round seven and a half years ago the Itti family moved from Port Townsend, Washington, to Bend, and our food scene has not been the same since. At that point, they’d been operating a Thai restaurant in Port Townsend for over two

We’ll treat you like a guest in our home, but you also have to treat us as your hosts in our home.” Sitting inside Wild Rose, with its signature long-stemmed roses hanging from the ceiling, is, in normal times, a convivial experience, with packed tables and a busy atmosphere. But as we continue the back-and-forth between indoor dining being allowed and not in these pandemic times, Westlund said the restaurant has leaned heavily toward takeout. “It’s just really about, how can we adapt so that we don’t turn away a lot of business, but at the same time we aren’t over-exerting our kitchen staff,” Westlund said. Adaptations for Wild Rose over this past year, which previously mostly handled walk-in clientele, have included a queued phone system and online ordering—as well as online reservations, and now even a reservation cancellation fee. “The thing that has hurt us the very most, honestly, this year is the back and forth between indoor dining opening up and then not. The volume is there whether it’s to-go or dine-in, but once we’re open for dine-in, we’re
very limited with seating,” Westlund said, “whereas with takeout, people order and it’s done.” Another thing this past year has brought—the sometimes-violent backlash against Asians due to the virus’ origins in China—has not surprised Westlund. “The acts of violence against the elder Asian population may be specifically COVID related, but the racism toward Asian Americans has always been there, and we have normalized it,” Westlund said. “It’s the micro-aggressive things that happen on a day-to-day basis that we as Asian Americans have built a tough skin about.” While the present moment has brought yet another round of the dreaded indoor-dining closures, diners can be sure that this familyowned and operated business will persevere and continue to do things their own way. For us it’s really and truly our family business,” Westlund concluded. “We really don’t compromise with that. decades, and, seeing that Bend already had a handful of Thai restaurants, the family opted for a new concept: food from Northern Thailand, where the family originally hails from. While some less-imaginative diners have whined over the years about Wild Rose’s lack of Pad Thai, the popularity of this restaurant has not suffered. Even before the pandemic brought more limited indoor dining space to every spot in town, scoring a table at Wild Rose was a hot ticket; lines of expectant diners waiting outdoors a common sight. With the family poised to open a new Thai noodle and hot pot restau-

Plus, all visitors get the opportunity to expand their horizons, into shareable plates, sticky rice with most meals, and dippable sauces and pastes—traditional items for this Chiang Mai family. “We’re specializing specifically in food that’s traditional to Northern Thailand—Chiang Mai specifically, and then, on another note, we’re doing our own take on it. This is the way that my dad learned how to cook it from his grandfather, and that’s why we’re serving it this way. It’s our family recipe. This is literally generations old,” explains co-owner Rosie Westlund, daughter of Chef Paul Itti,

he creation of a brick-andmortar restaurant for Blissful Spoon was a long time coming for Bendites, who have been clamoring for expanded offerings since at least 2018, when Miki and Kamal Bakkari started selling granola and baked goods at local farmers markets. The couple, meanwhile, admits that

For us this is an extension of who we are. A lot of them are family recipes or family favorites. Kamal is originally from Morocco, and so he has a lot of regional dishes and family dishes that he creates.” Miki’s upbringing on a “truck farm” in Northern California, meanwhile, is evident in the fresh ingredients prevalent on the menu. Tapas items including the Caprese salad and the sauteed shishito peppers bring that freshness, while fresh pastas, sandwiches and the chackouka—a popular North African breakfast—offer quality ingredients with bright flavors. Even the baked goods can have a hint
of health to them; a recent version of macarons included goji berries, touted as a superfood. In a time when opening a restaurant that doesn’t come on wheels is more of a gamble than ever, the Bakkaris hope their new space becomes a gathering place for many. “It’s a really fun place to come and hang out, be with friends, be with family,” Miki said. “That’s what eating and sharing and the culture around the Mediterranean in particular is all about—food, friends, family and laughter. But with a beautiful new space that opened in January 2021, serving Mediterranean and globally inspired tapas, plus wines and French-style baked goods, suffice it to say they’ve exceeded their own expectations. “This was kind of never in the plan,” Miki Bakkari said. “We always planned to see a change when we moved back to the States from Australia. We started with the granola
looking around for a location for a year and a half, the couple saw a sign advertising the opening of a new building under construction in downtown Bend, adjacent to Bend Brewing Company. The Bakkaris signed a lease on the brand-new space in January 2020—but with the advent of COVID-19, it wasn’t until January 2021 that they finally moved in. The space is gorgeous, with tall ceilings and a modern-industrial feel that is relatively new for Bend restaurants.

t is impossible for someone to mention The Tin Pig or even The Podski without me instantly craving a chicken sandwich. Whether it’s the spicy Nashville Chicken, or the Sweet T that comes with pimento cheese and honey, foodies around Bend know The Tin Pig is the place to go for a chicken sando cooked to perfection… perhaps with
started out in 2018, the cart combined both of those regional flavors more distinctly. “A lot of the Southwestern things have faded,” Tate said. “When I started, the menu was a lot different— more pork. The chicken just kind of took over. I love barbecue and smoking meats—they just took second fiddle to the chicken.”

“Everyone is addicted to my fry seasoning,” Tate said. While spice is a defining feature of many of The Tin Pig’s dishes, for the fry seasoning, the secret comes from the opposite end of the spectrum. “The trick is the sugar that I put in it. No one is expecting it,” Tate said. Located in The Podski near the ever-popular Box Factory, Tate credits at least part of his success—including winning Best Cart in this 2021 Restaurant Guide—to

some fried pickles on the side. Or maybe some hush puppies? Dang. Owner Jack Tate, a native of Tucson, Arizona, who’s spent his career as a chef helping open over a dozen restaurants—including Immersion Brewing in Bend—says The Tin Pig’s menu started out having a lot more variety, but with chicken being the star of the show, he’s focusing these days on what makes customers happiest. Tate and partner Matthew Gutierrez are both from the Southwest, and Tate’s wife Yvonne is from the South—so when they

eff Berneski has a giant panda head stashed at his food cart in Tumalo, and when we visit, he’s insistent we let him snap a photo or two of him wearing it. Good thing the Source Weekly loves goofiness of that and other varieties—so much so that the panda head graces the cover of this week’s issue. Berneski opened North Fresh Sushi at The Bite this past year, and while that earns him rookie status among Bendites, people in Salem have been enjoying North Fresh Sushi much longer, having had a cart open at The Yard food park in Salem before moving onto Central Oregon. Berneski started doing pop-ups out of a coffee shop in Silverton. That led to the owners of The Yard suggesting he open a cart, and the rest is history. Since opening his second cart in Tumalo, Berneski has been wowing people with high-end sushi, all super fresh. “We have fresh fish delivered daily—not frozen fish,” Berneski told the Source Weekly. “I want you to be like, damn, I went to a food truck and I had some of the best sushi I have ever had.”
