, next to the prestigious Rue du Rhône, while adding twelve assets in Valencia (Spain), following the purchase of the Spanish chain Staying Valencia. In 2024, the chain recorded revenues of €128.5 million and normalized EBITDA of €28.3 million, reflecting the success of its management and the recovery of the tourism sector. By 2025, it expects to achieve net revenues of 151.8 million euros. 2024 with revenues of 128.5 million euros, 23% more than the previous year, and a normalized EBITDA (Earnings Before Interest, Taxes,Depreciation, and Amortization) of 28.3 million euros. Room Mate Hotels continues with its ambitious expansion plan, strengthening its presence in the European market with the addition of the Hôtel Marmont, in Geneva (Switzerland). Located in one of the most exclusive areas of the city, next to the prestigious Rue du Rhône, surrounded by the most exclusive stores and just a few meters from the emblematic Lake Geneva, it has 104 rooms and offers unparalleled access to the financial district, international institutions and the vibrant cultural life of the city. Since the acquisition of Room Mate Hotels in 2022 by its new shareholders, the chain has significantly strengthened its financial position and renewed its portfolio through an equity investment program in several hotels. With this latest purchase, the company continues its selective international expansion through new strategic acquisitions, new leases and hotel management agreements. Dominic Seely, Room Mate Hotels’ Director of Development and Acquisitions, said: “With its very high barriers to entry, Geneva is a further milestone
in our journey. The Room Mate brand prides itself on having so many AAA locations and this hotel is no exception. We continue to partner with institutional landlords such as Axa Real Estate, BNP Paribas, Generali, Grosvenor, Investire SGR, Prelios SGR, and others, who value not only our business model, but also the strength of our brand.” To which Kike Sarasola adds: “This is a great milestone for Room Mate and we are very happy with the

arrival in Switzerland, one of the world’s top tourist destinations and a beautiful country. The property will be completely renovated in 2025 and relaunched under the Room Mate brand in early 2026.” This new addition is in addition to the recent purchase of the Staying Valencia chain, with twelve assets in the city such as Helen Berger, Oliveira or Cosmo, among others. All are located in the city center, in line with Room Mate Hotels’ positioning in other key destinations such as Venice, with the recent opening of Palazzo Dei Fiori (16 apartments from 1 to 5 rooms), designed by Teresa Sapey; or in the United Kingdom, London, with the boutique hotel Lime Tree, located in the Belgravia area or the new Room Mate Mia, which will open its doors in Rome on April 10.
In addition, during 2024, the company has allocated almost 10 million euros in the renovation and improvement of several hotels, with the aim of offering the best experience for its customers. Among the refurbished projects are Room Mate Aitana (285 rooms) in Amsterdam, Room Mate Luca (55 rooms) and Isabella Room Mate Collection (22 rooms) both in Florence; and Room Mate Leo (67 rooms) in Granada.
The chain faces the future with optimism, confident in its business model and its ability to offer unique experiences to its guests. “Room Mate continues to be a leading chain. We want to expand in strategic cities in Europe, such as Lisbon or Paris, as well as explore new markets, such as Germany, and continue to grow in destinations where we are already strong, through the purchase, rental or management of hotels or hotel chains. All of this with a clear vision: to consolidate our growth in a sustainable way, to continue innovating in the hotel sector and to guarantee unforgettable experiences for our clients in each destination,” concludes Kike Sarasola.
In the words of Kike Sarasola: “We continue to expand intelligently and judiciously, investing in strategic destinations and strengthening our brand in Europe. Room Mate Hotels’ growth is the result of our commitment to excellence and customer satisfaction”
In addition, Room Mate reinforces its position as one of the urban chains best rated by users with 90.5% according to ReviewPro (official source of hotel reputation). The main nationalities staying at Room Mate Hotels are Americans (14.79%), Spaniards (8.72%), Dutch (8.60%) and British (8.25%). These results reflect the success of its management and the dynamism of the tourism sector.
Financial strength and prospects for 2025
Market trends and expansion
Room Mate Hotels ends 2024 with a solid financial position, and predicts a record 2025, estimating to reach 151.8 million euros and the opening of new hotels, including its second hotel in Rome, the new Room Mate Mía.
Room Mate Hotels’ growth is framed by a dynamic and constantly evolving hotel market. In 2024, the company has welcomed more than 1.22 million visitors, with an average stay of 2.5 nights and a total occupancy rate of more than 86%.

recent acquisition of Staying Valencia to its portfolio. Its philosophy is to conceive hotels as “homes” that open their doors to travelers who come to the city looking for comfort, warmth and the welcoming spirit offered by its great team, human and professional, to its guests.
On the other hand, the United Kingdom, with Lime Tree in London, is consolidating its position as another key market for the company, thanks to strategic management and the revitalization of the sector.
In Room Mate Hotels, design plays a crucial role. Renowned designers such as Patricia Urquiola, Lázaro Rosa Violán, Tomás Alía, Lorenzo Castillo, Pascua Ortega and Teresa Sapey, among others, have been responsible for the design of the establishments around the world.
In Northern Europe, the Netherlands has suffered a slight slowdown due to rising costs and inflation, which has moderated the pace of expansion, although the region continues to perform positively. On the other hand, emerging markets such as Istanbul (Turkey) continue to face challenges linked to the currency situation.

The Lanesborough London: Where Regency Heritage Meets Masterful Craftsmanship - H E L LO OF M AY FAI R I N TER I OR S Standing proudly at Hyde Park Corner is The Lanesborough, its presence looming over one of London’s most celebrated neighbourhoods. Rated amongst the city’s most iconic 5-star hotels, The Lanesborough is renowned for its seamless fusion of Regency-era grandeur and contemporary sophistication. The hotel describes itself as having a “regency spirit” and every aspect of its interior design pays homage to this tradition through craftsmanship and meticulous detail, creating an elegant and welcoming ambience. Every piece in The Lanesborough plays a role in how guests experience the hotel, from the moment they check in. New additions to the hotel must artfully blend historical charm with modern luxury. When Hello of Mayfair Interiors was commissioned to design and craft a new principal concierge desk for the hotel, the challenge was clear. We needed to capture this vision with a bespoke concierge desk that honoured its magnificent 19th-century architecture while making it visually appealing to today’s discerning traveller. Our team has over two decades of experience in furniture design and we called upon their expertise to create an exquisite replica of an antique concierge desk before upgrading it with modern technological enhancements. The goal was to craft a bespoke piece that would live harmoniously within the hotel, capturing its timeless appeal and complementing its historic architecture. From grand statement furniture in the main halls to subtle, atmospheric pieces in the guestrooms, The Lanesborough’s furniture plays a vital role in shaping the guest experience. This new bespoke concierge desk is no exception. Upon arrival, guests are now welcomed by a striking mahogany and rosewood concierge desk that sets the tone for their stay at this iconic London address. The desk features impressive elements, including two PC touchscreen monitor lifts, allowing for a 15 to 30-degree tilt, controllable via remote or manual operation.
- 14 -
What sets us apart at Hello of Mayfair Interiors is our dedication to traditional craftsmanship. Our skilled artisans use time-honoured techniques, from intricate joinery to meticulous finishing, to ensure each piece reflects the essence of the space they’ll come to occupy. These skills were put on full display during the creation of The Lanesborough’s new concierge desk. We created thoughtfully designed drawers with a lockable charging docking drawer for mobiles and tablets, equipping the desk with 14 power units, including dual USB-C and USB-A ports, and full LED lighting with multiple colour options to enhance its aesthetic if desired. The result is a bespoke concierge desk that feels both timeless and current – just like the hotel it now calls home. The Lanesborough’s interiors, enhanced by this bespoke craftsmanship, are a celebration of detail, design, and ambience. This concierge desk isn’t just a point of service, but a cornerstone of identity and atmosphere. It captures the heritage of The Lanesborough, its sophisticated glamour, and its commitment to attracting the next generation of the international jet set.

Clean, Sanitise, Disinfect: Why Hospitality Needs to Know the Difference - SA N I P ROFESSI ONAL In the fast-paced world of hospitality, cleanliness isn’t just about making things look good. It’s a critical part of protecting guest health, maintaining brand reputation, and meeting regulatory standards. But not all cleaning is created equal. Understanding the difference between cleaning, sanitising, and disinfecting is essential, and overlooking these distinctions can have serious consequences. Cleaning refers to the physical removal of dirt, dust, crumbs, and germs from surfaces. It doesn’t kill bacteria or viruses but reduces their numbers by washing them away. It’s the first step and should never be skipped—trying to disinfect a dirty surface is like painting over rust. Sanitising lowers the number of bacteria to safe levels as determined by public health standards. It’s commonly used on food-contact surfaces like countertops, kitchen utensils, and dining tables. However, sanitisers may not eliminate all viruses or more resilient pathogens. Always check the label. Some sanitisers can be used in a two-stage approach: 1) Use the sanitiser to clean the surface. 2) Reapply to the visibly clean surface and leave for the required time. This final step sanitises. Disinfecting goes further: it destroys bacteria and inactivates viruses and fungi. This process is vital in high-touch areas such as door handles, bathroom surfaces, and hotel remotes, where crosscontamination risks are higher. Disinfectants typically require a specific contact time to be effective, which is another crucial detail staff must understand.
So why does this distinction matter? Because using the wrong product, or using it incorrectly, can create a false sense of security. In hospitality, where the margin for error is small, that misunderstanding could lead to illness outbreaks, negative reviews, or even legal action. Training teams to know when to clean, sanitise, or disinfect—and equipping them with the right products—isn’t just smart practice. It’s a professional standard that puts guest safety and brand integrity first. After all, in hospitality, it’s not just about being clean. It’s about being correctly clean. Sani Professional’s Protect 360° biodegradable sanitising wipes are effective against norovirus and tested under dirty conditions, meaning one wipe can clean and sanitise simultaneously, saving staff valuable time.

Hospitality Trends to Watch in 2025: From Sustainability to Sensory Dining and Nikkei Cuisine - A L L I A NCE D I SP OSABLES At Alliance Online, we’ve always had our fingers on the pulse of the hospitality industry. As we move into 2025, three powerful trends are shaping the way businesses operate and engage with customers: the rise of environmentally conscious products, the explosion of experience-driven dining, and the growing popularity of Nikkei cuisine. Here’s what to expect and why these shifts matter more than ever.
1. Environmentally Conscious Products: Innovation Meets Responsibility Sustainability is no longer a buzzword – it’s a business essential. As climate change accelerates and customer expectations evolve, the hospitality sector is under increasing pressure to reduce its environmental footprint. In 2025, we expect to see a wave of innovation in environmentally conscious products that combine performance, aesthetics, and sustainability. From compostable takeaway containers to reusable tableware made from recycled materials, product development is being driven by a desire to reduce waste and conserve resources. Smart water-saving solutions, energy-efficient kitchen equipment, and biodegradable cleaning products are becoming the norm. At Alliance Online, we believe that embracing these innovations is not just an ethical choice but a strategic one – businesses that lead on sustainability are winning customer loyalty and achieving longterm cost savings.
2. Experiences & Themes: Dining as Entertainment Gone are the days when good food alone was enough. In 2025, diners are seeking unique, immersive experiences that go beyond the plate. Themed restaurants and experiential dining venues are booming across the UK, transforming mealtimes into multi-sensory events. Innovative concepts like Mama Mia! The Party, Park Row, and Alkatraz are blending storytelling, performance, and cutting-edge technology to create unforgettable dining experiences. Guests can find themselves at a prison-themed cocktail bar, a superhero-themed tasting menu, or even eating in pitch darkness at Dans Le Noir? to heighten their senses.
- 22 -
Multi-sensory dining – featuring projection mapping, scent diffusion, and theatrical elements – is also on the rise. Le Petit Chef, for instance, uses animation and storytelling to engage all five senses. Meanwhile, pop-up restaurants and seasonal supper clubs are adding an element of surprise and exclusivity. The appeal of experience-led dining is clear: it’s highly shareable on social media, and diners are willing to spend more for memorable moments. With OpenTable reporting a 72% year-on-year rise in experience dining, this trend is one the industry can’t afford to ignore.
3. Nikkei Cuisine: The Future of Fusion Nikkei cuisine: born from the fusion of Japanese techniques and Peruvian ingredients – is poised to take the UK by storm in 2025. This bold, vibrant style of cooking balances umami, spice, and acidity, creating dishes that are both visually stunning and deeply flavourful. Fuelled by social media and a growing appetite for authentic global flavours, Nikkei cuisine stands out as a sophisticated evolution of the fusion food trend. Chefs like Nobu Matsuhisa and Micha Tsumura have brought international acclaim to the style, and UK venues are following suit, offering Nikkei-inspired tasting menus and small plates. This new wave of culinary fusion reflects a shift towards greater cultural awareness and respect for traditional techniques, delivering not only flavour but a story with every bite. In 2025, the hospitality industry is evolving at an unprecedented pace. By embracing sustainability, elevating the dining experience, and exploring bold new flavours like Nikkei cuisine, businesses can stay ahead of the curve – and at Alliance Online, we’re here to support every step of the journey.

How Contract Furniture Group Helped Redefine a Classic Venue Moving from Business to Pleasure Located near Windsor, The Runnymede on Thames Hotel and Spa is known for its classic style and picturesque riverside views. In late 2023, Warner Leisure Hotels acquired the site, aiming to transform it from a business-focused venue into a countryside retreat. The multi-million-pound refurbishment began in early 2024 and was completed by late September. A Study in Form and Function The ambitious transformation included updates to 250 rooms, restaurants, and entertainment spaces. Having previously worked with Warner Leisure Hotels on projects like Heythrop Hall, Contract Furniture Group was initially tasked with refurbishing the bedrooms, including 25 new rooms. However, after delivering an exceptional sample room, the firm expanded its role to include public areas such as Market Kitchen, Brasserie32, and the Live Lounge. Collaborating with New York-based Virserius Studio, Contract Furniture Group played a key role in bringing the vision to life over 11 months. Opulence in Abundance The Runnymede’s new aesthetic embraces a glamorous 1970s studio vibe, featuring bold patterns, rich velvets, and gold accents. Contract Furniture Group crafted bespoke loose furniture for the restaurants, bars, and Live Lounge, aligning with the luxurious theme. Key pieces include Alice and Bergen Lounge Chairs in the

Live Lounge and Ambrosia Side Chairs in Brasserie32, each with gold-tipped feet. Marble quartz tabletops, alongside Zeus and Atlas table bases with gold finishes, enhanced the opulence, while casual dining areas incorporated durable laminate tops with Aldeburgh Table Bases. Style with Sustainability A key service was the Refresh, Rejuvenate, Refurbish offering. Many existing furniture pieces were reupholstered and refinished, extending their lifespan. Fixed seating in the Market Kitchen was refreshed to match the new design. Additionally, custom joinery, including lobby desks with marble tops and wall cladding for the Holiday Hub, added a refined touch. A Grand Reopening The Runnymede Hotel’s reopening in September was a resounding success. Now a stylish adult-only retreat, the transformed venue has received glowing feedback. The collaboration between Warner Leisure Hotels, Virserius Studio, and Contract Furniture Group has created a standout destination, seamlessly blending style, comfort, and functionality.

Sofa bed Rufus - M I L A NO BED D I N G The sofa bed Rufus, with minimal, harmonious lines and generous proportions, stands out for its low frame, almost touching the floor, an innovative feature for convertible sofas. Even with this particularity, the sofa, thanks to careful research and development work conducted by the company together with the designer, easily transforms into a spacious bed, with a practical and silent mechanism that allows you to extract a thin but highly comfortable mattress, 200 cm long. Sober and elegant, the sofa is also defined by a deep seat with a single welcoming cushion that invites you to relax. Rufus therefore combines elegance and comfort without sacrificing functionality, a common thread of all the proposals by Milano Bedding. The model is available in a linear sofa or with a chaise longue and can be covered with numerous fabrics and leathers. Cissy — a muse of modern comfort
There are armchairs you sit in — and then there’s Cissy, Ton’s new sculptural lounge piece, designed by French master Patrick Norguet. The design itself is inspired by the brand’s rich history of bentwood craftsmanship — its curves, proportions and honest materials echo more than 160 years of tradition. The name, however, comes from something more poetic: a delicate sketch of the actress Cissy Loftus by Toulouse-Lautrec. From this quiet portrait came a muse — graceful, composed and timeless.
With its fluid silhouette, generous upholstery and soft bentwood frame, Cissy balances heritage and innovation. Available in both high and low backs, it offers two expressions of comfort — one more enveloping, the other effortlessly open. A distinctive feature is the elegantly curved armrest, steam-bent from a single piece of solid wood. This uninterrupted line not only defines the chair’s sculptural character, but also speaks to the precision and depth of Ton’s craftsmanship. It’s the kind of detail you feel as much as you see. Paired with a matching footstool, the experience deepens: legs up, tension down,
and the space around you shifts into stillness. In any configuration, Cissy becomes the soul of the room — quietly commanding attention without ever raising its voice. Each Cissy is handmade in the historic factory in Bystřice pod Hostýnem — a place where steam and wood have worked in harmony since 1861. Nestled in the Czech countryside, this is the oldest workshop of its kind in the world, where generations of craftsmen have perfected the delicate balance between technique and intuition. Every sweeping line, every seamless joint is a tribute to this legacy — not just of craftsmanship, but of confidence. Because when something is made in a place that has been making furniture for over 160 years, you don’t just see the quality. You feel it.
“First you see the comfort. Then you feel it,” says Norguet. And indeed, Cissy’s embrace is immediate. The armchair’s generous proportions, finely tuned angles and cloud-like softness wrap the body in a cocoon of calm — inviting you not just to sit, but to melt in. Whether in a hotel
lounge, an elegant suite or a private reading corner, Cissy transforms the space into a sanctuary.
The story is completed by the exclusive seasonal mix: three Cleo fabrics — Peach, Water and Gold — curated by Norguet, together with soft Elmosoft leather in Green. These are some of the finest materials available, chosen not only for their aesthetic richness but also for their exceptional durability, comfort and feel. Each fabric has been hand-selected to enhance the sculptural form of the design and reflect Norguet’s refined sensitivity to colour, texture and materiality. The result is a harmonious blend of sensuality and elegance — luxurious to the eye, irresistible to the touch.
Just be a-muse-d by Cissy. A confident muse that combines craftsmanship and character, ready to become an icon in interiors that value presence over pretence.

Cult x Batch LDN: A DesignDriven Collaboration Transforming Retail Hospitality - C U LT FUR NI TUR E Luxury retail is no longer just about selling products— it’s about curating experiences. In today’s hospitalitydriven fashion landscape, physical stores must go beyond transactions to become immersive spaces where customers truly connect with a brand’s ethos. This philosophy is at the heart of the collaboration between Cult Furniture and Batch LDN, the contemporary menswear label redefining the modern suit. By furnishing Batch LDN’s retail space, Cult Furniture has helped shape an environment that blends highend hospitality with cutting-edge design, offering customers a seamless and inviting space to engage with the brand on a deeper level.
Designing a Seamless Brand Experience At Batch LDN, the mission is clear: to take the stress out of dressing well by offering handcrafted, standout pieces that are both stylish and effortless. Their retail space needed to reflect this ethos, and partnering with Cult Furniture ensured that every design element complemented the brand’s clean, modern aesthetic. With its expertise in fusing contemporary design with functionality, Cult was the perfect collaborator to transform the store into a space where fashion, lifestyle, and hospitality converge. The goal? To create a retail destination that mirrors the boutique hospitality industry’s emphasis on comfort and curated experience.
Furnishing the Future of Retail Hospitality To bring this vision to life, Cult Furniture carefully selected key pieces that elevate both ambience and functionality: Lounge Seating – Plush, modern chairs and pouffes invite visitors to relax and enjoy a more immersive shopping experience, reflecting the effortless confidence of Batch LDN’s collection. Bar Seating – Sleek bar stools enhance Batch’s coffee and bar area, fostering a stylish yet laid-back atmosphere where customers can unwind. Workspaces – Communal workspaces create a multifunctional retail hub, allowing visitors to connect, create, or catch up on emails—bridging the gap between shopping and lifestyle.
Retail Meets Hospitality: A New Era of Shopping This collaboration reflects a growing trend in retail hospitality, where stores are designed as destinations, rather than mere points of sale. Just as a luxury hotel curates every detail for an unforgettable guest experience, Batch LDN’s store now embodies a lifestyle—aspirational, effortless, and welcoming. As brands continue to prioritise curated, customercentric spaces, the partnership between Cult Furniture and Batch LDN serves as a blueprint for the future of retail. LIGHTING
Bob Bob Ricard City: Where Lighting Becomes a Statement - D E R NI ER & H AM LY N Tucked into the sharp architectural lines of London’s Leadenhall Building, Bob Bob Ricard City is more than a restaurant, it’s a statement of intent. A design-forward venue where every detail, from the upholstery to the ceiling fixtures, plays a role in shaping a bold, immersive experience. At the heart of its carefully orchestrated atmosphere is one of its most quietly powerful features: bespoke lighting, developed in collaboration with long-standing British lighting manufacturer Dernier & Hamlyn. With a heritage stretching back over a century, Dernier & Hamlyn was tasked with delivering more than 400 custom light fixtures to match the vision of the space. The brief was clear: lighting that does more than illuminate, it should elevate. Working alongside interior designers BradyWilliams, the studio produced a suite of chandeliers, treadwell lights, wall sconces, table lamps, and vanity fittings that are as functional as they are sculptural. Crafted in solid brass and stainless steel and finished by hand to a meticulous polish, the lighting design complements the restaurant’s Art Deco leanings without becoming a pastiche. Instead, it strikes a balance between glamour and restraint, enhancing the geometry and material palette of the interiors while maintaining a sense of timeless elegance. The project wasn’t without its challenges. According to Bob Bob Ricard’s founder, Leonid Shutov, “This was an enormously challenging project, both in terms of design complexity and the sheer scale.” Having worked with Dernier & Hamlyn on the original Soho site, Shutov knew where to turn when ambition met precision. “We had worked with Dernier & Hamlyn
long before this project and I knew that we could rely on them to deliver in every respect. I cannot imagine working with anyone else to create our 400-plus bespoke lights.” Every lighting element in Bob Bob Ricard City is designed not just to serve a function, but to carry the narrative of the space forward. In a time where guest expectations are rising, and visual storytelling has become integral to hospitality, Bob Bob Ricard City offers a masterclass in how lighting, when treated as an integral design element rather than an afterthought - can define the mood, enhance the experience, and leave a lasting impression. Lighting here doesn’t just light the room. It sets the tone.

Mausam: An Architectural and Culinary Journey Through India’s Legacy - 4SPACE Designed by 4SPACE and located in the iconic Dubai Mall, Mausam is a striking exploration of architectural and cultural dialogue, where Indian heritage converges with modern luxury. The design of this dining space is a sophisticated homage to India’s architectural grandeur, embodied through a series of deliberate, refined gestures that channel both historical craftsmanship and contemporary design principles. Inspired by the monumental Red Fort, Mausam offers an immersive spatial experience, blending intricate details with contemporary minimalism to create a narrative of elegance and sensory refinement.

dialogue:
Indian
craftsmanship
The design vocabulary of Mausam takes cues from the historical and symbolic elements of Mughal architecture, reinterpreting these features through a modern lens. The defining architectural feature is the expansive, arching framework, which draws direct inspiration from the Red Fort’s Mughal arches. These arches create a rhythmic spatial flow, guiding movement and framing the dining experience within a structure that feels both expansive and intimate. The incorporation of latticework details, a hallmark of Mughal design, adds tactile richness and a visual layering that enhances both the scale and intimacy of the space. The material palette is a direct reference to India’s rich architectural heritage, particularly the warm red sandstone that defines many of the country’s iconic monuments. Earthy terracotta tones are used throughout, grounding the space in cultural authenticity, while allowing for sophisticated interplay with brass accents and textured wall finishes. The integration of high-quality materials, such as engineered marble, cane, and leather, creates an atmosphere of refined opulence, softening the austere grandeur often associated with traditional Indian design.
In terms of furniture, Mausam features customdesigned pieces that balance traditional craftsmanship with contemporary ergonomics. The juxtaposition of plush, upholstered banquettes and elegantly designed cane and leather chairs creates a dynamic seating arrangement that allows for both openness and intimacy. The porcelain tile flooring, with its traditional Indian motifs, anchors the space in its cultural context, while contributing to the overall aesthetic cohesion of the interior. Lighting is thoughtfully integrated into the architecture, with

lantern-style pendants referencing traditional Indian lamps, casting a warm and inviting glow throughout the space. Recessed lighting enhances the sculptural quality of the architectural curves, further elevating the sense of drama.
Sculptural installation: The rings as architectural language A key feature of Mausam’s interior design is the sculptural rings installation, which serves as both a visual focal point and a functional divider. This installation deconstructs the traditional domes and lattice structures found in historic Indian forts and palaces, presenting them in a contemporary framework that suggests fluidity and motion. The curved metal rings, rising from the floor to the ceiling, are crafted from precision-engineered materials, their soft metallic finish and terracotta-hued patina evoking the warmth of Indian sandstone. The undulating forms create a dynamic spatial experience, offering a sense of depth and rhythm.
structures. The intricate detailing on the façade speaks to the rich legacy of Indian craftsmanship, while the bold, black metal arch framing of the entrance offers a modern reinterpretation of Mughal-era gateways, creating a welcoming yet striking threshold.
The lighting strategy employed within the rings accentuates the fluidity of the forms, with concealed LED strips casting a soft glow that shifts throughout the day. This interplay of light and shadow not only highlights the installation’s sculptural presence, but also adds layers to the perception of the space, creating a more immersive and complex experience. Beyond their visual impact, the rings also serve a functional purpose by subtly dividing the expansive restaurant into intimate dining zones, guiding guests through the space while maintaining a sense of openness.
The façade: A precursor to Indian elegance Mausam’s façade establishes a powerful visual identity, blending traditional Indian architectural motifs with contemporary elements. The exterior is clad in terracotta textures, referencing the red sandstone that defines many of India’s monumental

The transparency of the building’s frontage, with floor-to-ceiling glass panels, allows for a glimpse of the architectural drama within. Passersby are drawn to the captivating rings installation, framed by the soft, ambient glow of lantern-style lighting. The façade’s design successfully blurs the boundary between the interior and exterior, creating an inviting presence within the urban fabric of Dubai Mall.
Culinary theatre: The open kitchen A central element of Mausam’s design is the open kitchen, which functions as both a performance space and a sensory experience. Behind the transparent window, traditional Indian tandoors—clay ovens— take center stage, offering diners a direct view into the culinary process. This not only reinforces the restaurant’s commitment to authenticity, but also creates an engaging dialogue between the preparation of food and the experience of dining. The copper and brass cookware reflect the rich culinary heritage of India, while the visual connection to the kitchen allows both diners and mall visitors to experience the sensory excitement that defines Indian cuisine.

The outdoor terrace: A continuation of the experience Mausam’s outdoor terrace offers a contemplative counterpoint to the opulence of the interior. The panoramic views of the Burj Khalifa and the Dubai Fountain provide a dramatic backdrop, while a grand illuminated archway frames these views, creating a visual dialogue between the restaurant’s design and the iconic Dubai skyline. The terrace seating arrangement, featuring woven rattan and plush deep-toned cushions, is designed to maximize the stunning vistas, while providing a variety of seating configurations, from intimate gatherings to larger social events. The lighting design on the terrace mirrors the interior’s emphasis on warmth and softness. During the day, the space is flooded with natural light, creating a vibrant atmosphere, while at night, carefully curated ambient lighting—such as handcrafted woven floor lamps and subtle LED accents—transforms the terrace into a serene and enchanting space. The introduction of lush greenery enhances the sense of seclusion, creating a peaceful refuge in the midst of Dubai’s bustling cityscape.
bridges the gap between tradition and modernity. The restaurant’s design is not just a visual experience, but a cultural one, telling the story of India’s rich heritage while reinterpreting it for a contemporary, global audience. Every detail, from the sculptural installations to the carefully selected materials, has been crafted to evoke the timeless elegance of India’s past, while offering a space where modern luxury and cultural legacy coexist in harmony. This exceptional project is a result of collaborative partnerships with leading industry experts, each contributing their specialized knowledge to bring Mausam’s vision to life:

Graphenstone Paints collaborates with English Heritage to launch ‘The Colour Collection’ - G R AP HEN STONE Graphenstone Paints, known for its high-quality and health-conscious ‘purifying paints’, has launched a beautiful new collection of 120 colours called ‘The Colour Collection’, which features 24 exclusive shades developed in a landmark collaboration with English Heritage, the charity that cares for over 400 of England’s most beloved historic sites. The 24 exclusive colours have been developed by Graphenstone using scanned data from original wallpapers, fabrics, furniture and painted finishes found throughout English Heritage’s portfolio, including Kenwood, Eltham Palace, Marble Hill, Wrest Park, and Chiswick House and Gardens. A proportion of the proceeds from each tin sold will go directly to English Heritage, supporting the charity’s ongoing conservation and restoration efforts and helping to preserve these historic sites for generations to come.
Notable paint shades in the collection include: Mah-Jongg – A warm grey inspired by the Courtauld family’s pet lemur Mah-Jongg, who lived at Eltham Palace during the 1920’s. Kenwood Cream – A light, traditional neutral reflecting the Georgian exterior of Kenwood. Smalt Blue – A deep, royal blue colour inspired by the gates at Chiswick House and by the historic pigment used by artists such as Vermeer and Turner. Golden Pheasant – A rich, warm yellow referencing the wallpapered bedroom suites at Wrest Park. Chinoiserie – A beautifully soft, light yellow, a Chinese wallpaper reimagined by de Gournay, which can be seen in Marble Hill’s Dining Parlour. Mansfield’s Blue – A sophisticated, green-toned blue matched to Lord Mansfield’s bedchamber at Kenwood Eldorado – A clean blue which nods to the 19th-century Zuber wallpaper at Wrest Park, inspired by the flora and fauna of Africa, Asia, Europe, and America. Licensing and B2B Manager at English Heritage, Alexandra Bovey, said: “We are delighted to partner with Graphenstone to produce a beautiful colour palette of paints inspired by our properties and collections. We care for hundreds of properties and over a million objects, and Graphenstone has done wonderful work conveying their stories through a highly sustainable, quality range of paints.”

Graphenstone UK CEO and Chairman Patrick Folkes said, “Our paints gently ‘nod to the past’ by combining trusted minerals like lime and silicate with 21stcentury graphene technology, ensuring they are ecological, sustainable, and highly durable. Our cleantech ranges create safe and healthy environments without compromising performance, making them perfect for the rigours of the hospitality industry. With a proportion of each paint pot sold going to English Heritage, we can all play a small part in preserving these wonderful properties”. Fast becoming the go-to name for ‘harm-free’ paints that are safe to use in hospitality design projects and fit-outs, Graphenstone fuses traditional raw materials such as lime, calcium carbonates and natural materials with Graphene, one of the planet’s most robust inert carbon fibres, this combination results in a natural mineral-based coating with Class 1 durability. Its unique mineral-based formulations mean that its lime paints actively sequester CO2 as they cure (the majority during the first 30 days following application), helping to purify the air. Panoramic restaurants designed by Studio Apostoli: exclusive locations for wellness by the lake or with views of the Dolomites - R I S TOR A N TI PANOR AM I CI Lefay Resort & SPA Dolomiti, Lefay Resort & SPA Lago di Garda, and Bellerive Lifestyle Hotel are among the destinations designed by the Studio that offer an immersive gastronomic experience. Surrounded by nature, nestled in a snow-covered forest, and overlooking a lakefront terrace suspended between the sky and the water’s surface, more and more hotels are offering their guests refined gastronomic experiences set against stunning panoramic backdrops. Whether outdoors on private terraces or indoors with large windows that dissolve the distance from the surrounding landscape, the direct connection with the environment enhances the sense of well-being, disconnection from daily stress, and complete relaxation.

Studio Apostoli addresses not only the need for structures to enhance their hospitality offering but also the desire of guests to be welcomed into immersive and exclusive environments, thus elevating the presence of nature as a central design objective. The balanced distribution of spaces, proportions between architectural elements, carefully selected colours, finishes, fabrics, lighting design, and interior details along with references to ancient philosophies - work together to create ‘total’ spaces in harmony with both the surrounding nature and the individual. Dolomia is the restaurant at Lefay Resort & SPA Dolomiti, a luxury five-star hotel in Pinzolo, TrentinoAlto Adige, designed entirely by Studio Apostoli for the interior project. It offers a sustainable cuisine concept using seasonal produce and local recipes, in line with the Lefay Vital Gourmet gastronomic philosophy. This comprehensive programme, shared across all the luxury hospitality group’s properties, prioritises the health benefits of food to nourish both body and soul. It is offered here in the Dolomites in a welcoming, warm environment, with bespoke furnishings and finishes in wood and stone that evoke the mountains and their architecture. Large windows define the space and offer views of the surrounding vegetation that embraces the Resort. The lounge bar and Sky lounge continue the design philosophy: the first offers cocktails in an enveloping, wood-dominated environment, with windows overlooking the valley, while the latter provides moments of relaxation for aperitifs or after-dinner drinks directly outdoors, heated by a central brazier. The resort’s gastronomic offering is completed by the Grual restaurant, which has been awarded one Michelin star.
Studio Apostoli also oversaw the restyling of the entire Lefay Resort & SPA Lago di Garda, a fivestar hotel on the Lombard shore of Lake Garda in Gargnano. The result is architecture that integrates seamlessly into the landscape with great respect, thanks to the use of natural materials and the distinctive configuration of the building’s envelope, punctuated by large windows and terraces that facilitate constant dialogue between the outdoors and interiors. The two restaurants align with the philosophy of the intervention, blending with the Lefay Vital Gourmet culinary concept, and offer expansive outdoor spaces with panoramic views of the lake. Gramen, led by Michelin-starred chef Matteo Maenza, presents two tasting menus inspired by the local area, set on a large terrace overlooking the water, while the Limonaia, reserved for guests, evokes traditional structures for citrus cultivation with a light design configuration and a play of geometries in wooden columns and balustrades, always with a lake view. Not far from this prestigious location, with a terrace overlooking the Canottieri del Golfo di Salò marina, is Lerive Rock, a gourmet bistro offering an extensive range of local culinary delights, part of the Bellerive Lifestyle Hotel. The five-star boutique hotel underwent significant indoor restyling and space distribution redesigns by Studio Apostoli. The renovation draws inspiration from the philosophy of natural elements, evoked through soft hues, natural finish pairings, and subtle lighting.

The Numerous Advantages of Ilumitex® for Interior Walls - I LUM I TEX The Ilumitex wall decorative system creates stunning interior walls that can transform any space. Using environmentally friendly, water-based paints the multicolour flake combinations of Ilumitex produce a lightly textured and seamless wall finish. Ilumitex is available in several flake colour ranges including a bespoke option that allows flake customised combinations. It is spray applied and suitable for many different surfaces. Ilumitex is highly durable and ideal for high-traffic interior environments. The Ilumitex system offers numerous benefits and has a proven track record of success in residential, commercial, and hospitality settings. For instance, a bespoke mix of Ilumitex flake colours was used to capture the iconic claret, blue and white colours of Aston Villa Football Club. Applied to their concourse stairwells, and corridor walls, this customisation enabled the imaginative use of the club’s brand colours. The high durability of Ilumitex proved to be exceptionally beneficial for the club over 25 years, significantly reducing the need for costly redecoration, typically required with conventional paint.
- 42 -
The advantages of the Ilumitex system also greatly benefited an inner-city secondary school, where Ilumitex bespoke flake colours were used to match the school’s specific colour palette. The durability and resistance of Ilumitex to wear and tear in this busy school environment have proved outstanding. The low odour during and after the application of Ilumitex, along with the low environmental impact of the water-based Ilumitex paints were significant merits for the school. Ilumitex also proved to be hugely successful for a Yorkshire-based residential retirement home. Their requirement was for a visually appealing wall decorative solution that would be easy to apply and maintain. Ilumitex Pearl 424 was applied to the main corridor walls and after 23 years, it still remains in excellent condition today. Ilumitex offers numerous advantages, when compared to other wall decorative options available on the market. Choose Ilumitex the leading wall decorative covering system for your next project.

Traditional country hotel enhances guest comfort with stylish new electric fire installation - D RU FI R ES “We screened off the area and worked during service intervals to minimize disruption for the hotel staff and guests. The result is a beautifully restored fireplace with a modern and environmentally friendly flame effect.”
Niall Deiraniya, general manager of DRU Fires UK added:
DRU, established in the Netherlands in 1754, is one of Europe’s largest fireplace manufacturers, with a huge portfolio of gas, electric, wood burning and bioethanol fires and stoves. DRU dealers Firehouse of Kendal recently completed a successful new DRU fireplace installation at the Borrowdale Hotel near Keswick in Cumbria, UK. The Borrowdale Hotel is one of six luxury hotels in the Lake District Hotels group. It is in a tranquil setting surrounded by vast Lake District scenery. Nestling at the foot of Shepherds Crag in the pretty Borrowdale valley at the tip of Derwentwater, the hotel combines a traditional country-house feel with modern comforts, creating an inviting and timeless ambiance.
“The DRU Virtuo Evolve electric fire range is the perfect solution for hotels, restaurants, wellness centres and other hospitality settings. “The unique 3D projected flame picture visually replicates a real log fire, which can be controlled by an app for smartphones and tablets. It has a low carbon footprint, no harmful emissions and there are multiple flame variations that can be downloaded from the app.” The Borrowdale Hotel project is the latest of several installations carried out by Firehouse on behalf of Lake District Hotels. Dani Hope, director of the hotel group commented: “Installing several fireplaces of varying shapes and styles was seamless with Firehouse.”
One of the special features of the hotel is its traditional fireplaces, ensuring a comfortable, relaxed atmosphere in the reception and communal areas.
Firehouse director Donovan du Plessis takes up the story: “The hotel had an old gas fire that needed replacing. It was open for business and couldn’t afford to close or lose reservations for renovation works, so we needed a solution that would fit within the existing chimneybreast with minimal disruption. “The owners also wanted a low-maintenance fire that would serve as a feature piece, providing ambiance without overheating the area or guests.

From bombay to bailey house: a closer look at permit room Oxford - B OM BAY TO BAI LEY HOUSE DISHOOM’S sister brand, Permit Room, opened its third restaurant following a careful refurbishment project by interior architecture and design studio, Macaulay Sinclair. Located on one of Oxford’s oldest streets in North Bailey House, the design team transformed an empty, concrete shell into a hospitality space bursting with character, intrigue and style. Permit Room’s interior design draws its name and inspiration from the popular, low-lit drinking spaces of Bombay – historic institutions where only guests with a permit could purchase and consume alcohol during the prohibition era.
- 52 -
CASE STUDY
In addition, there are influences from today’s buzzing Bombay quarter bars, which are typically no-frills night-time establishments serving stronger drinks at affordable prices. By combining this specific character and charm of Indian culture with the hospitality of a traditional British pub, Macaulay Sinclair has created a warm, welcoming neighbourhood-feel for guests.
we want to create sustainable spaces that will stand the test of time – and Permit Room is testament to that ethos.
Ian Roome, director at Macaulay Sinclair, said: “We’re proud to have collaborated with the Dishoom team for the interior architecture and design of its third Permit Room in the UK – a brand with soul and nostalgia that stirs a sense of good times, whatever the occasion.
Music plays a core part of the Permit Room, referenced across the wall art and through the inclusion of a permanent DJ booth, which will host both local and south Asian DJs on the line up. The informal seating arrangement allows for cosy and intimate dining, larger groups and late-night partying.
“At Macaulay Sinclair, we place huge emphasis on authenticity, conducting in-depth research for every project we embark on. Much of the furniture has been hand selected from a variety of locations, including bazaars and markets in Mumbai. Although this wasn’t a heritage building, we still wanted some of the existing building fabric to form a backdrop to the fit out; exposed ceilings and unplastered walls, for the purpose of adding texture and character. Ultimately,
Permit Room Oxford is located at North Bailey House, New Inn Hall Street, OX1 2RP and opened on Friday, 25 October 2024.
“We’re really excited for Oxford to experience Permit Room and to be transported back to mid-century Bombay through the design of the space.”

The Glass Laminate Transforming Modern Hospitality Designs - R EHAU Architects and interior designers in the hospitality sector increasingly turn to glass to create visual space and enhance lighting. Glass laminates — often referred to as polymer glass — offer a practical alternative, combining the look and elegance of real glass with the durability and lightness of high-performance polymers. RAUVISIO crystal by REHAU Interior Solutions is a premium glass laminate surface for furniture panels and splashbacks, perfectly suited to contemporary hospitality interiors. From statement bar frontages to sleek wall panels and service areas, its versatility and resilience make it ideal for restaurants, hotels, cafés, and lounge spaces. Celebrated for its ‘timeless elegance’, it has won both the German Design Award and the Red Dot Design Award for its blend of aesthetics and performance. Delivering the visual impact of glass without the fragility, RAUVISIO crystal is ten times more breakresistant and 50% lighter. In busy hospitality settings, that means fewer maintenance concerns and safer,
more robust surfaces. It’s scratch-resistant, easy to clean, and features an antibacterial coating—making it a hygienic alternative to tiles in moisture-prone areas like open kitchens or bars. Designed with flexibility in mind, RAUVISIO crystal is lightweight, easy to install with standard woodworking tools, and can be customised with features like backlighting or magnetic functionality. Gloss finishes double as whiteboards for creative signage, while matt versions work perfectly with chalk. The UV-resistant colour range ensures lasting integration, even in high-traffic commercial spaces. Sustainability is part of the story too—RAUVISIO crystal leads to 20% less waste than traditional glass, and the full supply chain meets PEFC standards for responsible forestry. Available in a wide range of contemporary colours, the collection includes three trend-driven lines: • RAUVISIO crystal Pure: Clean, minimalist elegance • RAUVISIO crystal Deep: Subtle metallic depth for sophisticated spaces • RAUVISIO crystal Strong: Natural-inspired tones for indoor-outdoor continuity The latest expansion introduces new on-trend colours in both matt and gloss finishes. Matt surfaces are particularly well-suited for hospitality environments, reducing the appearance of fingerprints and smudges in high-contact areas. New colours include: • Onda: a deep, calming blue-grey that adds elegance • Nuvola: a fresh tone to brighten up dining spaces • Salvia: a soft green that brings a natural touch indoors • Duna: a warm, neutral sandy shade • Alba: an earthy tone that adds energy and character Each panel is colour-matched front and back and installs cleanly at 90-degree angles, resisting chips, swelling, and contamination — perfect for achieving continuous vertical installations.

Framing the view: 4 trends & tips for hotel windows - FOR EST GROUP Today’s travellers expect more than a comfy bed and great location. They want smart convenience, seamless automation, and the same tech-savvy comfort they enjoy at home. Once purely functional, window coverings are now a key design element, enhancing comfort, privacy, energy efficiency, and the guest experience. Here’s how hotels can stay ahead of the curve, with expert insight from Forest Group.
1. Smart is the new standard As smart technology continues to evolve, it’s quickly becoming a must-have in modern hotel interiors. One key area? Motorised curtain systems. Travellers are used to controlling their lighting, temperature, and curtains with a simple tap or voice command at home. And expect the same ease during their stay. A wide range of motorised solutions is available to suit different project needs. For retrofits, battery-powered motors can be especially practical, eliminating the need for additional wiring. For new builds or hotels with building management systems, specialised motor options are available that integrate easily with existing smart infrastructure.
New trend colour: stone grey
2. Luxury that thinks green Energy efficiency is now central to hospitality, not just to reduce costs but to meet the expectations of eco-conscious travellers. Motorised curtains help regulate indoor climate by automatically closing when rooms are unoccupied, reducing heat gain and air-conditioning use. The result: lower energy bills and cooler rooms for returning guests.
3. Let design speak Modern drapery hardware offer a wide range of design options, with customisable colours and finishes, including sleek matt styles. There are also numerous motorisation options available, offering convenience and style without compromising on functionality. Compact, flexible curtain systems are perfect for challenging spaces such as bay windows. For those looking to make a statement, design curtain systems with integrated lighting add visual impact. Alternatively, for a more discreet look, recessed curtain systems align seamlessly with the ceiling to create a clean, streamlined aesthetic.
4. Darken the room, brighten the experience Despite evolving trends, one priority remains: quality sleep. Full blackout is essential for guest comfort. With manual or motorised multi-channel systems, hotels can layer blackout and sheer fabrics to offer flexible light control day and night. To further enhance blackout performance, think of accessories like Velcro side profiles and easy-tomount pelmets, which block light from all angles and create a polished finish.

A garden suspended over the city for the Bulgari Hotel Roma - BU LGAR I H OTEL ROM A A project by Parcnouveau, in which the study of the landscape becomes a tribute to the Eternal City and to the timeless glamour of the jewels of the Maison Bulgari. From the entrance Portico to the terraces, Roman nature combines design to generate an immersive experience and iconic spaces with flowers inspired by Bulgari jewels. The rooftop sublimates the eclecticism and richness of the greenery, while at the same time enhancing the breathtaking view of Rome. The ninth gem of the Bvlgari Hotels & Resorts collection is born in the heart of Rome. challenge at the heart of the landscape project was to harmonize with the existing rationalist architecture, underlining its historical importance and, at the same time, creating new interactions with its elements. In this project, greenery has the role of manifesting the vital energy that has moved into the building. “When they called us for this project, we began to take a sort of virtual walk through Rome. What do we think the essence of nature in the Eternal City could be? We started from the concept that everything brings us back to the ancient worlds, as if plants had arrived in Rome from far away and slowly settled there, bringing a further story into history”. Margherita Brianza - Founder of Parcnouveau. At the heart of the project is the client’s vision of reintroducing the essence of Roman nature into the external spaces of the building. Like nature, this vision bursts into space, creating iconic points and redefining the architecture. “Great spontaneity distinguishes the image we wanted to give to this project. A Mediterranean garden, characterized by the aromas of pomegranates and olive trees, is contrasted with a garden linked to tropical species, very colorful, which are a clear reference to the jewel effect. The result is a green landscape, which moves between naturalness and attention to detail, wrapping guests in a highly
evocative dimension”. Luca Manzocchi – Founding Partner of Parcnouveau The landscape project develops across the various levels of the building, starting from the Portico on the ground floor and extending to the courtyards and Terraces, up to the interior spaces. The Portico, the first space that welcomes guests, is designed to offer an embracing experience. It offers a unique view of the surrounding square, with vegetation that punctuates the entrances and lounges. The different heights of these elements interact with the colonnade, creating a sense of lush greenery and a welcoming atmosphere. The Terraces are places of conviviality,

Made from bricks Leading this year’s festival is a major new public artwork by British artist Alex Chinneck, set in Charterhouse Square. This special commission marks Chinneck’s return to sculpting with brick and playing with architectural elevations. The piece incorporates repurposed steel salvaged from the demolition of another London building, thanks to the sponsorship of Cleveland Steel. It is developed with the support of Crittall Windows, FabSpeed and Michelmersh Brick Holdings PLC. Meanwhile, Albion Stone and Hutton Stone return to Clerkenwell Green with a new pavilion designed by Hawkins\Brown and engineered by Webb Yates. Brick from a Stone: Arch Revival features a striking pair of nearly four-metre-high freestanding vaulted arches. FLOORING
Three factors to consider when choosing a hospitality floor - TED TOD D For over 30 years, Ted Todd has been furnishing the hospitality sector with fine wood floors, providing an enduring foundation for establishments like the Michelin-star-winning duo of Skof and Manna, the elemental dining experience of Sam Eliot’s Pasture, as well as Benihana, Zhima, and more than 100 Nando’s restaurants. It’s not unreasonable to assume Ted Todd know a thing or two about the important factors to consider when selecting a wooden floor for a bar or eatery. A popular food and beverage venue is an unforgiving environment for a floor. Significant footfall, scraping chair legs, dropped cutlery and every imaginable variety of spillage will be visited upon a new floor from opening day onwards. Thankfully, all of this can be mitigated by considering three factors: wood species, construction type and finish.
Species You’re doubtless aware of the existence of hardwoods and softwoods, but these categories can be misleading, referring to the botanical origin of the species and not necessarily the actual hardness of the wood. For this reason, the Janka Hardness Scale is used to measure a wood’s resistance to indentation, ranging from Very Soft (below 700 lbf or pounds-force), which includes Balsa, to Very Hard (above 2000 lbf) for trees such as Ebony. European Oak, with a rating of around 1,120 lbf, is both ideal for the hospitality sector and readily available.
Construction Although Ted Todd are enthusiastic advocates of the solid wood floor, when it comes to hospitality, an engineered floor is generally recommended, due to its stability and resistance to moisture-related warping. A caveat, however: opt for a substantial wear layer, which can withstand multiple sandings.
Finish A water-resistant, dirt-repellent finish is essential. There are several options. A hardened lacquer is one good example; it penetrates the wood’s pores and is then cured with UV light to form a protective coating. Your finish will likely change the tone of the floor, so this should be considered from an interior design perspective. By prioritizing these elements, establishments can invest in a flooring solution which withstands the rigors of a demanding environment, ensuring a stylish and enduring foundation for years to come.

Hygiene That Is Better for Business - TOR K Maintaining cleanliness in hospitality settings is essential for guest satisfaction and encouraging repeat visits. A clean, comfortable environment also protects a venue’s reputation. Tork, the global leading brand in professional hygiene, provides solutions that benefit both businesses and their guests.
Another consideration for hospitality settings is providing a positive and comfortable washroom experience for users, regardless of their health conditions, physical capabilities, stage of life or hygiene concerns.
Washrooms are the busiest part of any hospitality setting. Guests will almost always use a washroom as part of the visit, so it forms an important part of the overall guest experience. To meet customer standards, it is the establishment manager’s responsibility to ensure staff have access to tools to keep them clean. Hand towels and soaps need to be refilled constantly to ensure guests are able to wash and dry their hands, but in larger establishments, with multiple washrooms, this can become a time-consuming task. It is therefore no surprise that 71% of cleaners1 wish their systems were easier to re-fill.
Ensuring all guests feel comfortable using your facilities isn’t just an ethical initiative, it has real business ramifications. According to the new research from Tork, 73% of respondents said they wouldn’t return to a facility with poor washroom facilities with 38% avoiding eating and drinking because they feel unsafe. This presents a challenge to businesses that need to adapt to accommodate everyone’s needs. Tork has recently received the world’s first certification for meeting Design for All standard3 for their dispenser development process. This process considers diverse user needs to encourage and promote accessibility of products and services by as many people as possible.
Tork products and services help cleaners manage washrooms more efficiently, freeing up time to clean other areas and reducing complaints. The Tork Xpress® multifold hand towel system comes with compressed refills that hold up to 50% more towels2, meaning the dispensers can serve twice the number of guests before refilling.
Issues such as offering inclusive hygiene in your washrooms may not be the first thing that comes to mind when purchasing hygiene products, but they are important to your staff, customers and to wider stakeholders. Tork is here to help you navigate such requirements, offering to support you every step of the way.

Hypnos Celebrates 14th Year of More Sustainable Bedmaking - HY P NOS Certified Carbon Neutral Responsibly Sourced Wool
and
Championing
With a mission to bring consumers comfort with integrity, British bedmaker Hypnos is a company focused on operating sustainably and ethically. Since 2011, it has been certified Carbon Neutral by PlanetMark1 and in 2022 it became the first bedmaker to commit to certified wool from the globally recognised Responsible Wool Standard (RWS), whilst paying a fair price for wool directly to British farmers. It has also introduced the Eden Project Collection of mattresses which are made with plant-based fibres such as pineapple, banana and orange, and this year, launched a new mattress for hospitality clients. These collections have been developed as part of a working partnership with the educational charity and social enterprise. Last month saw Hypnos’ latest PlanetMark Business Certification report published, for the period 1st January 2024 to 31st December 2024. Across reported Scope 1 and Scope 2 emissions (market-based), Hypnos, through strategic improvements, has recorded a 14.7% reduction (over 100 tonnes) compared to the same period in the previous year, measuring a total 604.8tCO2e2. Initiatives that have driven this reduction include reduced energy use and efficiencies and the transition to biodiesel and electric across its delivery fleet, a program which is still ongoing and targeting continued reductions in 2025. Alongside its drive to reduce the environmental footprint of its operation, Hypnos is also acutely aware of its responsibility to positively impact society by supporting ethical sourcing practices, and demonstrating environmental stewardship through internationally recognised certifications such as Global Organic Textiles Standard (GOTs), Forestry Stewardship Council (FSC), Global Recycled Standard (GRS), Red Tractor and SEDEX. The bedmaker is also supporting British farmers with the use of Woolkeepers® Responsible Wool Standard (RWS) wool in its products. The Responsible Wool Standard upholds responsible practises in the wool supply chain.
Through the Woolkeepers® initiative, Hypnos supports British farmers like Dougie and Mary Steel. Dougie, a master shearer and Mary, with a background in textiles, farm land in Campsie Fells in Scotland and play an active role in the resurgence of the UK’s wool industry. A new campaign has been shared on social channels around the journey of this wool telling the story of craft and expertise from experts – how the wool is grown, how it is quality graded, and then crafted into a Hypnos mattress. David Baldry, managing director, says, “As a proudly British brand, we have enjoyed getting to know Mary and Dougie, just one of the farms that supply the wool for our collections. The passion and commitment to healthy land management and animal welfare was amazing to see, but also the curiosity and pride around how Hypnos use the farms wool within our mattresses.” “We’re a responsible, family-owned manufacturer that takes its commitment to the wellbeing of people and the planet seriously, so it is a core value of our business to operate sustainably and with good ethical practices.”

HIMACS sets the perfect scene for the artisanal excellence of La Pastisseria Barcelona - L A PASTI SSER I A La Pastisseria Barcelona, run by the artisan couple Josep Maria Rodríguez Guerola, who was World Pastry Champion 2011, and Ana Jarquín, Revelation Pastry Chef in 2019, has begun a new chapter with the complete renovation of their destination venue on Barcelona’s Aragón street. The re-design has now transformed the shop into a bright and luminous space which makes the most of high quality materials such as HIMACS to highlight the eye-catching array of delicious pastries and stimulate a vivid awakening of the senses. The renovation by Eduard Ribes and his team at DIEDRIC DESIGN is an ode to elegant minimalism. Inspired by the most exclusive bakeries in Paris, it

integrates elements of prestige, sophistication and modernity, taking the customer experience to the next level. The visual continuity between the exterior and the interior of the bakery, achieved through the cohesive use of materials and colours such as HIMACS in Snow Concrete, invites the visitor to enter a universe of flavours. “We wanted to create a space that would make an impact at first glance with its minimalism; and we are thrilled with the successful result. The idea is that once inside people focus their attention on the vibrant colours of the products and feel comfortable with the warmth of the place”, says project manager Eduard Ribes. Transforming the bakery in just five weeks was a considerable challenge. Moving from a dark space to a glowing and welcoming environment required precision, creativity and teamwork. The new design combines a palette of light, neutral tones with simple, rounded lines that connect with Barcelona’s Mediterranean luminosity and contemporary architectural tradition.
A space designed to enhance its essence: the product itself One of the main goals of the project was to highlight the pastry-making excellence of the artisan owners,
which has been recognised with multiple prestigious awards, positioning La Pastisseria as a benchmark for quality, innovation and creativity. The authentic and intricate pastries and cakes now become the stars of the show, as if jewels displayed in luxurious showcases. This effect is achieved with a discreet chromatic background that elevates each product to the level of a culinary gem. Classics such as the “Rosa de Sant Jordi”, the “Mojito”, the “Cherry” and other signature delicacies appreciated by discerning palates stand out against a pristine backdrop of hygienic HIMACS. In addition, the thermoforming

capability of the solid surface material made it possible to design a service counter with soft, ergonomic curves, which allows for a harmonious, organic effect and makes the exquisite products of Rodríguez Guerola and Jarquín seem even more inviting. This impressive renovation, together with refreshed lighting and the visibility of the display cases from the street, makes La Pastisseria irresistibly attractive to passers-by, who can’t help but stop and admire the mouthwatering pastries on show.
The choice of HIMACS Solid Surface for this project was clear when considering the need for a material that can combine aesthetic impact with functional cleanliness, while also being resistant and durable, including for outdoor applications. The flawless finish of HIMACS, with no visible joints, adds to the sense of sleek perfection, offsetting the wares of these masterful artisans to stunning effect. “For us, it was essential that the new shop reflected the values of our brand: care and respect for signature patisserie. The wow effect achieved with the new image not only is a dream come true, but it also creates an experience that magnifies our dedication and love for the art of making pastries”, explains Josep Maria Rodríguez Guerola, World Pastry Champion and coowner of La Pastisseria. The result is an ideal balance between warmth and elegance creating a pleasant and relaxed ambience in which customers can indulge in a sweet treat, an aromatic cup of coffee, a glass of bubbly or a melt-inthe-mouth, freshly-baked croissant… the temptations at La Pastisseria Barcelona are endless.

Materials allowing for impeccable hygiene and design The materials chosen for the project not only comply with strict sanitary regulations in terms of food handling but also allow for easy cleaning – essential in a high traffic, public-facing environment. The robust versatility of HIMACS has been employed to beautiful effect in aesthetically connecting the exterior and the interior of the establishment, where it has been applied to both the façade and the service counters, the cash register desk, the display shelves behind the counter and the tops of the tasting tables. Each installation was meticulously fabricated by Articryl, a renowned specialist in solid surface materials in Spain and a member of the Quality Club network of HIMACS-approved workshops.

Lanchester Wines Expands Portfolio with Burgundy Wines and Ratafia from Champagne’s Famille Moutard - L A N CH ESTER WI NES In 2004, François Moutard purchased land in Burgundy, marking the expansion of the family’s winemaking expertise beyond their roots in Champagne. This acquisition allowed the family to craft wines that express the unique terroirs of Burgundy while maintaining their tradition of quality and precision.
Lanchester Wines is proud to unveil an exclusive new range of Burgundy wines alongside a unique ratafia liqueur as part of its 2025 portfolio, produced by Famille Moutard, a name synonymous with topquality Champagne. The newly-launched Burgundy still wines include two Chablis cuvées, at village level and premium Premier Cru from Côte de Léchet; two further Burgundy Chardonnays, an AOC Bourgogne and a Bourgogne Tonnerre AOC; two Pinot Noirs, an AOC Bourgogne and a coveted Gevrey-Chambertin; plus two relatively unusual wines from lesser-known Burgundy varieties, Aligoté and Sauvignon Blanc.
The Ratafia Champenois Six Cépages is a blend of six Champagne grapes - Arbane, Chardonnay, Petite Meslier, Pinot Blanc, Pinot Menier and Pinot Noir distilled into a sweet, artisanal liqueur. The move follows the successful introduction in 2023 of a range of Champagnes from Famille Moutard into the growing Lanchester Wines portfolio, including a Grande Cuvée Brut, a Cuvée des 6 Cépages, featuring six of the eight approved Champagne varieties, and a rare cuvée produced exclusively from old vine Arbane.
- 96 -
While the Premier Cru Chablis and Gevrey-Chambertin will undoubtedly appeal to Burgundy aficionados, the Aligoté and Saint-Bris Sauvignon Blanc, from the only appellation approved for Sauvignon Blanc in Burgundy, will excite wine explorers.
Lanchester Wines’ director of sales, Mark Roberts, says the new wines reflect the growing importance of premium wines within the Lanchester portfolio: “The Moutard Champagnes have been a huge hit with our customers, so we are beyond excited to be launching these exceptional still wines, showcasing the diversity of Burgundy’s terroir as well as the craft skills that have been passed down the generations of the Moutard family, which is also reflected in this rare ratafia.” Benoît Moutard, winemaker for Famille Moutard, says the wines also reflect the importance of family ownership: “Twenty years ago my father, François, had the great foresight to see the potential of the Burgundy region, expanding our winemaking beyond the borders of Champagne. Today I am honoured to be upholding our tradition of family ownership, working closely with our partners at another great family business in the UK, Lanchester Wines.” The launch reflects the deepening of the relationship between Famille Moutard, who has been making wine since 1642, and Lanchester Wines, established in 1980 by Tony and Veronica Cleary, from their living room in County Durham.

Low-maintenance planting ideas to green up your hospitality venue - AM BEROL When it comes to hospitality, a venue’s atmosphere is often the detail that leaves a lasting impression. The look and feel of a hotel can be just as important as other factors a customer considers such as price, location, availability and accessibility when booking or recommending to a friend – so it’s important to make it a priority rather than a background detail.
Planter Enhancement range Create a dedicated outdoor seating or respite area within your venue whilst integrating floral displays with Amberol’s low-maintenance Planter Enhancement parklets.
Let’s focus on the benefits of indoor and outdoor flowers and foliage. Without them, a venue might seem bare or austere. Thoughtfully integrated, and a space can really come to life. For venues with limited green space, there are still plenty of ways to build a vibrant oasis in a courtyard or hotel lobby. Simple details such as installing a green ‘living’ wall as a café backdrop, or large planters with fresh foliage either side of an entrance can enhance the appearance of a venue whilst also improving air quality.
Giant precinct planters Amberol’s self-watering Giant Precinct planter is ideal for huge floral displays, shrubs and small trees.
One of the issues with introducing plants can be the cost of ongoing maintenance. That’s where Amberol’s self-watering planters make a difference. Proud originators of the Aquafeed™ self-watering system, our low-maintenance planter range features capillary matting that frees up users to water plants only once or twice a week – saving time, water, and money.
Sustainable self-watering planters that save time, water, and money Amberwall Breathe some fresh air and a photo opportunity into your hotel lobby or café with the Amberwall – a stylish yet low maintenance living wall designed to create vibrant ecosystems where space is limited.

Neglecting these critical responsibilities can lead to significant legal repercussions for building managers or owners, including prosecution and, in severe cases, custodial sentences.”
Award-winning air and water hygiene specialist, Swiftclean, provides comprehensive kitchen extract fire safety and general ventilation cleaning services, catering to some of the UK’s leading hospitality providers with multiple locations, as well as numerous independent establishments across the country.
To help address some of the challenges faced by those in responsible positions, Swiftclean has developed a range of ‘packaged’ services. These packages offer a discount when two or more services are ordered together. This approach not only provides cost savings but also saves building managers the time required to manage multiple contractors. Through its commitment to safety and compliance, Swiftclean strives to ensure that its clients maintain a safe environment for both their staff and patrons.
Managing Director Gary Nicholls is a respected authority in this field, serving as a co-author of the Building and Engineering Services Association (BESA) specifications, TR19®Air and TR19®Grease. These documents are recognised as the leading guidance regarding the internal cleanliness of ventilation systems, which is essential for ensuring the safety and efficiency of kitchen extract and general ventilation systems in the UK. Additionally, Swiftclean is a long-standing member of the Legionella Control Association. The company offers specialised legionella control services, advising and implementing effective risk management strategies for hotels, pubs, restaurants, and catering establishments. This multifaceted approach ensures that clients not only comply with health and safety regulations but also protect their patrons from the risks associated with legionella outbreaks. “Regrettably, the services we offer, such as kitchen extract fire safety cleaning and legionella prevention often do not receive the emphasis they warrant in the management of hotels, pubs, and restaurants,” observes Gary Nicholls. “With so many operational challenges to juggle, proprietors may overlook these critical safety measures.” “However, it is imperative to perform thorough and regular kitchen extract fire safety cleaning to mitigate the risk of fire. Picasso Digital: The Future-Proof Hotel PMS That Puts You in Control of Bookings and Revenue - TECHOTEL Following the successful roll out of the automated check-in “Mona AI” module, AK Techotel is looking to expand its market share even further with its recently redeveloped Picasso Digital Hotel Property Management System. The next twelve to eighteen months should be the most exciting period for customers and employees of AK Techotel as more and more revolutionary modules are being developed and released, as Picasso Digital consolidates its position as the future of Hotel Property Management Systems. Alistair Brown, National Sales Manager of AK Techotel in the UK says “With over 97% of hotel bookings now coming from online platforms, it is vital that the hotel is able to control bookings coming in, availability of rooms going out, whilst also limiting the amount of commission that is being paid”. With Picasso Marketing the hotel can direct traffic to its own website booking engine, paying zero percent commission and control exactly what rates are available, as the website booking is an integral component of the PMS. Alistair Brown continues “The release of the next generation booking engine is being rolled out as we speak, and with Picasso Digital being at the forefront of the development, I for one can’t wait”.

Get Your Venue Summer-Ready - CAR D SSAFE Get your venue summer-ready and deter dine and dash with CardsSafe. If your venue boasts outdoor facilities or alfresco dining, it’s worth considering how you manage your outdoor customers’ food and drink tabs. Dine and dash is a real concern for most hospitality businesses, but there are ways to prevent it. The CardsSafe system is designed to securely retain customer credit, debit, and ID cards while the cardholder runs a tab. This makes it the ideal deterrent for anyone contemplating walking out of your establishment without paying, especially if they are out of sight. CardsSafe has been a trusted partner in the hospitality industry, assisting with bar tabs and significantly boosting profits. Renowned establishments like Young’s Pubs, Hilton Hotels, and many independent and chain restaurants and pubs have been reaping the benefits of CardsSafe for years. Deers Hut in Liphook is a gorgeous pub in the heart of Hampshire, UK. The quintessentially British country pub first came to CardsSafe in early 2013 to seek help with a large volume of indoor and outdoor customers’ bar tabs. Deers Hut offers gourmet food and quality beverages to locals and tourists alike. The pub has a large outdoor area attracting many visitors throughout the year. Staying on top of where their customers sat outside was one of the main motivations for utilising CardsSafe in the pub. Deborah Steel, the Director, told us, “The CardsSafe system is great for servicing customers who enjoy our outside areas.” CardsSafe virtually eliminates walkouts because it retains bank cards and allows secure tabkeeping. Rather than insisting on advance payment, businesses can keep tabs and up-sell while doing so. CardsSafe technology eliminates temptation or opportunism. The system is wireless, so it’s flexible too. One of the UK’s most prestigious golf clubs, the London Golf Club, boasts 36 holes of Jack Nicklaus-designed championship golf, an award-winning clubhouse, and hospitality facilities. They first came to CardsSafe in 2008 to assist with their bar tabs. They added additional units in 2014 and again in 2020 to help with customer golf equipment hires on the site.
- 110 -
The catering staff also use CardsSafe to serve golfers with food and drinks on the course. With hundreds of weekly visitors, club members and the wider public, CardsSafe has helped LGC store their customers’ bank cards securely while hiring golfing equipment and keeping tabs. The CardsSafe units are wireless and don’t need to be hardwired. For some businesses, the mobility of the units makes it an adaptable solution for offering customers refreshments on the green. Grant Rumbelow, Food and Beverage Operations Manager, said, “CardsSafe has been a welcome addition to the London Golf Club. We utilise the system in our Golf Shop and Spike Bar and oncourse with our Drinks Buggy. With CardsSafe, we can safely store customers’ cards while they enjoy their round of golf.” Get your venue course summer-ready, improve the bottom line and offer your customers more with CardsSafe.
